SEVENTEEN-YEAR-OLD STEVE COULD NOT DREAM OF A HAPPIER PLACE: HE HAD A LOVELY HOST FAMILY IN GREELEY, EARNED A SPOT ON THE COMPETITIVE FOOTBALL TEAM, HAD PROMISING SCHOLARSHIPS, AND FELT AMERICAN SOIL UNDER HIS FEET. The evening before his first game, he had no idea that his dreams of playing professional football would be dismantled- back to the United Kingdom he would go. Although his teenage dreams were shattered, and he had no idea what his future would hold, he knew one thing for sure: he’d be back to the United States of America. Thirteen years later, he delivered on that promise and sank his feet into American soil. Only this time, he wasn’t leaving. Meet Steve Wilkie: a man of spirit, resiliency, creativity, and gratitude. Though it’s been thirty-four years since he first met and fell in love with Colorado (a hopeful athlete at the time), he remains competitive, team-oriented, and driven by passion, people, and possibilities. He is a happy homeowner in this Arvada town, and he is the proud President of Royal Oak Homes. “It’s been a journey,” says Steve. “It’s been a road of ups and downs- we went from a mountain top experience to the inability to put gas in our cars.” Despite the omnipresent challenges, Steve used his faith as his compass, put his stubborn determination in overdrive, and accelerated toward his dreams of designing homes, his friends and family by his side. Encountering unexpected partnerships, loyal supporters, and a divine vision, the Royal Oak family business not only survived, but grew its spirit, its mission, and its product. The small family team recognized the need to marry luxury with affordability, and so Steve and his Project Designer Helen, went to work. The husband and wife team centered their craft around their customers, executed detailed and creative floor plans, and added million-dollar finishing touches- and just three homes in, earned recognition from The Parade of Homes: Best Architecture, Best Main Kitchen, Best Interior, Best Outdoor, Best Master Suite, and Best Overall- the only home to win in all six categories. MEXICAN CHOPPED SALAD DRESSING INGREDIENTS: + ¼ cup fresh lime juice

HONEY

+ 2 tablespoons honey + ½ teaspoon cumin + 1 clove garlic finely minced + ½ teaspoon salt + 2 tablespoons canola oil + 2 tablespoons extra virgin olive oil + freshly ground black pepper

CILANTRO

TORTILLA ST RIPS: + 6 6 inch corn tortillas + 1 ½ tablespoons canola oil + ½ teaspoon sea salt

SALAD: PEPPERS

+ 1 medium head romaine lettuce chopped in approximately 1/2 inch pieces + 1 medium bell pepper diced in 1/4-inch pieces, any color + ½ medium red onion diced in 1/4-inch pieces + ½ medium jicama peeled and diced in 1/4-inch pieces (or water chestnuts) + 1 medium zucchini diced in 1/4-inch dice + 4 medium tomatoes seeded and diced into 1/4-inch dice

+ 4 ears corn (or substitute 1 1/2 cups of sweet, tiny frozen corn) + 1 1/2 cups canned black beans drained and rinsed + 1/2 cup finely chopped cilantro plus whole cilantro leaves for garnish

INSTRUCTIONS: + Dressing: combine lime juice, honey, cumin, garlic and salt. ZUCCHINI

In a slow, steady stream, add the oils, stirring continuously with a fork/small whisk. Taste and add more salt and pepper, if needed. + Tortilla strips: preheat oven to 400˚F. Stack corn tortillas on a cutting board. Cut in half. Cut each stack of halves into thin strips, widthwise, about 1/4-inch thick. Transfer tortilla strips to a sheet pan. Drizzle with oil. Sprinkle with salt and toss to coat.

Bake for 15-20 minutes, stirring every 5 minutes, or until light golden brown and crisp. Set aside to cool. + Salad: place corn, two ears at a time, in the microwave for 3 1/2 minutes. Remove with a hot pad and allow to cool for 5 minutes. Then, cut bottom end of corn off, about 1 1/2 inches from end. Pull back husk and silks (almost all of the silk should

+ Cardboard + White crepe paper + Construction paper + Glue + Scissors + Beads, yarn, pom poms, etc.

DIRECTIONS 1. Take your cardboard and cut two pieces into the shape of a llama (we found a stencil online). Then, cut strips of cardboard the depth you want your llama to be. You’ll connect these to either side of the llama cutouts to enclose your piñata. 2. Glue your strip of cardboard all along the edge of one side of your llama, then glue to the other side. (Be sure to leave a hole you can close up later so you can fill it with your favorite candy!) 3. Starting at the neck, cover the front, back and sides of your llama with white crepe paper, cutting a slit every half inch or so to create the traditional piñata look. 4. Cover all remaining sides of the neck and head with white construction paper, cut to fit your design. 5. Using construction paper, beads, pom poms, tassels, buttons, etc., add some flair to the rest of your llama! Bonus points for incorporating different shapes and textures into your final product.
