In this season of giving thanks (and soon, gifts), waiting may just be an integral part of it all. We wait for our loved ones to arrive from faraway places, making the reunion even sweeter. Many of the things for which we are thankful were built or accumulated over time, so in a sense, we waited for them. We wait all year for the long vacation breaks that come with the holidays, hard-earned time off that culminates into a beautiful season. I’m probably feeling especially pensive with changes in my own life—I’m reminding myself that nothing happens when I want it to, but when God says it’s time.

Anchor Center for Blind Children Sunset in the Country Gala Anchor Center for the Blind Children hosted its largest annual fundraiser event at the J-5 Equestrian Center in Littleton on September 22. More than 500 supporters and friends of Anchor Center attended this unique event. The gala included a silent auction, live auction, dinner, special guest speaker, video about Anchor Center, live entertainment, and dancing. GREEN BEAN “CASSEROLE”

INGREDIENTS ++ Olive oil and dairy-free butter for sauteeing ++ 1 package sliced mushrooms ++ 1 small-medium onion, sliced ++ 1 package frozen petite green beans ++ 2 cloves garlic, chopped ++ 1/4 cup white wine or sherry ++ 1/4 cup all-purpose gluten-free flour ++ 1/4 cup canned coconut cream or milk ++ 1 1/2-2 cups chicken broth ++ Kosher salt and pepper Note: Mushrooms soak up lots of butter, oil and salt. Add more as needed.

DIRECTIONS Heat a cast iron or heavy saute pan on medium-high. Add butter and olive oil. When the oil is hot, add onions. Reduce heat to medium and saute until onions are browned, seasoning with salt at the end. Remove onions from pan and set aside. Keeping the pan hot, add more butter and oil, then add sliced mushrooms. Stir to coat mushrooms in oil/ butter mixture, then add frozen green beans. Stir the mushrooms and beans around until coated with butter/oil, adding more if needed. Let cook without stirring until beans and mushrooms start to brown. Once they start to brown, cook for an additional 10 minutes or until desired doneness, generously adding salt and pepper. Add chopped garlic and cook for 1 minute. Add half of the reserved onions. Stir in wine or sherry. Add gluten-free flour stirring for 30 seconds-1 minute. Add coconut cream and then chicken broth. Season to taste. Stir constantly as it thickens, adding more broth as needed. Plate on a serving dish and top with remaining onions. Serve immediately or reheated and held in a warm oven until ready to serve.

HUMMUS PESTO DIP INGREDIENTS ++ 1 container roasted red pepper hummus ++ 1 jar nut-free pesto ++ 1 large tomato, diced ++ 1 cucumber, diced ++ Feta cheese ++ Salt and pepper

DIRECTIONS On a medium serving platter, spread hummus evenly. Top the hummus with all of the pesto. Carefully spread out the pesto layering it over the hummus. Top with tomatoes and cucumber. Season with kosher salt and ground pepper. Top with crumbled feta. Refrigerate until ready to serve. Serve with a variety of dipping options: carrots, cucumbers, endive, peppers, crackers, bread or gluten-free pretzels.

DIRECTIONS Peel and cut carrots and onions. Spread carrots and onions evenly on a large baking sheet. In a bowl mix together olive oil, honey and balsamic vinegar. Coat the carrots and onions in the honey-balsamic mixture. Sprinkle with salt and pepper and toss to coat. Add the thyme, reserving a few springs to garnish. Bake at 400 degrees for 20 minutes. Turn over veggies with a spatula and cook for 10 minutes more or until caramelized. Top with the extra thyme. 18

INGREDIENTS ++ 1 puff pastry, cut into six rectangles ++ Fruit preserves (apricot, berry or lemon) ++ 2 peaches ++ 2 pears ++ 1-3 tablespoons sugar ++ 1 egg

DIRECTIONS Cover a large baking sheet in parchment paper. Thinly slice peaches and pears, and place in separate bowls. Sprinkle sugar on fruit as needed; toss to coat. With a fork, poke holes throughout the centers of each pastry, leaving a 1/2-inch border around each. Spread 1 tablespoon of fruit preserves over the center section of each pastry. Top with sliced fruit, keeping the 1/2-inch border open. Bake at 375 degrees for 15-20 minutes until golden brown.

RAISING A FIGHT

LONE TREE RESIDENT BILL MARTIN FIGHTS ALS BOTH PHYSICALLY AND THROUGH HIS NON-PROFIT

LIKE MANY PEOPLE STARING DOWN A MILESTONE BIRTHDAY, BILL MARTIN OF LONE TREE WANTED TO GREET HIS 50TH IN THE BEST SHAPE OF HIS LIFE. He grew up playing sports in El Paso and had kept in decent shape ever since, but he decided to kick it up a notch with a new routine: running the Bluffs with his dog every morning before work, lifting weights on his lunch hour, and doing CrossFit in the evenings. In his own words, Bill was working out like a beast. Friends and family were noticing—and it felt good. So he couldn’t understand why he started losing weight, even with 4,000 calories a day. He started having a hard time gripping barbells and doing pull-ups, despite his overall strength and fitness. “I thought, ‘maybe I’m just getting old, maybe I’m getting arthritis,’” Bill says.

Then, in summer 2016 after months of testing with a neurologist, Bill was diagnosed with ALS—amyotrophic lateral sclerosis—a progressive neurodegenerative disease. ALS attacks the nerves and muscles and eventually takes away the ability to walk, swallow and breathe. There currently is no cure. “It was a big shock for both of us,” says Bill, referring to his wife of almost 22 years, Julianne. In the months that followed, Bill and Julianne went somewhat dark. They kept Bill’s diagnosis secret so they could privately grieve and come to terms with the possibility of Bill not being around to see his two teenage children grow up. They devoted themselves to learning about ALS and hunting down the most promising research for a cure. The Martins eventually told a handful of close friends and family—but not their kids. They still wanted time to put long-term finances in order, renovate their new house with a main-floor master suite, and be emotionally ready to help their family and friends grapple with their devastating news. “When we finally went public, it was liberating,” Bill says. “We had been hiding for a couple of years and I knew it was time to start rolling the ball on raising awareness. “ALS is way below the cancers of the world. What I’m trying to do now is a couple of things—raise awareness and also raise money. I read somewhere that ALS is not an incurable disease, it’s an underfunded disease because of the lack of awareness.” They broke the news earlier this year and immediately gathered their tight-knit group of friends—which conveniently includes an attorney, an accountant, a sales executive, among other professionals—to form and help run the foundation Bill Paul’s Fight Against ALS. The first fundraiser, which included workouts and silent auction, was held in June at Intensity Park Meadows, Bill’s CrossFit gym. With just word-of-mouth advertising, the foundation raised $30,000 in one weekend. Bill Paul’s Fight Against ALS board member, Robyn Burkes, and a close friend of the Martins, says everyone was blown away by the support from friends and community for something that was put together fairly quickly. “Just think—when we do this again and have some strategic planning—what kind of impact we’re going to have,” she says. Intensity Park Meadows owner Shean Kirin says since the day Bill stepped foot in the gym, he’s been a friend to all, quick with a smile and encouragement, so it’s no wonder he’s fighting ALS with the same spirit. “In spite of all that, he chooses to be the eternal optimist and have a great attitude, and still be everything that everyone’s always known him as,” Shean says. “That’s what’s amazing, when you see someone who is facing a challenge where the odds are stacked against him, and he chooses instead to have a positive attitude and be an inspiration to everyone around him.” Julianne says the foundation is a tangible thing she and those closest to them can do to help. “It’s very hard as a spouse to watch the one you love being given a pile of bricks, especially when he takes such pride in taking care of himself,” she says. “We want [people] to know that every dime goes to research and a cure. GIVING LIGHT TO LIFE THROUGH THE LENS Parker resident Johnnie Medina dabbled in photography on and off for about 15 years, but on July 27, 2017, his family was changed forever. That was the day his 24-year-old daughter, Mikayla, took her own life. Johnnie’s idea of Life Through the Lens was born during the next few weeks. Getting behind the camera and capturing precious moments of terminally ill patients was a gift he could give to families. “I realized I didn’t have enough photos that showed who Mikayla was in life,” Johnnie explains. “It was my form of grieving, and it helped me through this.” Life Through the Lens provides photos for free. final portraits of terminally ill patients evolved into taking photos for the Colorado Cancer Coalition, Global Down Syndrome and Kids Mobility Network, as well as other nonprofits. Johnnie tries to attend every funeral, and some families want to document this event, too. “They might want to look at the photos in a few weeks or in a few months, but they need the photos to process what they are going through.” Johnnie has received messages from people as far away as the U.K. “People are rallying around this,” he says. Local companies have jumped on the bandwagon, too. “We are proud and honored to contribute in a small way to what Johnnie is doing and to help these families in their time of need,” says Karen Shain, owner of Mainstreet Flower Market in Parker. Her shop donates a plant or an arrangement for every funeral, and Englewood Camera donates two prints from the edited files Johnnie gives to the families. Life Through the Lens creates a legacy of memories and keeps the person’s light alive. “I want people to see who they were and what defined them.” Irish singer Tommy Fleming is an ambassador and advocate. Finding more sponsors, celebrity ambassadors and photographers will help Life Through the Lens grow worldwide, Johnnie says. Johnnie also speaks to high school students. “Depression is a real issue, and getting the conversation started with kids is a big thing.” ThroughTheLens.org
