FOLIAGE COLORS THAT SIGNALS THE ARRIVAL OF AUTUMN.

I love Fall because it’s a perfect opportunity to take an extended weekend road trip to view the changing colors. This month we feature a Wine tasting adventure into Oregon and the Walla Walla wine region of Washington with stops along the way. According to a 2019 survey, 56% of us reported eating out two to three times per week. Restaurant entrepreneurs, Fon Tavijaroen and Toffee Dullaphan provide three Thai options including one in Meridian, Eagle and their newest restaurant, Taste in Boise.

A Taste of Thai Fusion in Boise

ALTHOUGH TUCKED AWAY IN AN UNASSUMING STRIP MALL IN BOISE AT 1473 S. Five Mile Road, once you step inside Taste Fusion Bistro, you are instantly transported to another land bursting with a complex medley of flavors. Taste Boise isn’t just about the flavor though, it’s about the experience. Officially opened earlier this year, Taste is the third restaurant that co-owners Fon Tavijaroen and Toffee Dullaphan operate in the Boise metro area. After receiving her Master’s Degree in Boston, Fon traveled to Nampa to visit her cousin Toffee. Fon instantly fell in love with Boise and decided that she, too, wanted to make Idaho her home. In 2004 they found the perfect spot to open Meridian’s first Thai restaurant. Seeing an opportunity to grow a business in the Meridian community, the two created Sa-Wad-Dee Thai restaurant located at 1890 E. Fairview Avenue. Toffee Dullaphan created the menu, offering Thai food with a bit of a twist. As Fon explains, “Sa Wad Dee is authentic Thai food and the only Thai restaurant in Meridian. We keep adding more, like a sushi bar and a full cocktail bar. Because we love sushi, we figured, why not add Thai sushi to the menu. Many years later, the two found a second location in Eagle and opened Rice, located at 228 E. Plaza Drive. Here they still offer authentic Thai food, but again, their own version. Fon explains, “We offer a fusion of all Asian food. The year we opened Rice, fusion was a trend that we have continued by also offering Indian flavors.” She continues to add, “Two years ago, we had the opportunity to open Taste in Boise. We kept the same concept as Rice, but with even more of a twist than Rice, with the fusion Asian food and more modern variations. This means that we wanted to offer something married between Thai and Italian like pasta with Thai basil sauce. The flavors are still there, but we changed the noodles to pasta, which the form or texture is about the same, and it’s either pan-fried or put in a sauce. Instead of marinara sauce, we put it with a basil sauce instead.”

For a starter, try the Spicy Shrimp Green Curry Naan Flatbread. Follow that starter with the Spaghetti Curry Seafood that includes blue mussels in the shell, prawns, and snow crab on a bed of spaghetti drenched in lemon curry sauce seasoned with garlic, rosemary, and Asian herbs. If you aren’t in a seafood mood, the Vietnamese Pho Soup is an excellent choice. The slow-braised bone-in beef short ribs are served with rice noodles, Thai basil, and meatballs, in a savory broth, garnished with bean sprouts, jalapeno, and a lime wedge. Make sure to save enough room for dessert because Taste’s butter cake is not to be missed. The housemade butter cake is served warm with mango coulis and scoop of vanilla bean ice cream. At Taste, you will also find offerings such as the Spicy Blackberry Margarita, which highlights a house-made margarita mix, muddled blackberries, Thai chilies, jalapenos, and fresh lime juice, a refreshing drink with a little kick. Another concoction of note is the Chiang Mai Cocktail featuring Elderflower liqueur, Thai basil leaves, and mint. The drinks are imaginative and exotic, transporting you to another place and time, which is especially inviting now as traveling to far-away lands is limited. “When you go out, you’re looking for something besides food. You’re looking for drinks, fun presentation, and new experiences, not only plain water, iced tea or soda. You want something unique or different. Our customers want a presentation that is new and innovative. We are not focused on just going out to eat. We offer a full experience because people who go out to socialize want the atmosphere as well as the culture,” Fon explains. During this challenging time, Fon and Toffee have been following the CDC recommendations closely. They currently offer limited dine-in seating, take-out, and participate in food ordering services, and if you call once you arrive, they will bring your order out to you.

ROAD TRIP

Wa l l a Wa l l a Ro a d Tr i p READY TO VENTURE A LITTLE FARTHER FROM HOME? TAKE A WINE ROAD TRIP! ARTICLE AND PHOTOGRAPHY LYNETTE STANDLEY

Flock of snow geese over the Blue Mountains

20

Boise Lifestyle | October 2020

DID COVID TAKE AWAY YOUR SUMMER VACATION? Or have related concerns kept you close to home? Here’s an idea: a weekend road trip to the Walla Walla wine country. Walla Walla, Washington, is an iconic “small-town USA.” It has an early-century feel with a trendy vibe. Its charming downtown boasts boutiques, restaurants and an overwhelming selection of winery tasting rooms. Many are “satellites” of wineries out in the countryside, and some are the winery, serving as combo production and tasting rooms. Getting there is a visual delight. From Boise head west on I-84: it’s an easy four-hour drive through high desert, green valleys, the majestic Blue Mountains and the Columbia River Basin. Take the exit just before Pendleton for Wildhorse Resort, and follow the signs to Milton-Freewater, Oregon, and its neighbor, Walla Walla, Washington. The agricultural area has long supported grain crops and sweet onions, but grapes came on the scene in the early 1970s with founding wineries like Leonetti. Consider that it is on the same parallel in Europe as the northern Rhone Valley of France and Lombardy in Italy, which similarly produce Syrah, Pinot Noir, Dolcetto, Merlot, Chardonnay, Pinot Gris/Grigio and more. By the mid-80s, there were a handful of wineries and it grew exponentially. Today, more than 120 wineries dot the rolling hills of the Walla Walla Valley AVA (American Viticulture Association), which also includes The Rocks District AVA of northeast Oregon. Together they are contained within the larger Columbia Valley AVA.

First stop: MiltonF r e e w a t e r, O r e g o n As you near Walla Walla, you first pass through Milton-Freewater, Oregon. It’s a perfect place to stop and stretch your legs – and start your wine tasting adventure. + WATERMILL WINERY, just west of the main drag (Ore. Hwy 11) and they also produce Blue Mountain Cider with apples from their orchards. + ZERBA is right on Hwy 11 passing through town and has a fun crew in the tasting room. + ROTIE (roh TEE), is west of town in a new elevated tasting room above their vineyard. Enjoy wonderful Rhone-influenced wines with a beautiful view.

ROAD TRIP (CONTINUED)

Crossing into Washington The small city of Walla Walla is expansive, and the wine districts follow suit. You need a car (or hire a driver) to reach them. The downtown tasting rooms, however, are all walkable. FAVORITES FOR GOOD WINE AND GOOD VIBES: + GIFFORD HIRLINGER – it’s like Cheers; lots of locals, and talented winemaker Mike Berghan knows your name. No tasting fee; rather, drop a donation in the jar for the WW Food Bank. + TERTULIA – general manager Kristine Bono is on top of the game with fabulous tasting venues and a fun and unique grape-to-glass experience. + WALLA WALLA VINTNERS – Founded in 1995 and still making elegant wines; their Italian-influenced Sangiovese blend is very nice – as is the entire tasting experience. + CASTILLO DE FELICIANA – feels like you’re stepping into Spain, from the bodega to the Spanish wines. This family operation includes tastings of co-owner Deborah’s famous Sangria. + DOUBLEBACK – spectacular setting and wines in a state-of-the-art facility; they also have the Bledsoe Family Wines tasting room downtown.

+ LONG SHADOWS – enjoy seven premium wines produced in partnership with international winemakers - while relaxing in the Chihuly-decorated tasting room. + L’ECOLE NO. 41 – the third winery on the scene in Walla Walla, with quality wines in a turn-of-the-century schoolhouse. + VA PIANO – Italian for “go slow,” it’s a recipe for an easy afternoon. Lots of excellent Italian varieties and their winery feels like it’s straight out of Tuscany.

WHAT DOES OUR FOOD SUPPLY CHAIN LOOK LIKE IN A PANDEMIC?

Boise Lifestyle | October 2020

SO WHAT DOES LIFE LOOK LIKE IN AN ONGOING PANDEMIC? For most citizens, 2020 has been a slideshow of alarming events: health and food safety; scarcity of sanitizing and paper products; face masks and shuttered businesses; ominous news reports; tentative school re-openings; and ultimately, a shift in our thinking about what this ‘new normal’ might look like. Part of this journey into rather unknown territory is trying to retain some of the familiar creature comforts that we once took for granted, and then hemming them into this unfamiliar tableau. And let’s be honest, Americans are a proud nation of very social creatures. We love gatherings: music, sports, religious services, and family events. But there is a pastime that surpasses even gatherings: food. According to a 2019 survey of 1,000 Americans, 56 percent reported dining out two to three times a week. And abiding by the tight restrictions of practicing social distancing, this rather culturally-accepted habit of dining out has been drastically reimagined as to what it looks like to dine in America. But what does our food supply look like in a pandemic? For most of us living in 2020, we have never known the sacrifice of true privation on a national level. Perhaps we’ve heard the recollections of our relatives who survived the Great Depression, creating many meals out of only one. But living in the world of instant gratification, we have taken for granted the availability of food and supplies.

CULINARY CREATIONS (CONTINUED)

MOVING TO BOISE FROM LOS ANGELAS, WHAT INSPIRES YOU WITHIN THE TREASURE VALLEY “FOOD SCENE”? The Treasure Valley is ripe with endless opportunities in the culinary arts. It may not match the scope of Los Angeles, New York, or Paris, but locals have a great appreciation for the hometown nature of local chefs. With an ever-burgeoning population, I know I will see tremendous growth in future restaurant diversity. The new, young and diverse demographic in the Treasure Valley is open to experimentation of the palate. New restaurants (pre-Covid-19) are opening up everyday. This reflects the desire and need of the local population for new and different, as well as established eateries that seem to flourish on a daily basis. There is also an influx of eager young talent which, like any great University, only benefits from the collaboration of its peers. To learn more about Julie, you can find her on Instagram @tipsycheffoods.

LOCAL’S CHOICE

DINE OUT OR STAY IN BOISE? FIVE LOCAL RESTAURANTS YOU CAN SUPPORT WITH DINE-IN, TAKE OUT, OR MEAL KIT ALTERNATIVES.

ALOHA, WE’RE ALEX AND ROSE. We run BoiFood, a social media blog for local foodies. We’re just a couple of millennials who always try to stay up to date with Selling Sunset, Bravo TV, and any other pop culture reference. You can find us @BoiFood on Facebook, Instagram, and now Linkedin. The Boisean food scene is full of hidden gems and holes in the wall. Luckily for you, it’s Alex here to talk about five of our beloved neighborhood treasures: CERTIFIED BAKERY @ CERTIFIEDKITCHENANDBAKERY This shop I would argue could stand adjacent to any big city shop from LA or New York. They are located near Camels Back Park on the North End district. The bakery is notorious for its 52-year-old sourdough starter English muffins; you can get the same starter in a pizza at their sister restaurant, the Wylder. The take-away style menu is excellent for when you’ve got some adventure planned. They have fridges stacked with whole pot pies, enchiladas, frozen soups, and pickled veggies. grocery kits I’ve ever seen. Chef Alex, who previously worked at the notorious Spotted Pig in New York, is a superb cook, and Tara Morgan, a previous Food & Wine Editor of the Boise Weekly, has an attention to detail that makes this place prime for people looking to eat well. SALON AND DAY SPA HAS SERVED THEIR PATRONS OF THE TREASURE VALLEY FOR OVER HALF A CENTURY – AND COUNTING! Co-owners Odell England and Shelby Bills look forward to highlighting this momentous occasion by honoring their ‘guests.’ Enthuses Bills: “We like to refer to our customers as guests, and not just customers, as we are inviting them into our space.” This distinction accounts most certainly for the business longevity in the Treasure Valley. Bills adds: “I think it speaks volumes to have returning guests - generations even those who bring in their kids and then their kid’s children. We have guests who have moved out of the Valley, who continue to return here for our services for twenty years.

Co-owners, Odell England and Shelby Bills

What precisely makes this salon and spa experience so unique? Bills explains: “Every service is customized to satisfy the needs of our guests. We ask questions such as ‘what is important to them’, ‘what is it their favorite part of the cut, color, or massage?’

“It is possible to reopen safely with strong leadership, safe practices, and patience.” - Kendra In addition to the customized consultations and service, Graeber & Company prides itself as an Aveda Lifestyle Salon and Spa which imbues an environmental mindset with all

aspects of their work including keeping safety and health in mind. Bills worked with the State of Idaho and helped draft a best practices protocol for salon openings, leading to timely reopening of Boise salons. Despite Covid, there remains a need to celebrate 55 years of serving guests at this Boise business. Bills reminisced about previous anniversary events, “We used to celebrate with a Masquerade Ball. It included clearing our salon and hiring a DJ. We had red carpet night and invited the community.” To celebrate 55 years of devoted customer care, 250 salon guests were chosen to receive a special gift that Bills promises “is like a party in a box. “We are so grateful to our loyal clients and all the people who have supported us.
