Stained glass painter Marie Foucault-Phipps, who worked on this project, was married to Lawrence Phipps III, son of Lawrence Phipps, Jr., the owner of the mansion from 1937-1976. She was married to Phipps III until he passed away in 2016. “The glass on the main door experienced lead fatigue. A support bar had fallen and with no support and frequent slamming of the door, pieces of glass had broken and some were ready to fall. It needed complete re-leading,” Marie says. “All the Mansion’s stained glass have very unusual designs," Marie says. "It was a challenge to glaze due to the complexity of the design and the stiffness of the lead.” Visitors can see the repaired glass in the front door during trips to the Mansion. Wine DAUGHTER-FATHER TEAM STRIVES TO CREATE GREAT WINE AND COMMUNITY — ONE LOVINGLY CRAFTED BOTTLE AT A TIME

ARTICLE JENNIFER STARBUCK PHOTOGRAPHY ROGER BALLARD MALISSA NUGENT SAYS SHE’S LEARNED TO EXPECT THE UNEXPECTED EVERY DAY AT WATER 2 WINE WINERY. She’s had fermenting wine explode in her face. And she gets the occasional visitor who thinks Water 2 Wine is a church. “We’re the right kind of church,” Malissa says laughing. “You get to drink wine at this church.” But above all, Malissa says, Water 2 Wine is a welcoming atmosphere where people can come learn more about wine and unwind with friends. “It’s a living room atmosphere. We want you to come in, learn about wine and relax,” Malissa says. Malissa co-owns Water 2 Wine with her father, Dan Nugent, who never lets a Friday happy hour go by without making the rounds in

one of his many kilts—he’s Scotch-Irish after all. Dan served in the U.S. Navy for 23 years. “People’s reactions are hilarious,” Malissa says. “They love having conversations with my dad.” Water 2 Wine buys concentrated juice from more than 100 wineries in 13 different countries. She started the blog in 2010 as a way to put into writing all the amazing food she remembered her mother, Evangelina Soza, and her late grandmother, Jesusita, making—recipes that had never been written down. Things that include gorditos, chiles rellenos and tamales. “When I was growing up, we didn’t call it Mexican food, we just called it food,” Yvette says. Yvette says she never could have imagined her career as a food blogger, video producer and on-air personality when she moved to Colorado from El Paso more than 20 years ago. Her Muy Bueno blog had already started to gain momentum when she was laid off from her job as a graphic designer. Yvette says she told her husband she was going to take a chance and make the blog full-time, and she’s been going strong ever since. This past summer, Yvette also traveled to

DIRECTIONS Rotate the central dial of the Instant Pot to "saute" function. When it

Pass diced avocado, tortilla chips, cilantro and sour cream for garnish. NOTES This soup will thicken as it sits. Just add more broth when reheating for leftovers. The sour cream is not optional. The creamed corn and the combo of stirring in that big dollop of sour cream give this soup it's creamy nature. CONTINUED >

TOASTED PUEBLO CHILE CHICKEN SANDWICH INGREDIENTS

DIRECTIONS

+ 8 slices sturdy rustic bread or hoagie buns

Preheat oven to 400 F.

NOTES You can use shredded chicken meat from a rotisserie chicken, or simply bake a couple of boneless, skinless chicken breasts and shred the meat. Then proceed with building this sandwich.

BLACK BEAN CHIPOTLE BISON CHILI WITH LIME CREMA INGREDIENTS

12 servings

DIRECTIONS

+ 2 pounds ground bison + 2 tablespoons extra virgin olive oil, optional + Salt and pepper + 3 cups chopped onions (about 2 medium onions) + 6 garlic cloves, finely chopped + 1/4 cup chili powder + 32 ounces beef broth + 28 ounces fire-roasted chopped tomatoes canned, undrained + 1/2 cup stout or dark beer + 4 canned chipotle chiles veins and seeds removed, chopped + 3 tablespoons yellow cornmeal + 30 ounces black beans, canned, rinsed and drained + Salt and pepper to taste

Heat a large stockpot over medium-high heat. If your ground meat is very lean, add 2 tablespoons of extra virgin olive oil to the pot before adding the ground meat. Season with a little salt and pepper and cook until meat is almost browned, using a spoon to break up meat. Add onions and garlic and cook until softened, about 5 minutes. Add chili powder, broth, tomatoes, beer and chiles. Bring to a boil, reduce to low, cover partially, and cook until very thick, about 1-2 hours. Then stir in cornmeal and add black beans. Let simmer together for 10 minutes before serving. Combine sour cream with lime zest and juice of one lime and serve chili in bowls with a spoonful of lime cream on top. To serve, ladle a large dollop of Lime Crema on top of the chili. Garnish with chopped cilantro, chopped avocado and sliced green onion.

HIDE IN PLAIN SIGHT IS HAVING ITS FOURTH ANNUAL CHARITY BENEFIT NOV. 2 IN ORDER TO FURTHER RAISE AWARENESS AND SUPPORT FOR THE HOMELESS AND STUDENTS WHO NEED ASSISTANCE IN COLORADO. At the event, donors and sponsors will be able to interact with students who are involved in Hide in Plain Sight. “This is to bring our supporters together so that they can see what we’ve done with their donations and the impact we’ve made in the students’ lives,” says Joe Roos, founder of Hide in Plain Sight. Hide in Plain Sight is a nonprofit organization that is special because it’s not a one-time scholarship program. “As long as the student continues with a satisfactory academic performance, we will follow them and support them,” Joe says. He says he finds this calling deeply fulfilling. He understands everyone at some point in their life needs help. He originally planned on helping one or two students, but that idea just continued to grow. “We’ve helped over 200 students statewide in the last four years, with over $400,000 dollars in scholarships,” he says. Hide in Plain Sight has two scholarship programs, the Robin Hood Program, which is designated for pre-school to 12th-grade students, and From Homeless to Hired, which is a post-secondary school scholarship. The latter is for students who are homeless or living in poverty and are interested in going to a two- or four-year college or trade school. The students range from pre-K to 62 years-old. “The objective is to help these students get an education so they become competitive in the job market. They’re able to earn a living or sustainable wage and then break their cycle of homelessness or poverty,” Joe says. Joe founded Hide in Plain Sight in 2015, soon after he found out there were more than 900 homeless students in Douglas County. “It was to kind of fill a gap for the homeless situation in our community and those in poverty,” Joe says. Joe says the donors who have supported Hide in Plain Sight have directly helped homeless students in Douglas County achieve success. “Our donors are the fuel,” Joe says. “Hide in Plain Sight is the gas tank, and our colleges and trade schools are the engines.” Hide in Plain Sight 2019 Charity Benefit + 5-9 p.m. + Nov. 2 + Infinity Park Event Center, 4400 E.
