We spent the last few months scouring the streets in search of the most delicious bites Naples has to offer, and we found some incredibly unique, and unconventional, places for you to try (Page 18). Narrowing down all the sensational local flavors and global cuisines in town was no easy task, but we are confident this issue is an accurate representation of our emerging reputation as a diverse and evolving dining destination. While we don’t like to play favorites, the Foodie issue is near and dear to our hearts. After all, food is not only nourishing (and delicious) but it also brings people together—whether it’s a special anniversary dinner, a much-needed lunch break with coworkers, a friend’s birthday party or even a casual weeknight meal with family. FIRE AND RICE QUESO FLAN INGREDIENTS
Serves 12
+ 1 1/2 cups sugar + 2 tablespoons corn syrup + 3/4 cups water + 8 ounces mascarpone cheese, softened + 6 large eggs + 1 14-ounce can sweetened condensed milk + 1 12-ounce can evaporated milk + 1 teaspoon vanilla extract + Salt, to taste + 4 ounces ramekins
DIRECTIONS Preheat oven to 350 F. Stir first 3 ingredients in heavy medium saucepan (should look like loose, wet sand) over medium heat until sugar dissolves. Increase heat to bring to a boil without stirring until syrup turns to an amber color. Work quickly (as the caramel will continue to cook) to ladle a thin layer of caramel into the bottom of the ramekins and reserve. To make custard, combine the evaporated milk, sweetened condensed milk, eggs, mascarpone cheese, vanilla extract and salt in a blender. Blend 30-45 seconds until all ingredients are combined. Pour custard through a strainer into a container; pour into the ramekins with the caramel. Place the ramekins in a 2-inch deep hotel pan or baking dish and add enough boiling water to pan to come up halfway up the sides of the ramekins. Loosely cover with foil and bake 45-55 minutes. The center of the flans will still wobble slightly, but they will set as they cook. Remove flan from water bath. Refrigerate uncovered until cool; cover and refrigerate for a minimum of 4 hours before serving. Run small, sharp knife around flan to loosen and invert on a serving dish. The flan should release cleanly, and the caramel sauce should evenly distribute itself. Garnish with seasonal berries, serve and enjoy! Note: If you have access to an oven that will hold 200 F, you can bake the flans on a sheet tray (without the water bath) for 75-80 min. Both techniques work well!

The appeal of the Wild West beckoned, and they loaded all of their possessions into an old pickup truck. Interestingly, the truck they used to begin their life in Montana was bought with money earned from muskrat pelts, a small hint at the future that lay in store for the Oars. “We had no idea what we were getting into or how I was gonna make a living out here. But I just had a feeling that, by God, I can do it. I can get it done.”

It would just take a little bit more luck to turn his tanning into a lucrative business. “Black Powder Rendezvous, they called them,” Tom says. “They were recreations of the old fur-trade days in the Rocky Mountains when all the trappers would meet in one spot.”
Feeling well at home amongst this like-minded crowd of mountain men, he finally discovered a niche for his handmade wares. And when Tom does something, he is certain to do it well. “The most prestigious clothing that you could wear at one of these rendezvous is brain-tanned buckskin clothing,” he says. Patrons immediately sensed the incomparable quality of the brain-tanned hides Tom provided, and the hides began to sell at a remarkable rate. Tom found his peace. Together, Tom and Nancy defied the odds. Danger lurked, isolation taunted, and the bitter chill of Montana winter bore down upon them;

YOU DO SPRINKLED: Begin with two graham cracker squares. Place one on a microwave-safe plate and top with chocolate bars and a scoop of marshmallow fluff. Set aside. Take the other graham cracker square and spread marshmallow fluff on half (top + bottom), then coat with sprinkles and set aside. Microwave the half with chocolate + marshmallow for 10 seconds, or until marshmallow fluff is melty. Remove and top with sprinkled graham cracker. PB + CHOCO DELIGHT: Begin with two graham cracker squares. Place one on a microwave-safe plate and top with peanut butter cups and a scoop of marshmallow fluff. Microwave for 10 seconds, or until marshmallow fluff is melty. Remove and top with chocolate syrup and second graham cracker square. RASPBERRY COCONUT: Begin with two graham cracker squares.
