THE PROCESS MALTING THE BARLEY (OR WHEAT, CORN, RICE, ETC.) To release starch from the barley, it’s malted, which includes steeping, germination and kilning, and takes about a week. This converts the starch to glucose. MILLING AND MASHING The barley is crushed in a roller mill and mixed with water. This takes about an hour. At this step, each batch generates a few hundred pounds of a by-product known as spent grain. In what Chris describes as the circle of life, Loan Oak takes the spent grain to a nearby farm where it becomes livestock feed.

A Taste of the Aegean AH, MYKONOS, GREECE. A tranquil island paradise beloved for glorious beaches, quaint villages, a chic lifestyle and of course, the food. It’s no coincidence that Mykonos Grill in Rockville shares a name with this most popular Greek island. “We decided many years ago when we opened, to create an environment so that people have a feeling when they step inside, that they are in the Greek islands,” said Angelo Mitsotakis, General Manager and owner of Mykonos Grill. “We try to give them the whole atmosphere of an Aegean island,” he added. Highlights of dazzling blue recall the Aegean and positively pop against glistening white stucco walls and a rustic stone floor. Wall niches and other architectural details contribute to the feeling of strolling through a village, while a single red rose on each whiteclothed table beckons visitors to indulge in a special meal. Because, it’s also no coincidence that every meal at Mykonos Grill is special. And, the atmosphere is only the beginning. “The majority of our customers love the ambience,” said Angelo, who added that service is also special at Mykonos. “We have a friendly approach. Many of our people work with us for over 20 years,” he said. “Customers know servers’ first names and ask for them by name. Also, I am always on hand. People ask for me. I stop by the tables to talk about family. We’ve known these families for years. We know their kids and grandkids, and they ask about my family. People feel comfortable calling my cell to say, ‘Angelo, we have five people this evening. Can we come and can we have this server?’” Angelo estimates that about 80 percent of his business is from repeat customers. “But,” he added, “food is, of course, most important. We blend the whole package.” Open seven days a week for lunch and dinner (with coronavirus distancing and capacity restrictions in place, of course), Mykonos offers a menu brimming with options. There is no shortage of Greek classics including feta cheese, phyllo dough, grape leaves, Kalamata olives, tzatziki sauce and kebabs, as these favorites and plenty more are woven into delicacies from the Greek homeland, plus plenty of vegetarian choices, small plates, soups, salads, and much more. Combination meals invite sharing. “We don’t use any frozen items. Everything is from scratch,” Angelo explained. “We don’t use any cans or preserved ingredients. Fish, meat vegetables: Everything is fresh on a daily basis. That is why we’ve been so popular for 28 years,” he added as he explained that the restaurant is especially loved for lamb and seafood.

HOT SPOT (CONTINUED) “We are well known for our lamb chops and lamb shank. It’s on-bone and served with pasta. Also, we offer mixed seafood of muscles, calamari, shrimp and scallops, in a light tomato sauce,” he explained. An extensive wine list and endless cocktail selections ensure the perfect accompaniment for everything on the menu. During coronavirus, Angelo said, “We are doing well, considering the environment. We have been able to maintain our clientele all these years and to maintain our quality. We are able to offer not a limited menu but our full menu and additionally, a lot of specials daily.” Angelo recommends reservations for those wishing to dine inside (with distancing) or on the Mykonos patio (where the tables are six feet apart). Mykonos can accommodate up to 50 people in a private dining room. The space has its own entrance and restrooms, plus a projector, screens and other technology that make it perfect for any social event including bridal showers and wedding rehearsal dinners, plus business meetings. He was the consulting manager for the food in the wedding scene in the movie “Mamma Mia!” He coordinated events at the White House for President Obama and Vice President Biden. His work also includes American television shows as he handled the scene-setting and food art for “The Real Housewives of Athens,” “Next Top Model,” “Top Chef,” and various segments on ABC and Fashion TV. Angelo’s awards include the Star Diamond Award by the American Academy Hospitality of Sciences (AAHS), the Michelin Star Award, the Relais Chateaux Award, the Chef’s Club of Greece Award, the Maitre De table des Rotisseurs at Chaine des Rotisseurs and the L’Academie de Gastronomie Brillat Savarin Award. The restaurant’s newest accolades include several Open Table Diners’ Choice Awards, and recognition from TripAdvisor as a Travelers’ Choice 2020 Winner, which TripAdvisor says puts Mykonos in the “top ten percent of restaurants worldwide, based on reviews, ratings and saves from travelers everywhere.” Although Angelo still does parties for David Copperfield and Meryl Streep, his work with stars is currently very limited. The arrangements that include gift baskets and fruit bouquets are made with fresh strawberries, cantaloupe, apples, bananas, pineapples and more. The products are offered in a variety of sizes and are often bought as business-to-business gifts, a birthday present, a get well wish, or the very popular arrangements for Valentine’s and Mother’s Day gifts. Their best-selling items average around $68, but Edible Arrangements doesn’t limit their creations to small or medium-sized baskets. HOW DO YOU MAKE GREAT PIZZA? We use fresh ingredients. We make our dough in house. We use part-skim mozzarella cheese. We buy the sauce but we add our own spices. We have hand-tossed crust as well as thin crust and gluten free options. YOUR DAD PETE IS THE OWNER. WHAT’S THE FULL SCOPE OF HIS ROLE? Many people know my dad as the main chef. He’s been doing it since he was 17 or 18 and he’s still doing it today at 67. Being Greek, cooking comes naturally to him. He was born in Greece and came here with his parents as a teen. He was the first (in the family) to own a restaurant. Now, Pete makes primarily breakfast and he does cook lunch as well. We have a couple main chefs who help with dinner but Pete still develops the recipes on our menu. HOW HAS THE MENU EVOLVED? At the beginning, we were just a 10-person diner counter in the back of a pharmacy. We didn’t have pizza. A burger was $.50. As the company grew, our menu grew. The restaurant grew and we moved to the spot we are in now. We added Tally Ho Restaurant manager, Andreas Vellios, says the restaurant’s hand-tossed pizza is a real crowd pleaser. Like everything on the menu, it’s made with fresh ingredients.

IF THE ANCIENT GREEKS WERE RIGHT AND THERE REALLY IS A GOD OF WINE – DIONYSIUS – THEN SURELY HE MUST HAVE A SOFT SPOT FOR ROBERT AND DAVID TRONE. This is not because their company of Total Wine & More has 210 stores throughout the U.S. with a total revenue of $4.5 billion. Nor is it because they founded the largest privately-owned wine and spirit company in the country. And not even because their stores offer 8,000 different wines, 3,000 different spirits, gifts, accessories and even cigars. No, the reason they may be earning the approval of the gods is that both brothers, through in-kind and monetary donations from their stores and through their individual family foundations, have donated $100 million to different philanthropies. In the words of David, “Total Wine & More has allowed us to go into philanthropy and into Congress.” The Trones’ story began growing up on a 200-acre working farm in East Berlin, Pennsylvania. The five Trone children helped their father run the chicken and hog operation of the farm. Unfortunately, the farm went into bankruptcy but their mother salvaged the soda and beer store started by their father. This store would prove the beginning of the family’s later foray into the beer and wine business. Both David and his brother Robert attended The University of Pennsylvania, with David earning his MBA there and Robert earning his undergraduate and his law degrees from the university. While at Penn David opened Beer World, a beer-only retailer in 1984. He eventually opened additional stores in Pennsylvania and then two more stores in Delaware, where the state law was more flexible for individuals owning more than one beer outlet. His brother Robert joined him and the business expanded into what is today Total Wine & More. The business covers sixty major markets in the U.S. and, according to David, there are a group of employees in all their stores who work on their town’s philanthropies. Total Wine worked with around 10,000 nonprofits last year by participating in individual charities’ fundraising efforts. For example they will purchase a table at a fundraiser, supply the wine, offer wine-tasting classes, even sponsor trips – “These are all different ways that our people can be a part of their community,” notes David. In 2016 both Trones decided to step aside and bring in a professional CEO and a fiduciary board to run the company, allowing them more time to focus on philanthropy. To continue their history of giving both Trones set up family foundations: The David and June Family Foundation and the Robert and Anna Family Foundation. David and June have been staunch supporters of the ACLU since 1994. In 2015 they donated $15 million to the organization to promote criminal justice reform and established the Trone Center for Justice and Equality at the organization’s national headquarters. In 2017 their foundation gifted $2.5 million to Suburban Hospital in Bethesda. The Trones’ donation will be used

to support mental and behavioral health services, including addiction treatment and renovations to the crisis outpatient and inpatient units. They also pledged $5 million to establish the Trone Family Public Policy Intiative Fund at their alma mater, the Wharton School of the University of Pennsylvania. David, a Democrat, decided that he could do more good by running for Congress and “helping people who don’t have a voice”, which he did twice, first in Maryland’s 8th congressional district in 2016 (where he ran unsuccessfully) and then in Maryland’s 6th congressional district in 2018, winning that seat. He has focused on sponsoring bills for several causes he is passionate about, especially mental health and the disease of addiction – he lost a 24-year old nephew to depression and a drug overdose in 2016. He has also sponsored bills aimed at helping previously incarcerated individuals get education and jobs. This cause also stems from personal experience where he was involved in legal proceedings stemming from expansion of his stores. It made him realize that many people didn’t have his resources to hire good legal counsel and were subsequently jailed, sometimes unfairly. His empathy for these prisoners and the fact that “82 percent of people who are imprisoned are people of color” taught him early on that “the system isn’t fair for many of our citizens.” In addition to these causes he is also working to lead the charge to provide more funding for NIH. Brother Robert Trone married Anna Parisi, whose parents were from Italy, in 1998. The Robert Trones are also heavily involved in local philanthropy. Anna has supported The Washington Ballet and the Washington School of Ballet, where their daughter Sophia took classes. They have also contributed to Bethesda’s Imagination Stage. Robert has served on the board of Catholic Charities of D.C. and they are supporters of Mercy Health Clinic in Gaithersburg. In keeping with David’s statement that “children are our focus,” Robert and Anna have been generous donors to Stone Ridge School of the Sacred Heart in Bethesda, the school Sophia attended until her graduation in June. DOGS. Beer. Coffee – Bark Social, the experiential retail concept for dog enthusiasts, will feature a private, monitored off-leash dog park with an indoor/outdoor beer garden & coffee bar. Bark Social, the first “dog bar” in the Mid-Atlantic region, will open in October with a 25,000-square-foot indoor/outdoor craft beer, wine and coffee bar and a professionally monitored off-leash dog park. Founded by two entrepreneurs, Jeff Kurtzman & Luke Silverman who were looking to pursue their passion in hospitality and their love for their favorite furry friends, Bark Social is the first premium dog lover’s experiential retail experience to open its doors in the Mid-Atlantic region, coming this fall 2020. The 25,000-square-foot indoor/outdoor venue will feature craft beer, a wine and coffee bar and a professionally monitored off-leash dog park. “There are now more pet-owning households than there are those with children, some 84.6 million strong as compared with 52.8 million with kids,

The Pike & Rose location will offer an array of events such as: “Doga” (dog yoga), daily “Yappy Hours” and also be a destination to watch sports and premieres of major reality shows.
