With the changing seasons comes a change in what we are craving, and with fall, that often means comfort food. October is our most delectable issue of the year, filled with some of our favorite dishes and beverages around town.
Enjoy delicious-looking images and mouthwatering articles about local establishments such as Distill and Remedy’s Tavern, Table 34, and Echo & Rig Butcher and Steakhouse at The District at Green Valley Ranch. Get your tastebuds ready; you are in for a treat. We also included a couple of new recipes for you to try at home, whether you’re cooking for just your family or for entertaining guests.
The smells of fall bring memories to my mind of sitting in my host mom’s kitchen in 1991 when I was just an exchange student from Brazil in Montgomery, Alabama. The aroma of cinnamon, apple, pumpkin, chili, and soups of any kind brings me right back to her table.
There is definitely an art to creating a flavorful dish that not only satisfies our taste buds but also evokes memories. The aroma of certain spices and foods can help us recall our childhood, which can be incredibly powerful and comforting. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable.

Batch Hospitality takes local favorite Table 34 to delectable new heights

Living in a culinary mecca like Las Vegas, it can be easy to overlook some of the city’s dining staples, with so many new restaurants opening on a monthly basis. However, a recent visit to longtime local favorite Table 34 showed that the off-strip restaurant has only become more remarkable since being acquired by Batch Hospitality last year.
Co-founded by industry veterans Evan Glusman, whose family founded Piero’s Italian Cuisine, and Constantin Alexander, who has worked with such luxurious Strip properties as Bellagio and The Palazzo at The Venetian Resort, Batch Hospitality has made several changes to Table 34 since late 2022. This past January, the 600 East Warm Springs Road farm-to-table restaurant even introduced new lunch, dinner, and dessert menus under Batch Hospitality’s executive chef, Joe Valdez.
“We planned on slowly updating the menu over time, but in talking with guests, it became obvious that they were ready for something new,” said Glusman.
While some of the restaurant’s signature dishes have been refreshed, like the Seared Verlasso Salmon served with herbed cauliflower purée and sautéed spinach and the succulent Creekstone Farms Prime Filet accompanied by beet purée, grilled asparagus, and confit potatoes, many of the menu items are new. Highlights include the flavorful Sesame BBQ Pork Belly appetizer served with a sesame-tahini BBQ sauce; the ground steak Meatloaf Patty Melt with sautéed onions, Swiss cheese, and Thousand Island dressing; and the wild Mushroom Risotto topped with Grana Padano. Daily lunch and dinner specials are also available, as the restaurant specializes in fresh fish flown in every couple of days.
Last November, Batch Hospitality also refreshed Table 34’s interior. The 85-seat dining room now has a modern rustic charm, complete
with dark, natural wood flooring, an expanded bar with white granite countertops, and a collection of vibrant pop art on the walls that showcases various celebrities and pop culture characters.
“We felt that, given our cuisine, it was important to tie the decor into American culture, and what’s more American than Johnny Cash, BB-8, Robin Williams, and other famous popular icons?” Glusman asked.
The artwork, created mainly by Etsy artists, truly showcases Table 34’s playful, elegant dining appeal. While the restaurant has been known as a power lunch destination for almost 20 years, its gourmet cuisine served in a casually elegant atmosphere makes it ideal for friends and family, too.
“I firmly believe that while anyone can prepare an exceptional meal in the comfort of their own home, the allure of dining out lies in the overall experience it offers,” Glusman stated. “As a restaurant, it is our
responsibility to provide an unforgettable meal. These are the principles my father instilled in me, and they transcend brand, location, or price point.”
“The service, ambiance, and local feel are what make Table 34 special,” added Alexander. “It’s a Strip-quality experience away from the Strip without the exorbitant pricing.”
Even though Table 34’s regular menu items are all reasonably priced, the restaurant introduced a new happy hour earlier this year that has quickly become a guest favorite. Every Tuesday through Friday from 4:30 p.m. until 6:30 p.m., guests can savor a selection of delicious bar bites like the Prosciutto “Sandwich” and the Chickpea Bruschetta for just $8 each, as well as a variety of classic cocktails for $8 and select wines by the glass for $7. Additionally, guests can explore the restaurant’s extensive list of more than 150 vinos at a discount on Wednesday, as all bottles regularly priced at $100 or less are half-off.
While Batch Hospitality has elevated the overall dining experience at Table 34, one thing that didn’t change much was the restaurant’s staff. Alexander noted that many of Table 34’s original staff members were retained after the acquisition, as they were already known for taking “immense pride in providing exceptional service day in and day out.” Their commitment to excellence goes far beyond just being attentive toward diners’ needs, as witnessed during my summer visit when a hummingbird collapsed on one of the restaurant’s windowsills, seemingly too overheated to fly anymore. Literally, every staff member in the restaurant took turns trying to help the hummingbird cool off by giving it some water to drink. Their compassion was definitely appreciated by each guest watching on and further cemented Table 34’s status as a culinary gem.

This October, Distill’s fundraising initiatives will benefit the Professional Fire Fighters of Nevada, which encourages the establishment of schools of instruction for imparting greater knowledge of firefighting and prevention.

Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with this simple recipe.
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

So, roll up your sleeves, grab your shaker, and let's dive into the recipe that's been a timeless favorite for decades. We asked Craggy Range Sports Bar & Grill for the secret ingredients in their Signature Bloody Mary, and this is one you don’t want to miss.
INGREDIENTS
• 2.5 ounces vodka
• 1.5 ounces Bloody Mary mix
• 10 ounces tomato juice
• ½ Tbsp of ghost pepper hot sauce
Prep the Glass
Rub the rim of a giant 23-ounce glass with a lime wedge and then roll it around in a plate of salt (optional house salt mixture – celery salt, Tajín Clásico Seasoning, rock salt, and Montreal steak seasoning). Then gently fill 2/3 of the glass with ice.
Mix
Add the vodka, Bloody Mary mix, tomato juice, and ghost pepper sauce to the glass, then stir with a cocktail spoon to gently mix up the ingredients.
Garnish
Garnish your Bloody Mary like a pro with a skewer of a beef stick, cheddar cheese cube, cucumber, pepperoncini, pickled asparagus, stuffed olives, and cocktail onions. Place skewer in the glass and finish off with lemon and lime wedges.
Note: You can always customize by adding horseradish, changing up your hot sauce, or garnishing with celery sticks or bacon.
