likes radishes, but they are so satisfying to grow. The first to spout, I plant them all around the border of my garden as a bellwether of what is to come. Early-season gardening is my favorite. It is still cool, I don’t worry about the heat scorching the plants or me. There are very few pests to contend with and underwatering isn’t yet a concern. Early season sprouts are so hardy, standing up to our Colorado April snowstorms.

Eager for the arrival of warmer weather, I start a plan in February. I research varietals, what to plant next to what, and which companion plants to put in each spot once the early vegetables have gone to seed. I like to try one new vegetable every year. I’m a haphazard gardener, rarely do my neat, well-laid plans come to fruition. Sometimes the bunnies get to the peas before I protect them. Some years the lettuce grows too prolifically, and green onions grow too small. I often underestimate how much space and sun a full-grown plant needs. Despite that, I embark on my

Our water usage is down 30 to 40 percent. We use drip irrigation and divert water from the downspouts to irrigate plants and trees. This past summer, our water usage was 28,000 gallons per month below our Water Efficiency Target. We have also reduced our greenhouse emissions by retiring our lawn mower. Did you know that using a gasoline lawn mower for one hour is equal to the greenhouse gas emissions from driving 300 miles? Additionally, our trees and plants are helping to reduce the carbon in the air by capturing it in the soil. Given the varieties of our perennial fruits and annual vegetables, we are picking organic, nutritious and very tasty fruits and vegetables from the beginning of June through October. CAROLYN PACE The old saying goes: Someone’s trash is another person’s treasure. They were probably talking about compost! As old as farming itself, compost is a great tool to improve soil fertility, but it is not well understood. Compost is not fertilizer or soil. It’s more like a sponge. Molecularly, compost attracts and holds fertilizers like phosphorus and potassium, holds water molecules, and keeps water from trickling down through the soil. Adding compost each year reduces the amount of fertilizer and water your plants need. How is this miraculous money-saving soil amendment made? Compost comes from our waste: food waste, yard waste, and more. In backyards and commercial facilities alike, composters mix wet nitrogen-rich materials with dry carbon-rich materials. For example, kitchen scraps and dry straw. Mixed with the right ratio, the microbiome gets active. Bacteria starts breaking down the waste and turning it into compost. This generates heat, and they need oxygen and moisture to stay alive. Add time, and all the waste turns into beautiful, rich compost. Have you tried composting at home? Some have luck, but many give up due to delicate balance composting requires. Sometimes it attracts critters we don’t want. This isn’t a reason to abandon composting. “YOUR HOME SHOULD TELL THE STORY OF WHO YOU ARE, AND BE A COLLECTION OF WHAT YOU LOVE.” — Nate Berkus Whenever I embark on a new design project, I start with a conversation, reviewing my client’s wants and needs, their style and favored colors to make it uniquely their home. For this Lone Tree remodel, the homeowners wanted a kitchen, living space, and entry to be functional and a welcoming haven for family and visitors. One of the first requirements the homeowners expressed was greater functionality and maneuverability in the kitchen, while keeping the same footprint. The original island was too wide for comfortable movement around the kitchen and lacking adequate storage. We added a rectangular island, narrower than the original to allow wider clearance for opening cabinet doors, but with lower cabinets for storage. High-tech appliances were another homeowner desire, so the kitchen is outfitted with a Wolf range and Sub Zero refrigerator.

The homeowners wanted a more modern aesthetic but nothing too cold or contemporary. We avoided the exclusively neutral palette common in modern interiors, and gave the space warmth with colors, textures, tones, and lighting. We were able to design a modern home with a classic feel. I kept trends at bay and opted for a design that would stand the test of time. The goal was a main floor designed for maximum comfort and productivity, but also an ambient interior to provide peaceful respite after a long day of work.

Springtime Eats MAKE EASTER SEASON VIBRANT, COLORFUL AND HEALTHFUL WITH THESE MEATLESS DISHES

Springtime Pasta Primavera PASTA INGREDIENTS: + 2 or 3 Leeks prepped, as seen below + 1 Tablespoon olive oil + 1 Tablespoon vegan butter + One bunch fresh asparagus + 8 oz. linguine + 1/2 cup shelled edamame - frozen + 1 cup petite green peas - frozen + Several handfuls of fresh Parsley, Mint, Chives, or Marjoram, or a combination CRÈME FRAICHE + 11 oz. tube of Soon tofu (sourced at H-mart) or soft or silken tofu + 6 Tablespoons nutritional yeast + 1/4 cup fresh squeezed lime juice + 1/2 cup plant-based milk FINAL PLATING OPTIONS: + Vegan Parmesan Cheese - 3 ingredients prepped in advance. Pulse all 3 ingredients in a food processor on low until finely mixed. Store in a glass jar and refrigerate up to six months. + 1 cup walnuts + 1/2 cup nutritional yeast + 1 teaspoon sea salt + Lime (spritz) as garnish PREPARATION: 1. In a food processor blend tofu, 6 tablespoons nutritional yeast, 1/4 cup lime juice, and 1/2 cup plant based milk until creamy. Add a bit of water if it appears too thick. Crème can be made in advance and refrigerated up to one week. 2. Slice the white and light green portions of leeks into circles and place in a medium bowl of water. Discard dark green tops. Swish leeks with your hand to clean and allow sand to settle for 5 minutes. 3. Heat a large skillet over medium heat, add 1 Tablespoon oil and butter. Lift the leeks from the water bowl with your hands so the sand remains at the bottom of the water bowl. Place cleaned leeks in the skillet with the melted oil and butter. Sauté until soft, about 5 minutes, then lower heat and set aside. 4. Heat a large stock pot of water and follow pasta

cooking instructions. 5. Snap off tough asparagus ends and cut into 2 inch pieces. 6. Clean and chop fresh herbs. 7. Steam asparagus, peas and edamame for 2 minutes or until crisp and tender. 8. Toss pasta, vegetables, and crème fraiche in your skillet or a large bowl. Mix in fresh herbs. Squeeze lime juice over pasta. Sprinkle with vegan parmesan cheese.

Early Spring Devilish Potatoes INGREDIENTS: + 18 early potatoes the size of eggs, Yukon gold or white + 3/4 cup vegan mayonnaise, we used “Follow Your Heart Vegenaise” + 2 teaspoons Dijon mustard + 1 teaspoon apple cider vinegar + 1 teaspoon kala namak (sea salt from India) or sea salt + 1/2 teaspoon powdered turmeric + Paprika, or smoked paprika, and or dill fronds for garnish PREPARATION: 1. Boil water in a large stock pot and cook potatoes until soft and tender 25 to 30 minutes. A skewer should slide through flesh without resistance. 2. Drain and drop potatoes back into a dry pot on high heat for 30 seconds or until potatoes squeak. A quick technique that will pull water out of spuds. As you slice potatoes in half become aware of the round and flat side to reduce rolling. 3. Use a small melon baller or tiny spoon to scoop out a little flesh from each potato and place potato halves on a serving plate. The scooped-out potatoes will be mashed and incorporated into your vegan egg yolk mixture. 4. In a medium mixing bowl add scooped potato, mayo, mustard, vinegar, kala namak or sea salt and turmeric. Mix well until creamy. 5. This yellow cream filling can be spooned into your potatoes or placed into a pastry bag with a large serrated or star tip. You can also snip the end of a freezer bag and pipe filling on. 6. Sprinkle your platter with paprika, fresh dill fronds, or minced chives befoe plating. + Indian kala namak sea salt has a sulphur essence that mimics the egg-y flavor. Ingredients 3 parts Epsom Salt + 1 part Baking Soda + Essential Oils

Directions Mix your ingredients together in a jar or canister and scoop about ¼ cup directly into the washer basin before adding the clothes—just like you would with scented beads. Continue with your laundry like normal.
