THE PERFECT POUR AS A SOCIETY, WE ARE OBSESSED WITH THE SOCIAL SIDE OF COFFEE. We arrange to meet friends at coffee shops, we make plans at coffee shops, we even host meetings at coffee shops. They are our go-to ports in a storm, and our sanctuaries when we’re craving caffeine and company. The art & science behind a cup of coffee inspires creativity and coffee can also be about savoring the moment, taking a breath and allowing yourself to be still. At Harbinger coffee, you can see all of this on an average Fort Collins morning. For founder Jonathan Jarrow, coffee is about enjoyment. Jonathan has spent years developing his craft and creating the environment we love at Harbinger. While working at world renowned Ipsento Coffee in Chicago , Jonathan learned the expert roasting skills needed to create an exquisite cup of coffee that is consistent & delicious. When we asked him to share a few of his trade secrets, we learned that the art of coffee is truly scientific. The Taste, based off of 3 key factors we’ll explain below, is one of the biggest components of drinkability. 1. Sweetness- the starch from coffee convert and caramelize 2. Body- the thickness, viscosity and creaminess of the brew 3. Acidity- what gives the coffee life and excitement by way of the naturally occuring organic acids.

ARTICLE JAHNA EICHEL | PHOTOGRAPHY NATALIE DYER 10

Fort Collins Lifestyle | February 2020

But it’s the blendability of these 3 components that truly matter- Jonathan gives us a real life example, an orange and a lemon both have citric acid, but the orange has more sweetness, offsetting the acidity and allowing it to be a savored fruite, where a lemon, isn’t enjoyed in that same way.

Jonathan goes on to explain that the raw product truly matters most and it’s freshness is important- staying in line with harvest season, roasting properly and selling it within two weeks keeps their inventory as fresh as possible. Remember that enjoyment element we talked about? Well the coffee isn’t the whole picture. Jonathan and his staff create a welcoming aesthetic with kindness, education and impeccable customer service. Their roasting process and equipment is center stage, which gives customers the freedom to ask questions and see how their coffee is prepared. “There isn’t a dark art with coffee, it’s about good service and hospitality AND that good cup coffee,” says Jarrow. Jonathan also wants you to feel comfortable ordering coffee how YOU want it, there is no judgment, and no wrong way to drink it. Unlike the perception of the judgemental barista, Harbinger’s staff wants you to enjoy it YOUR way, they are confident in their coffee and no matter how much cream or syrups you request, at the end of the day, the coffee shines through.

THE ART OF WHISKEY

EXPLORING SPECIAL EDITION WHISKEY

WITH OVER 20 YEARS OF BUSINESS UNDER THEIR BELTS, THE TEAM AT WILBUR’S TOTAL BEVERAGE KNOWS HOW TO CURATE A CATALOG OF SOME OF THE BEST WHISKEY IN THE WORLD. At over 200 bourbon’s you will find something you love. Tasting whiskey (or whisky) can be incredibly fun. First, there’s the excitement of getting to open a nice bottle, the look and texture of it and that beautiful pour. Then there’s the fact that you’re learning something new and expanding your knowledge of a great spirit while deepening your own palate. It’s the perfect combination of personal growth and revelry. Here at Lifestyle we want you to be the Jack or Jill of all trades, experience a little bit of a lot of things, which is why we’ve put together a concise beginner’s guide to enjoying Whisky that will help you feel confident in your selections whether its for a night on the town or day at tasting event. The first information you send to your brain is what you see when you’re tasting whiskey.

FOOD & WINE (CONTINUED)

You’re looking for three factors here: color, clarity, and viscosity. You’ll want to tip your glass on a 90-degree angle and twist it so that the bowl of the glass is covered in whiskey. This is the first oxygenation of the drink. While you’re doing that, take in the whiskey. Once you’re done looking at it and taking your notes, let the whiskey sit in the glass for a minute or two. You want all those aromas to bloom in the glass after the whirl you gave it. Our sense of smell is all about the chemicals coming into our heads. We are sensing compounds and our brain is computing that information from memories or cues being given to us. The last one we’ll go over, taste. Retronasal olfaction means molecules wash over chemical receptors on your tongue creating tastes. You want to gently move the whiskey around your mouth to evenly coat it for a full taste. What you’re looking for are specifics in a broad spectrum of major chemical reactions known as tastes — sweet, savory, sour, bitter, umami, metallic, mineral, fat, spice, wood, ash. The team at Wilburs not only creates a comfortable environment with their excellent customer service but they are also knowledgeable and know how to help you select the perfect bottle. After learning about their special, custom reserves available only Wilburs with the biggest names in the industry, specifically their collaboration with Maker’s Mark- We’re convinced that, if you’re looking to get into Whisky more seriously, or have been a whisky expert for years- that you’ll find something so incredibly satisfying that you’ll enjoy every sip. 16

OUR MUSIC CITY GROWING MUSIC CULTURE

THE AIR IN FORT COLLINS VIBRATES WITH THE SOUNDS OF LIVE MUSIC. Everywhere you turn, the rich history and legacy of musical endeavors surrounds you like a warm, melodic blanket. In the past few decades, Fort Collins musicians have been working hard to put our town on the map. With a plethora of music venues, multiple festivals throughout the year, and thousands of talented local musicians, it would be quite possible to see a different band every night of the year. The places, the people, and culture of Fort Collins have fostered a stellar musical environment for over 50 years. It is hard to say when the first musician rolled into town. The soldiers and settlers who founded Fort Collins in the mid-1800s undoubtedly would have brought musical instruments with them or Band: Plasma Canvas Photo By Tyler Weston

The music industry is not only a part of Fort Collins’ vibrant culture, but also its thriving economy. Local bands order merchandise from local print shops, record their albums at the world renowned Blasting Rooms Recording Studio which opened in 1994 by members of Descendents and Black Flag, and places like Higher Ground Rehearsal Studios, which opened in 2014 to provide private, high quality back-lined rehearsal to the musicians in our community. Local musicians partner with breweries to create special blends, restaurants like Music City Hot Chicken offer up their incredible grub and their parking lot for concerts throughout the year. It’s no wonder the music scene is growing- with the support of small businesses, the creative culture thrives. The range of creative musical spaces creates a unique atmosphere in Fort Collins where anyone can find something they love. Summer is festival season in Fort Collins, and there is no shortage of amazing live music performances for music lovers of every taste. From FoCoMX to Taste Of Fort Collins, our festivals attract talented local and world-renown musicians that have helped give our town the reputation of being a musical mecca. Even our food festivals feature Grammy-award winning artists (anyone else remember the Smash Mouth debacle of 2015?)! If crowds aren’t your thing, you won’t need a festival to find outdoor tunes in Fort Collins. During the warmer months of the year, several public spaces like Old Town Square, Oak Square, and the

LS: If you had to do something differently as a child or teenager to become a better writer as an adult, what would you do? GJB: Thats a hard question to answer and it’s a hard question to answer because it’s pretty clear that the darkest moments of my life were the most educational, so I wouldn’t want to change any of those. In other words, I would have never gotten belief without doubt so the years in doubt gave rise to belief. So to answer that question quickly, nothing. LS: It’s hard to beat the title of New York Times Best Selling author, do you have other big, bold goals for your career? GJB: Yes I do. Two. Help as many people as I can, thats been the goal since the beginning. And number two, ignore the platitudes. The platitudes are not what this is about. I haven’t sent a pathway of platitudes. LS: I’m excited to meet you in person in February! How did you get involved with Fort Collins Fitness Festival’s BreakFree movement? GJB: They reached out to me and I was happy to find a space in my calendar and go and talk to the kind of people who are out to make a difference. Influence the influencers. LS: How important do you think physical fitness is to living your best life? GJB: Its always a touchy sulkiest when you talk about peoples bodies because there is a lot of social pressure to conform to an ideal. But on the other side of that, there is the notion of living in denial of your predicament. So I always relate to my body like its a vehicle and I should treat it in such a way so that it lasts a long time, and if you are treating it in such a way that creates damage, then I would say it’s limiting your ability to live your best life. LS: Thank you so much for this interview, we have one last question- what can we expect next from you? GJB: Release dates we should add to our calendars? There are no set release dates for new books but are at least two more in the pipeline. One is about how to get Wise. Like how to grow my own wisdom. And the other one is all about how to have authentic relationships at work. Throughout 2020 I will be doing a series of workshops in the US and Canada. I am very excited to burst into that next phase of delivering my work. And then I will be releasing a a podcast in the early part of 2020 alongside several projects I can’t talk about just yet! 30

Get Creative With Your Closet CONFIDENCE IS ALWAYS IN FASHION ARTICLE JAHNA EICHEL PHOTOGRAPHY JENNIFER LITTLE

HAVE YOU EVER HEARD THE EXPRESSION, “IF YOU DRESS BETTER, YOU’LL FEEL BETTER”? Most people roll their eyes at this claim— how could fabric and textiles alter our mental cognition and attitudes towards ourselves? There is now scientific evidence to support the claim that clothing can affect our emotions, performance, and mental psyches. Experts have coined the term Enclothed Cognition: the systematic influence that clothes have on the wearer’s psychological processes and abilities. We asked style expert Sandi Leffel, founder of Styling With Sandi to give us her 3 best tips on feeling confident in your clothes. 1. If you love it, wear it (regardless if no one else does). Own it. Head high. Chest out. Proud to be you. 2. The 100% rule. Ask yourself, do you love Style expert Sandi Leffel

it 100%? If not definitely don’t make the purchase. If you own it already, you may even want to reconsider if it should even be living in your closet.

3. The clothing we wear has the power to either MAKE or break our day. It’s so important to thoughtfully & intentionally choose outfits that make you feel beautiful when you walk out the door in the morning. If, by choosing a well thought out look, one that is polished and put-together, you feel fabulous in your clothes, then that’s a great start to the day. The world will notice and applaud your efforts. 4. Personal Styling is a worthwhile investment because it gives you the tools you need to put great pieces together and come away with a polished look. You can be your authentic, creative and beautiful self - only better!
