HIGHLAND VILLAGE HOLDS HOLIDAY LIGHTING CONTEST The City of Highland Village is holding its 2019 Parade of Lights Holiday Lighting Contest. Entry deadline is Dec. 6, and there is no cost for entering. Judging will take place from 6–9 p.m. Wednesday, Dec. 11, and winners will be announced on Friday, Dec. 13. PUMPKIN SOUFFLÉ PANCAKES WITH HOT CINNAMON SYRUP
Yield: 8 to 10 pancakes INGREDIENTS + 2 cups all-purpose flour + 1/4 cup brown sugar + 1/2 teaspoon salt + 1/4 teaspoon cinnamon + 1/4 teaspoon ground cloves + 1/4 teaspoon freshly grated nutmeg + 2 teaspoons baking powder + 1 3/4 cups milk + 4 large eggs, separated + 1 teaspoon vanilla extract + 1/3 cup canned pumpkin puree + 2 tablespoons butter, melted + Extra butter or coconut oil for frying the pancakes

METHOD 1. In one bowl, combine milk, vanilla extract, pumpkin puree, melted butter and the yolks of the 4 eggs. Reserve the whites and set aside. Whisk well. 2. In a separate bowl, combine the dry ingredients: flour, sugar, salt, spices and baking powder. Whisk well. 3. Pour wet ingredients into the dry ingredients a little at a time, whisking until the mixture is well mixed. Reserve. 4. Beat the egg whites into stiff peaks. Gradually fold the egg whites into the pancake batter. Do not over-mix. 5. Heat a sauté pan or cast-iron skillet to medium heat. Add 1 tablespoon of butter or coconut oil to the pan and pour in the batter. Cook each pancake about 2 minutes on each side, watching for the edges to turn golden brown and the wet batter on the top to thicken and bubble. Serve pancakes drizzled with cinnamon syrup and dotted with butter.
Hot Cinnamon Syrup INGREDIENTS + 1 1/2 cups maple syrup + 1/4 cup water + 2-3 tablespoons ground cinnamon
METHOD 1. In a small saucepan, pour in the maple syrup followed by the water. Add in the cinnamon and whisk well. Turn on the heat and bring just to a boil. Turn off the heat, stir and allow the syrup to infuse with the cinnamon.

Yield: 1 latte INGREDIENTS

+ 2 tablespoons espresso coffee made into about 3/4 cup espresso via machine or French press coffee maker +

Chocolate (2 ounces) + Cinnamon for sprinkling
METHOD Coffee 1. Finely chop Abuelita Mexican Chocolate and place in the bottom of a coffee cup. Pour 3/4 cup hot French press coffee or freshly drawn espresso over the crushed chocolate. Stir well until the chocolate is completely melted into the coffee. 2. Top the coffee with 2 heaping spoonfuls of coconut cream, caramel sauce and sprinkle with cinnamon.

+ 1 13 1/2-ounce can full-fat coconut milk, refrigerated overnight + 1 1/2 teaspoons coconut sugar (or regular sugar)
METHOD
Coconut Cream
1. Skim the coconut cream off the top of the chilled can of coconut milk. The coconut cream will have separated from the coconut water and will be floating on top. Scoop only the cream into the bowl, avoiding the water as much as possible. 2. Beat the coconut cream with electric beaters for about 1 minute, just until it resembles thin whipped cream. Sprinkle in the coconut sugar and continue beating until thickened. It is done when it looks like fluffy whipped cream. Refrigerate until needed.

METHOD 1. In a saucepan, combine sugar and water over medium-low heat until sugar dissolves. Increase the heat and bring to a boil, without stirring. Boil until the syrup is a deep amber

color, about 5–6 minutes. 2. Remove sugar from the heat and carefully whisk in the heavy cream. The mixture will bubble madly. Stir in the unsalted butter, vanilla and salt. Transfer the caramel to a squeeze bottle when cool. *To use a whole vanilla bean, split bean with a sharp knife and scrape out the black fragrant contents and add them to the caramel.

Woodland Holiday Wreath with a Touch of Glam + Tip 1: Determine the size of wreath needed based on where you plan to hang it. + Tip 2: Determine the placement of items before affixing them to the wreath base.
THIS TRADITIONAL WREATH ADDS A WINTER WOODLAND TOUCH TO ANY HOME.
This traditional wreath adds a winter woodland touch to any home. The ball ornaments in natural tones add a touch of understated glamour. This wreath can be hung on an exterior door or inside the home. The materials used include a 24-inch pine wreath, three stems of silver dollar eucalyptus, three stems of spiral eucalyptus, five miniature pinecone picks, two glitter pine bushes, one stem each of berries and eight ball ornaments. To create this look, cut eucalyptus stems, pine cone picks, glitter pine bushes and berry stems into various sizes. Place the elements onto the wreath before gluing. Once you’ve created the perfect design, wire and hot glue all of the elements into place.

Classic Ball Ornament Wreath + Tip 1: Determine the overall size wreath you’re wanting to make because this will determine the size of the base wreath. + Tip 2: Determine the color scheme and purchase various sizes of ball ornaments within that color scheme. This beautiful ball ornament wreath brings classic elegance to any space. The materials used include a 16-inch green foam wreath, 2-inch gold ribbon, ball ornaments in various sizes, pipe cleaners, a hot glue gun and glue sticks. To create this look, wrap the foam wreath base with ribbon that matches the ornaments used. Next, create a loop made of pipe cleaners and attach to the top of the wreath (you will need this to hang the wreath). Next, determine where the ornaments should be placed and begin affixing them with hot glue. Keep adding ornaments until you reach the desired fullness. Lastly, fill any blank spaces with small filler ball ornaments.
