Douglas County Feast THE DOUGLAS COUNTY FAIR AND RODEO’S FIRST ANNUAL FARMTO-TABLE BRUNCH SHOWCASED LOCAL, SEASONAL INGREDIENTS
On a warm, sunny Sunday during this year’s Douglas County Fair & Rodeo, more than 275 hungry attendees enjoyed the fair’s first-ever farm-to-table brunch that featured seasonal and locally grown, raised, and prepared meat and produce. The easy-morning, decadent brunch with various buffet stations was a delicious way to show off what Douglas County producers can put on the table. Seated around long picnic tables topped with festive bouquets from Parker-based Prairie Hill Flower Co, the guests indulged in farm-fresh eggs made three ways, Challah French toast with house churned butter and maple syrup, Colorado beef and ponzu shroom sliders, and Palisade peach cobbler. The food was prepared by Chef David Pitula of Whistling Boar—a from-scratch caterer/private chef company and artisan bread bakery. Ingredients were sourced from several Colorado farms, including Sandy’s Way Farm, FarmBox Foods, MetaCarbon Organic Farm, and Highland Honey. “Douglas County is rich in agricultural resources and this new event highlighted several of our local producers from honey to beef production, and from mushrooms to flowers,” organizers of the Douglas County Fair & Rodeo say. “The Fair & Rodeo strives to create new events and activities to educate our community, and our first farm-to-table brunch was a unique opportunity to showcase the importance of sustainability and the benefits of fresh foods. With the idea of building community through agriculture, this event gave fairgoers a more meaningful first-hand experience with family and friends. HERB SALT Herb salts offer endless flavor combinations, and are so handy to have as a staple in the kitchen. Plus, they make great gifts for family and friends.
INGREDIENTS 1 cup salt of your choice 1/4- 1/2 cup parsley (add more if using fresh herbs) 2 Tablespoons dried basil (or 1/4 cup if using fresh) 1 tablespoon oregano 1 tablespoon lemon zest 1 garlic clove minced Optional: Any additional herbs you prefer
PROCESS Add fresh parsley, garlic, lemon zest and a little bit of salt to the blender or food processor. Blend 10 seconds. Add additional ingredients and blend again. Line a baking sheet with parchment paper and pour salt mixture onto sheet evenly. Set in a cool oven overnight to dry. Store in an airtight container.

GARLIC HERB BUTTER Use this versatile butter atop of bread, popcorn, veggies, as a sandwich spread and more.
INGREDIENTS 1/2 cup room temperature unsalted butter 4 tablespoons chopped fresh parsley 1 tablespoon herb of your choice (dill, basil or oregano are my go-to herbs.) 1 clove garlic, chopped 1 tablespoon fresh lemon juice 1/2 teaspoon salt cracked pepper to taste
PROCESS Blend all ingredients in a food processor or mix by hand. Transfer mixture to parchment paper. Cover tightly and roll into a log. Refrigerate until firm.

KITCHEN REDESIGN STARTS WITH FINDING OUT FUNCTION AND LIVABILITY FOR THE HEART OF THE HOME
While beautiful new cabinets, freshly painted walls and sparkly appliances are what most visitors see, a successful kitchen remodel is much more than skin deep. To create a functional remodel, a kitchen designer must understand how customers use the space, and how a new design can better fit their lifestyle.
This includes reviewing questions such as will the space be used by serious cooks or by people just heating and serving? Will it be a space for entertaining? What are the storage requirements? Above all, how will the users move through the space to make the layout functional and purposeful?

The tailored, subtle details of the maple cabinets in this new kitchen provide just the right amount of visual interest, updating the space while incorporating some of the traditional design elements in the house. The remodel opened the kitchen to the adjoining family room, creating an inviting space for family dinners and gatherings. In the 10 years the homeowners have been in this home, they’ve been unhappy with the flow and functionality of the kitchen. Looking to the future and towards retirement, they wanted a space to enjoy over the next 10 years. While the space was tailored to the homeowner's specific needs, they were also thinking of the added value to their home and made selections that
would transfer to subsequent homeowners in the future, since a well-done kitchen remodel can recoup up to 80 percent of the cost when selling a home. While the footprint of the kitchen remained the same, the upper cabinets that divided the kitchen from the adjacent family room were removed, connecting the two spaces and providing an unobstructed view and path into the kitchen. The doorway into the kitchen from the hallway was removed, adding wall space for double ovens and plenty of added storage for the many kitchen gadgets used by these avid chefs. The centralized island created a large prep space that faces the glass door with a view of the beautiful backyard.

The isolation of the pandemic created strong demand and new innovations that south-siders have been hungry for. We’ve compiled a list of restaurants new to the area, bringing long-awaited diversity to our restaurant choices. From fresh seafood to comfort mac ‘n cheese, cocktails to home brews, you can dine well right here in our own community.
Sazón in Lone Tree is a modern Latin restaurant offering handcrafted margaritas and Latin American flavors, like the Rellena Veracruz, grilled pineapple with shrimp, peppers, chorizo, and bacon, topped with guacamole and crema fresca.
As if pasta with cheese wasn’t already amazingly decadent, i heart mac n cheese decided to take it up a notch. Philly beef, Buffalo chicken, skinny (okay, veggie) and even lobster are among the many choices.

Pierogies Factory owner Cezary moved from Poland in 2005 to discover Polish cuisine was neither trendy nor easy to find. He decided to change that. His pierogis are now served in many European-themed restaurants and his own.

WILD MUSHROOM AND GOAT CHEESE CROSTINI Serves: 4 Ingredients: • 6 oz goat cheese • 2-3 tablespoons heavy cream or milk • 5 sprigs fresh thyme, minced • 1 baguette, sliced and toasted • 2 tablespoons canola oil • 8 oz assorted wild mushrooms (shiitake, oyster, cremini etc.) sliced thin • 2 cloves garlic minced • 1 shallot minced • 2 sprigs fresh thyme, minced • 1 tablespoon parsley chopped • 1 ⁄4 cup white wine • 2 tablespoons butter • Extra virgin olive oil for garnish • Sea salt for garnish
WILD MUSHROOM & GOAT CHEESE CROSTINI
Directions: 1. In a bowl mix the goat cheese, cream, and thyme together until light and fluffy. Add kosher salt and mix well. Transfer to a shallow bowl. 2. In a large sauté pan, heat the oil over medium-high heat, add the mushrooms all at once and sear to create a golden-brown color on the mushrooms, do not shake or stir the mushrooms. 3. Once the mushrooms have given off their liquid stir and add the garlic, shallots, thyme, and parsley and cook until they are soft and fragrant. 4. Deglaze the pan with the white wine and cook until no liquid is left. Turn off the heat and add the butter and gently stir to combine. 5. Taste and adjust the seasoning with salt and pepper. To assemble: 1. On each piece of bread spread a layer of the goat cheese mixture covering the entire top of the bread. 2. Place a layer of mushrooms on top and a drizzle of extra virgin olive oil. 3. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
