Who would have thought that April would bring the new normal of social distancing, curbside service, almost every family home schooling, and virtual happy hours. That was certainly not the April we had expected. However on a brighter note, as we welcome May, we seem more bonded as a town and more connected than ever. GILBERT GIRLFRIENDS “Girl Power” is a phrase at the forefront of recent headlines and The Girlfriend Connection would like it to keep it that way! Co-Founded by Liz Norwood and Allie Stark in August of 2019, The Girlfriend Connection boasts over 18,000 Facebook members in local groups across 15 states. In a world prone to digital interaction, this on-line group ironically focuses on personal engagement between its members. Activities range from community service projects, to movie nights, to book clubs, to travel and more, each an opportunity for participants to encourage and empower other women in the group and make a real difference in their own lives as well. The Girlfriends Connection’s largest group, “Gilbert Girlfriends”, recently rallied to address the unique needs brought on by the COVID-19 pandemic. Members, who affectionately call themselves GG’s, sewed face masks, shopped for the elderly members of the community, and shared supplies to those in need. Through it all the GG’s also managed to have fun with trivia contests, dance lessons, and virtual happy hours. They try to lead by example to put smiles on faces throughout the world. The group does daily acts of kindness to date: they have prepared sack lunches for the homeless, delivered flowers and visits to the elderly and sent cards in the mail to brighten other’s days. One of my favorite american mexican food is nachos but with all the unnecessary calories of the tortilla chips really add up over time and before I found this recipe I would always have to pass on them in order to maintain a healthy diet! After years of missing out on the delicious mixture of cheese, ground beef and salsa Audrey from We’ve Got You Cover recommended this recipe to bring the joy of nacho’s back into my life! Audrey Heine recommended substituting unhealthy tortilla chips in my nachos of the lighter and tastier plantain chips! This simple swap took hundreds of calories out of my regular nachos! Plantains are rich in potassium, vitamin A, and vitamin C which make them a nutritious substitute for flour tortilla chips.They also are high in fiber, are considered a natural antioxidant and are great for supporting heart health! This recipe works great for feeding a hungry family or for snacking at a festive Cinco De Mayo party with friends! These yummy chips will spice up your regular nacho recipe while endorsing a healthy lifestyle!
