Slow and Steady For a Healthy 2023 Welcome to our annual Health + Wellness Issue, where we greet the New Year with inspiration for a healthy life. This month, we’re also excited to present to you an exclusive interview with former Colorado Avalanche star right-winger, and Stanley Cup winner, Milan Hejduk. During his time with the Avs, Hejduk and his family lived in both Highlands Ranch and Lone Tree, and he speaks fondly of his time raising a young family in our community. Hejduk was able to sit down with writer Elizabeth Watson at a Park Meadow’s restaurant while in town for his continued work with youth hockey programs and hockey nonprofit Dawg Nation. We’re inspired by Hejduk’s commitment to helping others. For many of us, this time of year is full of excitement. It presents us with a reset, new horizons and goals to pursue. But for others, January can be a reminder of failed attempts from years past and the burden of expectation that this year will be different. We approached this issue of Highlands Ranch City Lifestyle from a mindset of not supplying quick fixes to check boxes in the short term but valuing what is sustainable over the long haul. We wanted to provide inspiration for making lasting, realistic, long-term improvements to your physical, emotional and mental health. When it comes to anything in life - business, finance, food, home and personal health – it’s not what you do some days that moves the needle - it’s what you do MOST days. For better or worse! For instance, taking a vacation every day would be financially and practically unfeasible, but taking a trip a few times a year is doable. Having a beautiful steak dinner with a few cocktails and creme brulee every night for dinner isn’t best for your health, but doing so once in a while might be fine! It’s not the sometimes choices we make, it’s the most-of-the-time choices. So plan the vacation AND work to establish more regular rest in your work week. Join a fitness community or gym AND enjoy that dessert you’ve been wanting to try. It’s not what you do some days — it’s what you do most days that will lead to a more peaceful, fulfilling and fabulous 2023. Here’s to you! We’re rooting for you. The yearly event celebrates the cultural heritage of the Austrian brothers who homesteaded Schweiger Ranch in 1874. Food was provided by Schnitzelwirt, Andy’s Kitchen, and Kogler Bakery; music by The Rhinelanders and Austrian Connection; dancers from the German Folk Arts Council; and carriage and wagon rides by Carriages of Colorado. Ethan Horvath On USMNT Roster for World Cup in Qatar South Metro's Ethan Horvath served on the United States Men's National Soccer Team roster for the 2022 Qatari World Cup as back-up goalkeeper. Following fellow Coloradans Mallory Pugh and Lindsey Horan, Horvath is the first male from Colorado to make a USMNT roster. Horvath played as a youth for Real Colorado and attended Arapahoe High School, moving to Europe as a teen to train. DECORATED MILITARY DOCTOR BRINGS BOTH FACIAL RECONSTRUCTION AND COSMETIC SURGERY TO LOCAL EYE PRACTICE

They say beauty is in the eye of the beholder, and Dr. Whitney Pafford believes the beholder looks back at you in the mirror. Dr. Pafford’s unique set of skills as a Head and Neck Surgeon, medical residencies and fellowships, and combat field experience make her perfectly positioned to lead the new Facial Plastic and Reconstructive Surgery department at Colorado Eye Consultants. Some might find it an unusual pairing, facial plastics at a medical eye practice, but Dr. Pafford believes it to be a great fit. “It’s not common to have a Facial Plastic Surgeon in an Ophthalmology group but it is truly a brilliant collaboration,” Dr. Pafford says. “I think people still get a little confused that I’m a Facial Plastic Surgeon with a Head and Neck-ENT background and not an Oculoplastic Surgeon with an Ophthalmology background. There’s some overlap, but they are entirely different training pathways and different fields. I

feel very fortunate to have found and been chosen for this unique and amazing opportunity.” Dr. Pafford knew she wanted to practice medicine as a child. Following in her parent’s footsteps, she pursued junior ROTC in high school. Awarded both a full Navy and full Air Force scholarship before graduation, she accepted the Air Force scholarship at her dad’s alma mater, the University of Wisconsin-Madison, continuing in ROTC. As an undergraduate during 9/11 and the pursuant Afghan war, the war-zone injury stories she heard piqued her interest in facial reconstruction. Service people’s stories, such as that of JR Martinez, who was seriously hurt by an IED, and Kyle Carpenter, who protected his fellow Marines by shielding them. There is the story of Bibi Aisha, a local Afghan woman whose Taliban-supporting husband attacked her and left her to die. She managed to escape to an American military hospital in Afghanistan and was taken back to the states for reconstructive surgery on her face. “These are the stories that made me so proud to have chosen the path of military medicine and the types of surgical cases I wanted to be a part of,” Dr. Pafford says. Her focus on facial trauma began during her NYU-Bellevue Hospital residency and primarily consisted of treating prison fight wounds or pedestrians struck by traffic. Only a year-anda-half out of her residency, she deployed to Afghanistan to treat combat injuries. Vastly different types of injuries than those she had treated stateside, they leave soft tissue defects and secondary thermal injuries as well as delayed healing and higher risks of infection. “I learned two of the most important lessons in my medical career. One, when you are the only option, you learn to step past your

comfort zone. You can accomplish anything in your scope of practice with a strong knowledge of anatomy and appropriate preparation and, two, the importance and value of mentorship past my residency years.” Speaking about her new role at Colorado Eye Consultants, Dr. Pafford says, “This job is an incredibly unique opportunity to develop and grow your own practice within an already thriving group. Catching Up with Milan Hejduk Former Avalanche Star and Highlands Ranch and Lone Tree Resident Gives an Update on Life After the 2001 Stanley Cup Win

It’s been 21 years since Milan Hejduk skated the Pepsi Center ice carrying the Stanley Cup above his head. And while a lot has changed — the game is faster, the paychecks are bigger, and the pressure to win is at a fever pitch — star right-winger Hejduk has a Rip Van Winkle timelessness. The 46-year-old Hejduk seems remarkably similar to that 25-year-old kid taking a victory lap carrying 35 pounds of hockey history. In 2001, Hejduk lived in Highlands Ranch. He was in the prime of his career, but getting to “the show” wasn’t easy. Drafted by the Colorado Avalanche in 1994 at the age of 18, Hejduk didn’t see a training camp until 1998. That’s four years playing in the minors. The turning point for Hejduk may have been the 1998 Olympics where he was a part of the Czech Republic team that upset Canada to win the Gold Medal.

“I think playing in the Olympics helped me. Put me on the map. I don’t think there was a lot of interest in me since the draft. As a late pick, fourth round, you don’t turn too many heads,” Hejduk says. But once he made it in front of the Avalanche coaches, his NHL career has a story tale quality: three time All-Star Game player, Stanley Cup Champion, 50 goal season in 2003 to win the Maurice “Rocket” Richard Trophy as the NHL’s highest scorer, and 1,020 games wearing the Avalanche burgundy and blue scoring 375 goals. Former teammate John-Michael Liles says, “He was/is such a great goal scorer on the ice, and he was always so nonchalant about it. One of my favorite quotes from him was ‘just shoot it off the post and in, it’s that easy’. As if just anyone can do it. Milan was one of the few who could absolutely shoot it off the post and in, every time.”

On Jan. 6, 2018, the Avalanche retired Hejduk’s number 23, recognizing his contribution to the franchise and hanging his jersey alongside Avalanche greats Joe Sakic, Peter Forsberg, Patrick Roy, Adam Foote, and Ray Bourque. After his retirement in 2013, Hejduk stayed involved with hockey by coaching his sons Marek and David. “I got into coaching since I would drive them to the rink. You have a tendency to help out on the ice too, and all of a sudden you’re one of the coaches,” Hejduk said. Now that Marek and David have committed to Harvard where they will play hockey together, Hejduk has time to continue doing what he loves: coaching and being involved with his community. Currently, Hejduk works closely with local nonprofit Dawg Nation as well as fund-raising and coaching for the Avalanche’s Mile High Mites program. In 2012, Dawg Nation president Marty Richardson spotted Hejduk at a rink and asked if he had time for an autograph to support a hockey player that had recently been paralyzed in a car accident. Hejduk said yes, and made time for a phone call, and a visit with Cody Beekman. “The call was totally unreal, so unexpected. I couldn’t believe I was talking to someone who provided me some of my most treasured Avalanche moments,” said Beekman. “Two words that best describe Milan to me are humble and generous. He always takes the time to sign an autograph, snap a picture, or just listen to someone’s story,” said Richardson. Since Hejduk and his wife Zlatuse are relocating back to Colorado, he says, “We’ll probably live in the Highlands Ranch or Lone Tree area. We lived a big part of our life here. It’s familiar and comfortable.” Hejduk will always be remembered by Avs faithful for how well and how hard he played the game. His true impact may be his continuing contribution to coaching and his enthusiasm and willingness to give his time to support our local community.

Most people think a plant-based diet is strictly for vegans and vegetarians, but there is overwhelming evidence showing the benefits for improved health for those who make that diet choice. Plant based eating is more of a lifestyle than a diet. You simply eat more foods that are closer to their harvested state with minimal processing. Meatless diets have been shown to improve health outcomes by lowering the risk of heart disease, diabetes, high blood pressure, inflammation, and some cancers. It also improves gut health because of added fiber to your diet.

A plant-based diet still allows you to consume the carbohydrates, protein, fats, minerals and vitamins that are necessary for good health, with the added benefits of being higher in fiber and phytonutrients. You do not have to give up meat entirely. Here are some examples. A flexitarian means you occasionally eat meat but plants are the primary foods you eat. Pescatarians don’t eat meat, except fish and shellfish. Vegetarians don’t eat meat at all, but you still eat eggs and dairy products. Vegans eat no animal products.

TIPS TO GET STARTED ON YOUR PLANT-BASED JOURNEY: 1. Make small changes to test your comfort level when reducing meat intake. Suddenly eliminating meat can leave you overwhelmed and make it harder to stick to it long term. 2. Plant based diets are not boring. Try new international spices such as Za’atar, Harissa, Moroccan Tan Tan and Bajan to name a few.

3. Use the whole plant for maximum nutrition and reduced waste. Use the leaves from celery, radishes, beets and carrots, and the stems from spinach for more potassium, vitamin C and fiber. 4. Eat the rainbow! Choose different colored fruits and vegetables for a variety of nutrients. The color of plants are often an indicator of the vitamins and minerals they contain. Example: Orange foods contain beta carotene, the precursor for vitamin A. 5. If you do not eat any animal products, be sure to include a B12 and iron supplement to avoid anemia and damage to the nervous system. Vitamin B12 is an essential vitamin available only in animal products. 6. A meat free diet does not automatically mean healthy if you consume highly processed junk food and meat substitutes. Fresh fruits, vegetables and whole grains give you the health benefits to add years to your life. 1 Large Butternut Squash 2 Medium Sized Carrots, peeled 3 tbsp Salt 1 tsp Cayenne 1 tsp Turmeric 2 tsp Coriander 1 tsp Nutmeg 3 tsp Lemon Juice Up to 1 qt Coconut Milk Water for Consistency

Half the Butternut Squash lengthwise and clean out the seeds. Cut the peeled carrots into small rounds. Line a baking sheet with parchment paper and coat carrots and squash with extra virgin olive oil and salt. Place the squash face down and spread the carrots around the squash. Roast at 350 degrees for about 45 minutes or until the squash is soft to the touch. Using a spoon, scoop out the insides of the squash and place into a food processor. Add the carrots and spices. While the food processor is running, add the coconut milk slowly. Start with ¾ of the coconut milk to check the consistency, if needed add more milk, then add water.

Leave it to a Coloradan to innovate a way to access backcountry areas in luxury, comfort and style. New models range in price from $750,000 to over $1 million, built to order, and are highly customizable. For all of their technical and mechanical advancements, the interiors are total luxury and comfort. Some

include a stargazing roof hatch above a full king-sized bed on the cab. The smaller LTI model has a space-efficient and highly functional 1/2 bath, while the SX model includes a full bath.
