The Denver Zoo Reopening Celebration The Denver Zoo welcomed guests back to its facilities in June and animal lovers were eager to visit the beautiful 80-acre zoological garden. The zoo has implemented many campus changes including more hand-washing and hand sanitizing stations, touchless ticketing and one-way viewing campus. DMNS and Botanic Gardens Reopening The Denver Museum of Nature & Science and the Denver Botanic Gardens celebrated the reopening of their facilities in June. Visitors wore face coverings and stayed six feet apart while enjoying the cool exhibits at the museum and beautiful flowers at the gardens. VEGETABLE SOUP SUMMER IS THE PERFECT TIME TO ENJOY A REFRESHING CHILLED SOUP. Get some lycopene in your system and try this chilled tomato soup that is easy to make and store in the refrigerator 6 Servings

for a delicious meal or snack anytime of the week.

30 Min

INGREDIENTS + 6 fresh, ripe tomatoes, seeds removed, chopped + 1 cucumber, peeled, seeded, finely chopped + 2 stalks celery, finely chopped + 2 cloves garlic, minced + 2 zucchini, chopped fine + 1/2 medium sweet onion, finely chopped + 3 cups tomato juice + 2-3 tablespoons extra virgin olive oil + 1/4 cup sherry vinegar + 1 teaspoon chopped fresh oregano + 1 1/2 cups vegetable broth + Salt and Pepper to taste + A pinch of chili flakes if you like a little spice

DIRECTIONS Heat olive oil in a large soup pot. Add garlic, zucchini, and onion. Sauté for 5 minutes and set aside. Add remaining ingredients to the pot and stir thoroughly. Transfer soup to a large bowl and chill for 2-3 hours. Enjoy with garnish of choice.

SALAD

Hit the Farmer’s Market and pick out some fresh cucumber, tomatoes and onions for this light and refreshing salad.

INGREDIENTS + 4 cups Cherry or Grape Tomatoes halved + 2 Cucumbers, cubed + 1 large Red Onion sliced + ¼ cup Cubed Mozarella Cheese + 2 tbs Olive Oil + Salt and Pepper to Taste

DIRECTIONS Combine veggies and cheese in a large bowl. Toss the mix with olive oil, salt and pepper. Refrigerate for at least an hour before serving. Serve chilled.

Year after year, Colorado has been hailed by residents and national organizations alike as an outdoor enthusiast’s dream! A wide array of outdoor activities are available right outside your door. One spot worth checking out during the summer months is Estes Park, a quaint little town located less than two hours outside of Denver. Located at the base of Rocky Mountain National Park, this charming mountain town was founded in 1859. Estes Park is located in Northern Colorado, around 30 minutes outside of Boulder. Tourists flock to this “mountain paradise” at all times of the year to tackle their favorite outdoor adventure or to relax and unwind. Here is a list of popular things to do: 1. Enjoy a boat ride on Lake Estes. Kayaks and paddle boats are also available to rent. There are a few boat rental sites available on the shore ready to help you with your water adventure. 2. Catch a free shuttle to Rocky Mountain National Park. Park your car for free at the Estes Park Visitor Center and take a convenient free shuttle to the park. Rocky Mountain National Park is 415 square miles of beautiful trails, mountains, and wildlife. Plan ahead if you are planning to visit this spectacular site. Park entry fees vary, visit nps.gov/romo/ for more information. 3. Take in a round of golf at either of the two golf courses in Estes Park. An 18- hole regulation course and a nine-hole course are open to the public. (winter months included) Rocky Mountain National Park

Drop by the Stanley Hotel and take a tour of the world famous “haunted hotel” made famous by the movie “The Shining.” Spend the night in this unique hotel and enjoy the popular Night Ghost Tour. Recommended for ages 13 and up. Too scary? Try out any of the charming hotels or camp sites located in the area.

Big Thompson River is a popular spot located in Rocky Mountain National Park to catch Browns, Rainbows, Brookies, and the highly sought after Greenback Cutthroat Trout. If you enjoy more solitude, try Mirror Lake in the Northern area of the park. This area is one of the least visited areas of the park and the perfect place to catch some brook trout. Before your fishing trip, remember anyone 16 and older must be licensed to fish in the state of Colorado. You can purchase a license to fish at shops in Estes Park. Make sure to have a valid US picture ID and be ready to provide your social security number when applying for a fishing license.

After a few days of quiet, Pepper really came out of her shell. Pepper is now a 1-year-old and really enjoys dipping her paws in the water, taking long walks at the park, and eating
