AROUND TOWN and the Old Mill Brew Pub, at Lexington’s Ice House Amphitheater. Judges awarded the winning spot for the traditional chili category to the Lexington Firefighters team: Rollin Reynolds and Lexington County Fire Services. The Carolina Wings' team took top honors for non-traditional chili, and the 3P Chili team for showmanship. The people’s choice award went to the Town of Lexington team. Hundreds of diners participated in the taste testing.

THE RIVER DISTRICT: NEW WEST COLUMBIA RESTAURANT FUSES SOUTHERN, ASIAN MENU Palate, a "New American cuisine" restaurant, recently opened at 116 State St. in West Columbia by co-owners Sally Wu and executive chef Levi Whitlock. While they are incorporating seafood, they also say the menu is shaped by Asian, Southern, Spanish and Jamaican influences as well. For weekend brunches, the new spot is serving savory dishes, such as shrimp jambalaya grits and Nutella-stuffed French toast. Jonathan believes in Mission 22’s objectives so much, he included contact information about the organization on the back of his personal rental company’s business cards, so it prompts conversations. “If more civilians realize what veterans are going through and what they need, they will better know what to look out for regarding veterans that need assistance with suicidal thoughts,” he says. Because soldiers are taught to compartmentalize and to often suppress emotions so they can stay on mission, Jonathan says it’s difficult for others to pick up on what veterans may be really thinking or feeling. Serving warriors and their families since 2013, Mission 22 ambassadors are dedicated to healing America’s veterans by providing treatment for Post-Traumatic Stress and Traumatic Brain Injury, substance abuse and all of the issues veterans are facing today. Mission 22 assists veterans through three main programs: veteran treatment programs, memorials and national awareness. The group serves combat veterans, those injured in training who therefore could not deploy and victims of military sexual trauma. The group’s ambassador volunteers educate the public on veteran issues, help get veterans into Mission 22 treatment programs and create resources in their communities. In the war against veteran suicides, Jonathan assures that caring organizations filled with patient people are the key. He’s in the process of becoming an official Mission 22 ambassador for the Midlands region. “War affects people differently, and I want to help others who, like me, are struggling with changing their perspectives,” he says. You’ll be blown away about just how good coffee can be,” he asserts. Bart knows first-hand what a journey it can be to find the ‘just right’ coffee for individual tastes, as he says he didn’t drink much coffee until four or five years ago. “Over the years, people had tried to tell me how to fix coffee. But I realized the challenge was finding a flavor I liked and a way I liked it. Everybody’s tastes are different, and coffee is made for people to enjoy. So, I always tell customers to find the way they individually like it, because all ways of drinking coffee are perfect!” he explains. Bart likes extremely smooth coffee, and through experimentation, he came up with his signature, flavor-enhanced java beans, which is

a secret recipe not to be revealed. “I think flavor should work with, and lightly blend with, the coffee. It’s like using seasoning on food--you want it to enhance, not overpower, your dish,” he says. This small-batch coffee roaster says he also set up his company to help others along the way. Bart says the coffee company was founded on the principle of maintaining a focus on the coffee, not an image. “We believe that when you buy our coffee, you’re buying the coffee, not fancy packaging, flashy websites or wiz-bang gimmicks. For us, it’s ALL about the coffee itself,” he adds. Giving back to community causes also was important to Bart, stemming from his sister, Sharon, being a breast cancer survivor who, in turn, wrote a book and created care packages to help other women understand what they faced during chemo therapy, radiation and surgical treatments. Bart says his sister was always his biggest fan during his whole life. Tragically, after being a 20-year cancer survivor, Sharon was killed in a car accident on Jan. 31, 2019. Bart, along with Sharon’s friend, Lucy, is determined to carry on her memory through “Sharon’s Fund,” whose donations and purchases earn customers loyalty points toward future coffee benefits at Bart’s mobile business while earning charitable funds from the coffee shop. All of the money raised through the fund is donated to the Sharon Baldwin-Crews Foundation, which supports women going through treatment for breast cancer via CarePax. CarePax is Sharon’s nonprofit organization that supplies women with “Got Your BackPax” and the book “My Chemo Cocktail & Me,” both of which provide the tools that women need to face their treatment head-on with the knowledge and support of women who have walked the same path before them. When Bart launched his coffee business during February 2019, he knew he wanted to devote funds toward good causes rather than spend money on expensive product packaging, so he’s kept the plainer, eco-friendly craft bags with which he launched. factors that make Bart's coffee unique Beans from Brazil, Ethiopia, Guatemala and Peru are represented. At least 90% of the beans used in Bart's coffees are organic; the other 10% are natural. All of his are hypoallergenic. Bart deliberately chose an extract-related process, rather than an oil-based one for his coffee flavorings. He says it's like adding seasonings just to enhance the overall flavors, not to overpower the java. He prepares his green coffee beans in an electric roasting machine, rather than a drum roaster. This electric method uses a clean air process, leaving the beans ready to grind immediately. He says beans prepared in heated drum roasters must be "rested," or set aside, for several days to allow them to de-gas because carbon dioxide forms inside the beans as they're heated and transformed.

PLANNING A VACATION TO A PRIVATE ISLAND IS THE ULTIMATE LUXURY GOAL. Cayo Espanto is a private island resort off the coast of Belize-blissful for serene beachy escapes, perfect romantic honeymoon destinations or checking “staying on a private island” off bucket lists. The island is quaint, stretching for 4 acres, about 3 miles from San Pedro in the Western Caribbean. Expect personalized, five-star attention, with only seven villas total. Each villa is screened, so private guests may go an entire trip without seeing another visitor. There are no footprints in the sand, other than your own--which staff members wipe clean like magic, keeping the beaches pristine. I am now certain that paradise has coconuts and shells along the beach! This island provided numerous people to meet me at each point from when I stepped off the plane, all working together to ensure guests never wonder where they need to go next to arrive at paradise. We were escorted to a private golf cart to a private boat ride, which went straight to our villa. The staff on the island was ready for us, even though we were ahead of schedule, with their famous, frosty blue five-alcohol blended (secret recipe “The Wave”) cocktails in-hand. The villa streamed any music desired, provided by an iPad. Every morning, I woke to the beautiful music of birds. From relaxation to adventure, everything was on our own schedule. Staff always “knocks” verbally before entering villas. There are no actual walls to knock on, so they have to say, “Knock, knock.” Staying in a room with no walls was novel. At first, you miss having walls, then start wondering why any homes would have walls, with these views and the weather of paradise. At night, villas can shut and feel almost air-tight to protect from any weather, wind or bugs. Everything on the island was top-notch, no matter how simple or refined. Hands-down, this private island is also a foodie’s paradise, with dishes catered daily by award-winning chefs; special requests welcomed. And, the coffee and tea is so fresh and tasty, they deserve their own separate acknowledgments. Every day, every detail is customized to guests. Most of the time, this vacation was all about doing nothing and adjusting to “island time.” The only sign of the outside world is the occasional small airplane in the distance, which only reminds of the wonderful way you started this journey. Many celebrities have stayed at Cayo Espanto, including Robert De Niro, Bradley Cooper, CEOs, Hollywood producers and Leonardo DiCaprio.
