NATIONAL DENTAL HYGIENE MONTH,
an effort to celebrate the work dental hygienists do and to help raise awareness on the importance of good oral health. This year focus on four routines that can help people maintain healthy smiles: brush, floss, rinse and chew. The ADA recommends brushing your teeth twice a day, for two minutes, with a soft-bristled brush. The size and shape of the brush should fit the mouth allowing you to reach all areas easily.
The ADA recommends cleaning between your teeth once a day to remove plaque that is not removed by brushing. Plaque can eventually harden into calculus or tartar.

Because teeth alone account for less than half of the mouth, rinsing can help eliminate biofilm and bacteria that brushing, and flossing cannot. Rinsing often, along with brushing and flossing, may help reduce the chance of dental decay and infection. However, avoid rinses that have alcohol in them. Lastly, clinical studies have shown that chewing sugarless gum for 20 minutes following meals can help prevent tooth decay. The chewing of sugarless gum increases the flow of saliva, which washes away food and other debris, neutralizes acids produced by bacteria in the mouth and provides disease-fighting substances throughout the mouth.

Cut up the thighs and pork shoulder
+ 1/2 pound pork fat
into inch-sized pieces; then mix together
+ 1 cup jalapeno, diced

Add butter and flour and cook the roux for 5 minutes on medium heat. Add the milk and bring mixture to boil, whisking frequently to make sure the bottom doesn’t burn and the flour gets incorporated. Once it begins to boil, turn to low and add the

Cook bacon and sausage in a pan until brown. Add onion and a pinch of salt. Cook for 5 minutes on medium heat until onion is translucent. Add jalapeno and red bell pepper and cook for another minute. Finish with corn, basil, peas and salt and pepper.

T he city of New Orleans IS RENOWNED FOR ITS COLORFUL CULTURE—BOASTING LIVE MUSIC, FESTIVALS, HISTORY, ART AND, OF COURSE, FABULOUS FOOD.
Foodies flock to the Big Easy from around the globe, eager to enjoy delightfully diverse menus cultivated by an equally diverse history spanning more than 300 years. Local cuisine incorporates recipes from Paris to Port au Prince and from the Congo to Cadiz. The result is a delectable mixture of Creole, Cajun, French, soul food, and more. “Of course, New Orleans is a mecca for culinary adventures of all kinds,” attests Billie Ruff, owner of Travel Cafe. She believes a visit to New Orleans is worth the trip—just for the food alone. “Emeril Lagasse’s restaurants continue to be show stoppers,” she says, referring to the über famous chef who has made a name for himself and New Orleans’ cuisine worldwide. His four local restaurants serve Cajun and Creole dishes that highlight the region’s distinctive fare. “By all means, visitors to New Orleans should try the abundant seafood,” Billie urges, “including oysters, crawfish, shrimp, crab, blackened redfish, stuffed flounder, red snapper, pompano or trout en papillote and fried catfish.” One of the dishes most widely associated with NOLA may combine all of the above. “Gumbo is a special case,” Billie explains. “It can be made with all or just one of the above, as well as with chicken, okra and sausage. Jambalaya is also made with a variety of ingredients, including peppery rice with chicken or seafood.” Billie is particularly fond of Ralph Brennan’s Red Fish Grill, an award-winning restaurant located at the gateway to the iconic French Quarter. “They are famous for their southern oyster dishes,” she says. “Other legendary oyster bars include Acme Oyster House and Felix’s Restaurant and Oyster Bar.” The city caters to patrons of all tastes, offering more than 1,000 eateries to satisfy every palate. Relish red beans and rice with spicy andouille sausage, a traditional Monday meal which is often offered for free in bars on that night.

SNACK ON HEALTHY FATS Avocados, coconut oil and coconut butter, olive oil, nuts and seeds, eggs and fatty fish are all examples of “quality fats” essential to overall health and well-being. Eating healthy fats can improve taste preferences, reduce food intake (by shutting off the brain’s hunger and craving center) and even bolster metabolism. SIP GREEN TEA Loaded with antioxidants and nutrients, green tea is especially rich in polyphenols, which have effects like reducing inflammation and helping fight cancer. CHOOSE THE RIGHT MEAT Grass-fed cattle are usually raised without antibiotics, and the beef contains omega-3 fatty acids. For higher concentrations of omega-3s, choose wild-caught fish such as mackerel or salmon. Omega-3 fatty acids are an essential component of the brain and eyes. EMBRACE THE RAINBOW Incorporate a colorful array of fruits and vegetables into meals. Eating the rainbow offers an expansive variety of nutrients, including ones with anti-inflammatory and detoxifying properties. EAT REAL FOOD Whole, organic, fresh, local and unprocessed food is best. Focus on shopping the perimeter of the grocery store for fresh produce. Try to choose organic; chemicals and pesticides can be toxic and are detrimental to brain health.

YOU DO SPRINKLED: Begin with two graham cracker squares. Place one on a microwave-safe plate and top with chocolate bars and a scoop of marshmallow fluff. Set aside. Take the other graham cracker square and spread marshmallow fluff on half (top + bottom), then coat with sprinkles and set aside. Microwave the half with chocolate + marshmallow for 10 seconds, or until marshmallow fluff is melty. Remove and top with sprinkled graham cracker.
