all about food, and I know I, for one, love to try new ones.
Joe Lease, Laura McCaffery
It's great to see new takes on classics and experiment with things you have never had before. Part of being a "foodie" is finding that hidden away place with a unique dish no one else has, a dish that makes your taste buds dance. We all have different tastes and enjoy different taste profiles; the best part of living in a multicultural society is that we can try dishes from all over the world. Sometimes, though, the most comforting thing is going back to the same favorite place and ordering the same thing, a consistent dish that never disappoints. With great steaks, seafood, Asian and even burgers, Birmingham and Bloomfield have it all covered for all of us wannabe-"foodies" out there. Unfortunately with the Covid crisis, the restaurant businesses have been hit particularly hard. The hardship has spared no one particular segment from ownership to the servers. I encourage everyone, whether for breakfast, lunch or dinner, to enjoy what our local restaurants can offer while supporting great local businesses! Cheers,

thirds crosswise
+ 2 lbs sliced Mushrooms
+ ½ tsp Black Pepper
+ 3.5 tbsp Rum
+ ¼ cup coarsely-chopped
+ 1 large Onion, diced
+ 2 tsp Truffle Oil (optional
+ 1.5 tsp Vanilla Extract
Walnuts (optional)
+ 4-6 large Garlic Cloves, but recommended) roughly chopped
+ ½ tsp Ground Cinnamon + Vanilla Ice Cream

DIRECTIONS 1. Melt butter in a large pan over medium heat. 2. When butter is melted, stir in the brown sugar, rum, vanilla and cinnamon.
DIRECTIONS 1. Preheat oven to 400 degrees fahrenheit. 2. For filling: heat oil in a large skillet over medium-high heat. Add mushrooms, garlic, onions, salt and rosemary and saute until all liquid is released, stirring frequently. Turn heat down to medium and continue to saute until liquid has evaporated. Splash with sherry wine and balsamic vinegar, sauteing once again until liquid has evaporated. Add toasted pecans, pepper, truffle oil, salt and cheese. Let filling cool for 15-20 minutes. 3. Unroll the puff pastry onto a parchment-lined baking sheet and place half the filling in a mound along the center, quickly rolling the pastry up and placing it with seam down. Repeat with the second sheet. Brush with egg wash and score the pastry with a sharp knife with a design of your choice. 4. Bake for 35 minutes and occasionally rotate pan for even browning. Cool for 5-10 minutes before cutting and serving. Garnish with rosemary sprigs. 14

FRONT LINE APPRECIATION GROUP (FLAG) OF METRO DETROIT’S MISSION IS TO OFFER SUPPORT AND MEALS TO THE FRONT LINE MEDICAL STAFF, TO HELP RESTAURANTS STAY IN BUSINESS AND TO PROVIDE A WAY FOR PEOPLE TO HELP WITHOUT LEAVING THEIR HOMES. Since April, the group of Birmingham and Bloomfield women has been collecting donations of any amount and then pools that money together to purchase meals from locally-owned restaurants that then deliver the meals to local hospitals treating patients with COVID-19. “We are a group of friends who came together when we saw a need in the community, and we wanted to do our part to help support in a time of need,” Claire South explained. “We all work on coordinating deliveries, social media and fundraising.” South said that April, May and June were a “whirlwind” as they were scheduling 3,000 to 5,000 meals a week. As of August though, FLAG raised $375,000, provided over 55,000 meals, worked with 104 local restaurants and served meals to 41 hospitals and 18 rehabilitation, skilled nursing and subacute centers. “We are consistently coming up with new fundraising ideas,” Claire South said. “We hosted a virtual 5K and cooking classes, and we also partnered with local fitness studios. Additionally, we have been able to expand our reach to the rehabilitation centers and skilled nursing facilities since many Covid patients were released to these facilities, so as numbers decreased in the hospitals, we wanted to support these frontline workers, too.” In addition to South, FLAG of Metro Detroit team members include Monica Toomey, Lauren Polina, Laura O'Brien, Saara Brinjikji, Lauren Edgell, Dani Gillman and Linda Scheidemantel. For more information, visit flagmetrodetroit.org. “We have been extremely blessed with generous donations from our community, local churches and companies,” South said. “We will continue to be here to support our front line heroes as long as the need continues." Fall Means Soup
PROFESSIONAL COOK KYLE MCCAFFERY SHARES HIS BUTTERNUT SQUASH AND APPLE SOUP RECIPE.
KYLE MCCAFFERY HAS BEEN COOKING PROFESSIONALLY FOR 15 YEARS, AND FOR THE LAST EIGHT, HE HAS BEEN WORKING AT PLUM MARKET. A fall favorite of his is Butternut Squash and Apple Soup. He said it is best served with roasted pepitas, chives and a drizzle of balsamic glaze.
Butternut Squash and Apple Soup + 1/3 cup canola oil + 1.5 cup yellow onion, diced + 1 cup celery, diced + 6 cups butternut squash, diced + 1.5 cups Granny Smith apple, cored, peeled and diced + 1 tbsp ginger, minced + 3 cups vegetable stock + 1 cup water + 2 tbsp apple cider vinegar + 4 tbsp honey + 1 tsp cinnamon + 1/2 tsp nutmeg + 1/2 tsp allspice + 2 tbsp salt + 1 tsp black pepper Heat oil in a soup pot over medium high heat until shimmering. Add onions, celery and carrots, and heat until the onions become translucent. Add salt, black pepper, cinnamon, nutmeg and allspice to the vegetables and stir to coat. Add the butternut squash, apples, vegetable stock, water, apple cider vinegar and honey. Bring to a boil. Reduce heat to simmer and cover, letting the soup cook for another 30 minutes or until the squash is almost falling apart tender. Remove from heat. Using an immersion blender, blend the PHOTOGRAPHY LAURA MCCAFFERY
ingredients together to create a smooth-textured soup. Serve immediately, or chill the soup in your refrigerator for later enjoyment.
