IF YOU ARE NOT A FAN OF THE EXTREME HEAT, YOU PROBABLY HAVE A FEW SILVER LININGS YOU LOOK FORWARD TO DURING THE HOT SUMMER MONTHS. July and August give us a bounty of produce, and three of my favorites are tomatoes, peaches, and watermelon. I hope you will enjoy these recipes to help you make the most of the bounty from your home garden or local farmer's market. A classic tomato gazpacho gets a sweet boost from watermelon, a BLT gets a flavorful kick from curry powder and fresh rosemary, and a sweet summer peach crumble gets a savory crunch from crisp bacon.
FOR THE TOPPING + 6 Tbsp cold unsalted butter, cut into pea-sized bits + 1/4 C light-brown sugar + 1/2 C all-purpose flour + ¼ C sliced almonds + ¼ C rolled oats + 1/2 tsp sea salt + 2 Tbsp softened butter, for greasing baking dish + Vanilla ice cream, for serving + Candied bacon (recipe below), crumbled, for garnish
MAPLE BOURBON PEACH CRUMBLE
WITH CANDIED BACON This easy-to-make dessert mixes ripe peaches, with the warmth and richness of bourbon and maple syrup. Candied bacon adds a
CANDIED BACON + 8 slices of bacon + 1/3 C light brown sugar + ½ tsp cinnamon
sweet & savory crunch.
FILLING INGREDIENTS + 2 pounds fresh Porter peaches, cut into thick slices + 3/4 C granulated sugar + 2 Tbsp pure maple syrup + 3 Tbsp Bourbon + 1 Tbsp lemon juice + 2 Tbsp cornstarch + ½ tsp pure vanilla extract + ½ tsp sea salt
TO P R E PA R E Preheat the oven to 400 degrees. Mix the brown sugar and cinnamon. Dredge each bacon slice on both sides through the sugar mixture. Place the bacon on a foil-lined sheet pan and bake for 15 to 20 minutes (cooking time will vary depending on the thickness of the bacon), once crisp, place on a paper towel to drain. Chop or hand crumble and set aside. Combine the cold butter, brown sugar, flour, almonds, and oats in a bowl. Work quickly to blend, rubbing the butter & dry ingredients between your fingertips until it resembles coarse breadcrumbs. To assemble the crumble, use the softened butter to grease an

8x8 baking dish. Pour in the filling, and top with the crumble mixture. Bake in a preheated 375-degree oven for 40 minutes until bubbling and the crust is golden. If needed, tent loosely with foil

TOMATO & WATERMELON
GAZPACHO INGREDIENTS + 2 large ripe tomatoes, cored and cut into chunks. + 1 cup seedless watermelon, diced + 1 cup diced crusty bread + 1 English cucumber, peeled and cut into chunks + 2 tablespoons diced red onion + 1 clove garlic + ½ teaspoon sea salt + Freshly cracked pepper, to taste + 2 ice cubes + ¼ cup apple cider vinegar + ¼ cup extra virgin olive oil + 1 avocado, peeled and diced for garnish + Fresh chopped cilantro, for garnish
DIRECTIONS In a blender or food processor, combine tomatoes, 1/2 cup of the watermelon, the crusty bread, cucumber, onion, vinegar, garlic, salt, pepper, and ice cubes. Purée until smooth. Slowly drizzle in the olive oil. Chill for an hour before serving. Serve, garnished with remaining chopped watermelon, avocado, and cilantro.

CURRIED ROSEMARY-BACON,
LETTUCE, AND TOMATO
SANDWICH I love a great BLT sandwich. I like to bake my bacon on a rack over a foil-lined sheet pan. After laying out the bacon, sprinkle the slices with chopped fresh rosemary. Cook the bacon at 350 degrees until it reaches your desired level of crispness. Also, I like to spice up the mayo by mixing the curry powder into it. Other seasonings work great as well. Try basil, gochujang, or even black garlic.
INGREDIENTS + 2 slices sourdough bread, toasted + a handful of fresh arugula + 1 large vine-ripened tomato, sliced thick + 1 sprig fresh rosemary, stripped and chopped + 2 slices thick-cut bacon (I used the Mangalitsa bacon from Fresh From OK Farms.)
+ 1/2 cup mayonnaise + 1 teaspoon curry powder + salt and freshly ground pepper
DIRECTIONS Mix the curry powder with the mayonnaise and allow it to stand for at least 10 minutes to allow the flavors to meld. Spread each slice of the bread with the curried mayonnaise. Arrange the arugula and tomato on one slice of bread and season with salt and cracked pepper. Top with the rosemary bacon. Slice in half and serve immediately. A cold slice of salted watermelon makes the perfect side.Â

THIS ISN’T YOUR RUN-OF-THE-MILL BUTCHER COUNTER While most will allow a certain level of “cut-to-order” service, the Luongs’ butcher counter is mostly so. Also, the selection of
meats cuts is more comprehensive than a typical OKC grocery counter. When I first moved to Oklahoma City, I asked my husband to pick up some goat meat so I could make a Jamaican curry for the weekend. He looked a bit apprehensive but agreed. A few hours later, he called and admitted that he didn’t know where or how to acquire goat. The butchers at Super Cao Nguyen now have his custom-cut 2” chunks of goat ready and wrapped in minutes, all he has to do is ask. Also different from many meat markets, you can find almost any part of the animal available. When I make a rich, nutritious bone broth, this is where I buy the chicken and beef bones, as well as those collagen-rich chicken feet. Love to make crispy BBQ wings? Pick up a pack of duck wings for a heartier spin. IT’S LIKE WANDERING THE STALLS OF A STREET FOOD MARKET IN ASIA, WITHOUT THE PASSPORT AND LONG CUSTOMS LINE. Every day of the week, you can find delicious grab-n-go snacks as you enter the store. Just past the cashiers, you’ll see pre-wrapped steam buns, banana cakes, spring rolls, sticky rice, and seasonal specialties. A few steps further, and you’ll get a warm wafting scent of freshly baked bread from the in-house bakery. While you are at the bakery, order a Bahn Mi to go. It’s the perfect quick lunch, and arguably one of the best in town. If rice is your carbohydrate of choice, they have freshly-rolled sushi as well. Did I mention that some of the city’s absolute best sushi restaurants rely on the fresh seafood here to satisfy their discerning clients? I think it is safe to say the rolls here
contain the freshest fish OKC offers. On weekends, you don’t even have to make it in the door to pick up breakfast, lunch, or a snack. As you enter, the aroma from cases full of ready-to-eat bao (steam buns) with various fillings, churros, and other pastries, and madeto-order coconut-pandan waffles will stop you in your tracks. I LOVE A PRODUCE SECTION THAT MAKES ME WANT TO EAT VEGETABLES. I am always a fan of the produce section in a good grocery store, but some more than others make it feel more like a candy store. Super Cao Nguyen is one of them. With a variety of mushrooms that I can’t resist, herbs you won’t find many other places in town, and fruits that make you long for a vacation in the tropics, this is one to explore when you have some time to spare. LOCAL LIMELIGHT (CONTINUED) bagged up and ready to head home to my cocktail bar, to the bright dragon fruit containing delicate black seeds speckled across white flesh, it’s a texturally exciting stroll. You might look twice at the almost uncomfortable looking skin on a whole jackfruit, or the tough bruised-looking exterior of the plantains. Try something new, and thank me later. OODLES OF NOODLES Fresh, frozen, and dry, you probably never stopped to think about how many types of prepared noodles were available, right in the heart of OKC. You’ll find plenty of ramen here, but you can find a variety of other dried noodles as well. Some made with buckwheat, some with yams, and others from rice. You can find bags of fresh rice or egg noodles in the refrigerated section, plus plenty of frozen options. A quick dinner of stir-fried udon with some shrimp and fresh vegetables is life-saver on a busy weeknight. MORE SPICES AND SAUCES, AND DRY INGREDIENTS THAN YOU EVER KNEW EXISTED Once you get past the fresh foods sections, you’ll find aisle after aisle of spices, sauces, and condiments that may or may not require Google to identify, even if you are a seasoned chef. Over 50 countries are represented in this truly international grocery. From dried spices, curry pastes, teas, dried mushrooms, tinned meat and fish, or brined and pickled fruits and veggies, you can truly get lost...in the best way. There are around 50 types of soy sauce alone, and more than a dozen varieties of rice. Don’t let this intimidate you, look at it as an adventure, and remember that there is always a knowledgeable employee on hand to offer guidance. After all, this is a family business that has been around for more than 40 years. They know their products well. THIS IS SO MUCH MORE THAN A GROCERY STORE Do you need fruit trees or unusual herb plants for your garden? They are right inside the door. Cookware, unique dishes, specialty tools, or small kitchen appliances? They’ve got you covered. Beautiful gifts and decor, including seasonal specialties celebrating holidays, are as colorful and diverse as the food. If you have never taken the time to explore this fantastic resource we are so lucky to have, you should. The decades of Oklahoma City chefs who have relied upon them for the best ingredients can’t be wrong.

The Blue Doors at Tenkiller are in their 11th Summer season, welcoming guests into 12 individual casitas set up in a very cool, retro motor-lodge fashion, giving visitors a glimpse of the property’s original glory days of the 1950s. Owner Janie Honiker purchased the property, which had been in disrepair for years with a dream to restore the charm of the family road-trip destination while creating a space to follow her passion for sustainability. In particular, Honiker loves “bees, butterflies, and heirloom seeds” and has built her property to reflect that. Wildflowers, beehives, and a vegetable garden can all be found on-site. The restoration and re-opening would not be a quick, inexpensive, or easy turnaround, but one very much worth the effort. “The property was so overgrown we couldn’t even see one of the buildings in the back,” said Honiker.

THINGS YOU SHOULD KNOW: The kitchen has basic tools: a couple of cutting boards, knives, tongs, a pan or two, and various random picnic supplies like paper towels, paper plates, and foil. If you require specific items, bring them from home along with all of your ingredients. Fresh herbs are growing in pots and garden beds on the property. Though you’ll have to bring your grocery supplies, Janie has you covered on the skewers for roasting hot dogs and marshmallows over a fire-pit. There is a small community fridge in the outdoor kitchen and a larger one in a separate small building. There are no refrigerators in the casitas, so bring a cooler if you have beverages you’d like to keep cold in your room. If you want to go fishing, the stocked pond is full of hungry fish, but you’ll need to bring your own tackle. There is a local grocery store nearby should you forget something. Bring sunscreen and bug spray, because this is nature, and it is absolutely glorious! Pepita is ready to get the kayaks on the water

DIRECTIONS 1. Take your cardboard and cut two pieces into the shape of a llama (we found a stencil online). Then, cut strips of cardboard the depth you want your llama to be. You’ll connect these to either side of the llama cutouts to enclose your piñata. 2. Glue your strip of cardboard all along the edge of one side of your llama, then glue to the other side. (Be sure to leave a hole you can close up later so you can fill it with your favorite candy!) 3. Starting at the neck, cover the front, back and sides of your llama with white crepe paper, cutting a slit every half inch or so to create the traditional piñata look. 4. Cover all remaining sides the neck and head with white construction paper, cut to fit your design. 5. Using construction paper, beads, pom poms, tassels, buttons, etc., add some flair to the rest of your llama! Bonus points for incorporating different shapes and textures into your final product.

Using a stencil, cut out the pieces you’ll need for your flamingo from construction paper: Pink: 4-6 circles for the body (depending on how “fluffy” you want it), neck and legs White: Outline of the beak Black: Beak 2. Fold the circles in half and glue them all together back-to-back to create a sphere that looks like an accordion. 3. Glue the beak and white stripe to the neck, then glue the neck to a flat side of your inner-most circle. 4. Add the legs, a black dot for an eye and pink feathers for the ultimate flamin-goal.

Take the largest half circles and fold multiple times to make small creases, creating the crinkle effect. Glue the smaller half circles on top and then add any additional decorative shapes. 3. Punch holes in both ends of the completed product to place string through, then hang on a wall or in a doorway.
