AVON BREWING CO. OPENING NEW LOCATION IN MEDINA In July, Avon Brewing Co. announced it would be opening a new location in Medina County. The location will fittingly be called Medina Brewing Co. According to The Medina Gazette, both food and beer will be available, and it will hopefully open later this month or in November.

UNDREDS OF WHITE CHAIRS LINE THE NEATLY MANICURED GRASS IN A CIRCULAR MOTION. Surrounding the chairs is a beautiful stone patio decorated with a wooden altar in the center of the floor and a DJ booth to the right. A crystal blue pond with a fountain immediately catches one’s eye, as it

gracefully spouts water high into the air. Melodic music can be heard as guests stand happily chatting as they patiently wait to take their seats for the wedding. The Blue Heron Brewery and Event Center opened March 1, 2019, in Medina. Before the Blue Heron became what it is today, it went through quite the evolution. It was once a mansion-turned-country-club, and everything behind the facility was nothing more than 27 holes of blue skies, golf and greenery. From there, the township bought the land behind the establishment and transformed it into Austin Badger Park. Additionally, while the first half of the property was purchased in 2016, after undergoing a drastic makeover, the Blue Heron is now an event center and wedding facility. The second half of the Blue Heron property, once a former locker room and pro shop, was transformed into a restaurant and brewery. It has since expanded by adding another banquet room on the third floor, called the Heron Room. The 6,000-square-foot, modern ballroom holds up to 140 guests, complete with a terrace overlooking Austin Badger Park. Ultimately, it is ideal for company meetings, holiday parties and more. Reservations must be made in advance. Khadar Soussou, the general manager, has worked at the establishment since October 2018. He places an emphasis on learning about the individual so he can bring the client's vision to life.

Lindsay Gilchrist, a Strongsville resident, hosted her wedding at the Blue Heron on August 10, 2019, with Khadar as their primary wedding planner. Complete with a bourbon tasting, a Champagne tower and a shrimp display, their wedding was a night to remember. In fact, Lindsay noted how even

after the lights came on to wrap things up, “there were still 150 people in the room.” “Our food was perfect; we did a dual-plated chicken and beef as one option and a stuffed portobello mushroom with risotto as a second option,” Lindsay says. In the brewery, every Friday and Saturday, live bands play from 7 to 10 p.m. Additionally, the business hosts an amphitheater, complete with a pond, a 1,500-square-foot patio and a fountain. Some of the popular food items include an authentic Maryland crab cake and the Montville Mountain, a large portion of golden fries topped with savory avocado crumble, pico de gallo and pulled pork.

The facility is waiting to obtain its state permit, so they are not brewing beer yet. Currently, 16 craft beers on draft are available, along with a full beer, bottle, cocktail and wine list. Shea Sohovich, a Medina resident, brings a new meaning to the term “local.” He resides in the Blue Heron neighborhood with his wife, Michaela, and their two children, Carson, 10, and Cameron, 4. WHEN LONGTIME TIMBER LODGE STEAKHOUSE OWNER RON LEVITT DECIDED IT WAS TIME TO RETIRE AND STEP AWAY FROM THE RESTAURANT BUSINESS, HE KNEW HE NEEDED TO BRING IN SOMEONE LOCAL (AND PRIVATE) WHO WAS COMMITTED TO KEEPING THE RESTAURANT'S FINE REPUTATION AS ONE OF THE PREMIER STEAKHOUSES IN NORTHEAST OHIO. Ron had been in the restaurant business for his entire adult life and was the owner of Timber Lodge for the past 16 years. His hard work and attention to every detail of his business during those years have made Timber Lodge Steakhouse what it is today. With such a successful restaurant—ranked No. 1 by customers on Trip Advisor for more than three years now—there were many things for Ron to take pride in, but being an independently owned steakhouse and not selling out to a chain was very high on the list.

So when the new owner, Lynn Zarcone, came on the scene and discussions began about a smooth transition of ownership, the two were quickly able to work out a deal that allowed both Lynn to fulfill his longtime dream of owning a restaurant and Ron the opportunity to step away quietly after such an outstanding run in the restaurant business. "I think it was the perfect storm of timing and opportunity for these two to do business with each other, and it was the right time to pass the torch," says Lynsey Curren, Timber Lodge's front-of-house manager who has been there since 2013. "Ron was never going to sell to a chain, but he was ready, and the time was right. With Lynn, he found the perfect person to take over and to continue with what he grew." Anyone who knows of Timber Lodge's reputation will be glad to hear that new ownership doesn't equate to a new menu or operation style. "This restaurant has done so well for so long that I'm not looking to make any major changes at all," Lynn says. "Maybe a couple of minor things, like expanding the wine list and doing a few themed-type meals that will add a little something new, like the Bastille Day menu that we did in the summer, which offered some new French dishes that we hadn't done before. But other than that, it's going to be business as usual around here." In case you're wondering, at Timber Lodge, "business as usual" means a friendly, well-trained staff and nothing but the freshest meats, seafood, vegetables and fruits for their customers. Their steaks are sliced from only the highest-quality cuts of beef. Fresh fish and chicken are prepped daily by a kitchen staff that shows up to work every morning, eight hours before opening. The cooler is loaded with fresh greens for salads and vegetables for side dishes. Near the kitchen, you can find boxes upon boxes of the largest Idaho potatoes around. And, of course, several of Timber Lodge's famous roasted prime ribs can be seen cooking in the rotisserie oven every afternoon as the restaurant prepares to open for their faithful dinner crowd. Not only does Timber Lodge offer the best dinner menu around, but they also continue to do great business for their famous Sunday Brunch from 11 a.m. to 2 p.m., which offers a full gourmet breakfast menu and classic lunch menu items. The wildly popular Sunday-only brunch special bloody mary for an unbelievable 99 cents keeps guests coming back week in and week out. Guests can reserve the porch for a private event or family gathering as well. Seating is available for 12 to 20 people during regular business hours. Or if you need a larger space with more seating for guests, Timber Lodge also offers the use of their dining area during off-hours in the afternoon. This is one area of the business that Lynn says he would definitely like to expand. "We're really looking to do a lot more catering," Lynn says. "We would like to deliver more parties, especially with the holidays coming up, and also to cater parties right here at the restaurant before we open up for dinner. We can easily host a day party here from 11 a.m. to 3 p.m. with no problem, and that's something that I'm really trying to push so more people are aware of that." Thankfully, one thing Lynn does not need to make more people aware of is the kind of quality food and service customers will continue to get when they stop in for their next visit. Chances are the next time you are at Timber Lodge, Lynn himself will stop by your table to make sure everything is as great as advertised. "Lynn is a very personable person," Lynsey says. "He's just the kind of guy who can talk to anyone about anything and make it interesting. He's a natural in the hospitality business." 26

The customers. We have so many great regulars who drop in several times a week, whether it be for a drink, dinner or both. I also enjoy playing with recipes for new dishes. WHAT DEFINING MOMENTS SET YOU ON YOUR CAREER PATH? I’ve had several careers over the years. When I graduated from engineering school, I went into the Air Force as a commissioned officer. I stayed for eight years, making many lifelong friends along the way and meeting some of the most impressive people. Then I spent some time working in the quick-paced telecommunications industry running a large engineering department. This was exciting for a while, but over time, the excitement wore off, and working for a large corporation just wasn’t something I wanted to keep doing. So, my wife and I decided to take a risk and go into our own business, and here we have it. My wife, Joyce Hicks, is a software project manager and still works outside the business. By not having to rely on the business for our dayto-day life, we’ve been able to focus on growing. WHAT MOTIVATES YOU? Making our customers happy. We’ve gained a lot of loyal customers over the years, and these are the people who make it all worthwhile. These customers are the ones who will let us know when something is excellent or will tell us when we fall short. WHAT’S YOUR FAVORITE THING ON THE RIVERSTONE MENU?
