This will be a fun show for our fans—they will get to see the new uniforms and enjoy a terrific concert. It should be a special night for our franchise, and I am looking forward to it.” Titans head coach Mike Vrabel and general manager Jon Robinson are scheduled to take part in the event. Some of the current and former players involved in the program are expected to be announced at a later date. Other surprises are also expected at the event. There will be pre-show entertainment before the program begins, and fireworks following the concert. Streets will be blocked in the area for the event, and there will be activities for fans. Enter Avo, situated in a recycled storage container in the OneC1TY community off Charlotte Avenue. It began with a group of people who wanted to introduce elevated plant-based dining to Nashville’s more health-conscious population. “We really just want to make healthy habits delicious and approachable to everyone,” assistant manager Hans Lamber says. “And there’s definitely a market for it. We’ve seen an obvious increase (in customers) in the past six months. I think the more people open to a plant-based diet, the better.” Avo uses biodegradable containers, sources meals from almost entirely local ingredients, and partners with sustainable farmers and eco-friendly brands, like Greener Roots, Nashville Grown and Barefoot Farmer. Promoting plant-based eating will always be challenging here. And though they may never topple hot chicken and barbecue, Avo has given the opposite end of the spectrum legitimacy in a notoriously deep-fried city.

They shared an interest in environmental proactivity. The idea for a compost business in Nashville was born soon thereafter. Matthew and Jeremy partnered with Micah Puncochar, and the trio started picking up weekly compost bins from their first residential clients (two generous friends) in a 2005 Toyota Camry. It was a humble beginning for a company determined to make a significant impact on the local community and the environmental health of our planet. Nearly four years, endless networking at farmers markets, and almost 450 residential and commercial customers later, Compost Nashville is inching closer to ridding local landfills of food waste and the atmosphere of harmful methane. “One of our big focuses is always to support local and sustainable businesses,” Matthew says. “And our main, overarching goal is to keep food waste out of our landfills.” Compost Nashville counts a number of local hotspots as commercial clients. Ascend Amphitheater and The Produce Place are among others who bought in. More than 80 percent of Compost Nashville’s annual diverted poundage comes from businesses. They recently hit a milestone: 1 million pounds of food waste diverted from landfills. In 2017 alone, Compost Nashville collected 631,997 pounds, and after setting a 120,000-pound pace through January of this year, they expect to have their first million-pound year in 2018. These numbers matter. Compost Nashville is giving their city a head start on something that will be globally necessary in the near future. Nashville has already been taking part in the National Resource Defense Council’s Nashville Food Waste Initiative, so the groundwork is in place here for a composting revolution. As modern technology advances, we’ve found ways to make composting more efficient, but trash and the convenience of curbside pick-up have taken center stage. According to the Environmental Protection Agency, 21.6 percent of any given landfill is food waste. It can’t decompose properly in landfills because it needs access to oxygen, which is sparse in those compact piles. This leads to a release of toxic methane, which is a greenhouse gas exponentially more potent than carbon dioxide in terms of immediate impact on the atmosphere. “Composting, in general, is one of the oldest processes on Earth,” Matthew says. “It happens seamlessly in nature. You don’t go to Radnor Park and see trash bags set out by the forest for Metro to pick up. It naturally decomposes, and that’s Earth’s way of rejuvenating itself.” Historically speaking, there is a great farming community in Nashville. Local farms send fresh ingredients to restaurants, who make the amazing food that puts Nashville on the map, and helps draw millions of visitors to Music City each year. Compost Nashville wants to be a part of that cycle, and, so far, they’re succeeding. Compost Nashville partners with The Compost Company, which is the only licensed processing facility in Middle Tennessee. Compost Nashville collects the food waste, takes it to them and then purchases the compost back. It then gives customers the option to have composted soil delivered to their doorstep twice a year, or to donate to local farms or school and community gardens. The U.S. federal government has prioritized cutting food waste in half by 2030. If that ambitious goal is to be met, companies like Compost Nashville will lead the way. “It’s going to take people really being educated and connected to our mission of making Nashville a greener, more sustainable place,” Matthew says.“We’re only as healthy as the soil we live upon."

The hotel, on the corner of Sixth and Union, stands out from its neighbors, boasting an elegant entrance and column-studded facade. Nashville’s first hotel has weathered the decades since its inception in 1910, through ownership changes, temporary closings and political chaos. It has sheltered presidents, world-famous musicians and star athletes; it is a beacon of Southern hospitality. For everything the Hermitage Hotel represents, it might be best defined by the word “progress.” It has been ground zero for past social, political and economic moments—the final battles for women’s suffrage were fought from the hotel’s suites—and it continues to stay ahead of the curve on modern movements, like sustainability. Through a 10-year-old partnership with The Land Trust for Tennessee, the Hermitage Hotel has created The Gardens at Glen Leven and Double H Farms. Both entities have helped the hotel contribute to the burgeoning zero-waste attitude around Nashville. “We want people to understand that we are farmers with a vested interest in sustainable practices, rather than a restaurant that simply uses a farm as part of the supply chain,” General Manager Dee Patel writes in an email. It all started with Glen Leven, now a 2-acre heirloom garden. They provide seasonally available vegetables to the Hermitage Hotel and its dining establishments, The Capitol Grille and Oak Bar. It also serves as an essential tool to educate young students on the importance of agriculture. In 2012, the Hermitage Hotel purchased 250 acres of farmland and began raising the largest herd of Red Poll cattle—the breed best suited for the local environment—in the state. The cattle at Double H Farms are humanely treated and sustainably raised through rotational grazing practices. They provide 100 percent of the ground beef for meals at the hotel, as well as the majority of its cuts. The Hermitage Hotel has an obvious, vested interest in sustainable practices. “We wanted to highlight the richness of our history, and go back to some of our basic practices, including farming and sourcing our own food, and educating ourselves and guests on where our food really comes from,” Dee writes. Every detail of the process at Double H Farms is meticulously executed. Much like the ornate interior of the Hermitage Hotel itself, the cows on Double H Farms are tended to with extreme care and precision. They graze their entire lives until processing day and are given the choice to also eat feed made of organic corn, wheat, orange peels, and vitamins and minerals. The cycle is unbreaking: the sustainably raised cattle expend manure, which creates rich soil, which produces quality grass and feed, which gives the cattle more healthy food, which results in quality meat being produced. Money spent by guests at The Capitol Grille will, in part, go right back into funding Double H Farms and The Gardens at Glen Leven. Since 2008, when they first partnered with The Land Trust for Tennessee, the Hermitage Hotel has managed to directly support the conservation of more than 85,000 acres of land. They wanted to emphasize protecting lands that Nashville residents can use for outdoor activities long into the future. Additionally, they have instituted a donation program that requests an extra $3 per night from any hotel guest’s stay. Most of those donations go to The Land Trust, and around $800,000 has already been contributed. The Hermitage Hotel claims it operates “even simpler than traditional farm-to-table.” “Preservation has been at the center of almost everything we do," Dee writes. "Our relationship with our lands is greater and stronger than the roots we plant and grow.”
