remembering everything we’ve done or accomplished in months past; looking back on turkey disaster stories, mornings watching the Thanksgiving Day parade or afternoons spent curled up on the couch after one too many pieces of pie; thinking of the people, experiences and things we’ve been blessed with in the last year. As we press pause on the hustle and bustle of life putting together a monthly magazine, we’re able to look back on the past year and, most meaningfully, the stories from all of you that have made what we do possible. We also take this chance to think of those less fortunate and encourage you to take the opportunity this giving season to donate to local organizations or charities.

Green Valley Lifestyle | November 2019
WINTER IS HERE, AND WITH IT COMES A PLETHORA OF SPORTS, ACTIVITIES AND FUN THINGS TO DO. And while Vegas doesn’t have anything too extreme, like curling or ice fishing, our winter sports are nothing to be scoffed at. A popular favorite for the majority of residents is skiing, and a favorite place is Brian Head ski resort. A little bit of a farther drive than our Mount Charleston, this snowy peak is orientated at family-fueled fun for all ages. Located at around 9,700-foot elevation, this resorts spreads over two mountains and is quite the beast. Don’t let that intimidate you, though; with 71 different runs and eight different ski lifts, this resort has something for every skill level, whether you’ve been shredding powder for years or if you’ve never even touched a set of skis. Speaking of never touching skis, Brian Head also offers beginners classes to show you the ropes necessary out on the mountain. And, to make sure you don’t have to worry about anything other than skiing, Brian Head’s housing is top-notch. Whether you want a hotel, lodge, condo or yurt, Brian Head has you covered. Skiing certainly isn’t the only thing you can do at Brian Head, though. Snowboarding is another obvious one, but snowmobiling, mountain biking and scenic chairlifts are all available options. All this might make Brian Head seem pretty cramped, CONTINUED >

especially around the winter holidays, but that is surprisingly not true. A mixture of a massive resort, the aforementioned 71 runs as well as three terrain parks, two tubing hills and tons of backcountry access keep these mountains surprisingly open. It’s

great views are certainly a draw as well. Brian Head Resort will easily help you work up an appetite for après-ski cuisine in the gorgeous lodge facilities. The Grand Lodge’s Leany’s Steakhouse boasts an in-house baker, the elegant Lift Bar and Patio and a great view of the surrounding landscape. It’s a cool place to share food and drink with friends. Book a hotel room here and spend a few nights enjoying all the amenities, from spa treatments to a fitness center and meeting rooms. And while the views aren’t usually the first reason one books a ski resort, Brian Head can easily change that. Stunning red rock views and seen from every peak, and the Cedar Breaks National monument is a sight to behold. Brian Head is an extraordinary place to visit, and the perfect place to enjoy a winter sport.

Australian Trip
A VACATION DOWN UNDER
THIS SEASON IS THE PERFECT TIME FOR A FUN-FILLED TOUR OF THE LAND DOWN UNDER: AUSTRALIA! From the breathtaking coast of Sydney and the red and rocky peaks of the Northern Territory to the gorgeous Great Barrier Reef in Queensland, Australia is brimming with culture, character and charisma! Around every corner and under every rock is something new to discover in this truly unique and extraordinary country. So let us guide you through the paradigmatic Australian tour! Starting off this country-wide tour, we head down to the iconic city of Sydney. And what tour of Sydney would be complete without the Sydney Opera House that has graced many a movie? The Sydney Opera house is quite a sight to behold. An iconic piece of 20th-century architecture, this house is a must-visit when in Sydney. It hosts more than 40 performances a week, and you can go above the typical experience and get a two-hour backstage pass involving a tour and a meal in the green room. However, the trip for this region of Australia doesn’t end with just one city. The New South Wales region, where Sydney is located, is no slouch on its own. The heart of Aussie wine country, the well-known Hunter Valley is home to the oldest wine-growing region in Australia. And Kangaroo at Lucky Bay in the Cape Le Grand National Park

It is located in the Warrumbungle region in Central New South Wales. Stargazers are encouraged to take a guided tour, peek through Australia’s largest optical telescope, or pitch a tent under the starry night. Don’t get too comfortable in New South Wales, though! just about ready to head out to the Northern Territory. Tropical and lush in some places and red and rocky in others, the Northern Territory is like nowhere else in Australia. From Uluru to Arnhem Land, the Northern Territory’s attractions are as diverse as its landscapes. Here you will find ancient Aboriginal rock art galleries, abundant and unique wildlife, rare South Sea pearls, and world-famous natural attractions. Choosing headliners from this region has got to be the hardest for any area in Australia. Sunset at Uluru is a must-see. Standing 1,150 feet high, ringed by ghost gum trees and waterholes, Uluru is a giant sandstone rock and a spiritual meeting place for the local Aboriginal Anangu people. Uluru is at its most captivating at sunset when the rock’s surface shifts through a gamut of colors. Spend an afternoon walking the 6.6-mile base trail before relaxing at one of the two designated sunset viewing areas. About 70 miles from Darwin, Litchfield National Park’s Buley Rockhole is also a necessity for anyone in the area. It is a series of descending, connected swimming pools with clear waters. Secure a small site all to yourself and lounge about as the water cascades from one pool to the next. From here, continue to the park’s signature swimming hubs, Wangi and Florence Falls. Next, there’s Queensland, a sunkissed coast and lush tropical forest. It is a far cry from the rest of the Australian desert and the perfect way to wrap up a long vacation to Australia. The most iconic setting in Queensland is inarguably the Great Barrier Reef. Often called the living masterpiece, the Great Barrier Reef stretches for more than 1,200 miles along the Queensland coastline. There are hundreds of tours and experiences available along the Great Barrier Reef coastline, most notably from the towns of Cairns, Port Douglas, Townsville, Airlie Beach, Hamilton Island, Seventeen Seventy, Bundaberg, Gladstone and Mackay. But whether you snorkel, scuba dive, fly, motor or sail over it, you simply must experience the colors and textures of this natural wonder. 14

ULURU KATA TJUTA NATIONAL PARK, NORTHERN TERRITORY
Another incredible experience is the Daintree Rainforest. The Daintree, a twohour drive north of Cairns, is truly unique. The world’s oldest tropical rainforest might look a little familiar because it was the main inspiration as well as a shooting location for the movie Avatar. Stand in awe under the branches of the 600-million-year-old Zamia Fern, which has an underground trunk system evolved in defense against dinosaurs. Cruise the Daintree River, where you might spot a croc waiting in the mangroves or glimpse a turtle in the clear, sparkling streams below. Stay at one of the luxury eco-lodges nestled in the rainforest such as Silky Oaks Lodge or the lovely beach village of Port Douglas nearby. The Whitsunday Islands comprise 74 tropical islands just off the Queensland coast next to the Great Barrier Reef. The first-rate and world-class hotels, powder-fine sands and clear aqua water are the allure of these exotic islands. Hopefully, you’ve seen how amazing Australia is, from the beautiful and iconic coasts of Sydney to the sacred grounds of the Northern Territory, to the uncharacterGreat Barrier Reef in the tropical north of Queensland

"My guilty pleasure is an iced pistachio rose latte from The Coffee Press in the Paseo Verde Library. It’s absolutely crave-worthy. There’s nothing better than getting away for an afternoon break, grabbing my latte, and taking a little walk to clear my head and reclaim a few minutes of the day for myself."
NAME: Debra March BUSINESS: Mayor of Henderson CONFESSION:
“I don’t watch many reality television shows but am obsessed with watching HGTV’s Fixer Upper. The transformation that Chip and Joanna Gaines take these homes through is amazing. The final touches, such as monogrammed pottery, are so unique to each individual or family. I am a wannabe HGTV decorator.”
NAME: Rena McDonald, Esq. BUSINESS: McDonald Law Group, LLC CONFESSION:
"My secret love is for desert adventuring. I love to go off-roading with my family. We take backroad trails to scout out new places. When we find an interesting spot, we hike, Geocache and explore. The desert is full of abandoned towns, beautiful animals and amazing vistas. It is a great way to unplug and enjoy each other. This is especially true as the seasons change and we get to spend more time outside in the fantastic weather. Our valley is full of wonderous adventures if you just take the time to find them." "My guilty pleasure is the peanut butter sandwich. I guess I never got over that childhood comfort food staple, and even still, I probably eat a couple a week. They are so quick and easy. Plus, with my job, I do a lot of traveling. I have found that the peanut butter sandwich is the perfect travel companion. It is relatively thin so it slides right into my briefcase amongst the files. Even if it gets crushed a bit, it's no problem. It will last in there all day and still come out tasting like when we were kids. It’s a fun tie back to simpler times."
NAME: Nick Lodhi BUSINESS: Publisher, Green Valley Lifestyle CONFESSION:
"My guilty pleasure isn't some sweet treat or candied delight (although on occasion I'd be remiss if I said I didn't enjoy a good coconut macaroon). No, my guilty pleasure is extra hot spicy ramen. I love extra hot and spicy food in general, and ramen is pretty exceptional as well. But put them together, and you have something I could eat summer or winter! Honestly, any very hot and spicy pho, udon soup or ramen helps me get my fix. But Monta Ramen's spicy tonkotsu ramen is my favorite!"
NAME: Paige MacDonald BUSINESS: A Destination Travel, Nevada's Only Virtuoso Agency CONFESSION:
"The kids are at a friend’s house, my husband is at a meeting, and it is just me and the animals. It’s the perfect time for my comfy pajamas, a cozy blanket, a bowl of warm popcorn, and a cat and dog on each side of me on the couch. I grab the remote and find the latest love story on Netflix. (Shhhh, I even have the Hallmark movie app!) Yes, I already know the boy and girl will end up together in the end, but I am still caught up in the romance."

BLUEBERRY TART
THANKSGIVING DESSERT IDEAS
INGREDIENTS EASY SINGLE-SERVING DESSERTS
For the Crust: + 1 cup plus 2 tablespoons all-purpose flour, plus more for dusting + 4 tablespoons confectioners' sugar + 1/2 teaspoon salt + 6 tablespoons cold unsalted butter, cut into small pieces + 2–3 tablespoons cold water
ARTICLE KRIS LODHI
For the Filling: + 1/4 cup granulated sugar + 1 tablespoon cornstarch + 1 tablespoon fresh lime juice + 1 teaspoon freshly grated lime zest
METHOD 1. In a food processor, pulse flour, confectioners' sugar and a pinch of salt to combine. Add butter and process until the mixture resembles coarse meal, about 10 seconds. With processor running, add cold water 1 tablespoon at a time until a dough forms (do not process more than 20 seconds). 2. Cut dough in half; shape each half into a log. Wrap in plastic wrap and refrigerate at least 30 minutes or up to 1 day. Cut 1 log into 12 even pieces. On a lightly floured work surface, flatten each piece into a 2-inch round. Press a rounded disk onto bottom and up the sides of each cup of a 12-cup nonstick mini-muffin tin. Repeat with remaining disks of dough and second muffin tin. Refrigerate 30 minutes. 3. Preheat oven to 400 F. In a medium bowl, stir together granulated sugar, cornstarch, lime juice and zest, and a pinch of salt. Add berries; toss to coat. Fill shells with berry mixture. Bake until crusts are brown and filling is bubbling, about 25 minutes. Let cool slightly in tins. Run a knife around tarts; remove from tins. Let cool completely on rack. 24

GUILTLESS STRAWBERRY LAYERED DESSERT
For the Strawberry Compote: INGREDIENTS If fresh strawberries are available, use those. In winter sometimes it's hard to find good berries. So I make a compote out of frozen berries and use that instead for the topper.
+ 2 cups frozen strawberries + 3 tablespoons water + 1/4 cup sugar + 2 teaspoons lemon juice
METHOD In a small saucepan, combine 1 cup of strawberries, water, sugar and lemon juice. Cook over a medium heat for about 10 minutes. Add the rest of the strawberries and cook for 8 minutes more, stirring frequently. This is also my recipe for refrigerator berry jam (you can use any combination of berries). I just cook off the liquid more. Keep an eagle eye your jam as you stir. It goes from perfect to burnt fast. You must take it off the stove and transfer it to a heatproof dish.
For the Chia Pudding: INGREDIENTS + 1 13 1/2-ounce can full-fat coconut milk + 2 tablespoons raw honey + 1 teaspoon vanilla bean paste + 1/4 cup chia seeds
METHOD In a small bowl, add coconut milk, cow's milk or almond milk. Flavor with vanilla bean paste or vanilla extract and honey. Mix together. Add chia seeds and whisk to incorporate. Cover with plastic wrap and place in the refrigerator for 4 hours.
For the Crust: I personally like a good granola. I have also used a mix of pecans and almonds chopped for the base as well. Once your compote is cooled, you can start building your layers. 26

PUMPKIN SPICE, APPLE CINNAMON AND A HOT CUP OF COCOA. Fall is all about getting warm and comfy as a chill hits the air—preparing yourself for winter, and cherishing those final moments of summer. As the nights grow longer, we’re embracing the Scandinavian secret of hygge by creating a space that emphasizes simple pleasures and finding joy in everyday moments—even when the weather is dreary. A burnt orange adirondack rug and woodland pillow set a ‘cozy cabin’ mood. Wicker baskets filled with apples and gourds are a reminder of the importance of the harvest, and a fun way to help teach young kids about the changing of the seasons. During this transitional time, light wood, fluffy blankets and scented candles beckon crisp autumn evenings, while a vase of fresh flowers—particularly mums—are an ode to the bright, sunny days we’re not quite ready to give up yet.
