Sweet, Spicy, Sour, Salty, and Bitter ARTICLE BY DR. APRIL L. SCHULTE
If you are confused about what to eat, you are certainly not alone. Through time we have lost our basic sense of how to maintain a healthy, yet delicious, diet. By realizing food is medicine, we can end the frustrating cycle of feeling sluggish, depressed, and miserable and instead bring vitality and joy to our lives. There are two primary dietary recommendations I tend to make the most. The first rule of thumb is to eat from the earth. What do I mean by that? The closer your food is to how it exists in nature, meaning the least processed it is, the better. Secondly, it is important to eat with the seasons. Our bodies best reap the nutrition when we ingest local foods that are grown in season.
Additionally, food provides many potentially healing qualities that are vastly under-recognized by society. A concept, which is perhaps most aptly appreciated by Chinese medicine, is that the flavor of foods brings healing qualities. The flavors then act as signals to specific organ systems to perform healthful actions. With these health signals, we can promote mental, emotional, and physical health by eating from the five primary flavors to best serve our unique needs on any given day. At times, your body may benefit from including certain flavors while at other times it may be best to reduce foods with that flavor. CONTINUED > OCTOB ER 2 0 2 2 | C I TYL I FE STYL E . THERE ARE FIVE PRIMARY FLAVORS: SWEET The sweet flavor is considered to harmonize, nourish, and moisten the body by targeting the digestive system. It is helpful to utilize the sweet flavor in times of digestive distress and during times of worry as worrying directly targets and weakens the digestive system. Not to be confused with candy, cookies, and the syrup used in your favorite pumpkin spice latte, foods that are sweet in nature include complex carbohydrates such as rice, oats, and quinoa. Popular herbs that have a sweet flavor include licorice, astragalus, and jujube dates.
ACRID/SPICY Acrid (also described as spicy) flavors correlate with the lung organ system. Foods and herbs with an acrid flavor are said to disperse fluid accumulations in the body and therefore is helpful for conditions such as lung and sinus congestion, menstrual cramps, and musculoskeletal soreness. Examples of acrid foods include onion, garlic, chiles, ginger, radish, and cabbage.
BITTER Correlated with the heart, the bitter flavor is cooling and clearing, making it useful to clear heat and inflammation from the body. Common bitter foods are dark green leafy greens such as kale, dandelion, and collard. The herbs echinacea, valerian, and chamomile are also bitter.
SOUR The sour flavor is associated with the liver and gallbladder. The action of sour foods is astringent, and it holds fluids and energy. Especially helpful to digest fatty foods, the sour flavor can be used as a powerful digestive aid and is recommended for incontinence and diarrhea. Common sour foods include vinegar, lemons, lime, pickles, and sauerkraut. Find yourself feeling irritable or depressed? Eat foods that move energy stuck in the liver, like cabbage, broccoli, beets, cumin, and basil.
SALTY The salty flavor affects the kidneys and bladder by helping to regulate mineral and fluid balance. Its actions are to direct energy downward and soften hardness, dissolve nodules, and promote bowel movements. Examples of salty foods are seaweed, kelp, miso, soy sauce, and pickles. While there is not a one size fits all approach to eating that will work for all of us, there are some basic principles that are more universal. In addition to eating from the earth and eating with the seasons, it is helpful to recognize food as medicine and incorporate the healing qualities of the five flavors. Considering it is the fall season, which is a time for slowing down and cooking food longer, I thought I would offer you one of my favorite soup recipes. An Athlete’s Take Walnut-basil pesto with spinach and kale

As an athlete, I have come to appreciate the benefits of eating foods made from simple, raw ingredients that are as delicious as they are wholesome. One of my favorite recipes is a very tasty walnut-basil pesto with spinach and kale. I have enjoyed this pesto as a standalone snack, just eating it by the spoonful, as a compliment to baked sweet potatoes and of course, pasta dishes. The walnuts add great texture as well as protein and healthy fats, while the basil, spinach, and kale pack in the vitamins and antioxidants. This recipe serves as many as six average persons or one to two endurance athletes. INGREDIENTS 1 cup raw shelled walnuts (add slightly more for a thicker pesto) 4-5 cloves of garlic 3 cups fresh basil leaves 2 cups fresh spinach or kale (I do 1 cup of each) 2/3 cup light olive or avocado oil 2 Tbsp fresh squeezed lemon juice 2 Tbsp nutritional yeast (provides a light-buttery flavor) ¾ tsp sea salt (or more to taste)
INSTRUCTIONS Combine walnuts, garlic, basil, spinach or kale, olive oil, lemon juice, nutritional yeast, and salt in a blender or food processor. Blend or process on high speed until a paste forms, scraping as needed. Enjoy with pretty much anything!

1 oz. gin ½ oz. simple syrup ½ oz lemon juice 1 oz. champagne, cava, or prosecco
Combine the gin, simple syrup, and lemon juice in a shaker filled with ice. Shake until well chilled and pour into a champagne flute approximately halfway up. Top with champagne and enjoy! (Note – you can buy simple syrup or make it yourself. Boil 2 parts white sugar to 1 part water.Stir. Cool and refrigerate. It truly is simple to make!)
GINGER GINGER CRANBERRY FIZZ (alcohol-free cocktail) • • • • •
2 oz. ginger beer (This is similar to ginger ale but has a stronger ginger flavor.) 1 oz. pure cranberry juice Splash of lime juice Lime White sugar
Run a slice of lime around the rim of a glass. Pour some white sugar onto a plate and dip theglass into the sugar to create a sugar-rimmed glass. Add the ginger beer, cranberry juice, and a splash of lime juice into the glass and stir. Add ice if desired.This makes a tart and refreshingly elegant drink. Cheers!

some like it hot... and sweet! For the food issue, we decided to have a little fun with our staff and host a hot sauce challenge. We fashioned ours after the style of “Hot Ones” and did an interview with one of our photographers and one of our writers. Nothing Bundt Cake owners Erin Gordon and her mom, Christie, agreed to host our event. Our Hot Sauce Challenge really heated up when chef Steven Barnard, chef de cuisine at the Bookcliff Country Club, offered to create custom sauces specifically for our challenge. Let me introduce our challengers: If you go through our past issues you will see that Ashlee Ficklin is a photographer with a broad skill set. Vauna Gross is an audiologist turned hobby writer. They are both talented and up for a new challenge, but this one was unexpected.
QUESTION I, FEATURING THE POBLANO, JALAPENO, AND GREEN CHILE SAUCE: WHAT IS YOUR HEAT TOLERANCE? Ashlee: Very little. I am a lightweight when it comes to spice. I am already feeling the spice here. I can’t lie, I am nervous about how hot this is going to get. Vauna: I like a little spice. I don’t want anything extreme, but I like some spice in my food. The spice in this first sauce is good, I can tell it is there, but it isn’t over-powering.

I happened to be in the right place at the right time and offered to write an article for GJ Lifestyle. I love living in Grand Junction, and it is such a joy to highlight the amazing people that also call this valley home. I am starting to feel the spice. There is some sweet, but definitely spicy.

Yep. this one has some kick. Definitely lives up to its name. I’m going to need that milk.
QUESTION IV, FEATURING THE CHIPOTLE ARBOL SAUCE: WHAT IS YOUR FAVORITE GRAND JUNCTION RESTAURANT? Ashlee: A while back, I was introduced to Hailie’s oven. It is such a cool little bakery, especially for those with dietary restrictions. This one doesn’t feel as hot, but my lips are burning. They feel like they are blistering. Yep, that’s good! Vauna: When we moved to Grand Junction, I really enjoyed discovering Fly’n Roosters. Usually, wing places are too loud and crazy for me. I really like their more laid-back approach, and they have some great wings. I never get ones this spicy though!

QUESTION V, FEATURING THE HABANERO GHOST SAUCE: WHAT IS YOUR FAVORITE THING ABOUT PHOTOGRAPHING FOR AND WRITING FOR GRAND JUNCTION LIFESTYLE MAGAZINE? Ashlee: Why did I say yes to this? This is so hot! I love all the new experiences. I am learning a lot about different people and how they do things and build their businesses. I love getting into the culture of the town. Oh, man. I don’t know if we can still be friends. This is so hot! It burns everywhere. I think I could light a fire with my mouth. Vauna: Can I strategically bite to get just a tiny bit? No. Okay here goes! I have really enjoyed getting to write human interest stories. It is so fun to discover something new and meet wonderful people. I am feeling this sauce. I need more milk for sure. It just gets hotter. At this point, as our contestants were worried their mouths would never be the same, we were able to surprise them with a bonus question, compliments of Nothing Bundt Cakes.

No matter which direction you look, there is a beautiful view. The Monument, The Grand Mesa, the Bookcliffs, the desert. We are so blessed to live in a beautiful place. You know what? My mouth isn’t on fire anymore. I was expecting to have a burning mouth for hours. This is amazing! Seriously, readers, none of us expected that these cakes would be the cure for a ghost pepper-burning mouth. This could be a game changer for the world of hot sauce challenges. Magazines don’t have blooper reels, but we have a blooper-worthy story for you: As we were setting up the shoot, and liberally dosing the chicken legs with sauce, the number III hot sauce exploded. Unfortunately, this was not a small mess. This was an all-over-the-walls, up-to-theceiling kind of a mess. Such a mess that the hot sauce has been renamed Exploding Mango Fiesta. Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
