In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those that you love and encourages giving back in a meaningful way. While ambition, competition and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride and appreciating those around us that have helped us along in our journey, can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. Our November issue is dedicated to stories of gathering, gratefulness and giving back to our community. We are so thankful for the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. Douglas County Community Foundation (DCCF) celebrates the success of its inaugural Heroes Gala honoring first responders, military personnel and veterans at the picturesque Denver Botanic Gardens Chatfield Farms. The sold-out event, which was attended by 650 people, including 140 uniformed members from local law enforcement and fire service agencies, raised more than $550,000 for Douglas County nonprofits and the DCCF Community Emergency Relief Fund. “We exceeded expectations for our fundraising goals, in large part due to the heartwarming and compelling stories shared by our eight award honorees,” says Mike Waid, Executive Director of the DCCF.

As the Dispatch Supervisor of South Metro Fire Rescue, CJ Bailes was “the calm during the storm” when a class F1 tornado touched down in Douglas County. Highlands Ranch and Lone Tree saw the brunt of the storm damage with the South Metro Fire dispatch team receiving over 250 calls that day for fire related calls, gas odors, accidents and home damage. Bailes and his team were recognized for their exceptional responsiveness and dedication to the community.

In recognition of his bravery during the May 2019 tragic event at the Highlands Ranch STEM school, Kendrick Castillo was selected as the recipient of DCCF’s Fallen Hero Award. Castillo lost his life protecting his fellow students and teachers. His parents, John and Maria Castillo, were honored to accept the Fallen Hero Award in recognition of their son’ s sacrifice.

In 2015, diagnosed with Stage 3c breast cancer, Highlands Ranch resident Diane M. Simard began the difficult journey of treatment, recovery and healing. While faced with many challenges and complications, Simard now uses her cancer experience as a platform for positivity. “Autumn is such a wonderful time to express gratitude for all we have,” she says. “I have worked hard and faced many adversities, but I’m thankful for all of it. What a blessing to have been given a second chance to do a better job of living. I vow to honor that gift every day.” One of the first examples of Simard making a difference was how she handled her frustration at the lack of emotional support she received during chemo treatments. Determined to bring more attention to the intersection of mental health and cancer, she seed-funded and founded a specialty at the University of Denver (DU) called the Center for Oncology Psychology Excellence. COPE trains future clinical psychologists about the unique aspects of emotional and mental health concerns created by cancer. To date, nearly 200 graduate students have received COPE training at DU. Next, she turned to journaling as a healing therapy. After sending email updates to friends and family during her ten months of treatment, they recommended she publish her journal as a book, because they wanted to read more about all she had experienced. Since she had been trained as a print journalist, Simard decided to hire a writing coach to help her learn how to tell, not report, a story. Sixteen revisions and three years later, she published The Unlikely Gift of Breast Cancer, a multi award-winning memoir-style book about how cancer helped her understand how to live and lead from her heart. The book was named one of the best breast cancer books of all time by BookAuthority and placed third in the memoir category of the Colorado Independent Publishers Association’s annual EVVY awards.

Today, Diane is a strategy advisor to business executives and an advocate to bring more attention to the intersection of mental health and cancer, referred to as psycho-oncology. One of her clients, Kathi McCarty, is a subject matter expert who experienced the horrors and financial ruin of meth contamination and founded Meth Toxins Awareness Alliance, which focuses on prevention education. In September, Diane released her second book, Heal Forward: Transform Emotional Scars Into Impact, which has received a five-star rating from Readers’ Favorite. The hard-cover book is based on her ten life principles and features inspirational stories of those who have overcome adversities by channeling their energies into impact projects. In addition to speaking and consulting about leadership and channeling adversity into impact, she writes a monthly blog and bi-monthly newsletter. “I am so grateful to have learned how the body’s ability to heal itself depends on the state of one’s mental health,” she says. “Hopefully, psycho-oncology continues to evolve as a standard part of cancer treatment.”

Marisa Barrett, owner of De’Lylahs Hair & Body, is about to hit her busy season. From now until January 2, she will be non-stop, on her feet, helping other people look and feel their best. As a business owner and stylist, she can expect appointments that range from a 4-5 hour extension installation to a 30-minute up-do. Barrett won’t ever complain about being busy. It’s one of the things she is most grateful for. When we asked her to contribute her thoughts for this season of thankfulness she mentioned her team, her clients, being part of special days and celebrations, and being there for tough times too. based on a classic holiday film, hands-on activities, experiential opportunities, performances and a visit from Santa Claus, among the many highlights in store for guests. Using more than two million pounds of ice, the Warner Bros. holiday classic, A Christmas Story™ is created by a team of 40 world-class ice artisans from Harbin, China. Known as “Ice City,” Harbin is home to the world’s largest annual ice and snow sculpting festival. The ice artisans, who travel more than 5,700 miles from their homes in Harbin to Aurora, Colorado, start with more than 6,000 massive ice blocks. The carvers work approximately six weeks for more than 12,000 man-hours on the nearly 17,000-square-foot frozen attraction. The larger-than-life whimsical scenes are carved using chisels, chippers, tongs, handsaws, grinders and chainsaws. What can you expect? Visitors will experience more than 10 scenes from the now-classic holiday film, walking among hand-carved sculptures made of colored ice, clear ice and LED lights. The artisans, using skills passed down through generations, follow a 300-page design book to create the ice spectacle, with carvings ranging in size from details as tiny as a coin to soaring scenes more than 30 feet tall. The environment is kept frozen by a state-of-the-art chilling system that maintains the attraction’s temperature at nine degrees Fahrenheit. Signature blue parkas are offered to ICE! visitors to stay warm. Guests can also take rides down the two-storytall ice slides and traverse through ice tunnels and arches. The ICE! experience concludes in a separate area dedicated to the Nativity scene, meticulously carved for a dramatic display of crystal-clear ice. “ICE! has been a tradition at Gaylord Hotels for two decades now,” says Suzy Hart, General Manager, Gaylord Rockies. “This is the first time Rockies has put on A Christmas Story and watching people come together to enjoy it never gets old.” While ICE! is the signature attraction for the holiday season at the sprawling Gaylord Rockies, “Cirque: Spirit of Christmas” returns for another

a festive pairing The age-old question, “What wine goes with turkey?” is answered. ARTICLE BY MARY ABEL

It’s a question heard every year about this time: “What are the best wines to serve with Thanksgiving dinner?” “In my early days in the wine business, the answer was pretty cut and dried because it was all based on the assumption that you had a turkey that came out of the oven that was dry, and so you’re almost guaranteed to need something with a little bit of sweetness to it to help balance that out,” James Lewis says. James is a sommelier who has been in the wine business for more than 26 years. “I’d recommend a sweet or off-dry Riesling or Gewürztraminer. Something that will help with that dry meat that you’re about to choke down.” But now, with all the ways people are preparing the big bird, he says that conversation has become a lot more interesting and fun. “People are frying turkeys, which come out really moist and delicious. They’re smoking turkeys and they’re doing them on the grill,” James says. “Now, when I’m asked that question, I always ask how the turkey is going to be cooked because any given preparation is going to call for something a little bit different. “If you’re deep frying it, it’s going to come out very moist with a fair bit of fat, so you need something that’s going to cut through that. So you can go with a dry white, you can do a dry Riesling, or you could try a French Chardonnay, which typically doesn’t have that big, rich mouthfeel that California Chardonnay would have. It’s crisper and cleaner with high acidity.” For those who prefer red wines, James says that a fried or smoked turkey can handle something a bit bolder and full-bodied. “Try something like a Pinot Noir. It’s not at all heavyhanded. When I’m talking about red wines, and

I talk about heavy-handed or big—Cabernet is big and full-bodied. I call it the linebacker of the wine world. Then you’ve got Pinot Noir, which is more about balance and elegance. So, if Cabernet is a linebacker, Pinot Noir would be the ballerina. They’re both athletes, but with different approaches to athletics, so they have different approaches to your palate. Cabernet is big, dry, and highly tannic, so you might serve a Cabernet or Malbec if you’re having a steak for Thanksgiving, but you wouldn’t want to do that with a turkey. “With a turkey,” James continues, “you want something that’s going to have a little more acidity, less tannins, and medium body; not that big mouth-filling richness. You can do a Beaujolais or an old-world Italian Sangiovese, which tends to be a very food-friendly wine.” Somewhere in between might be a soft, flirty rosé. And rosé wine seems to be having a moment. “Rosé was always thought of as a summer wine, but people are now drinking it year-round. It’s an excellent choice to go with turkey.” What about bubbles? “I almost hesitate to answer that because it’s kind of the easy answer. You can drink Champagne or sparkling with anything because of that really bright acidity. Especially if you have a fried bird, a Prosecco or sparkling wine is going to cut right through that fattiness and balance it out really nicely.” If you’re hosting a tableful of friends and family this year, James says it’s easy to bring together a collection of wines that will please the crowd. “If you do one bottle of sparkling, whether it’s white or rosé, a bottle of dry white, a bottle of rosé, and a bottle of medium-bodied red, you’ve got something to cover just about anybody’s preference.”

What if I’m serving ham this year? “Lots of people have ham for Thanksgiving, right? It’s very traditional to pair ham and Pinot. But again, you can get creative. You can do a Grenache, you can do a Beaujolais…really, any of those medium-bodied reds will be delicious.”

What about dessert? “If you’re having pumpkin pie for dessert, I would go with something like a tawny port. The spiciness of the pie combined with that kind of nuttiness and caramel notes of a tawny port? Lovely. And it would work with an apple pie as well.”

How much should I spend on a bottle of wine? “That’s kind of an impossible question to answer because wine is so incredibly subjective. That said, I’m a firm believer that there is an absolute ocean of delicious wine in that $15–$25 retail price point. If you go to your wine shop and tell them you’re looking for a nice off-dry Riesling for around $20, they should be able to find you something that’ll work really well. There’s no reason to break the bank.” James Lewis is a sommelier who has been in the wine business for more than 26 years, and he and his wife, Nancie own Crush Wine Bar in Castle Rock Colorado.

To add a little character to the table, use a recycled wine bottle as a vase. Are you planning to dine al fresco this fall? Create an earthy, fall garden party on the porch by using natural, organic elements, greenery and flowers. To make a statement, create a floral chandelier by hanging flowers upside down above the table using fishing wire (if your space allows). The centerpiece that runs down the length of this table consists of fresh eucalyptus with gold candlesticks and a ceramic pumpkin vase filled with flowers placed on top of a tree trunk charger. Adding small pumpkins and fresh flowers along the center gives a little extra character. Instead of going with the classic white plate, enjoy a pop of color at your outdoor fall garden party with a blue place setting as a nod to the sky. Adding a cloth napkin and cloth placemat is a great way to add texture and more autumn color to your table.
