country travel to our area to indulge their foodie obsessions. Some recent examples spring to mind. This summer while picking up a rental car in San Francisco the counter agent, noting that I was from the Chicago area, talked about fulfilling a bucket list trip to our neck of the woods. The guy waxed poetically about Chicago-style hot dogs, deep dish pizza and Garrett Popcorn. Last month a chef friend came up from Texas on a scouting trip to check out some of the hottest restaurants in the West Loop. He returned home with his brain brimming with new taste sensations he couldn’t wait to share with his staff. This summer Barrington Schools offered a cooking class to grade school kids who gained exposure to the culinary arts. The students even engaged in a Junior Top Chef-styled cupcake competition much to the delight of parents and teachers who judged the kid’s efforts. In this issue—our annual homage to the Foodies in our midst—we celebrate the work of local chefs, including three right here in SW Lake County who are

JIMMY CHEN TOOK A LONG, CIRCUITOUS JOURNEY TO OPENING HIS NEW RESTAURANT, POKE BURRITO, IN DEER PARK TOWN CENTER THIS SUMMER. Born in China, raised in Iowa and once a teenage helper in the kitchen of an uncle’s restaurant, Chen put in lots of time and invested plenty of sweat equity before striking out on his own. His Deer Park restaurant is the fourth in Chen’s growing restaurant empire that includes locations in Chicago and Oak Park, as well as nine outlets in Pete’s Fresh Market, a fast-growing grocery chain in Chicago and the south suburbs. How about that name? Poke (poe-kay) is a style of fresh, raw fish salad made popular years ago in Hawaii. Typically made with ahi tuna, variations also include salmon or shellfish. So what’s on the menu? As the restaurant name implies Poke Burrito is a hand-held concoction stuffed with a combination of sushi-grade tuna or salmon, vegetables and savory sauces. If a burrito isn’t your thing, the staff will happily create a bowl brimming with fresh, healthy ingredients. Want chicken? No problem.

Vegetarian? Coming right up. Thirsty? If you’ve never had bubble tea it’s a real treat made from brewed tea served cold with milk, fruit, sugar and tapioca (hence the “bubbles”). Like ramen? Once you’ve had a ramen the right way at Poke Burrito you’ll never want to eat another bowl of dried noodles flavored by a tiny spice package. “I guess you could say restaurants are in my blood,” Chen said recently over a fresh ramen he prepared for himself and a guest. Chen explained that he plans to open a couple more restaurants in the suburbs before turning his attention to possibly franchising the concept. Until then he’ll stay focused on guaranteeing the freshest poke experience for his fast-growing legion of fans.

Scattered around the u-shaped bar sit some regulars. A family is over in the corner making carryout pizza disappear. Outside between the front door and parking lot a couple is nursing their beer and enjoying an evening together on a late summer’s eve. Over in a Lake Zurich strip mall there’s a crowd in the parking lot outside Roaring Table Brewery. No, the beer taps haven’t been moved outside. Instead the lengthening line has gathered for another appearance of the big and loud Chicago Culinary Kitchen (CCK) food truck. From an open window the tattooed, Mohawked matron of CCK, Kristina Gaardbo, takes orders for brisket, pulled pork or amped up Mac ‘n Cheese. After gathering groaning plates at the window customers head inside to Roaring Table to sit at the

Brewer Lane Fearing makes the beer adjacent to the taproom that his designer wife, Beth May, created, featuring cool grays, high ceilings, custom woodwork, a wall of windows and a white marble fireplace. Fearing has a fearsome repertoire of beer styles, including big New England IPAs and fruited sours. In addition to inviting food trucks to stop by, Roaring Table often hosts other events from live music to a regular trivia night. The chill vibe of Bosacki’s stands in stark contrast to the noteworthy design and bustle of Roaring Table, but both breweries share something in common: what’s poured into every glass is made right on-premises. And the beer is really good. On the north end of downtown Wauconda stands Side Lot

FANS OF GREAT FOOD IN-AND-AROUND BARRINGTON (AND MANY FROM FARTHER AWAY BECAUSE IT’S WELL WORTH THE DRIVE) HAVE DISCOVERED OVER THE PAST THREE YEARS HOW FRESHTASTIC A GENUINE FARM-TO-TABLE MEAL CAN TASTE. Owner Meghan McGinty talked recently with a guest in the Hayloft, a cozy upstairs bar where guests can have a cocktail, a meal or just catch up with Brittany & Dave, the bartenders who greet regulars by name. Its rustic decor includes many pieces from Meghan’s family’s farm. Farmhouse celebrated its third anniversary weekend in August. “The number of guests that came to support us at the anniversary was overwhelming,” McGinty recalled. “The flowers, gifts and hugs we received was incredible... I cried many times. Weekends like that are exactly why I wanted to open a restaurant.” The hands-down crowd favorite on the fall-winter menu? “That has to be the Deconstructed Chicken Pot Pie,” McGinty said. “People tell us it’s the ultimate comfort food, but without being too heavy. We use our own chicken stock for the gravy. It adds amazing flavor, and we don’t add a bunch of cream or flour. It’s more just letting the natural chicken and vegetable flavors come through with the farm fresh chicken. We can even make it gluten-free if desired, without the puff pastry.”
