COMPOSTING BASICS WITH THREE TREES FARM

WHEN TALKING “FARMING” WITH MATT BROWN, HE ALWAYS SEEMS TO TAKE IT BACK TO THE EARTH AND STAYING IN TUNE WITH MOTHER NATURE. In 2018, Brown; his wife, Kim; and their three sons followed their passion and began the eight-acre Three Trees Farm (www.threetreesfarm.net) just outside of Bellbrook. “Quality starts with the soil for everything,” Brown says, noting that with healthy soil, produce has higher nutritional content, richer aroma and more flavor. “That plant is set on a path to success.” A scenic setting enhances Three Trees Farm, where young chickens fly the fence and mingle with cats around the majestic roadside barn. The Browns consider their operation a step beyond organic: a biointensive produce farm, utilizing high-quality organic fertilizers, natural compost and minerals, and manual weed control. When spring hits, the barn will become a small market farm, offering, as Matt puts it, “everything on the outside aisles of a grocery store.”

Size matters—for the pile and for the material. Uniform, small particles expedite the process. The larger the pile, the better; at least 2 cubic yards is recommended. Have 25 parts carbon (brown, woody material) per 1 part nitrogen (green material— grass, manure, food scraps—no meat). Turn, or stir, the pile at least once a week. Water thoroughly and often, to keep from drying out. Smell is important. Good compost should smell rich and earthy. Bad smells are an indicator of anaerobic (without air) activity and can usually be remedied by turning the pile. The pile should reach an internal temperature in excess of 131° F for at least three days. If the temperature lowers, something is missing: air, carbon or water. Compost is ready when the pile returns to ambient temperature and resembles rich, dark and loamy soil.

Then cover with cardboard, and then water. Next put a layer of leaves or grass clippings, and water. The last layer is quality compost.”

PROTEINS Protein makes you feel full longer. If you eat a meal with little protein, you’ll feel hungry again pretty quickly, and it can be discouraging. But you don’t have to eat a huge steak to get enough protein. You can find it in cheese, nuts, seeds, spinach, eggs, avocados, broccoli, hummus, lentils—the list goes on and on! Mindful eating means taking note of how hungry you feel and eating enough protein to satisfy that hunger in a way that will last.

C A R B O H Y D R AT E S Carbohydrates are not your enemy. But, it is important to pay attention to how you feel when you eat them. If you eat a lot of carbs in one sitting, it can cause your blood sugar to spike, and when it drops back down, you can feel lethargic and maybe even irritable. By spreading your carbohydrate intake throughout your day and always pairing it with a protein, you can help your body regulate your blood sugar more effectively and feel more alert all day long.

F AT S Fats also help slow carbohydrates down so they don’t instantly turn into sugar in your bloodstream. Fats are important for energy, and it’s especially important to eat the right kinds of fats for your brain. generally more expensive, she said. “But the benefits [of using natural alternatives] are higher-quality products that are better for your skin and overall health—and better for the environment.” Dr. Harrison’s Dayton area-based natural skincare company, Willowdale Botanicals, works with health-friendly, skin-friendly, environmentally friendly alternatives that are cruelty free and vegan. tips for a clean beauty routine: TIP 1 Be gentle with your skin; avoid mechanical rubbing and scrubbing and excess heat (warm is okay, but hot is not), because all of these things can cause irritation and breakouts. TIP 2 Avoid harsh cleansers, such as those that contain sulfates, a foaming agent that can overdry the skin and actually cause it to overproduce sebum. Look for products that contain natural oils and plant extracts. TIP 3 Avoid ureas, formaldehyde and parabens. Often used as preservatives in skincare products, they can cause skin irritation, allergic reactions, and danger to your health and the environment. Formaldehyde has been classified as a human carcinogen, or cancer-causing agent, and urea can release formaldehyde. Parabens are a known endocrine disruptor that can increase the risk of developing cancer in the breast and reproductive system. TIP 4 Choose skincare companies that understand the science of natural skincare. Some companies use plant ingredients that are actually irritants or allergens, or are comedogenic (pore clogging, breakout causing). Coconut oil, for example, while wonderful for some people, can cause people with acne-prone skin to break out.

The Horiatiki, or “Villager,” omelet, as it translates from Greek, sure hits the spot! “Growing up, my family would go to Greektown in Tarpon Springs, Florida, and get these really fresh Horiatiki salads,” he said. “I decided to try those ingredients in an omelet, and now this is my go-to breakfast meal!”

horiatiki (villager) omelet INGREDIENTS + 2 large eggs + 2 separate tablespoons extra virgin olive oil (EVOO) + 1 tablespoon balsamic vinegar + 1 tablespoon red wine vinegar + 1 dash each salt, black pepper and dried oregano + ¾ cup halved grape tomatoes + ½ cup sliced white onion + ½ cup sliced bell pepper + ¼ cup diced cucumber + ¼ cup crumbled feta (½ cup for cheese lovers) + Balsamic glaze for garnish (optional) DIRECTIONS In a bowl crack 2 large eggs. Whip until smooth. In a separate bowl (large enough to mix ingredients freely), add all cut vegetables and spices, and mix well. Place 8” skillet over medium heat and coat it thoroughly with 1 tablespoon EVOO. Add half of the spiced vegetables to the skillet and cook for 2 minutes, stirring or flipping every 30 seconds or so. Add beaten egg mixture to the skillet. As eggs cook, move the skillet in a horizontal circular motion to loosen the omelet and flip it upside down in the skillet. Add feta to the top of the omelet and fold in half. Slide to plate. Take the remaining vegetables in the bowl and add the 2nd tablespoon of EVOO and both vinegars to the vegetables. Mix well. Add mixed vegetables over the top of the omelet. Drizzle with balsamic glaze for extra pizazz. 34
