After one of the hottest summers on record, October has finally arrived, and with it, the return of autumn.
Gone is the excessive heat and humidity, replaced by cooler weather, colorful leaves, fall festivals and football. Autumn also signals the start of the holidays, a time filled with warm fellowship and great food and drinks, including pumpkin-spiced everything.
Whenever great food and drinks are mentioned, your Hendersonville Lifestyle team is sure to be around. As always, our October issue is all about the culinary pleasures that make life just a little more fun during the last quarter of the year.
This month, we take you on a food and drink odyssey that is sure to satisfy the tastes of the pickiest diners.
We begin by exploring one of Hendersonville’s newest dining destinations that is bringing the sights, sounds, scents and tastes of Bourbon Street to the City by the Lake.
Next, we explore how to create the perfect pairing of two of our favorite things – wine and chocolate.
Continuing, we dive into the Halloween spirit by taking a look at two spooky cocktails that are all treats and no tricks.
As we head back home on final approach, we update you on many of the latest happenings in Hendersonville that make our city such a special place in which to live, work and play.

A round-up of exciting news from
TriStar Hendersonville Medical Center celebrated a groundbreaking ceremony for a $21 million expansion of its Birth Center on Aug. 16. When finished, the expansion will add six new birthing suites, four private NICU suites, a five bed obstetrics center and classroom space.
“This project will help ensure women continue to have access to the nationally recognized care that is offered here every day,” said Justin Coury, chief executive officer at TriStar Hendersonville.
The Hendersonville Area Chamber of Commerce held a ribbon cutting ceremony for Keller Williams for their new office space at 100 Bluegrass Commons, Suite 140 on Aug. 30.
The American College of Cardiology has recognized Sumner Regional Medical Center (SRMC) for its demonstrated expertise and commitment in treating patients with chest pain. SRMC was awarded Chest Pain Center Accreditation with Primary PCI in August based on rigorous onsite evaluation of the staff’s ability to evaluate, diagnose and treat patients who may be experiencing a heart attack.

There is no place quite like New Orleans.
As one of the most popular tourist destinations in the world, the “Big Easy” is known for good times, hospitality, jazz and Cajun cuisine. From Canal Street to historic Bourbon Street, there is always something going on in that sassy city.
However, all of the fun and excitement comes at a price. Travel and lodging to and from the Crescent City from Hendersonville can be expensive, particularly for families.
Fortunately, local folks craving a bit of the New Orleans style and cuisine don’t have to leave the friendly confines of the 37075. Instead, all they have to do is hop into
their cars or summon an Uber and head on over to one of Hendersonville’s newest dining establishments – the Cajun Steamer Bar & Grill.
Located at 185 Indian Lake Boulevard, the Cajun Steamer offers a wide variety of authentic Cajun dishes and signature drinks served in a comfortable, relaxed environment. From quick lunches to evenings out to Sunday brunches, the restaurant is the perfect place for diners looking to satisfy their Creole craving.
Hendersonville is home to the seventh Cajun Steamer, with additional locations in Alabama and in Tennessee (Franklin and Murfreesboro.)
Fun is always happening at the Cajun Steamer.
Cajun Steamer CEO Gaston Lanaux sounds a siren when a Hurricane drink is ordered.
The restaurant’s expansive menu features a wide variety of Louisiana-style seafood items, including boiled crawfish, redfish Rockefeller, chargrilled oysters, fresh gulf shrimp and po’boys. The menu also includes traditional bayou favorites such as voodoo chicken, crawfish etouffee, shrimp and grits, red beans and rice, and New Orleans-style beignets. To satisfy thirsty patrons, the eatery also offers a large selection of local craft beers, along with signature cocktails such as Cajun Steamer Hurricanes and Frozen Daiquiris.
The Cajun Steamer celebrated its arrival in Hendersonville with a Mardi Gras-style grand opening on Mar. 7, complete with beads, live Dixieland jazz and a special food and drink menu. Since then, the restaurant has quickly become a local favorite for those seeking the best in Creole cuisine.
“The Hendersonville community has shown us incredible warmth and support since day one,” says Cajun Steamer CEO Gaston Lanaux. “We’re ecstatic to have found a home here, and we’re looking forward to making many more friends while serving up the best Cajun and Creole food and drinks in Tennessee!”
Cajun Steamer Marketing and Branding Manager Jenna Hosemann echoed Lanaux’s comments.
“This city has been so welcoming,” adds Jenna. “We were pleasantly surprised to discover how many Cajun Steamer fans were actually located in Hendersonville, most of whom already knew about us
from having frequented our Franklin and Murfreesboro locations over the years.”
In addition to its ground floor dining room, bar and outdoor patio, the Cajun Steamer also offers a spacious second floor level that can seat between 30 to 40 additional diners. The upstairs space is also available for private events, such as birthdays, anniversaries and company parties.
This fall, the Cajun Steamer will be on hand at several events around the City by the Lake, including the Taste of Hendersonville and the October Pig Fest. The restaurant will also feature game day drink specials to help fans cheer their favorite teams to victory.
The Hendersonville Cajun Steamer Bar & Grill is located at 185 Indian Lake Boulevard. Business hours are 11 a.m. until 9 p.m. Monday through Thursday, 11 a.m. to 10 p.m. Friday and Saturday and on Sunday from 10 a.m. until 9 p.m. Happy hour occurs each Monday through Friday from 3 p.m. until 6 p.m. On Sundays between 10 a.m. and 2 p.m., the restaurant offers a special brunch menu that features New Orleans-style entrees and several drink specials, including Mimosas, Screwdrivers and Bloody Marys.

Camel Express was founded in 2016 by CEO Read Hauck, who recognized the need for a fast, affordable and convenient car wash in the Nashville area.
“I came from a family of innovators – my dad is longtime local entrepreneur Christie Hauck, the founder of Christie Cookie Company,” says Read. “When I began exploring the possibility of opening my own business, I immediately thought of creating a high-quality car wash. Pairing wine and chocolate together can be a delightful sensory experience that can elevate the flavors of both. While the concept of pairing wine with food is well-known, pairing it with chocolate may seem unconventional at first. However, when done correctly, it can create a harmonious balance where the flavors of the wine and chocolate complement and enhance one another.
Wine and chocolate have a lot of similarities to each other. Both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. These characteristics affect flavor so it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste.
For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue.
While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa.
Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with.
We’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.
If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.
Wine and chocolate both carry their own intense flavors. If the chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.
Bitter to semi-sweet dark chocolates, that are 50 to 100% cacao, have intense, bitter flavors, and earthy to fruity undertones. Match the intensity without adding more dryness by pairing these chocolates with full-bodied, yet fruit-forward wines.
Pairs well with:
Cabernet Sauvignon, Pinot Noir, Port, Merlot, Shiraz, Barolo
Milk chocolate is typically creamier and sweeter with flavors of brown sugar, vanilla, and cream. It requires a wine that is light to medium in body, with a ripe fruit character.
Pairs well with:
Pinot Noir, Merlot, Sweet Riesling, Ice-Style Wine
White chocolate has a sweet, buttery flavor with notes of cream and honey. Sweet white and rosè wines help cleanse the palate of the rich flavors from white chocolate, as does sparkling spumante like Moscato d’Asti.
Pairs well with:
Sweet Riesling, Moscato, Semi-Dry Sparkling Whites, Gewurztraminer
Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 cup chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice cream.

Do The Monster Mash With These Fall-Focused Cocktails Perfect For Halloween Festivities

• 2 ounces cachaça (Brazilian sugar cane rum, silver rum can be substituted)
• 1 ounce Galliano liqueur
• 1/2 ounce lemon juice
• 1/2 ounce brown sugar & cinnamon syrup
• 2 tablespoons pumpkin puree
• fresh nutmeg
Combine all ingredients except for the nutmeg in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Strain through a mesh fine strainer into a martini glass or other decorative glassware without ice. Shave fresh nutmeg over the top as a garnish and enjoy!
• 1 1/2 ounces vodka
• 1 1/2 ounces chocolate liqueur
• 1/2 ounce Frangelico liqueur
• graham crackers
• marshmallows
Combine all ingredients except for the graham crackers and marshmallows in a shaker tin. Add ice and shake vigorously until sufficiently chilled and blended. Crush graham crackers in a plastic bag to make a fine powder. Coat half of a martini glass with your crushed graham crackers and strain your cocktail into the coated martini glass. Layer the top of the drink with marshmallows and toast with a crème brûlée torch. Enjoy!
