Chef Randy Olmstead

CHEF RANDY OLMSTEAD’S TAGLINE IS, “INDULGE YOUR SENSES.” Through the years as a chocolatier, he’s made thousands upon thousands of candies that are created for people to do just that. “First you have to see it,” he says. “Then you’ll smell the aroma. As you taste it, use your mind to transport you to a memory. That’s my favorite part.” Chocolate, for most people, is evocative, and that’s what’s special about The Perfect Truffle. Chocolate has been part of Randy’s life as far back as he can remember. “My first experience with chocolate was as a young child. My grandmother would work making chocolate during the holidays of Easter and Christmas. She, my mother and aunts would be in the basement hand-tempering several hundred pounds of chocolate. They were making candies for the church and the community and elsewhere.” Studying as a pastry chef at L’Académie de Cuisine, Randy did not intend to become a chocolatier. However, during the lessons on chocolate, he says, it brought back some memories of his grandmother. “I could recall sitting on the steps of the basement with the huge marble slabs of chocolate sitting there, and the aromaticness of the chocolate seemed to seep into my DNA a little bit. Even to this day, the smell of chocolate is more satisfying to me than eating the chocolate,” Randy says. Opening The Perfect Truffle was the niche Randy knew he could fill. And he was right. He’s been making small-batch, artisanal art in the form of chocolate for 15 years. Through the years, a young man, fascinated by the chocolate, would pop in from time to time to taste the truffles and chat about chocolate. He often said, “I’m going to work for you.” After graduating from Linganore High School, Cody Marwine attended the Culinary Institute of America in New York’s Hyde Park. He studied and worked alongside world-renown chefs and had diverse experiences with travel, learning about flavors and the science of food. His trajectory changed when his brother sent a photo from The Perfect Truffle. “I always wanted to make candy in general,” Cody says. “But, the only way to make the best candy is to learn the aspects of everything else. At the restaurant, Nougatine at Jean-George, working with Johnny Iuzzini, his style of desserts were very different.” Cody developed a strong palette for acidity and balance while working with Fabian Von Hauske from Mexico City. And, because the desserts were acidic and super salty, it led to how he develops flavors. “Overall, I wanted to learn how to make candy, and making candy by hand is slowly dying just like a lot of trades. My goal is to expand to other candies because there are other wonderful candies, like caramels and toffees,” Cody says.

“OVERALL, I WANTED TO LEARN HOW TO MAKE CANDY, AND MAKING CANDY BY HAND IS SLOWLY DYING JUST LIKE A LOT OF TRADES. MY GOAL IS TO EXPAND TO OTHER CANDIES BECAUSE THERE ARE OTHER WONDERFUL CANDIES, LIKE CARAMELS AND TOFFEES.”

When Cody returned from New York, Randy brought Cody onboard.

Randy is

emphatic. “Cody will be the one to take us to the next level,” he says. “He has a lot of the same vision and ideas about flavors, tastes and quality that I have. He’s younger, with a different palette, with experiences of different flavors from around the world. He was able to come up with other flavors I wouldn’t even think of.” With that said, Cody has big shoes to fill. Randy says, “I’ve been doing this for 15 years. Cody’s ideas are just a little bit sharper and a little bit fresher. For this company to continue the growth and path of success it’s had over the past 15 years, I’m relying on the next generation to bring fresh, new ideas. That’s why I’m counting on Cody to manage day to day at The Perfect Truffle.”

Now that Chef Randy has Cody

in the shop and a little spare time, he has plans that include traveling to Florida, scuba diving with Wounded Warriors and saving the oceans. And as for the Perfect Truffle, we can’t wait to see what delectable treats Cody creates. The delicious truffles on the cover are handmade at Frederick’s award-winning Chocolatier Cody Marwine

Perfect Truffle on North Market Street. They are the perfect gifts for clients, colleagues, friends and family. You can even have a custom truffle or chocolate bar made with your logo or design of your choosing. What a great way to support a local business this holiday season! PerfectTruffle.com

Inspiration with a Heaping of Gratitude FOUR LEADERS SHARE FROM THE HEART

ARTICLE RHONDA STEPHENS

HERE IT IS—AUTUMN. It could be said that September and October are simply precursors to the real star of the show. September may herald autumn with a few falling leaves and tons of weddings; October is flashy-autumn, with its hayrides and bonfires, pumpkins and Halloween—and more weddings; but what we’re really longing for is November! November with its last of the falling leaves, chill in the air and gentle manner. This is the month, before the holiday rush, when we begin to feel settled. November encourages us to consider our blessings. It inspires us to reflect. It’s said that gratitude can actually alter your physiology; that the act of conscious gratitude can make you happier and more content. Read on to see who inspires our neighbors. With that inspiration comes gratitude for shared stories and encouragement, for laughter and learning, and for acts of service and commitment.

As the only woman-owned builder in Frederick and working primarily alone, she says she missed interacting with people. “So, I started a women’s group downtown. I intended this women’s group to replicate the happy hour on Fridays with your coworkers, which I didn’t have. We started meeting once a month, and it’s grown and grown and grown.” Jessica loves living and working in Frederick. “It’s a town with a sense of community,” she says. “I’m thankful for this core group of supportive women in Frederick which exemplifies a sense of community and support and concern—not only for Frederick but the global better good. The women, who are an inspiration to me personally, are models of leadership and strength and include Karlys Kline, founder of the Women’s Giving Circle; Jan Gardner, Frederick County executive; Kelly Schulz, Secretary of Department of Commerce; Bethamy Beam, litigation attorney and judge; Pam Plante, Simplivefy; and Jessica Patterson, Jessica Patterson Photography. NAME: Charlie Smith BUSINESS/ORGANIZATION: State’s Attorney for Frederick County WHO ARE YOU? Charlie has been the chief law enforcement official as state’s attorney for Frederick County since 2007. His office works with local police agencies and state and local government agencies to prosecute serious crimes and motor vehicle offenses. Charlie enjoys his position and shares that he finds it continually rewarding to help victims of crime and to help them through what is usually the most difficult time of their lives. With such a challenging job, one might expect he could use a little downtime. Relaxing for Charlie used to look like ultra running and also participating in an occasional Ironman triathlon, but now he pedals long distances with a bicycling club adding, “It’s easier on the knees!” StatesAttorney.us WHO INSPIRES YOU?

Desiree' Smith Charlie lights up when speaking of his inspiration. There was no question who he would name. Photography Annette Senio

“Well, I would have to say, Desiree’ M. Smith, my wife and the mother of my children. She’s an incredibly dedicated and talented special agent with the FBI. She has worked so hard over the past 20-plus years to make this nation, state

and county a better, safer place and has done so in law enforcement, an environment in which women find it difficult to excel. Those difficulties never dampened her resolve to seek justice.” Charlie goes on to say, “It’s easy to point out single events like her Evidence Response Team duties at the Pentagon on 9/11 where she was hands-on, in the wreckage, responsible for ensuring remains were recovered with dignity. Seeing her, day in and day out, maintaining zeal for her faith, job and family has been an inspiration to me to do the same as state’s attorney.”

NAME: Sue Hough BUSINESS/ORGANIZATION: Octavo Designs WHO ARE YOU? Sue Hough is the founder and creative director of the downtown Frederick business Octavo Designs, a web-development and marketing firm that offers both print and interactive marketing services. Having founded the company in 2000, Sue has grown her business into the nationally recognized graphic studio it is today. WHO INSPIRES YOU?

My Girl Squad Standing outside her office under a beautiful blue sky, Sue Hough says she is grateful for many things, but what comes instantly to mind for her is her girl squad. “Sharon Riser, Jennifer Gerlock, Tiffany Ahalt and Jasmine Sneed are the ones who truly inspire me,” Sue says. She met her squad through business and volunteerism, and they all joined together in friendship. Photography Annette Senio

Sue continues, “As an entrepreneur, it’s hard to have people to talk to, and having other women in business makes it easier. They are a wonderful group of talented ladies, rockstars at what they do. If they see a need in the community, their response is, ‘How can I help?’ Their big hearts inspire me with all that they do for Frederick, for their families and

for me. They are both clients and dear friends. We do business, hang out, volunteer and support each other. We laugh. We cry. We enjoy true friendship.” 20

NAME: Rick Weldon BUSINESS/ORGANIZATION: President and CEO of the Frederick Chamber of Commerce WHO ARE YOU? Rick Weldon has served with the Chamber of Commerce for more than seven years and says it’s a very fulfilling thing to help small businesses get bigger. He has worn a few professional hats during his life; however, between his career with the Navy, his two terms as delegate for Maryland’s House of Delegates and his current position as CEO and president of the Chamber of Commerce, Rick seems most proud of his “job” as a grandfather to his five grandsons. FrederickChamber.org WHO INSPIRES YOU?

Previous Generous Generations In his office at the Chamber of Commerce, Rick Weldon comes alive as he speaks of the previous generations of men and women of Frederick who left lasting legacies. “I’m inspired by them! I’m thankful that these men and women had forethought and vision for Frederick and its residents,” Rick says. There are three businessmen that Rick finds exceptionally inspirational: Charlie Main, Jerry Offutt and Don Linton. Together, they formed the Community Foundation which created endowments that will live on in perpetuity. Rick says that they, and many others, used their resources and reinvested them in bedrock components of our community that today we celebrate as part of the quality of life we have, here in Frederick. He explains, “When we take advantage of the Frederick Memorial Hospital, the United Way, the Community Foundation, the ARC of Frederick, the Delaplaine Center, the Weinberg Center of the Arts, and so many more, it’s as a result of the commitment of those who came before us.” What’s more inspirational than those who have left a lasting legacy that continues to benefit our community? Corks with Cade Celebrates Overcoming Infertility BRINGING HOPE TO FAMILIES

24

Frederick Lifestyle | November 2019

AT HIDDEN HILLS FARM AND VINEYARD IN FREDERICK, ON A BEAUTIFUL SUNNY AFTERNOON, THERE WAS A PARTY GOING ON, BUT THIS WAS NO ORDINARY PARTY. Each of the guests, in some way, had been touched by infertility and had come to celebrate at the third annual Corks with Cade fundraiser in support of the Tinina Q. Cade Foundation. For many, it was a reunion. Around the grassy venue, families greeted each other as friends. Doctors welcomed the hugs and greetings of the families that they had the privilege of helping. Children played and babies cooed. Founded in 2005 by Drs. Camille and Jason Hammond, the Cade Foundation’s mission is to support families with infertility by providing education and grants that assist in paying for infertility treatment or domestic adoption. Dr. Art Sagoskin and wife, Robin, hosted the fundraiser and have been huge supporters of The Cade Foundation from the beginning. The genesis of the foundation is personal for Dr. Hammond. She and her husband struggled for many years with infertility. After five years and six unsuccessful rounds of in vitro fertilization (IVF), Dr. Hammond says, “We were counseled by our doctor to consider a gestational carrier or adoption. We didn’t know anyone who had had IVF, let alone someone who had had someone carry a baby for them.” Dr. Hammond goes on to say that her mom and dad had seen a segment on TV about a post-menopausal woman who had successfully carried a baby for someone and suggested that it was something they thought her mom could do for them. Initially, the response was no. But with the persistence of her parents, they moved forward in faith. Her mom, Tinina Q. Cade, got the go-ahead from her doctor, and a year later, she delivered three babies. “We prayed for one and ended up with three perfect babies,” Dr. Hammond says. Determined to pay it forward, they formed the Cade Foundation, named in honor of her mother. The initial goal was to help one family. “We wanted to raise $10,000 because we knew small grants don’t go far in the fertility or private adoption world,” she says. “But that goal, to raise $10,000 to give to one family, has grown to help 113 families and award over $800,000.” The McLaughlin family came to support the Corks with Cade event. Advocates for infertility support, they know from firsthand experience about the challenges faced by families who are infertile. Their story spans 15 years, and in that time, they welcomed two beautiful daughters into their family.

Beginning their journey to parenthood a little later in life, Rhonda and Salyer McLaughlin knew that IVF and adoption were their only choices. Having tried, unsuccessfully, to become pregnant, Rhonda discovered that she had endometriosis, which required

WHAT LIFE WOULD BE LIKE WITHOUT HER!”

“IVF was our first option, and we chose

Shady Grove Fertility because of their reputation,” Rhonda says. “Going to Dr. Robert Stillman, we got started right away and did a total of three full cycles.” She says with each negative result, they nearly gave up. After the third cycle, they received the call they had been waiting for; Rhonda was pregnant! Ever Lee made her way into the world in 2004. However, their story doesn’t end there. “We had not intended to wait so long to try again,” Rhonda says of wanting another baby. “I had one embryo that had been frozen from the first round 14 years prior. We had a lot of life challenges along the way that required us to put pursuing another baby on hold. As time went on and I entered menopause, I thought that it was too late, and we would need a surrogate.” Getting in touch with Dr. Stillman to talk about the next steps, Rhonda was surprised to learn that menopause was not a problem since they didn’t have to retrieve eggs and her embryo was already available. Dr. Stillman explained that Rhonda would need hormones at the beginning to take her out of menopause, and then her body would take over the rest while pregnant. Life couldn’t be better for the McLaughlin family. With a span of 14 years, the McLaughlins welcomed Ever Lee’s twin, Harper Lee into the world. Ever is thankful that her parents persevered, and there is no doubt she adores her twin sister. Hugging Harper, she adds, “I didn’t really want a little sister, but now I can’t imagine what life would be like without her!”

Cultivating Gratitude— One Book at a Time

NOVEMBER IS A GREAT TIME TO REFLECT AND BE THANKFUL. What better time of year than the one that has a holiday for giving thanks? Cultivating a heart of gratitude takes work and, as they say, practice makes perfect. Choosing to focus on the positive things in our lives, things that bring us joy, and putting

away the negatives, takes conscious effort and determination.

PHOTOGRAPHY JESSICA PATTERSON

As Andrew Carnegie says, “Anything in life worth having, is worth working for.” Just 28 days is what it takes to create a habit. Making small efforts, such as writing a quick thank-you note and leaving it on the mirror, will lead you to create new habits that can make gratitude a natural part of your life. Whatever situation you may find yourself in today, choose to be thankful. It’s been proven that an attitude of gratitude makes people happier and allows us to live longer and to have a more positive outlook on life. Here are five books that have helped me in my journey as I work on cultivating a heart of gratitude.
