The holidays are here and as the spirit of the season is among us, we often try to replicate what made the season feel so magical to us in our youth. The traditions we set for our own families often mirror some of what we experienced as a child, whether it is the smells, sounds, lights, holiday activities or a combination of it all that best reflect the season. One of our traditions as a family is to decorate for Christmas on November 1. We take the day off of work and school and spend time together. We watch Christmas movies, bake cookies, etc. Cherishing time with family for the holidays is what I look forward to every year. The older I get, the more I understand the true meaning of the holidays. This month, we wanted to highlight the magic of the season and what our city has to offer that helps spread holiday cheer. We've compiled a gift guide that supports our local businesses and will make your shopping easier. We also wanted to share what our area has to offer this holiday season for entertainment and ways to give back. While this season can be beautiful for some, it can be painful and lonely for others, especially those who have recently lost a loved one. In the true spirit of the season, let's take care of those in our community who need assistance or who are alone. My hope for you this season is that you feel love and peace and that we all remember to take care of each other extending grace, empathy and love. Happy Holidays!

WCCU Funded Twenty-Five Applications for the Education Assistance Fund Weld Community Credit Union proudly funded twenty-five applications for the Education Assistance Fund (EAF). The EAF helps educators who work in Weld County schools with additional funding for schoolwide or classroom projects. The EAF Committee disbursed $10,753 to support projects for the October session. This biannual program has provided over $174,900 to the Weld County education community! Applications are accepted by February 15th and October 15th each year.

Having served Northern Colorado's automotive needs for over six decades, the Ghent Motor Company prides itself in giving back to Greeley and has contributed to numerous organizations including Habitat for Humanity, Highway Cleanup Crew, Humane Society of Weld County, Santa’s Silverado Sleigh, American Red Cross, Boys and Girls Clubs of Weld County, United Way and more.

When current Ghent Motor Company president, Bob Ghent, was seven years old, he recalls emulating his dad—playing pretend dealership with his Matchbox cars. Bob’s dad, Dwight Ghent, owned Ghent Motors in Fort Collins. In 1976, Bob began working in the car wash area at his dad’s dealership. Over a span of seven years, Bob worked in other roles as a leasing manager,

salesman and sales manager. “I really loved and respected my father, and it was an easy decision to work for him,” Bob says. Bob fondly recalls the giving spirit of his parents and how that transpired through owning a business. When Bob was working at his dad’s dealership, his dad encouraged him to get involved with United Way. “It opened my eyes to the needs of others,” Bob says. “I thought it was important and worth my time and effort.” In 1989, with encouragement from his dad, Bob purchased the Chevrolet dealership in Greeley, even though he was in the midst of graduate school in Denver. That day, Bob came home to his wife, Ann, and said, “Honey, we bought a dealership and we’re moving to Greeley!” Bob took a risk and quit graduate school to focus wholeheartedly on his business. Although he admits there were some growing pains during the first few years, Bob is glad he persevered, with his dad helping him every step of the way. Since then, the Ghent Motor Company has grown and acquired the Cadillac franchise. “Owning a business in Greeley has offered me so much and the outcome is way better than I could have ever imagined,” Bob says. Just like Bob, his son Erick Ghent, also worked at his dad’s dealership when he was growing up. While in high school, he started as a Ghent Motor lot attendant. After attending the University of Colorado Boulder, he moved to Kansas City and worked at a dealership. Now, Erick is back in Greeley and has been working alongside his dad for eight years, as the general sales manager. Erick is grateful to be living in Greeley again—in a town that he loves, surrounded by family, friends and great people—including his girlfriend and support system, Kendall Johnson, a local real estate agent. When he was growing up, Erick remembers witnessing the giving spirit of his grandparents and parents. He wholeheartedly believes that the giving mindset can be passed down from generation to generation. “When I was growing up, my mom and I would go the Weld Food Bank to volunteer,” Erick says. “Seeing others’ generosity shows you how a community can flourish and grow.” Bob and Erick acknowledge that working with family can have its challenges, but the blessings are endless, and with a focus on giving back, it keeps them bonded.

“It’s simply a given for us—we’re local residents, we’re a family-owned and operated business, and when we see challenges in our community, we think of ways we can help,” Erick says. Giving is part of the Ghent Motor Company’s mission and generosity is ingrained in everything they do. Ghent Motors encourages its employees to give, whether it’s through fun challenges, games, teambuilding, volunteering, matching employee donations or hosting the annual Trunk or Treat and the holiday toy drive. Giving back can be achieved in different ways, whether it’s by giving time, resources, finances or just encouraging others. “Giving is not a requirement, but the gesture is a

testament to your character and gives you a feeling that you’re doing the right thing,” Erick says. Bob and Erick recognize that giving is a collective effort. Erick is inspired by the many local businesses and other car dealerships that he has witnessed give generously to make a difference. “We are blessed to be in a community that gives so much,” Erick says. “It takes all of us to give back to make the greatest impact.” Bob loves the Greeley community and agrees with the slogan—Greeley is unexpected. “Until you live here, you don’t know what Greeley offers,” Bob says. “It’s the people that make up the fabric of this community that are the true gems…it’s a generous community.”

Plastic bottle (32 oz) Scrap fabric Felt fabric Cushion filling Wooden bead Scissors Glue gun

Cut a piece of fabric big enough to cover the entire bottle. Wrap the bottle into the fabric and, attach it with a piece of rope making a knot around the bottle neck. Once the battle is covered, trim the excess of fabric around the bottle neck. You can fill the bottle with sand for some weight. Cut a triangle in the felt fabric to make the hat. The high must be 9 inches and the triangle basis is 11 inches, try to cut it slightly rounded.

Put some glue on one of the edge, wrap the triangle to make the hat shape and glue the opposite edges together. Glue some cushion filling on the front to make a long beard! Put the hat on top of the bottle, add a few dots of glue to fix it with the gnome body. Finally glue a bead in the middle to make the gnome nose. www.dreamalittlebigger.com

Laura and Charles Archibeque were the first of the family to settle in Greeley, where they raised their seven children- six daughters and one son. Though Laura and Charles have since passed, their family continues to honor them through their holiday traditions. Karen Esquibel, one of Laura and Charles’ daughters says they are a close-knit family that gathers often, and this particular occasion has a more sentimental purpose- preparing tamales for Christmas Eve! To prepare for the holiday season, the family gathers around the table to assemble tamales while they reminisce and share fond memories. They all work together by following a recipe that has been passed down for many generations. “My grandmother’s husband taught my mom how to make tamales,” Carla Esquibel, the oldest daughter, shares. “It all started with the green chiles that my dad grew in the garden,” she says. “I remember way back when I was little and doing this,” she laughed. It is bittersweet around the holidays because there are family members missing, but it brings new opportunities to pass the traditions to the next generation. She says when it is tamale time everybody is excited to learn and help. Together, they make more than 900 tamales to feed their family of 40. “It’s a process, but this is something that we look forward to doing because we’re keeping the tradition going from our parents,” Karen says. Little Nayeli, the youngest of the great grandchildren dipped the corn husks and then passed them to her cousin Mathew who is two years her senior and started helping when he was six. “We have an assembly line like this. Lori’s husband, Jerry, makes the red chile, Lori is in charge of making the masa, and then us girls start doing the ojas, cleaning them and getting them ready,” she says. Lori Trujillo, another one of the daughters, grows the Mirasol chiles that are used to make the tamales. “Mirasol means the chile that grows up, because it grows up looking at the sun,” Karen says. “We save the green chile and dry it for the red chile, then we save the seed for the following year to replant it.” The Archibeque-Montoya family is originally from New Mexico and southern Colorado. A lot of

their family traditions are rooted from the Mexican and Chicano cultures. “Much of the Mexican and Chicano people and culture are a mix of worldsNative, European and African because of colonization. We are a mixed people,” says Brittni, granddaughter to Laura and Charles. Brittni says Chicano refers to people in the southwest who are not from present-day Mexico. The tradition to celebrate Christmas is also deeply-rooted within their heritage, which she says is a Catholic tradition to celebrate on Christmas Eve. “Christmas Eve is the night Joseph and Mary were going door-to-door looking for shelter, I think partially It comes from that tradition,” she says. “But also, many say it is because our indigenous ancestors celebrated the winter solstice as well.” Another Archibeque- Montoya family tradition is decorating. “Decorating the house with Christmas decorations was my mom’s favorite thing to do during this time of the year, so that was a big tradition within itself. We would all go to their house and place the ornaments on the tree,” Nickie Archibeque, daughter of Laura and Charles recalls. Laura also enjoyed baking for the holidays. Lori recalls another one of her mom’s favorite traditions, biscochitos, which are a Mexican sugar cookie, a tradition that originates from New Mexico. “My mom’s favorite was her sugar cookie. We’re not huge on that tradition, but we love them, so we try to make them every year too,” Lori says. The sisters also make empanadas for the holidays. “It’s also a tradition and it goes back as far as my grandmother who taught my mother how to make those,” Lori says. “My dad and my mom that was their favorite thing that was a big tradition and so we learned how to do them,” she says. “It’s a huge process and so we probably make them every other year.” The great-grandchildren are the fourth generation from Laura and Charles. The matriarch passed away in 2021, but the family traditions continue to live on yearafter-year through the generations. “When we wrote our grandma’s obituary the three themes that emerged were family, food and faith and that’s really what we feel centers our family’s traditions,” Brittni says. MADE IN SOMALIA Fardowsa Barkadle has fond memories of celebrating cultural traditions and holidays. Her parents are originally from Somalia but moved to Ethiopia before having children to escape the conflict and war. “I always say I am originally from Somalia, I’ve never been to Somalia, but my mom and dad are from there,” she laughed. Fardowsa was born in Ethiopia, and her family moved to the United States when she was 12 years old. They still practice traditions from their African roots and celebrate Islamic holidays Fardowsa lights incense at the bottom of a hand-made clay pot and clouds of frankincense fill the air. Frankincense is a common incense that is lit when the weather is cold outside. She says this is a cultural practice, and every Somali household has incense burners. Each morning, she makes black tea mixed with cardamom and cinnamon and sweetened with sugar. Some people will add ginger for spice and milk for a creamy finish. “It’s a cultural tradition,” Farowsa says. “It’s something you will have first thing in the morning with injera which is flatbread and honey, it is something we consume every morning,” Fardowsa said. A holiday in her culture to share appreciation for having food to eat is Ramadan. “Ramadan is 30 days of fasting from sunrise to sunset,” she says. “For you not consuming food from sunrise to sunset is being more grateful for what you have.” She added that people can eat anything they want after sunset and a common dish prepared during Ramadan is sambusa- vegetables and meat folded inside a triangular- shaped dough and fried. “Every time we break the fast we eat 3 date fruits and drink a cup of water before consuming any food,” she adds. The day Ramadan ends is a holiday called Eid al-Fitr to celebrate the long month of fasting. Fardowsa says the origin of Eid al-Fitr is to honor

the completion of Ramadan which is part of the 5 pillars of Islam. “The four you have to do,” she says. “But the fifth one, not everybody can do it, it’s extra if you can afford to do it.” Every year, over a million people pilgrimage to Mecca to visit the Kaba which was built by the prophet Abraham and his son. “There’s a pilgrimage to Mecca, where if you are Muslim you can do it one time in your life if you can afford to,” she says. She recalls the cost of the pilgrimage is $14,000 per person. The cost depends partly on where people travel from. “If you’re coming from Somalia or somewhere else, it’s cheaper. The most expensive is Canada and the United States,” she says. Her father has done a pilgrimage, which at the time she says cost $7,000. “I want to do it someday,” she says. Eid al-Adha begins the last day of the pilgrimage. “Our holidays don’t fall onto specific months, we follow the Islamic calendar and we are in the year 1445, ”she says. “Every year it’s different.” To celebrate Eid al-Adha, sheep are slaughtered and given to the needy or shared with neighbors. She explains the reason sheep are slaughtered is a feast of sacrifice. Fardowsa says kids do not participate in Ramadan and compared Eid al-Fitr and Eid al-Adha to birthday celebrations. “You’d be so spoiled,” she laughed. “You’d get new clothes, toys, money, so I have good memories of those holidays.” Once people reach puberty, they begin fasting for Ramadan. Fardowsa’s mother wanted to share their culture’s food, so she opened an African restaurant in Greeley called Tawakal. Fardowsa works at the restaurant as a cook and one of her sisters as a host. “My mom wanted to introduce East African dishes to the community because we didn’t have any East African restaurants here,” she says. “We also serve Ethiopian dishes because we lived in Ethiopia.” CONTINUED >

“ M a eva Ta h i t i ” Welcome to Tahiti Greeley resident Hinano Williams is a native of Tahiti and met her husband while working as the executive housekeeper of the Intercontinental Hotel. She moved to the United States in 1976 and welcomed children shortly after. To pay homage to her Tahitian roots, Hinano named her youngest daughter Maeva which means “welcome” in Tahitian. Maeva has taken trips to Tahiti to learn more about her cultural roots. “Food is a huge tradition, and eating as a family,” Maeva Williams shares. When Hinano and her family visit Tahiti, they celebrate with a luau. The meal which typically consists of a pig and other foods is cooked in an earth oven, known as the imu. “The food is covered with leaves, so dirt does not get into the food and keeps the food hot,” Hinano says. “The cooking will begin at 3 a.m. and will take all day.” Hinano and Maeva like to honor their cultural traditions by cooking poisson cru, the national dish of Tahiti. “It’s a raw fish dish. My mom’s made it for my birthdays, and she likes to make it for holidays,” Maeva says. While Tahiti does not celebrate many holidays, the biggest holiday in Tahiti is a French holiday, La Bastille, and is nearly a month-long celebration beginning on July 14. “The native don’t really have their own celebration, we celebrate the French because we are French nationality,” Hinano says. “I was very shocked when I came here and learned about all the holidays. We don’t have any of those things.” During the celebration of La Bastille, there are different events to honor the Tahitian culture. “There is a lot of dancing in Tahiti. The tamure, is like the hula but faster with your hips,” Maeva shares. Each year, a group of dancers and a single dancer either male or female from each island will come to Tahiti and compete for prizes. There is also a competition to crown Miss and Mister Tahiti and during La Bastille, natives like to enjoy pirogue, which is canoe racing. Hinano says that when visitors arrive in Tahiti, they are greeted by natives with leis and sent off with shell necklaces. Tahiti is also known for jewelry made from black pearls, which both Hinano and Maeva don proudly to display their culture. “I’ve always appreciated my mom being able to intertwine the two cultures and tell me stories about Tahiti growing up and even bringing me there,” Maeva says.

On Art Guttersen’s 35,000-acre Colorado ranch are cows, horses, chickens—and active oil and gas operations. Wellheads, tankless facilities and drilling rigs are strategically placed throughout his property, against the backdrop of green fields and distant, snowcapped Rocky Mountain peaks. As his cows grazed nearby, Guttersen reflected on how energy development spared his multigenerational farm from being sold to developers. “Chevron saved my ranch,” he said.

WHY IT MATTERS Agriculture and energy production are essential industries. Guttersen wants his ranch to serve as an example of how these sectors can work together to meet growing demands for both. “Our ranch is better today with wells on it,” he said. “It’s no longer just a ranch. It has become a major producer for the economy.”

A GOOD NEIGHBOR Those visiting Guttersen’s ranch must abide by a series of rules: no smoking, littering or exceeding the 21 mph speed limit. Likewise, Chevron has its own policies to help protect the environment. One way is by restoring the fields to their original condition after work in a certain area has concluded. “Reclaiming the land helps protect the environment by taking the human element out of it and giving a habitat back to native species,” said Victoria Eliason, asset retirement superintendent. “Being part of that process, where you’re seeing an area transition from an oil and gas producing site back to its native state, is really rewarding.”

ALL IN THE FAMILY The ranch has been in the Guttersen family for 85 years, although Art was the first to raise a family there. In recent decades, he went from watching his children help around the farm to seeing his grandchildren learn to do the same.

MORE ON THAT Guttersen has been leasing his land to energy producers since the 1970s. Chevron gained exclusive rights to develop oil and natural gas from Guttersen Ranch through a comprehensive plan that was approved by the state in 2018. Chevron helped develop the ranch by building powerlines, roadways and waterlines. Chevron also worked to retire older equipment for newer, centralized infrastructure that helps protect the environment. This approach allowed Chevron to strategically combine facility locations, using highline power and other innovative processes to reduce surface footprint by more than 95% and emissions by more than 90%. His son Parker, now a married dad of three, continues to help out on the ranch, occasionally with a little backup from his own young children. Guttersen said the line of succession that’s forming never would have been possible without Chevron. “Ranching is a tough way to make a living,” he said. “Chevron came in and helped us maintain the lifestyle that we’re accustomed to, not only today but for future generations as well. We know their interests are the same as ours, which is to promote the best for our family, the environment and the state of Colorado.”

Tips for creating the perfect board: • Start with the larger items first and build around those. If you are using jars on the board, place those first. • Be sure to have enough to fill the space. It is best to overfill so that the board doesn’t look sparse. Stack, stack and stack some more. • Use a variety of colors and textures when choosing the foods you want to use. Pick cheese with color and patterns, fruits and veggies that come in a variety of textures and colors and a protein that can make a statement. • Be sure to place similar colors in away from each other to help give symmetry.

• Walnuts, Pecans, Pistachios and any favorite nut • Grapes, berries, persimmon • Crackers

Place the jars of sauces and olives on the board first. Next place the cheeses on opposing sides. Add meats and fruits next. Layer in crackers, nuts and seeds and fill in any spots with extra nuts. Use fresh rosemary or fresh greenery to add wreath accent in the center of the charcuterie board. Garnish with fresh cranberries.

Last holiday season we gave away over $300,000 to help 116 individuals and families in need, but we need your help to make it happen again this year. With nominations flooding in from community members and leaders such as judges, police officers, teachers, nurses, social workers, mentors and readers like you, we were able to reach people who might otherwise go unnoticed. Perhaps you know of a single parent struggling to provide for their family, an elderly person who has experienced loss, someone enduring a health issue, a co-worker suffering a sudden, unexpected tragedy or a neighbor with a financial hardship who has fallen between the cracks of getting assistance. Chances are you know someone with a specific need, even if no one else does. “We believe in giving back and serving the communities where we live in a real and tangible way,” says Steven Schowengerdt, CEO and founder of City Lifestyle. “This Giving Campaign is about personally impacting the lives of people we know with an unexpected check in the mail just to say that someone thought of them during this holiday season.” “We believe God has blessed our company with continued success, so we in turn want to be a blessing to others,” Matthew Perry, President of City Lifestyle adds.
