SPRING HILL YEAH! ARTICLE GABRIELLE GROOTERS PHOTOGRAPHY VARIOUS PHOTOGRAPHERS FROM THE SPRING HILL COMMUNITY LET’S TAKE CARE OF EACH OTHER. Our local businesses need us more than ever. The Spring Hill area is filled with amazing establishments we are so fortunate to have! All of these businesses have supported our community by donating to our schools, fundraisers, parks, missions and more. Now is our chance to pay it forward by doing something we would do anyway – SHOP! If you aren’t sure you can make a difference, know this, every dollar spent in our community HELPS our Community. The next few pages feature a few businesses that we can help. There are many more, so spread the word to your friends and neighbors to SHOP local and support our community.
GRECIAN FAMILY RESTAURANT AND BAKERY 2003 Wall Street, Spring Hill, TN 37174 Phone 615-302-4808 https://www.grecianpizzeria.com/ Frank and his wife Sasa bought Grecian in 2015. Since then, they have put their “whole hearts and souls into running it.” Frank grew up in the restaurant business, working his way up from busboy, to server, to cook, to manager and owner. He graduated from a culinary institute with a degree in culinary arts and the intention to become a chef. Frank and Sasa’s love of cooking is one of the main interests they share. He uses his business to bless the community with fundraisers for school groups, needy families and he hosts a free Thanksgiving meal at the restaurant every year. 12

GRILL SEASON IS HERE AND NOTHING DEFINES SUMMER LIKE A PERFECTLY GRILLED STEAK. There are many ways to go about a steak, one of our favorites here at the shop is the simplest. This works for filets, NY strips, and ribeyes well. INGREDIENTS + Salt + Pepper + Butter + Light garlic paste with rosemary and thyme INSTRUCTIONS 1. Heat your skillet (cast iron is our favorite) or grill (to get the grill marks and that charred goodness) to about as hot as you can get it. 2. Allow your steaks to warm up to room temperature or just below, lightly salt and pepper with a 50/50 mix. Or our favorite, our Ultimate Steak and Roast Rub. 3. Throw your room temperature steak on the grill or cast iron for 30 seconds each side. 1. When using cast iron, throw a little of your favorite oil or butter in the bottom of the skillet. 4. Remove from the heat and finish in the oven (preCasey Weber, Tall Grass Meat Co. Photo Credit: Cassie Ragan
heated to 350). Place a pat of butter, light garlic paste with rosemary and thyme. 5. Using your meat thermometer to guide you, cook to the following temperature in the middle of the steak (anywhere from 6-15 minutes) 1. 128 – Rare 2. 132 – Medium rare 3. 135 – Medium 4. 145 – Medium Well 6. Now this is the hardest part but well worth the wait, let your steaks rest after you pull them out for 5-10 minutes. No need to cover, except lightly with aluminum foil, letting it fully breath. Most of all don’t stress, and have fun! Cooking is an experience and can be tailored to your liking. The meat thermometer isn’t just another check list, it’s a precision tool for exacting your meat cooking prowess. Thanks for letting us share this moment with you, we look forward to seeing you in person. Tallgrass Team!
