The Bimmers and the Bees I WAS SEVEN YEARS OLD WHEN I WAS INTRODUCED TO THE NOTION OF "GOING GREEN" (WE DIDN'T CALL IT THAT IN THE 70'S, BUT I DIGRESS.) I remember crushing aluminum cans with my dad on the asphalt of our driveway. When you're seven, the world and its resources seem endless, so it didn't really occur to me that the primary objective in recycling was to conserve resources—not necessarily to recoup the onecent-per-can at the recycling center (which I thought was really cool until I realized how many cans it would take to buy a new bike).

There's always more we can do, but motivating ourselves though guilt is probably more self-defeating than triumphant. So triumph—and go green by doing what makes sense to you; you'll have more energy to do more for the planet when you're not burdened by guilt! And, fortunately, there are many ways to "go green." This issue celebrates the progress we've made as a community in preserving our environment while at the same time, being true to the fact that we live in the modern world. Our feature, "It's hip to BEE-keeping" (p. 20), takes us back to the basics with sustainable beekeeping, while author and chef Yvette Marquez sources local springtime freshness to create delicious Southwestern recipes (p. 28). A 12-year-old Lone Tree resident and 7th grader at STEM School Highlands Ranch, Rao was named “America’s Top Young Scientist” and awarded $25,000 last October in a contest sponsored by 3M and Discovery Education. The box is Rao’s winning invention—and it just might hold the key to transforming how water is tested for lead. “I’d been following the Flint water crisis and was appalled by how many people were affected. I decided to take action and create a solution,” Rao says. She knew that the mainstay of water testing— strips—aren’t very accurate, and more reliable tests require samples be sent to labs, which costs time and money. Named Tethys after the Greek goddess of fresh water, Rao’s design relies on a carbon nanotube sensor to detect lead—making it more accurate than strips— and a processor that measures the resistance amounts. Within seconds, results are sent over Bluetooth to an app on the user’s smartphone. Rao has big plans for Tethys. She hopes to expand the contaminants it tests for and she envisions a day when every home has one. She also has big plans for herself. While she enjoys fencing, baking and traveling, this young scientist has gene editing next on her radar. “I want to change the world,” she says.

SANDY LANPHEAR SHARES HER BEEKEEPING LEGACY WITH NEWCOMERS GROWING UP, SANDY LANPHEAR NEVER DREAMED THAT SHE WOULD ONE DAY BE A PARKS RANGER WORKING TO FOSTER COLORADO’S NATIVE BEE POPULATION. Lanphear works as a park ranger for Highlands Ranch Metro District and remembers “chasing swarms” when she first started—she and other rangers were in charge of handling swarming bees. (Swarming is a defensive mechanism, Lanphear explains, that is merely a way for bees to start new colonies.) The petite Highlands Ranch resident got her start in beekeeping by following in her dad’s footsteps (he took up the hobby in the 1980’s). When she started beekeeping with her father, Lanphear’s work mostly consisted of delivering bees to people who wanted them for a variety of reasons. At the beginning, Lanphear says, “we had more bees than we knew what to do with, so my dad had so start buying hives because he couldn’t make them fast enough.” When she started on her own in 2004, Lanphear envisioned beekeeping as a quiet hobby that would simply fill her spare time. But Lanphear’s commitment to everything she puts her mind to led her to found the Highland Beekeeping Club and to start a nature camp with the park rangers. Before she knew it, a part-time position as receptionist at Metro District turned into a full-time position as a park ranger—mastering beekeeping and becoming a native plant master along the way. “Most people want to be more environmentally friendly,” says Lanphear. “I think people want to dabble a little bit, whether it be wildlife or farming, and beekeeping is a good way to stick your toe in.” Doing what she calls “Bee PR,” Lanphear works to lessen the stigma of fear surrounding bees. “Everyone wants to be green and not be scared of bees,” says Lanphear, “But they understandably are.” Lanphear gets to work with the Scouts , helping them earn their bug badges by completing projects like building a native bee home and placing it on their land. Lanphear also applies her expertise by helping local schools build their gardens and to better understand their pollinators. CONTINUED >

SPRING INTO SOUTHWESTERN FLAVOR WITH LENTIL SOUP & SALSA-TOPPED TILAPIA

CITRUS, MANGO, AND AVOCADO SALSA This citrus salsa is made with some of my favorite tropical fruits: mangos and avocados. Spoon it over pan-fried tilapia or just set it out as an appetizer with tortilla chips and watch it disappear. Makes 3 cups + 1 large ripe mango, peeled, pitted, and chopped + 1/2 cup diced red onion + 1 avocado, pitted, peeled, and chopped + 1 cara cara orange, peeled, segmented, and chopped + 1 mandarin, peeled, segmented, and chopped + 1 to 2 serrano or jalapeño peppers, finely chopped + 3 tablespoons lime juice + Salt to taste 1. Combine the chopped mango, red onion, avocado, orange, mandarin, and chile peppers in a bowl. Add the lime juice and olive oil and toss gently. Add sand chile peppers in a bowl. PAN FRIED TILAPIA Growing up I did not eat much seafood, but as I grew older and started eating it more often, I quickly fell in love with it and made up for lost time. This recipe is quick and easy to make. The flavor is delicate yet complex enough to entice the palate. The citrus, mango, and avocado salsa pairs well with the simply prepared tilapia, making it a memorable and healthy meal. 4 servings + 1 pound tilapia fillets + 1⁄3 cup all-purpose flour + 1 teaspoon garlic powder + 1 teaspoon ground black pepper + 1⁄4 teaspoon salt + 3 tablespoons salted butter + Citrus, Mango, and Avocado Salsa 1. Rinse tilapia fillets and pat dry with paper towels. 2. Mix flour, garlic powder, pepper, and salt in a shallow dish. Dip fillets in flour mixture and coat both sides. 3. Heat butter in skillet over medium heat until hot. Add floured fillets to skillet and pan fry for 3 to 4 minutes on each side or until golden. 4. Place fillets on a platter and spoon the citrus, mango, and avocado salsa over fish before serving.

LENTIL SOUP

My grandma made lentil soup often, especially during the Lenten season. This earthy soup is healthy and hearty with the addition of carrots, celery, tomatoes, and spinach. 8 to 10 servings + 2 cups raw lentils + 10 cups water + 1 tablespoon salt + 1 tablespoon olive oil + 1⁄2 cup chopped carrots + 2 stalks celery, chopped + 2 vine-ripened or roma tomatoes, chopped + 1⁄2 cup chopped yellow onion + 1 clove garlic, chopped + 1 cup coarsely chopped spinach 1. Sort the lentils by removing any stray beans or foreign peb-

bles that are sometimes present. Rinse lentils in a colander with cool water. 2. Over medium heat, in a large stockpot, bring the water to a boil and add the salt. After the water begins to boil, add the rinsed lentils and lower the heat. Cover and simmer until the lentils are almost tender, about 15 minutes. 3. While the lentils are cooking, heat oil in a large skillet over high heat. Add carrots, celery, and tomatoes and sauté for about 5 minutes. Add onion and sauté until translucent, about 2 minutes. Add garlic and sauté for 1 minute. Reserve. 4. Add sautéed vegetables and simmer for 15 minutes. Add spinach and mix. Salt to taste. 5. Ladle into a big bowl and serve with your favorite bread.
