Culinary Creations

his is definitely the easiest and best way to make rich-tasting butternut squash soup, without having to

peel and dice a large, awkwardly shaped vegetable. You start by cutting the squash in half lengthwise and roasting it in a hot oven. Scrape the roasted flesh from the skin, and simmer it with sautéed yellow onion, fresh sage and a tart Granny Smith apple. When everything’s soft and the flavors have melded, purée it all in the blender. Finally, enrich the soup with a bit of heavy cream. • 4 pounds whole butternut squash (about 2 medium), halved lengthwise and seeds removed • 2 tablespoons unsalted butter (1/4 stick) • 1 medium Granny Smith apple (about 8 ounces) • 1/2 medium yellow onion

as needed • 1/3 cup heavy cream • 1/2 cup toasted pumpkin seeds, for garnish (optional) 1. Heat the oven to 425°F and arrange a rack in the middle.

Line a baking sheet with aluminum foil. Place the squash pieces cut-side up on the baking sheet. Melt 1 tablespoon of the butter and brush all of it over the tops and insides of the squash halves (alternatively, you can rub it on evenly with your fingers). Season generously with salt and pepper. Roast until knife tender, 50 minutes to 1 hour. 2. Meanwhile, peel, core and cut the apple into medium dice. Cut the onion into medium dice. Melt the remaining tablespoon of butter in a large saucepan or Dutch oven over medium heat. Add the apple, onion and sage, season with salt and pepper. Cook, stirring occasionally, until softened, about 7 minutes. Remove the pan from the heat and set aside. 3. When the squash is ready, set the baking sheet on a wire rack until the squash is cool enough to handle. Using a large spoon, scoop the flesh into the saucepan with the sautéed apples and onions; discard the skins. 4. Add the broth, water and measured salt and pepper, stir to combine, and bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer, stirring occasionally and breaking up any large pieces of squash, until the flavors meld, about 15 minutes. Remove the pan from the heat and stir in the cream. 5. Using a blender, purée the soup in batches until smooth, removing the small cap (the pour lid) from the blender lid and covering the space with a kitchen towel (this allows steam to escape and prevents the blender lid from popping off). Alternatively, use an immersion blender. Taste and season with salt and pepper as needed. Serve garnished with the pumpkin seeds if using. 20

n Colorado, much of todayâ€™s ski culture has an emphasis on backcountry or big mountain exploration. While inspiring, the prospect of setting out on exploratory ski missions in the middle of nowhere when avalanche deaths seem to be at an all-time high can seem uninviting and overwhelming. Where the heck do you even begin? Here are seven suggestions to follow if youâ€™re serious about transitioning from resort junkie into someone who knows how to safely navigate and survive skiing or riding beyond mediated terrain.

01 LEARN AS MUCH AS YOU CAN ABOUT SNOW.

02 GET THE GEAR AND UNDERSTAND ITS PURPOSE.

Sounds trivial, but really. Start by reading your local snow report more regularly and begin to understand how the weather is affecting the snowpack. One resource for consistent forecasting is OpenSnow. com. An entire season of storms dictates what kind of snow you’re potentially skiing. Is it stable? Is there enough coverage? If you’ve been reading about regional snowfall, you’re a lot more likely to understand what the collection of layers are looking like and you’ll be able to follow along discussing skiing conditions.

Initial items for keeping yourself safe include a shovel, a beacon and a probe, but you’ll also want to look into getting a good backpack, sensible layers or touring equipment. You don’t have to spend a fortune in your first season and buy everything at once; Craigslist or renting works, too. Also, try checking out your local sports recycler or see if a friend will lend these items to you. CONTINUED >

Drop the money and get educated. Courses are generally a few days in length and cover the basics in reading terrain and snowpack, utilizing gear and assessing risk. Most courses include time “in the field,” and this is the perfect time to rent or borrow gear to practice using it properly. If you’re a student, look to see if your rec center or other clubs on campus offer courses at a discount. 04 FOLLOW THE LEADERS.

Mentors matter. If you know someone who has been skiing out of bounds for a while now, ask them if they are willing to take you out skiing on some mellow terrain after you’ve taken your Avalanche 1 Course. Offer to drive or buy them an après meal. If you can’t coordinate a time to go exploring, invite him or her out for a drink and pick their brain. Ask them about how they got into backcountry skiing or about the lessons they’ve learned in the field over time. 05 GET YOUR CARDIO UP TO SPEED.

Skiing in the backcountry doesn’t just consist of steep turns and face-shots; a lot of time is spent hiking. The popular phrase “earn your turns” isn’t just talk, it takes work ascending the mountains you plan on skiing down. Start getting your heart rate up in your daily life so that laps in the backcountry can be less lung busting. 06 IF YOU CAN AFFORD IT, DON’T LEAVE THE RESORT ENTIRELY.

Hiking legs are important, but skiing legs are what make it fun. The more you’re skiing, the better. Try to make it a point to get some resort laps in here or there throughout your season. It means you’re keeping your skiing legs in shape, and you’ll be more prepared to take aggressive turns in an ungroomed landscape. 07 FIGURE OUT WHERE TO EXPLORE.

Start talking to people and researching common places to ski or ride in your region. You may hear folks constantly talking about a certain trail or recreational area where they like to go touring. Study those places, the terrain traps associated with them and begin familiarizing yourself with that topography. Then, when the time is right, you’ll be ready to send it.

im Ferraro takes her title of Aunt Kim very seriously. And if she occasionally has to be blunt, or forward, or sometimes even a little rude to help the little ones who call her Aunt Kim, well, that’s OK by her. For the past four years, Ferraro of Lone Tree has been a Court Appointed Special Advocate — or CASA — for children going through abuse and neglect court proceedings. As a CASA volunteer working on individual cases, Ferraro speaks for her children in court and spends hours talking to parents, extended family, police officers, educators, foster families and other officials to help advise judges on the best permanent placement for children in the foster-care system. “Sometimes you think, ‘I don’t want to rock the boat,’ but I’m here to be an advocate for these kids,” she said. There are roughly 300 volunteers like Ferraro working with the agency Advocates For Children CASA in the 18th Judicial District of Colorado, which represents Arapahoe, Douglas, Elbert and Lincoln counties. CASAs in these counties alone support about 800 children who have filings in the Dependency and Neglect Court. There are 16 CASA programs throughout the state. Peg Rudden, executive director of Advocates 4 Children CASA in the 18th district, speaks for just five minutes and you get the sense of urgency and importance of what the volunteer advocates do. Rudden’s a mother of six adult children, two of whom are disabled. She had a granddaughter die of brain cancer. She said even with these hardships, she and her family have always been blessed with support from their community. “Everybody wraps their arms around these kids. But for foster kids, there’s no one there but their CASA,” said Rudden, who started volunteering with CASA in 1981 through a Junior League project and has been passionate about the program and kids ever since. To become a CASA, a volunteer goes through 30 hours of training, is sworn in by a judge, and then is assigned a case, which typically lasts about 18 months.

People I talk to say ‘I could never do that.’ But you can. Seeing those families be reunited, that’s why this organization is so important. Ferraro’s favorite part of her job is spending time getting to know her “munchkins,” as she calls them, by taking them to the park, or eating lunch with them at school — where they call her Aunt Kim to avoid having to retell the complicated story of their relationship to friends. Once her own kids entered high school, she decided to use her free time to volunteer. The CASA program appealed to her because of her own experience growing up. “I didn’t have the brightest childhood,” she says, referring to a series of stepfathers. “It would have been extremely helpful for someone to be a voice for me and my siblings.” Ferraro typically spends a couple hours a week as a CASA volunteer. And she’s proud that her efforts in her last case resulted in the children being reunited with their mother. Ferraro said she worked hard on mentoring the single mother, who has no other family and few positive role models in her life.” People I talk to say ‘I could never do that.’ But you can," Ferraro said. "Seeing those families be reunited, that’s why this organization is so important."
