Since we have been cooped up for the last few months, I feel like summer will be extra special this year. One of the challenges we face with being in print is how far in advance we work to put this publication together. Many times the winds of change have swooped in and altered the landscape. But, we truly enjoy bringing positive support to the community, and the Minneapolis Lakes team has been working hard to bring new stories to your mailbox each month. For this issue, we spoke with the Loeffelholz family who started Dampfwerk Distillery in St. Louis Park. We learned more about their specialty craft spirits, the intimate cocktail lounge, and how some cherished German traditions can be shared locally. We took a look into cruising on Lake Minnetonka and the Mississippi River with

On the river, people can board the Minneapolis Queen at the Mill Ruins area near the Bohemian Flats. Cruising here is peaceful and takes people through the 7 Mile Gorge, and down to the Lower St. Anthony Falls lock. It’s beautiful with a great view of the city, and Dave is “really proud to be part of the Minneapolis skyline.” There are a variety of cruise options. Shorter public cruises are available at around 1.5 hours, private charters run about 3 hours in length and weddings usually take around 4 hours. But, amongst the popular are the Friday night dinner cruises, Sunday Brunches, simple sight-seeing, Margarita Mondays, Taco Tuesdays, or Happy Hour and a Pizza. In all experiences, the crew members are well trained for safety and boating laws. On Lake Minnetonka, Paradise Charter adheres to the state boating regulations while the Minneapolis Queen must follow coast guard rules. Lawrance has incorporated a lot of the coast guard safety measures and precautions into the lake cruises for added security. Waterways can be complex, especially when dealing with islands, channels, varying water depths, shorelines, locks and currents. Crew members must pass tests and spend several hours on boats before working into a true Captain’s position. Apparel is always casual, comfortable, fun and of course; temperature related. But the boats can be closed or open, with umbrellas on deck or everything open to full sun exposure. It all depends on what the customer is looking for. If one needs more entertainment than the scenery itself - music, food, and games like bean bags or a putting green can be added if needed. Regardless of the cruise you prefer, there is just something special about summer in Minnesota and cruising along the water with the wind in your hair. Dave closes in saying, “I’ve been doing it for over 35 years and I still love going to work every day. TONIC BARBER IS POISED AND READY. So is their sister salon that customers have grown to know and love for years, Lili Salon Spa. Tonic is the all new barber shop dedicated to men’s grooming that recently opened on March 17th only to shut down voluntarily two days later, prior to Governor Walz’s official orders to shutter amidst the wave of a global pandemic. Months before the chaos of COVID-19, William Anderson of Lili Salon Spa had approached the Galleria with a men’s salon spa concept that would bring something unique, fresh and convenient to the mall while complimenting stores like Twill, Filson, and Suitsupply. Anderson is no stranger to the business. He started in 1983 after completing his education in London, and coupled with 25

successful years at a salon that was previously in the Galleria, it was time to venture off on his own. He founded Lili Salon Spa whose first location opened in 2008 in Minnetonka and eventually moved to the Galleria in 2012. Anderson has held just about every role in the business from hours on the salon floor, to operations, product management, and more. With the recent explosion of men’s hair and grooming, Tonic Barber is tailor made for growing trends. Anderson comments on how “now there are some remarkable and upper end men’s grooming centers in the Twin Cities and throughout the nation.” Men can feel good coming to a male focused environment.

Tonic is ideal for men who tend to have frequent and stylish haircuts, who don’t particularly enjoy going to a traditional salon, and yet crave a unique space to fulfill their needs. Having so much tenure in the industry, Anderson took a combination of visits to Las Vegas and New York seeing “high design at its best”, customer comments, and years of watching traffic flow into account. Along with help and expertise from RSP Architects; it was a deliberate, yet fun space to build out. Tonic encompasses a special space for men who like a more private, very boutique-like atmosphere. The lighting and layout provide the feel of a one on one experience. Anderson describes it like walking into a restaurant and “choosing a booth versus an open table.” There is also a huge benefit to have Lili Salon Spa immediately next door for optimal functionality and flow, as they will share some of the resources. There is a Jack and Jill spa room, equipped with a hidden door on the Tonic side where men seeking PRP hair loss services or injectables will be able to maintain privacy. For men’s haircuts, different price points will be offered and this service will take about 30 minutes on average and include a complimentary shampoo service. William wants people to know that men and women are both equally welcome at either space. Men who have previously been clients at Lili can transfer to Tonic and keep their same experience. As for Anderson, he still likes to spend time behind the chair and says, “My love is with people and my love is in the salon. I really enjoy the process.” His focus on both locations will continue to be on quality, great service and safety for all staff and guests. It appears that good things do come to those who wait. Most are primarily focused on vodka, gin and rum. But, there was something missing in the eyes of Ralf Loeffelholz, Owner of Dampfwerk Distillery located in St. Louis Park. He noticed there wasn’t much around representing the traditional German culture, especially when it comes to craft spirits. As a German native, Loeffelholz wanted to share his passion and bring the community a chance to experience the true German drinking style.

The name may take practice to pronounce, but it has an intentional meaning. The translation of Dampfwerk is “steam works” which is essential to the distillation process to produce premium spirits. The brandy comes from apples, pears and grapes that go through skin-on fermentation, which means the whole fruit is used, mashed into sauce, fermented, distilled and water added to proof it down. This process gives the brandy a more full flavor. At Dampfwerk Distillery, you will find a pear brandy, barreled grape immature, apple, and a barreled apple brandy. Each having unique blends and flavor profiles. A good brandy should be served neat to let the base shine through and each sip savored. Brandy isn’t the only spirit on the Dampfwerk menu. You will find a few herbal liqueurs that are macerated with herbs and spices full of flavor, spiciness, warmth, and a hint of residual sugar. option to choose from. Coming down the future pipeline at Dampfwerk is whiskey. You can look forward to a single-malt whiskey with an expected 2020-2021 release. These whiskeys will be served neat with different set-ups to really enhance the flavor. The herbal liqueurs come from a two hundred year-old German recipe book. The others are German inspired and have been modified with a modern twist due to some of the ingredients not being around or even allowed anymore. Dampfwerk is nestled in an industrial looking building, but don’t let that fool you to what is waiting inside. Local architects, interior designers, and artists were used to create a unique space that is representative of the German culture with emphasis on the drinking style. Culturally, this is being able to spend time with friends and family while truly enjoying the spirit or cocktail in a warm, inviting atmosphere where the focus is solely on the experience. “I wanted to put that experience to the test and build something that I am personally passionate about—combining traditional European-style ‘edelbranntweine’ craft spirits with the creativity of the American market,” says Ralf. In the cocktail lounge you will find a massive bar, fireplace and lounge area with sofas and plenty of tables and seating. If you happen to snag a spot at the bar you will find that the bartenders are focused on your experience by discussing the different spirits and cocktails to find the perfect one just for you. You will also find seasonal meat and cheese boards on the menu to pair with your chosen drink. Each board is tailored to compliment your selection to bring out all the elements and flavors. The entire Loeffelholz family is involved in the success of the distillery. The father, Ralf, spent 25 years building and managing businesses that serve the global food and beverage industry. The matriarch of the family, Mary, brings the expertise in design and construction while son Christian is a distiller and leading the new whiskey project. Daughter Bridgit is heading up sales and marketing as well as operating the cocktail lounge. We can’t forget Olli, Indi and Denley, the distillery dogs, who play a major role in greeting the guests. Chicken Marinade Recipe + 1/2 cup extra virgin olive oil + 1/2 cup balsamic vinegar or other vinegar + 1/4 cup soy sauce + 1/4 cup Worcestershire sauce + 1/8 cup lemon juice + 3/4 cup brown sugar + 2 tsp dried rosemary + 2 tbsp Dijon or Spicy Brown mustard + 2 tsp salt + 1 tsp ground black pepper + 2 tsp garlic powder + 6 chicken breasts or 3.5 lb chicken INSTRUCTIONS Combine all ingredients, except for chicken, in a large measuring cup or mixing bowl and whisk together. Remove a half a cup of marinade and reserve for basting the chicken later. Place chicken in a large ziploc bag and pour marinade over the top. Close securely. Marinate for at least 4 hours and up to 24 hours. To grill Preheat grill to medium high heat and lightly oil the grates. Remove the chicken from the marinade, letting the excess drip off. Grill chicken for 5 to 6 minutes on each side or until cooked through. Baste the chicken occasionally with the reserved marinade. Remove chicken from grill and tent with foil. Let chicken rest for at least 5 minutes before serving. 30
