The Summer and Adventure Issue Summer is the perfect time to compile a bucket list of activities to enjoy and ways to unwind and relax. Though the “lazy days of summer” aren’t always things we can attain with our packed schedules, it is so refreshing to take some time to slow down and enjoy some of the simple pleasures in life. Some of the best times spent can be a backyard barbecue with friends, making s’mores by a fire pit, spending a day on the water, eating ice-cream on a hot afternoon, or simply taking in the night sky with someone you love. For our July “Summer and Adventure” issue, we wanted to share some of the happenings around our city this summer and ways to get out and explore together. We bring you the story of Austin and Janna Jenkins on one of the best adventures of their life as well as local camping and glamping gems in and around Greeley for those looking to get out and explore the great outdoors with friends and family. For all of you looking to stay local this summer, check out our disc golf feature highlighting three disc golf courses around town and tips from Melissa McDonald on how to pack the perfect summer picnic. For the parents looking to relax with a refreshing cocktail, we offer up two summer-themed cocktail recipes from Greeley’s very own, Syntax Distillery. Not to mention our special spotlight on the Greeley Farmers’ Market and a few of the goods you might find when strolling through Greeley’s downtown this summer. Imagine waking up to the sound of waves crashing, gentle breeze blowing and opening your eyes to see the aquamarine sea glistening across the sand. The sun’s golden rays spread across the living room. Breathing in to catch hints of the fresh ocean air, feeling the sun on your skin… This was only one of the many captivating experiences Austin and Janna Jenkins experienced during Van Life. In 2021, the Jenkins saw an Instagram post that sparked an idea to set off on what would be the biggest adventure of their life: Van Life. They bought a wrecked 2012 Mercedes-Benz Sprinter Van, updated it, and designed it themselves: inside complete with a built-in fixed bed, and a three-in-one bench, toilet, and fridge. The Jenkins did everything from welding to Pinterest scrolling and décor shopping to create a space that they would call home for the next two years. After hard labor and 8 months later, they were ready to begin their Van Life adventure. Traveling for two years across 23 states, spending nights on the side of snowy mountains or sandy beaches, they were living their dream. Both working remote jobs, they were able to continue their work all while sight-seeing, camping, attending Van Fests, and spending quality time together. “One of us would be on a hike, and one of us would be in the van, playing the Switch. It was the most accommodating lifestyle.” Austin & Janna said. Their favorite moments were spending time with the community of ‘Van Lifers’. From pizza making parties to Van Fests, they were able to meet some of their now closest friends while on the road. Looking back on it, a year later they still say, “It was our favorite season of life.” We asked Austin and Janna to dive deeper into some of their favorite locations they visited along their Van Life adventure. JACKSON HOLE, WYOMING

Another one of the Jenkins’ favorite stops was San Diego, California. The beautiful views, and community they found among the Van Lifers were some of their favorite memories. “We were not ‘beachers’, until we experienced waking up on the beach, because we had everything with us at all times,” Janna stated. From the golden rays to the crashing waves, they fell in love with Van Life on the beach. Even amidst some crazy events, like a bee sting; allergic reaction; and an emergency trip later, they still say the beach is always a good idea.

MOAB, UTAH

Moab, Utah was their third favorite stop on their Van Life adventure. Austin and Janna loved the views, and the accessibility to different outdoor activities. They found that the convenience to several outdoor activities nearby, made it easy to stay there overnight inside the canyon. They enjoyed hiking in Arches National Park, and visited different places in Moab, that included, ironically, Corona Arch. From rock climbing, to hiking they found that Moab had anything and everything they enjoyed doing in one place. The stunning, sunsets full of color and the warmer weather was a taste of the beach without the ocean.

Of all the incredible sites they saw and places they visited, Jackson, Wyoming was the couples’ absolutely favorite spot. They loved the beautiful views, and the ‘Van Lifers’ community were, as they put it, “super-friendly.” The view of the mountains, and the surreal pure, glasslike water created a stunning picturesque view that they were privileged to wake up to every day in their time spent there. With an exquisite view of the lush, green rolling hills, flowers spread across the fields, and the pink to blue skies by the evening, they truly felt like they were in a real-life painting.

“My favorite thing about picnics is just being in nature. Enjoying the soft grass, listening to the wind in the trees, and smelling the beautiful flowers and trees that surround you. It’s quality time with loved ones without the distractions of phones, email, or work. It’s a reminder that it’s important to slow down and enjoy those moments.” According to McDonald, sandwiches are the basis for any good picnic. They are easy to transport and easy for anyone, including kids, to make and eat. Beyond their packability, there are dozens of types of sandwiches which gives each family member room to be picky about what they put in their own sandwich. Watermelon is another summer picnic staple, a few slices each is all you need to truly embrace the summer feeling. The third essential food item for a family picnic is potato salad. Like watermelon, potato salad is a classic picnic side and it is easy to make and pack. A fun family picnic would not be complete without lemonade, or if you’re going on an adults-only picnic- a great bottle of wine. Lemonade is something people of all ages love, and pairs perfectly with your sandwiches, watermelon, and potato salad to create that classic summer feel. “We have picnicked in various situations,” McDonald said. “Whether it’s back of tailgate after helping friends bale hay, off of a hiking trail in the mountains or something more planned like picnicking at a park, nature area or lake to take our 2 labs to sit down for a meal together and play ball or frisbee with them.” Greeley’s long summer days provide the perfect opportunity for a simple picnic with your family, no matter the hour. you have lived in Greeley for any amount of time, you know that our community If loves to get outside and explore the beautiful landscapes that Colorado has to offer. The amazing weather and variety of terrain make the Centennial state an adventurer’s paradise. Springtime provides an array of ways to enjoy the outdoors. From camping and hiking to rafting, boating, and climbing, we can’t get enough of experiencing nature’s playground. Greeley is fortunate to be located near numerous distinct camping locations, some of which are located right in our own backyard. Nestled along the South Platte River, minutes from downtown Greeley, lies one of Northern Colorado’s most hidden gem. The Platte River Fort Resort and Event Center, fifteen minutes east of Greeley on Highway 34, offers a unique camping experience that will make you feel as though you’ve stumbled upon a faraway mountain town’s glamping resort. General Manager at Platte River Fort, Hannah Long, described what makes The Platte River Fort camping experience different: “We have great views of Longs and Meeker Points, and water access for each of our campsites. There are not many places to the east that have water and mountain views.” The 263-acre property includes five yurts for the finest glamping experience. Each yurt is fully furnished with beds, equipped with solar-powered lights, and is situated just a few feet from the Platte River. The area is secluded with an abundance of space between the campsites, offering guests more privacy than most campgrounds. The grounds also have 40 tent campsites and four RV spaces. Additionally, each campsite has river access. Campers can take advantage of free innertubes to float from the public beach down to their campsite. Farmers' Market Stroll Between the sweet smells of locally sourced honey, handmade soaps, freshly roasted coffee beans, and delicious baked goods, our senses were overwhelmed with delight as we strolled through Greeley’s Farmers’ Market. We had the opportunity to chat with local artisans and vendors who sell their products every Saturday morning at the Depot, and learn about who they are and why they do what they do. We encourage you to visit their booths, and the numerous other local vendors, on Saturday mornings between 8:00 and noon every weekend through October.

Illuman Apiary by KJ Tencza With hive locations across the four corners of Greeley’s borders, KJ Tencza seeks to serve the community with his distinctive knack for beekeeping. Illuman Apiary was born in 2009 when KJ began beekeeping for environmental purposes. What began as a socially-conscious hobby quickly turned into a passion project. Over the past 12 years, KJ has expanded his quantities of honey, locations of hives, and line of products. Now, KJ offers pure, local honey, pollen, beeswax soap, candles, and more. “All things Bees,” KJ notes. Most of all, KJ has loved making this dream a family affair. “The market gave us the opportunity to grow and learn as a family, build a sustainable business and become a part of a market with many of our closest friends.” Greeley residents can support Illuman Apiary by stopping by every Saturday morning at the Greeley Farmers’ Market, or by visiting their website to shop their products online.

Lady at the Well by Lydia Miner Lydia Miner’s business, Lady at the Well, LLC, was founded with herself as her intended buyer. Having suffered from allergies to typical in-store bath products, Lydia began creating natural bath products and cleaners to find freedom from those complications. Little did she know, she wasn’t the only one seeking out the very same remedies and her products have become a soothing solution for many in Greeley. “My products are handmade and free from harsh chemicals. I create soaps, lotion bars, dish soap, and more.” Lydia says, “I enjoy the fact that I get to combine my passion for chemistry with my passion for herbalism.” But what Lydia loves most is, “Being with a group of artists, farmers, bakers, and those who know how to preserve a garden’s harvest.” You can visit Lydia’s booth on Saturdays to find your own remedy for skin allergies, or shop her products at stores around town, including Trinkets-nTreasures or Lincoln Park Emporium.

Redemption Road Coffee by Aaron & Jessica Harsch Though there is an innate desire in us all to ‘make the world a better place,’ Aaron & Jessica Harsch have made it their mission to make that cliche their reality. The couple started their own non-profit organization, Redemption Road, in 2011. Around the same time, Aaron found his passion for roasting coffee at home with his very own crank-handle popcorn maker. By 2016, a friend suggested selling Aaron’s now-perfected coffee to not only financially support their family, but also their non-profit – though Aaron and Jessica didn’t stop there. The couple also sought to support international families by sourcing their coffee beans directly from communities around the world. In fact, on each of their coffee bags they include the location and story of the beans “so you know about the people who hand-picked the coffee cherries.” You can purchase your own locally sourced coffee at the Greeley Farmers’ Market every Saturday, or at their online store, and know that you, too, are helping to make the world a better place.

XLVII Bakery by Léon Etienne Speth The delights of freshly baked European delicacies are fondly familiar to Léon Etienne Speth. Having grown up in Alsace, a region bordering France and Germany, creating freshly baked pastries is deeply rooted in Léon’s family history. Léon’s grandfather was a baker so after moving to the United States in 2017 he was determined to bring authentic German pretzels, sourdough breads, and French pastries to the people of Colorado. “1947 is the year my grandfather was born. So when I started XLVII’s Bakery in July 2018, I wanted to dedicate the bakery to him.” Léon incorporates both French and German cultures into his baking, and when asked what he loves most about his product said: “The unique authentic taste. Every piece is hand shaped and hand made with the utmost attention to taste and authenticity.” Léon loves getting to share his passion for baked goods every Saturday morning at the Greeley Farmers’ Market and calls all Greeley residents to “Swing by our big red booth on Saturday morning and be mesmerized by our delicious authentic baked goods.”

CEO, President and self-proclaimed “Mistress of Stills,” Heather Bean and her partner Jeff Copeland began the planning for the distillery in 2008, and opened the business in 2010.

LOCAL DISTILLERY CREATES A UNIQUE ATMOSPHERE FOR LOVERS OF CRAFT LIQUORS

“My usual line is that corporate engineering drove me to drink, so being a good engineer, I decided that I should be making my own booze to keep the cost down,” Bean said. “In reality, starting a craft distillery is like what they say about owning a vineyard: the easiest way to make a small fortune is to start with a large one.” Its unique home at the Greeley Elevator Building creates an atmosphere that welcomes spirits and cocktail drinkers alike. Bean began her journey as a mechanical and chemical engineer,

but found her passion in distilling locally sourced raw ingredients. Copeland has maintained his career in atmospheric science, but can also be found behind the bar creating cocktails. Owning and running a distillery has proved rewarding to Bean and she appreciates being able to have a variety in her day with a job that allows her to interact with the Greeley community. “The people are very supportive and kind and always willing to support and help each other,” Bean said.

4 fresh or Frozen Blackberries 2 ounces 477 Distilling Single Barrel Bourbon 3/4 ounce Simple syrup 3 dashes Angostura bitters 3 dashes Orange Bitters

instructions: Add ingredients to a mixing glass with crushed ice. Stir ingredients well with a bar spoon. Strain the contents of the mixing glass into a rocks glass with a large ice cube. Garnish with orange twist and black cherry.

Combine cucumber, simple syrup, and thyme leaves in a shaker glass and muddle. Add lemon juice and Rose Gin. Give a quick shake with ice and then pour all into a tall collins glass. Top with club soda and garnish with a slice of cucumber.

A New Spin on Golf

Three locations to play disc golf in and around Greeley Have you ever been at a park and noticed a unique looking structure with vertical hanging rows of chains jutting out from a center pole? This carefully designed structure is a disc golf basket. With people’s desire to find safe alternatives to indoor activities during the COVID-19 pandemic, disc golf has experienced a substantial amount of growth, with massive increases in participation and course infrastructure. The 2021 Disc Golf Growth Report showed a 50% increase in disc golf courses built from the previous year. The Disc Golf Association (DGA) was established in 1976 by Ed Headrick and his son Kenny to form a new international sport and to promote the installation and use of disc golf courses around the world. Ed, referred to as the “father of frisbee and disc golf,” coined and trademarked the term disc golf, and envisioned a game that would explode in popularity. Over the past 40 years, Ed’s

vision has come to life. Although disc golf is a world-wide sport, the United States holds more than two-thirds of the courses world-wide. Greeley resident Bojess Villegas started playing disc golf eight years ago after a neighbor’s invitation. “Our family lived near a course, and I played one game with him and I was hooked,” said Villegas. Now, disc golf is one of the Villegas family’s favorite pastimes, and Villegas often plays the game with his wife and three sons. Since it’s free to play most courses, it’s something that their family can do together without spending a lot of money. Greeley is lucky to have three free disc golf courses in our community. Bojess’ advice for those just starting out is: be patient, have fun, and talk to your local sporting goods store to ask about the discs available and which ones are good for beginners. You don’t need to spend a lot of money to get started with good discs.

Nestled in beautiful Epple Park, this short course sees play regularly and includes 6 holes lined with trees along the fairway, making accuracy important. The course has a small lake and a small creek runs through the center of the course.

The first tee is southwest of Michener Library in the heart of the University of Northern Colorado’s campus. The 14 holes are spread throughout the west side of the campus, therefore the area is busier on weekdays during school hours due to pedestrians but less crowded on nights and weekends.

This 9-hole course is located in Pioneer Park in the Ashcroft Heights Subdivision. Pioneer Park offers two playgrounds, a disc golf course, walking paths, picnic area, and a large open turf/grass area. The layout of the Pioneer Park disc golf course has been mapped in Google.
