Another unique quality farm-to-table produce provides is the exclusivity of plant types. Fox Hill has lemon, lime, and spicy basil as well as blue and Indian corn— all varieties that cannot be found in the supermarket. Much of the produce is grown inside of the greenhouse. This allows the farm to provide year-round produce, even in a state like Colorado where the growing season is squeezed between snowfalls. Produce is simply grown inside of the greenhouse and transplanted outside once it becomes warm enough. Perhaps the most magical element of the greenhouse is one you wouldn’t expect— fish poop. The farm has plenty of tilapia that are fed organic, vegan food. Their waste is distributed as fertilizer to the fruit trees outdoors. Meanwhile, bacteria breaks down and purifies the fish’s urine, which provides clear water to hydrate the indoor plants. Because of this system, Shawn hasn’t had to fertilize anything inside of the greenhouse. To add organic or vegan fertilizer would cost hundreds of thousands of dollars. In addition to being economically sustainable, the farm-to-table system is efficient in just about every other realm as well. According to the Natural Resources Defense Council report titled ‘Wasted,’ transporting food from farms accounts for 50 percent of land use in the United States and 80 percent of all freshwater used. Shawn notes that over 50 percent of food produced on farms in the United States is lost in the transportation process. At Fox Hill, there is no waste due to transport— the consumers are all local, and the food that isn’t consumed by residents will be donated. Fox Hill only constitutes one neighborhood. However, if other residential areas follow suit in the future, leaps and bounds of progress can be made toward more mindful and sustainable communities. CityLifestyle.com/CastleRock

FRONT RANGE FOOD PANTRY GATHERS FOOD WITH AND FOR DOUGLAS COUNTY FAMILIES BY HANNAH
Castle Rock Lifestyle | October 2020
EACH WEEK, DOZENS OF FAMILIES ARE SUSTAINED BY AN UNASSUMING CLOSET AT FRONT RANGE COMMUNITY CHURCH. The literal food pantry was jumpstarted by Jennie Bennett in February of 2020 and has been a priceless tool for those scraping through the pandemic. It’s a Tuesday afternoon in early September. The first snow is falling a bit prematurely in Colorado and Jennie, a mother of three who runs her own photography business, jets back and forth from the food pantry to a volunteer’s car toting a blue bag on each arm. A single bag is filled with enough groceries to feed a family of five for a week. This particular haul contains 22 bags for the students at South Ridge Elementary School. The food pantry began as an effort by the school system to feed Douglas County High School students in need during the weekends. Front Range Community Church, who formerly met at the school on Sundays, sent volunteers there often. That’s how Jennie, a member of the church, first became acquainted with the program. However, the knowledge that she would be doing such service had been brewing inside of her for some time. “Seven years ago, God told me I would work in the community in some way,” Jennie says. She was quite busy and unsure of how it could happen. “He kept opening the door for little opportunities.”

he was invited to cook at the James Beard House this summer in NYC, Bootheel 7 Ranch was asked to be featured as the main entree—a 90-day, dryaged NY Strip and Steak Tartare. While it’s nice to see others recognizing the caliber of our beef, feeding local families is such a privilege and is the heart of our business. We also strongly believe in giving back. Last year, our beef donations raised more than $8,500 for local charities, including Von Miller’s Western Round-Up, which raises money for children who need vision care. Additionally, you can find their products at Mercantile by Farm Girl Foods in Downtown Castle Rock. Bootheel7Ranch.com
