A Pared-Down Summer MOST OF THE INDEPENDENCE DAYS IN MY LIFE HAVE FEATURED FIREWORKS, WHETHER IT WAS A SPARKLER-FEST ON THE STREET OR A PICNIC-BLANKET VIEW AT A CITY-SPONSORED DISPLAY. And I've spent many summer evenings with friends and family, gathered around outdoor tables covered with platters of barbecue chicken, potato salad and peach cobbler — enough food to feed an army.

This summer will look different. No backyard armies to feed. And while we won't be able to gather at Highland Heritage park to see fireworks rain down, or attend the big outdoor festivals and concerts, we can find the blessings in a pared-down life, one of the gifts of living through a pandemic. We hope you find joy in shaking up a small-batch cocktail for a sweetie on date night — such as the Lukas Liquors Paloma in our Culinary Creations. Or get your kids in the kitchen to make easy cold treats with our Beat The Summer Heat recipes. Need some ideas for family activities? summer bucket list USE THESE TIPS AND SUGGESTIONS TO GET CREATIVE WHEN PLANNING YOUR SUMMER FUN ARTICLE SONJA NIX PHOTOGRAPHY CAMERON YARUMIAN SUMMER 2020 IS TURNING OUT TO BE ONE FOR THE AGES. As restrictions loosen, some might still be weary of typical summertime activities. Here we have compiled a list to make this summer not only one for the history books, but full of fun memories too. These summertime activities allow you to stay safe, socially distant and close to home in Highlands Ranch and nearby. Travel restrictions may still be in place for a portion of the summer, so now is the time to enjoy that staycation you’ve been meaning to take. Discover the remarkable places you may have been too busy to enjoy in other summers right in your own back yard. We have highlighted small group activities, outdoor recreation, dining al fresco and family activities. Find unexpected treasures in a scavenger hunt or geocaching, alongside deeper and meaningful connections made when we slow down. Just be sure to bring your mask and hand sanitizer along with your sunscreen and water to safely enjoy all that our area has to offer.
Outdoor recreation:
Bucket list item #1 Nearby Hikes With 70 miles of hiking trails, Highlands Ranch has outdoor recreation to suit almost everyone. The Bluffs Regional Park is a very popular, easy 2.7 mile loop with just enough hills and elevation gain to get your heart rate up. At the top, you are The Bluffs 12

to Pikes Peak on clear days. For a less crowded hike, start from Red Tail Park on the Douglas County trail, Highlands Point East West Trail or Rocky Point Trail. Check out Daniels Gate and BackCountry too.
Bucket List item #2 Get-away hike If you want to feel like you’ve left the city behind, but can’t travel far, head to Castlewood Canyon State Park south of Franktown. Most trails at this state park are for hikers only, so no bikers or equestrians to maneuver around. There are rock climbing routes as well, a rare find on our eastern plains. This area boasts remarkable biodiversity, as well as important Colorado History. It gets quite hot on summer days, so morning and evening hikes are ideal in July and August.
Bucket List item #3 Disc Golf South Suburban, in partnership with Highlands Ranch Metro District, is building its newest offering, West Fork Disc golf course. Slated to open in June 2020, you can find it west of Broadway between Northridge Rd. and Highlands Ranch Parkway. Free to the public on a drop-in basis. Discs can be found online, in local sporting goods and second-hand sporting good shops. Don’t want to buy anything new? Go ahead, use your Frisbee!
Bucket List item #4 Golf Of course, golf with clubs is a great option for these times when you need to be further apart. You need to stay more than 6 feet away when a player Is swinging CONTINUED >

anyway. Plan to walk the course or rent a cart yourself. Many local public golf courses are open, including The Ridge at Castle Pines North, Links Golf Course, Lone Tree Golf Club and Red Hawk Ridge. Most private clubs are open for golf as well. For those that prefer putts and 9 holes, Colorado Journey Mini golf is open, by appointment only.
Al Fresco Dining: Bucket list item #5 Picnic Tired of cooking 3 solids for weeks on end? Dust off

that picnic basket and get outside. Be sure to bring a blanket, as some parks’ picnic tables may still be off limits. Stop by Purgatory Cellars Winery for a bottle of their locally vinted wine and a charcuterie platter. Alternatively, pack up a few cold salads, crudité, hummus and grilled chicken pitas or pan bagnet, hold the anchovies.
Bucket List Item #6 Old favorite For a fabulous date night, head south to the quaint town of Sedalia. There you will find a south metro institution, Gabriel’s Restaurant and Tuscan Bar. Opened in 1986 in the Victorian Manhart home, Gabriel’s specializes in 3-course northern Italian fine dining experience and Tuscan specialties. For summer 2020, they are refining their outside menu for their patio.
Bucket List Item #7 Try for the first time: Sierra in RidgeGate is an architectural beauty, both inside and out. For summer 2020, dine Al Fresco on their gorgeous deck with expansive views of the Colorado plains. American classics combined with southern and southwestern influences will satisfy both your craving for comfort and need to escape. This summer, you can also visit their farmers’ market, every Saturday 10am-1pm. Pick up goods from local vendors as well as family meals and signature items from Sierra. Cocktails are available for take away.
Family fun: Bucket List Item #8 Scavenger hunt Compass Outdoor Adventures has created a nationwide platform for scavenger hunts. They introduce a new theme every week, some are just for kids, others

for the whole family. Download the GooseChase app, they will inform you of the theme when it starts, and you have 2 hours to complete. Most hunts are on a donate-as-you-are able basis, sometimes a fixed fee for a specific charity. For more information go to Compassoutdooradventures.com
Bucket List Item #9 Geocaching If you are in the mood to hunt, but want to do it on your own time, try Geocaching. Geocaching is the process of navigating a GPS to specific coordinates on a map, then locating a special cache someone before you has left. Most caches have a written log for you to record your name, and some have small items you might exchange for another item. You can find caches all over Highlands Ranch, particularly in and around Toepfer Park. It is a great way to introduce kids to maps, GPS and coordinates. Just be sure to have a small container of hand sanitizer with you this summer. Go to Geocaching.com to get started.
Bucket List Item #10 Inspiration rocks Paint and leave or just enjoy the work of others. You can find these little gems in most neighborhoods and even some outdoor shopping areas. Brightly painted, sometimes by a steady hand, other times by beginning artists, these aren’t hidden like geocaches. They’re

intended to be seen by others, to brighten the day and spread joy. Include a word or short phrase, paint an animal or just use cheerful colors. Some even invite you to take them should you be so inclined.
Bucket List Item #11 Drive in Movie Kick it old school with a movie under the stars. Commerce City’s 88 Drive In is the last original drive-in in the Denver metro area. You can also try Denver Mart Drive In, set up in the Denver Mart’s parking lot. A new option is the Drive-In movie club, a pop-up drive-in movie of sorts.
Other Options:
While not open as of publication, keep an eye out
for these fabulous Douglas County destinations: Highlands Ranch Mansion, Cherokee Ranch and Castle, Chatfield Botanic Gardens and Castle Rock Adventure Park.

GIVING BACK SANDY PÚC PHOTOGRAPHY CAPTURES THESE UNPRECEDENTED TIMES AT HOME WITH 'PORCHTRAITS'
S TAY I N G HOME AND GIVING B AC K
COVID-19 PANDEMIC, SANDY PUĆ OF SANDY PUĆ PHOTOGRAPHY GOT A LITTLE WORRIED. She was already in the middle of her bi-annual food drive and realized the stash of donations was running low. “Our typically full room was down considerably, and I couldn’t stop thinking about people who were out of work and running out of food,” she says. For the 30 plus years she has been a professional photographer, her mission has been clear, make giving back an integral part of everything her business does. “It is the foundation of our organization,” she says. An innovator at heart and driven by this mission of giving back to the community, she introduced “Porchtraits,” a way for her to shoot family portraits from a distance and still give back to the community during the shutdown. Sandy waited until the stay-at-home order transitioned into the safer-at-home directive to start her Porchtraits and has been booked ever since. In exchange for a free photography session and one digital image, clients donated canned food or money. Sandy Puć Photography has made multiple large donations to Valley View Cares food pantry and over $5,000 to the United Way. Sandy says the technical aspects of these sessions were challenging at times. “Working on somebody’s porch was difficult because we had to social distance,” she says. Photographers couldn’t get close to pose their subjects and get details perfect, such as smooth stray hairs or a shirt wrinkle. Lighting could be tricky. Families were excited to see someone new, Sandy says, and at the same

time the burden of such a sudden shift in lifestyle was evident. There were meltdowns, hairs astray, one child even sat on the potty. One of Sandy’s favorite photographs was a mom breastfeeding her baby. “We just went with the flow and got very silly,” she says. “It was so real-life and really reflected what that family was going through. I felt like I was seeing families spending quality time together at such a difficult time,” she says. Sandy says her clients really enjoyed themselves. 20

“The most enjoyable part was the efforts people put into making it interesting,” she says. “We had full hazmat suits, people dressed in formal attire, kids with dirty faces and snotty noses in Halloween costumes, toilet paper, hand sanitizer, gas masks and even puppies wearing masks.” Marlo

She co-founded Now I Lay Me Down to Sleep (nilmdts.org) in 2005 which offers remembrance photography to parents suffering the loss of a baby. They’ve donated over $100,000 to the Children’s Hospital with her annual Santa Charity Event. She and her team also donate time to create films for international organizations like Operation Smile and Dando Amor, among many others.

SHAKE UP A REFRESHING MIX OF SWEET AND TART WITH THIS LUKAS LIQUORS' PALOMA COCKTAIL
ARTICLE SAM KAUFFMAN | PHOTOGRAPHY JENAE LOPEZ PHOTOGRAPHY 24
Highlands Ranch Lifestyle | July 2020
THE PALOMA IS THE PERFECT SUMMER COCKTAIL, FOR BEGINNERS AS WELL AS SEASONED MIXOLOGISTS. All of the ingredients are easy to find and sometimes are even already on hand. The quality of the Paloma can be enhanced based on the quality of a few simple ingredients, especially the tequila. Drinks with tequila scream summer! They are refreshing and are perfect for hot weather. The mix between the sweet and tart are the perfect balance. The sweetness comes from the agave in the tequila while it is perfectly balanced with the tartness of the grapefruit juice.
Personalized, affordable healthcare for your business.
A NOTE ON TEQUILA: Similar to wine, there are tequilas that are produced in the lowlands as well as the highlands. The two vary from vegetal to sweet based on their growing area. The process determines the smoothness as well as the quality of the product you are drinking. Aguamiel is the tequila that we used in the Paloma for a

couple of reasons. The first being it is inexpensive at $29.99. Which makes it the perfect product for mixing as well as sipping. It is the highest rated blanco tequila on Tequila Matchmaker. It is perfect on its own because of the sweetness of the agave, while also being a great mixer at a value price.

+ 3 cups heavy cream, cold + 1/2 cup powdered sugar + 1 tsp. vanilla extract + Chocolate ice cream + Cookie crumbles, pre-made cake, chocolate candies, crushed graham crackers and anything else you want to layer your cake with
1. In a large bowl, beat heavy cream, sugar and vanilla with a hand mixer until stiff peaks form in the mixture. 2. Start with a thin layer of whipped cream on the bottom of a springform pan (determine the size by how large or small you want your icebox cake to be). Then top with an even layer of chocolate (or your favorite kind of ice cream). 3. For the next layer, top with an even layer of cookie crumbles, cake crumbles, chocolate candies, crushed graham crackers or anything else you want to layer your cake with. 4. Continue with layers of whipped cream, ice cream and toppings until you have reached the top of your pan. 5. Refrigerate at least 4 hours, top with more cookie crumbles or chocolate sauce, slice and enjoy!

Top Tips To Get The Best From Your
P
Summer Eyes Ca by to o h
meron Yar um ian
YOU SPENT HOW MUCH TIME FINDING THE RIGHT SWIMSUIT THIS SEASON? And you wouldn't leave home without your sunscreen and hat. But in your quest for the best summer accessories, have you really given much thought to protecting your eyes? Dr. Trisha Rogers of 5280 Vision Care says the harsh year-round Colorado sun makes it that much more important to protect your eyes.
"When buying sunglasses make sure they have a few important features. They should block 100 percent of UV-A and UV-B rays, have lenses made of polycarbonate or Trivex if they are used for sports, and be polarized for the crispest vision and no glare," Dr. Trisha says. And if you are a busy student-athlete or adult weekend warrior and can't wear sunglasses, check out the new contact lenses available that darken in the sun. "You still get protection from the UV and better vision when you can’t wear your shades," Dr. Trisha says. Dr. Trisha offers these other tips for eye health: Did you know that having a comprehensive eye exam is about so much more than just how clearly you see? While part of the exam is all about making sure you are seeing as clearly as possible, the rest is dedicated to checking the health of your eyes. There are a lot of systemic diseases that can show up in your eyes such as high blood pressure, diabetes, high cholesterol, autoimmune disease and cancer. These are the reasons to have an eye exam even if you see great. If you have been avoiding the eye doctor because you hate the “air puff test” or having dilation drops used then we have good news for you. We no longer do either. New technology lets us check your eyes without the drops that leave you blurry and light-sensitive. Are you tired of taking your reading glasses on and off? There are now contacts that can correct both your distance and near vision. Ditch those readers! Have you heard of Computer Vision Syndrome? With all the hours we spend on screens for work, school and fun it can lead to eyestrain, headaches and other ailments. Wearing computer prescription glasses will keep your eye muscles relaxed and protect your eyes from harmful blue light. 34
