WHEN CHRIS AND ASHLEY FABER MOVED TO ASHEVILLE FROM SEATTLE, THEY WERE EXCITED TO BRING A UNIQUE DINING EXPERIENCE TO THE MOUNTAINS. Using the momentum of their past experience in the service industry, it was time for them to chase their own success. With two passionate owners and a highly skilled chef, Owen Lane, Asheville is truly lucky to have The Times. From creative and delicious cocktails to mouthwatering dishes that rotate with the seasons, this is one of the hottest spots in the city. WHAT INSPIRED YOU TO OPEN UP THE TIMES? Ashley and I have wanted to open our own bar for a long time. We’re from Seattle originally, and we worked for a great restaurant group out there. We both kind of topped out with that company and decided to make a change and see if we could find a place to open our own spot. After a couple of years in Florida, we ended up traveling the country to do a bartending tour sponsored by Fernet Branca. Asheville was one of the stops on the trip, and we just fell in love. I had the opportunity to be one of the opening bar managers at The Times, and then we ended up purchasing the business from the building owner. WHAT IS THE FEELING YOU WANT VISITORS TO THE TIMES TO EXPERIENCE? Our whole goal with The Times is to create a craft cocktail bar where people feel comfortable—a place where we can be nerdy and create some fun, interesting cocktails, but in a completely unpretentious environment. I think that’s one of the biggest hurdles in bringing craft cocktails to the masses. I love to introduce people to new drinks, new spirits, etc., but I also want to wear my baseball cap and sneakers. I don’t think those things have to be mutually exclusive, and that’s kind of the vibe we push for at The Times; let’s educate, create and present what we love to do to our guests in a personal, friendly and relaxed environment. HOW OFTEN DOES THE FOOD MENU ROTATE? WHICH DISH IS YOUR PERSONAL FAVORITE? OWEN'S? The menu rotates constantly. There are a few bestsellers that stick around, but that’s the beauty in having a chef like Owen; he creates new dishes all the time. And because he and the kitchen crew do such a great job, Ashley and I have no qualms letting them do their thing. It allows them to be creative and allows us the peace of mind knowing that they’ll crank out consistently quality food. I can’t imagine someone telling me how to make drinks behind the bar, and I’m certainly not an expert in the kitchen. I think that trust is why we’ve been able to put out such awesome food at our little cocktail bar. OWEN: Picking a personal favorite on the menu right now, and always, is a difficult one. But if I had to pick at this time, our housemade sausage with this season’s freshest ingredients is my go-to. CONTINUED >

WHICH FALL INGREDIENTS EXCITE YOU MOST? ARE THERE ANY MUST-TRY DISHES THIS SEASON? OWEN: Brussels sprouts, apples, pumpkin, delicata squash are a few of my fall favorites. A dish that’s a must-have for fall at The Times would probably be our chipotle-braised beef cheeks. WHICH COCKTAIL IS YOUR PERSONAL FAVORITE? WITH WHAT DISH DOES IT PAIR BEST? My favorite drink currently is called Green Means Go. It’s blanco tequila, lime, pineapple, agave nectar puréed with poblano peppers, Ancho Reyes Verde (a poblano liquor) and topped with a dry-hopped sparkling water. It’s bright, effervescent, refreshing and our bestselling drink on this current iteration of the menu. It pairs really well with seafood and definitely with the heirloom tomato or shishito pepper dish. ARE THERE ANY EVENTS COMING UP YOU WANT OUR READERS TO KNOW ABOUT? Not really any major upcoming events, but we do offer spirits education and tasting classes, which are a ton of fun for groups of pretty much any size. We do classes on scotch, mezcal, American whiskey, local NC spirits, gin, etc. The food menu changes

My favorite places in Asheville ... tough one. I love what Katey and Donnie are doing at Golden Pineapple in West Asheville—definitely one of my favorite new cocktail spots. The crew at Sovereign Remedies is always really on point, and Graham and Brett in the kitchen do just really awesome food. I also love En La Calle. The tapas are killer, and their tequila drinks are incredible. I could go on and on here, but for brevity's sake, I’d say those are probably my typical go-to spots in town. VEGETABLES FOR SAUTÉ Ingredients + 1 cup roasted corn kernels + 1 cup okra, sliced + 1 cup cherry tomatoes + 1 tablespoon shallots, finely diced + 1 tablespoon garlic, finely diced + 2 tablespoons poblano peppers, finely chopped + 2 tablespoons grilled pineapple, pureed + 1 tablespoon butter + 2 tablespoons chicken stock DIRECTIONS Sauté all vegetables for about 2 minutes or until al dente. Add sausage and continue to cook for another 2-3 minutes. Deglaze the pan with chicken stock and pureed pineapple. Cook until almost totally reduced. Mount with butter and season to taste. 12

This means guests can stop in, walk around and learn about the distilling process and discover their new favorite drink, all while sipping a cocktail made with great love and attention. And if that isn't good enough, Leah was more than happy to share a couple of recipes for her favorite cocktails this season. So go ahead and take a crack at making them at home, or just take a trip to Cultivated Cocktails in the downtown location of H&H Distillery and let the pros do what they do best. IN
FEBRUARY 2013, ERIC ANDERSON UNLOCKED THE FRONT DOOR OF THE OLD WEAVERVILLE FIRE STATION, TURNED ON THE LIGHTS, AND STARTED BREWING A FRESH BATCH OF COFFEE. Fast forward almost seven years, and the small
town is hooked. Before Allgood, Eric and his wife, Anna, owned Sweetwater Coffeehouse in Sautee, Georgia. When Eric and Anna moved to WNC from Georgia, they were excited to continue their fostering of community through the love of coffee in a new town. Eric said he wanted Allgood to become a “third place” for people; a place to gather that isn’t work or home. Years later, walk in on any given day and you’ll find Eric conversing with a regular; groups of friends gathered to knit, chat, read or play games; and someone serenading the intimate space with a guitar or the piano. The scene weaves to create a feeling of togetherness and comfort. It’s not just the atmosphere that’s rich with com-
fort; the drinks served are some of the best you can find in the Asheville area. Eric carefully chooses the beans he brews, and yes, they all come from local roasters. Specifically, Eric uses Mountain Air, 1000 Faces and Dynamite Roasting coffee beans, and if asked, he can tell you the profiles of each origin and recommend something for every palate. Not only that, but each of these roasters also shares a direct relationship with the farmers, allowing the process from cultivation to cup to be trusted as ethical and the coffee to be the freshest possible. And of course, like in any good coffee shop, there are pastries from West End Bakery, bagels and other snacks to enjoy with your cup of joe or iced latte.

WHAT
YOU DO SPRINKLED: Begin with two graham cracker squares. Place one on a microwave-safe plate and top with chocolate bars and a scoop of marshmallow fluff. Set aside. Take the other graham cracker square and spread marshmallow fluff on half (top + bottom), then coat with sprinkles and set aside. Microwave the half with chocolate + marshmallow for 10 seconds, or until marshmallow fluff is melty. Remove and top with sprinkled graham cracker. PB + CHOCO DELIGHT: Begin with two graham cracker squares. Place one on a microwave-safe plate and top with peanut butter cups and a scoop of marshmallow fluff. KARLA ILICIC IS A YOGA TEACHER, NUTRITIONIST AND OVERALL WELLNESS COACH WHOSE LOVE FOR COOKING STARTED WHEN SHE WAS JUST A LITTLE GIRL, AS SHE WAS WATCHING HER GRANDMOTHER IN THE KITCHEN. The amount of love that was poured into every recipe was intoxicating, and Karla found herself helping her out and wanting to learn more and more. Her father is a passionate foodie and an amazing home cook himself, and with him, she was able to discover incredible restaurants all over the world and recreate those recipes in their home. Unfortunately, after discovering she had celiac disease, Karla had to change her lifestyle and eating habits, which led her to Institute for Integrative Nutrition (IIN) where she gathered more knowledge on autoimmune diseases and decided to become a health coach and nutritionist. Her passion for food combined with helping others heal and thrive in spite of their conditions made her get creative in the kitchen and create recipes full of nutrients, vitamins and minerals that won’t leave you feeling like you’re missing out on any of the common allergens, meat, dairy or refined sugars. STUFFED ACORN SQUASH WITH CRISPY CHICKPE AS, GOAT CHEESE AND Z A'ATAR This recipe is one of my absolute favorites all throughout the fall and winter season. Seriously though—I make it at least once a week! I love playing around with it and modifying it according to what I'm craving that week. Sometimes I like to use feta cheese instead of goat, add some crispy lentils into the mix, chop up some sundried tomatoes, and of course, use a variety of mushrooms. You can also add some other spices and turn it into a completely different dish (like curry, oregano and thyme or smoked salt and tarragon)!
I N G R E D I E NTS + 1 large acorn squash + 1 can of chickpeas (rinsed and drained) + 1 medium onion + 1 cup diced carrots + 1 cup diced mushrooms + 1/3 cup goat cheese + 1 teaspoon coconut oil + 1 teaspoon Himalayan sea salt + 1 teaspoon black pepper + 2 teaspoon za’atar spice + Microgreens or sprouts to garnish
METHOD Preheat the oven to 400 F. Slice the acorn squash in half and scoop out the pumpkin seeds. Sprinkle some salt and black pepper, and place in a deeper dish, flesh facing up. Place in the oven for about 30 minutes (or until it feels soft with a fork and the surface is slightly golden). In the meantime, rinse and drain the chickpeas. Put them in a paper towel and slightly roll them over your surface to make it easier to take the skins off. You don’t have to clean every single one of them, but the more you do, the better. Chickpea skins can be hard to digest, so taking them off prevents bloating and cramps. Heat up a teaspoon of coconut oil in a pan. Add the onions and saute them for 3 minutes, or until they start to caramelize. Add 1 teaspoon of za’atar and mix it through before adding the carrots and mushrooms. Lower the heat and keep on sauteing and letting the juices coat the veggies. When the veggies are close to done, remove the pan from the heat. Take out the acorn squash and stuff it with the veggie mixture. Add chickpeas on top and let the rest fall all over your dish as they’ll crisp up nicely. Sprinkle the other teaspoon of za’atar and add a bit more salt and black pepper. After 10 minutes, crumble some goat cheese on top and leave in the oven to melt. Once the cheese has melted, your acorn squash is done! Add a handful of sprouts on top and serve immediately! October 2019 | Asheville Lifestyle
