Lucky Ladies

I don’t know about you, but I love any opportunity to recognize the women in my life who just make my life richer and more beautiful.  Our friends, mothers, and daughters are some of the most influential women in our lives.

And of course, with Mother’s Day this month, all eyes are on moms… But it’s not just the biological mothers but all the mother figures in our lives who have made an indelible impact on us. It’s the family members, teachers, friends, and neighbors doing awesome things in our communities, pouring into our lives - making themselves unforgettable and irreplaceable.

One of my favorite parts of this role is connecting with and championing the best of the best when it comes to Gilbert women.  I get to meet some of the most amazing ladies and introduce them to you.  I consider myself so lucky to have this opportunity each month. I hope that you enjoy getting to meet them in our pages.

I will have to admit there are more than a few local ladies that I completely fan girl over. The work that these ladies do to support our community is nothing short of extraordinary.

MEET LAYLA AND KAYLA GRAHAM

Layla and Kayla are twins and the youngest of 5 girls. Layla is the quiet one. She loves working on computers and will be attending EVIT (East Valley Institute of Technology) next year studying Software and App Design. Kayla is our social butterfly and loves to talk to people. She has walked in several fashion shows and absolutely loves it. She will be attending EVIT next year in the Aesthetics program. She is also in Theater and loves performing on the stage.

Native American Students invited to apply for college scholarships

Native American students in Arizona have greater access to higher education thanks to the Freeport-McMoRan Native American and Navajo Code Talkers College Scholarships. The Power of A Voice

A local nonprofit helps marginalized communities share their stories

“Your voice can be used as an instrument of change to shift perspectives and change the world,” says Amanda Schneider, East Valley resident and Executive Director of Amplify Voices, a local nonprofit.

Alongside Gilbert resident Deb Shapiro, the founder of Amplify Voices, Schneider leads this one-of-a-kind nonprofit that encourages people from marginalized communities who want to use their voices as to change perspectives, therefore changing themselves and the world.

HOW IT WORKS

“I want to find a simple way to efficiently raise the consciousness of the world,” Shapiro says.

To do this, Shapiro and Schneider work with members of marginalized communities and help them build the skills and confidence they need to share their stories with the world through a training and development program modified from the corporate world. This can either be a

90-day Speaker Experience or a 30-day Speaker Circle where they work in a virtual environment with other participants. Each program culminates with the participants sharing their experiences on a public platform.

Established in September 2020, Amplify Voices has already helped survivors of sexual assault and human trafficking, the formerly incarcerated, and breast cancer survivors tell their stories.

“We help our participants find their voices and to learn that their voices matter,” says Schneider. “The program is built on a strong foundation, and I’ve gone through the program myself. Once the participants tell their stories, the audience can access a new level of understanding and see the humanity of every person.”

The experience has proven to be a life changing one for its participants.

“This experience has made me realize that there is space for me in this world and that my lived experience is relevant

and important to others. I matter,” shares Dana, a Speaker Circle program graduate.

“Even in the hardest times in our life, even in the most tragic things that happen to us, there is a message of hope and that there is a lightness inside of our darkness,” says Hannah, a Speaker Circle program graduate. “So, I’m grateful for this program.”

“The community of women who were so courageous and uplifting, who gave freely of their time and held a safe space for each and every one of us encouraged me to share things I have never said out loud before,” says Trina, a Speaker Circle program graduate. “This program challenged me mentally and emotionally. It pushed me out of my comfort zone and allowed me growth, freedom and power beyond what I could have imagined. The program is clear, concise and ran like a well-oiled machine.

The step-by-step process is easy to follow and creates amazing results. Having a buddy to lean on that has gone through the

process was a huge advantage. Deb is amazing, supportive and uplifting.”

THE STORIES

As an example of the powerful work being done by Amplify and its participants, the nonprofit recently shared “The Journey” both at an in-person event and online. According to the nonprofit, "’The Journey’" tells the story of three trafficked and sexual assault survivors who were part of the first group of women to go through the ninety-day Amplify Voices Program. The film follows these courageous women as they take steps to heal, find sisterhood, and learn to give voice to their trauma in a series of powerful and inspiring stage talks.”

“’The Journey’ had fantastic reviews,” Schneider says. “It [sexual assault and trafficking] is a tough topic and the film highlights the survivors’ stories but also the process of going through our 90-day program. Through the process, the participants only go as far as they are comfortable going and, because of this safe space, experience healing and a new understanding of themselves.”

Audience feedback from “The Journey” was powerful.

“This impacted me by making me realize how many women go through something traumatic like this and especially at a young age,” says Samantha, an audience member. “It made me thankful to be a woman and a part of such a strong and impactful community.”

“This movie opened up my mind to how much I feel and see the suppression within women and now I want to start to make a difference and speak up,” adds Jessie, another audience member.

THE POWER OF CONNECTION AND COMMUNITY

Shapiro and Schneider both agree that Amplify Voices is such a powerful program because of how it connects and inspires the speakers and those who hear their powerful stories.

“Amplify Voices allowed me to gain confidence in my ability to speak my truth with emotion and step into my own powerful voice knowing that my voice matters and it will resonate with those that need to hear my message,” shares Trina.

SPRING QUICHE ingredients:

• 1 pie dough

• 1 tablespoon olive oil

• 2 cups mixed veggies, such as raw spinach leaves and cooked broccoli and asparagus

• 7 large eggs, lightly beaten

• 1 1/4 cups light cream

• 1 tablespoon chopped fresh herbs like parsley or thyme

• 1/4 teaspoon ground nutmeg

• 1/4 teaspoon kosher salt

• 1/4 teaspoon fresh cracked pepper

• 3/4 cup grated gruyere or white cheddar cheese

• 1/4 cup grated parmigiano-reggiano

directions:

1. Preheat the oven to 350 degrees F.

2. Transfer the dough to a 9-inch pie plate and press it into shape. Crimp the edges if desired.

3. Place a sheet of parchment paper or foil into the pie shell and fill with pie weights, uncooked rice or dried beans. Bake until the edges are very lightly golden, about 25 minutes. Remove the pie crust but keep the oven on. If edges start getting too brown, cover with a pie cover or foil.

4. In a large bowl, combine the eggs, cream, herbs, nutmeg, salt and pepper in a large bowl and lightly whisk.

5. Sprinkle half of the gruyere or cheddar and parmigiano-reggiano on the crust, followed by the veggies, and then the remaining cheese. Pour the egg mixture over the top and bake until set, about 35 minutes.

STRAWBERRY BRUSCHETTA

ingredients:

• 1 pound strawberries, washed and sliced

• 1 tablespoon sugar

• 1 tablespoon olive oil

• Kosher salt

• 1 loaf Italian or French bread, cut into 12 slices

directions:

• 1 cup goat or mascarpone cheese, room temperature

• 2 teaspoons fresh thyme, basil or mint leaves

• Good balsamic or balsamic glaze

• Salt and ground pepper to taste

1. Combine strawberries and sugar in a small bowl and set aside.

2. Brush bread with olive oil and a sprinkle of kosher salt.

3. Position oven rack a few inches below broil and preheat broiler. Align bread slices on a baking sheet. Broil first side until golden brown, about 1 minute, then flip bread slices to the opposite side and broil opposite sides until golden brown.

4. Spread cheese on toasted bread. Add a pinch of black pepper, salt, and the herbs to the strawberry mixture. Spoon the strawberry mixture over the cheese-topped bruschetta. Garnish with additional herbs. Drizzle lightly with balsamic vinegar.

SPRING GREENS

ingredients:

• 1/4 cup freshly squeezed lemon juice

• 1/2 cup olive oil

• Kosher salt and ground black pepper

• 2 teaspoons of honey

• Kosher salt and freshly ground black pepper

• 4 ounces spring greens, baby arugula, or butter lettuce

• 1/3 cup pine nuts, toasted

directions:

Salad

• 1 cup fresh fava beans, shelled, blanched and peeled, or frozen lima beans, thawed

• 4-6 radishes very thinly sliced

• 6-8 stalks of roasted asparagus cut into  2-inch pieces

• 4 ounces soft goat cheese or feta

1. In a small bowl, whisk together the lemon juice, olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper, and honey.

Dressing

1. Place the lettuce in a separate bowl and toss it with enough vinaigrette to just moisten.

2. Put the lettuce on a serving platter or bowl and arrange the rest of the ingredients on top.

3. Drizzle with additional vinaigrette, if desired, sprinkle with salt and pepper.

Food is Just Food

What you eat does not determine your worth

Most of us struggle to maintain a healthy relationship with food. We attempt to micromanage every bite, consume enough to cause physical or emotional pain, or gauge our self-worth by our weight. How do we break cycles of food-related guilt and shame?

Facts are Friends: We may need more information to make better choices. An elimination protocol, with a doctor’s leadership, can teach us what foods work for our bodies and what foods cause distress. This information can empower us to make fact-based rather than feelings-based dietary choices.

New Skills: If we are going to stop using food to comfort emotional distress, we have to develop new ways to self-soothe and reward. We may need to try new coping skills, change some habits, or even start seeing a therapist. Finding ways to alleviate sadness, anger, fear, and even joy without food can be freeing and empowering.

Sometimes It’s Worth It: Some foods will always be so special and delicious that the physical or emotional consequences are worth it. Some foods that we turn to when upset become so physically problematic that they’re no longer worth it. By asking ourselves if it’s worth it, we can feel more in control of our decisions to indulge.

By separating our food choices from our emotional needs and self-worth, we can finally experience freedom in what we decide to consume. We can experience the reality that what we eat or don’t eat does not have the power to take away our resiliency, strength, and autonomy.

Mom's Day Mocktails

Ramp up Mom's Annual Breakfast in Bed Surprise with these lovely non-alcoholic additions

Two morning mocktails to add to the traditonal breakfast in bed delivery for mom. These easy to make drinks will be an instant hit and you might even be requested to make them for afternoon poolside.

ROSEMARY PEAR MOCKTAIL

INGREDIENTS:

ROSEMARY SIMPLE SYRUP

• 1 cup cane sugar

• 1 cup water

• 3 sprigs of fresh rosemary

• ROSEMARY PEAR MOCKTAIL

• 5 tablespoon pear juice

• 1 tablespoon rosemary simple syrup

• 1 teaspoon lemon or lime juice

• sparkling water to taste

DIRECTIONS:

HOW TO MAKE ROSEMARY

SIMPLE SYRUP

Combine sugar and water in a pot and cook over medium heat. Cook until sugar

is completely dissolved. Turn off heat and toss in rosemary sprigs. Cool Completely.

HOW TO MAKE ROSEMARY PEAR MOCKTAIL

Pour pear juice, rosemary simple syrup, lemon juice, and sparkling water. Add ice and garnish if desired.

GRAPEFRUIT THYME MOCKTAIL

INGREDIENTS:

THYME SIMPLE SYRUP

• 1 cup cane sugar

• 1 cup water

• 1/3 cup fresh thyme

GRAPEFRUIT THYME MOCKTAIL

• 3 cups water

• 1 cup fresh grapefruit juice

• 1/3 cup thyme syrup

• Ice

DIRECTIONS:

HOW TO MAKE SIMPLE SYRUP: Combine water and sugar to a pot. Bring to a boil and then simmer for a few minutes. Remove from the heat and add fresh thyme and steep.

HOW TO MAKE GRAPEFRUIT

THYME MOCKTAIL

Rim glass with sugar if desired. Fill glass with ice. Add 3 tablespoons thyme syrup to each glass and fill up with 1/2 cup grapefruit juice and approximately 1 cup sparkling water. Garnish.
