We live in an efficiency and productivity-obsessed age. I must admit it is easy for me to fall into that trap. The trap of believing the only things worth doing are those for which we can make an exact calculation of the time and cost. But the truth is - that is really a sad and unfulfilling way to go through life. We must leave some room for exploring, for trying new places and things, for being a beginner, even for getting lost. On a recent business trip, booking the quickest flight both to arrive and to get back home was a priority; the schedule so was so rigid that I found myself running from one stop to the next. By chance, the weather offered an opportunity to move the flight and actually extend the trip an extra day--a much needed welcome break. A day with no deadlines, or projects, the only items on the to-do list were how late to sleep and which store on the Magnificent Mile to visit first? I didn’t realize how much that reboot was overdue until the next afternoon as I walked on the brisk but sunny Chicago sidewalk, simply strolling along. In the last few months, analyzing how my time was spent and what I love spending my time doing, made it clear that I needed to first focus on the things that I don't love spending time on. For me - it’s television and computer screens. For you, it may be too many busy weeknights or no time for dinners around the table together. What I do enjoy is just spending time adventuring. Notice how “adventures” and “exploration” don’t even have to be some big crazy thing. It can be playing a board game out on the patio, walking a new trail, or going out to find a fun restaurant we've never been to before. Our hope is that this issue encourages you to make room for exploration. To lose yourself on a trail. To book that trip to places you’ve been dreaming about, to make time for the things that matter most to you, but often come last on your calendar, or simply take time to sample some amazing wine and chocolate. Here’s your reminder to - and I say this with warmth in my heart GET LOST! ;)

CHOCOLATE and WINE February brings celebrations of love which frequently include the timeless treasure of wine and chocolate. Whether it’s over romantic dinners for two or between female friends at “Galentine’s” parties, wine and chocolate will be making lots of appearances this month. Use this as your guide to creating an exquisite experience for your loved ones this month. These aphrodisiacs have a lot of similarities to each other. For one, they both contain flavanols (antioxidants) and polyphenols (compounds found in plant-based food) that are good for you and have anti-inflammatory properties. But because these characteristics affect flavor, it’s somewhat challenging to pair wine and chocolate together. The more polyphenols, the more pronounced the bitter taste. For example, if you sip a delicious dry red wine alongside a hunk of dark chocolate, the wine will start to taste bitter and sour. The taste imbalance is coming from the heightened levels of flavanols (different types of tannin) found in both chocolate and wine that end up clashing against each other on your tongue. While it might sound counterintuitive, a good rule of thumb is to pair a wine that is “sweeter” than the chocolate itself. “Sweet” doesn’t refer to dessert wines alone. In the wine world, the term “sweet” is often used to denote ripe, fruit-forward flavors in a wine. These characteristics provide a nice balance to the bitter flavors of cocoa. Both wine and chocolate can have intense, dry flavors. In order to find the right balance, it’s best to choose wines that are a little bit softer and juicier than the chocolate you’re pairing it with. Fortunately, we’ve done the footwork to find several wines that partner well with chocolate. Here are our guidelines for matching chocolate with wine and a few of our favorite wine and chocolate pairings. We hope you’ll try them and then get inspired to experiment and create your own.

T I P 1 : M AT C H S U G A R WITH SUGAR What’s true of relationships is not true of wine and chocolate: opposites do not attract. When it comes to pairing chocolate and wine, you don’t want to strike a balance, you want to match sugar to sugar. Sweeter chocolate like white chocolate does better when consumed with sweeter wines and bitter chocolate like dark chocolate enjoys being paired with dryer wines. Think of it as matching sugar with sugar. Sweet white chocolate pairs well with sweet wines high in residual sugars and bitter darks with dry wines with just a hint of residual sugar. A good rule of thumb is to always pair wines that are equally or slightly more sweet than the chocolate being eaten with it.

T I P 2 : M AT C H I N T E N S I T Y WITH INTENSITY If you pair an incredibly delicately flavored dark chocolate with a full-bodied, heavy red, the intensity of the wine will destroy any of the subtlety that might have been present in the chocolate. The opposite is also true: strong-tasting chocolate will blow a delicate wine out of the water. Keep this rule of thumb in mind: light-flavored chocolates enjoy being paired with light-bodied wines and intensely flavored chocolates prefer being paired with full-bodied wines.

TI P 3: PAI R FL AVORS WITH FL AVORS Wine and chocolate both carry their own intense flavors. If your chocolate contains other ingredients such as nuts, fruit, or caramel, consider how these flavors will play with the wine. This is especially helpful to remember when enjoying truffles with wine. To avoid creating a palate power play between the two, do your best to match fruity or floral chocolates with fruity wines like Moscato or White Zinfandel. Enjoy chocolate-covered nuts alongside a nutty wine like a Madeira or Marsala. Chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

ON SERVING WINE AND C H O C O L AT E F L I G H T S : Just as you would with any other tasting, it’s best to start with light chocolates and wines, increasing the intensity as you go along. Start with white chocolates and light wines and save the richest, dark chocolates and wines for last. By doing this, you will keep your palate from starting out too strong and missing out on the subtle sensations found in more delicate chocolate and wine selections.

This year, Walt Disney Company is celebrating its 100th Anniversary with several big celebrations, announcements, new food, and of course a new ride. The Disneyland theme park kicked off celebrations in January but that was just the beginning of fun. The first celebrations began with a brand-new fireworks show at Disneyland called Wonderous Journeys. The Walt Disney Animation Studios teamed up with Disney Live Entertainment to feature iconic films and characters from the start of Disney animation to today. Guests will get to check out the spectacular display throughout different parts of the park, including several buildings that became a canvas for lighting effects, projections, and bright firework displays. In March, Mickey’s Toontown fully reopened to guests and one of the most exciting parts of that area of Disneyland park is the new ride Mickey and Minnie’s Runaway Railway. The ride transports

guests into Mickey Mouse’s cartoon shorts & film world, with fabulous animation, projection-mapping techniques that are all synched with trackless vehicles and music. Guests should know ahead of time that if they would like to ride Mickey and Minnie’s Runaway Railway, they will be required to join the virtual queue, which you can find in the Disneyland App. For guests who enjoy the daily entertainment and parades down Main Street, there is a new show for you to check out. The park is now celebrating the return of the “Magic Happens,” parade, which is a daytime show led by Mickey Mouse and his friends. Created by Walt Disney Animation Studios and Pixar Animation Studios, the parade brings together floats, amazing costumes, and an energetic musical score, all for guests to enjoy. Next door at Disney’s California Adventure, there is a new nighttime spectacular light show. This new show, World of Color One, tells a of how a single action – like a drop of water – creates a ripple that can grow into a wave of change. The water inside of Paradise Bay is transformed with fountains, lighting, lasers, and fog and is shows in conjunction with some of Disney’s best sing-a-long songs. CONTINUED >

It isn’t just shows, entertainment, and ride fun that you’ll find at the Disneyland Resort this year. You can also take part in all the adventure and fun by eating your way through the parks, enjoying some specialty 100th Anniversary treats and eats. Like dessert, then be sure to try out the Platinum Trifle, Lemon Tea Cake, Celebration Cake, Minnie Mouse Chocolate Covered Apple or Minnie Mouse Cake Pop, Mr. Banks Shortbread Tart, Violet Pretzel filled with cream cheese & drizzled with salted vanilla cream and lavender sugar or the Sparkling Grape drink with a candy stripe. If you are looking for something a little less sweet, be sure to check out the Potato & Cheddar Cheeseburger with green chile and bacon, or the the French Onion Dip Pizza with Gruyere cheese, caramelized onions, and sliced roast beef. Since this is typically more than a day trip, more like a 2-3 day trip out of the valley, you’ll certainly be looking for a place to stay and rest in between park visits. There are plenty of Good Neighbor hotels in the neighborhoods surrounding

Disneyland and Disney’s California Adventure park. There are also three hotels located directly on Disney property – Paradise Pier, which is undergoing a reimaging and refurbishment, the Disneyland Hotel, and the Grand Californian hotel. Rates will vary for the good neighbor hotels and the on-property hotels, so be sure to check out disneyland.disney.go.com for all the latest information on your upcoming visit. Park tickets must be purchased in advance and you must make a reservation for your theme park visit ahead of time as well, all details which can be found on the Disneyland website. No matter when you go, be sure to pack a dose of patience and tons of energy as it is quite the adventure heading into the parks as the busier seasons are anticipated to pick up with Spring Break and busy summer travel months ahead. However, no matter when you decide to visit, enjoy, relax and celebrate the adventure.

If I have learned anything about living in Gilbert, it has been that the small business owners truly are the people behind the curtain that keep the community growing and thriving. Behind the scenes of their business doors, I often meet with Gilbert entrepreneurs that have not only one, but multiple businesses, large families, and on top of that are typically heavily involved with a local nonprofit lifting up those that need just a little extra assistance. They are not only business leaders but community leaders. Gilbert's community leaders have many different temperaments and styles. Some leaders are more demonstrative while others lead quietly but command respect. Yet there are a few common threads among successful leaders. Adventure seekers looking for something unique and full of surprises need look no further than your neighbors to the North – Downtown Mesa. There you will find an exciting and sometimes spooky experience thanks to the team at Rydables and their partners from East Valley Paranormal. Rydables are a 4-wheeled, battery-operated cart that is covered in a selection of covers that look like animal skin. The company has been in valley for more than 10 years, with guided tours in Zoos, events, malls, and more. Owner Shane Dahlen says bringing this specialty event to Mesa was an easy decision. “We chose Mesa for the Ghost Tours because the Downtown Mesa area is one of the oldest areas of the valley and therefore has some of the best and most interesting history to share. The buildings, the people, the businesses, and the area, most people are unaware of the rich and varied

history that Mesa has to offer. Plus, we believe that Mesa is on the cusp of a revival of sorts and poised to become a hot spot of activity just as it was so many years ago...and we wanted to be a part of that and bring more people down to the Historic Downtown Mesa area and all that it has to offer.” Since the tour is a ghost-themed tour, many may wonder if it is a fun event for people of all ages. Dahlen says 1000% yes. “Everything we do at Rydables is always geared toward all ages, skills and ability levels, something that everyone can not just enjoy but love.” Dahlen adds, “About 80% of our customers are over the age of 18. There aren’t a lot of activities that appeal this much to every age group equally. Little kids, teens, college-aged kids, adults, couples, families, grandparents all love Rydables.” Guests shouldn’t fear learning how to drive and steer as they give you a chance to learn how to maneuver prior to the ride getting underway. Dahlen says he created this adventure in the East Valley for a number of reasons. “I wanted to create something that’s super fun, new, different, local, affordable, family fun, and enjoyed by all ages. Our tours are something you can’t do anywhere else, and they are always an immersive experience that leaves you wanting more.”

Pacuare Lodge, Costa Rica This jungle hideaway is so out there, you have to whitewater raft down a river or ride a gondola to get there. A network of hanging bridges connect the villas, which have thatched roofs, plantation teak wood floors, rattan furniture and private plunge pools. In the evening, zip 400 feet down a cable for a meal at the Nest, a platform at the top of a ceiba tree, then take a night-time stroll along romantic pathways lit by candles and lanterns. Food is Just Food

What you eat does not determine your worth Most of us struggle to maintain a healthy relationship with food. We attempt to micromanage every bite, consume enough to cause physical or emotional pain, or gauge our self-worth by our weight. How do we break cycles of food-related guilt and shame? Facts are Friends: We may need more information to make better choices. An elimination protocol, with a doctor’s leadership, can teach us what foods work for our bodies and what foods cause distress. This information can empower us to make fact-based rather than feelings-based dietary choices. New Skills: If we are going to stop using food to comfort emotional distress, we have to develop new ways to self-soothe and reward. We may need to try new coping skills, change some habits, or even start seeing a therapist. Finding ways to alleviate sadness, anger, fear, and even joy without food can be freeing and empowering. Sometimes It’s Worth It: Some foods will always be so special and delicious that the physical or emotional consequences are worth it. Some foods that we turn to when upset become so physically problematic that they’re no longer worth it. By asking ourselves if it’s worth it, we can feel more in control of our decisions to indulge. By separating our food choices from our emotional needs and self-worth, we can finally experience freedom in what we decide to consume. We can experience the reality that what we eat or don’t eat does not have the power to take away our resiliency, strength, and autonomy. Gilbert offers some great opportunities for trail bike riding. There are many trails within the city and more adventurous ones nearby. There’s no better way to experience the outdoors than from getting up close and personal on a bike. We reached out to Global Bikes to help us learn a little more.

WHAT IS CANAL SYSTEM BIKING? The Canal System connects much of greater Phoenix with safe, traffic free, pedestrian and cycling dedicated paved and un-paved trails. Not far from the Global Bikes store on Gilbert Road is the Western Canal that can take riders from downtown to Freestone Park and further on to the Riparian Preserve. If you head west on the Western Canal you can reach Tempe Town Lake and even head north all the way to downtown Scottsdale. "I would highly recommend trying an E-bike. E-bikes are wildly popular and offer a fantastic way to explore Gilbert's network of canal paths." A map of the canals can be found at Azmag.gov/bike.

WHERE IS A GOOD PLACE TO MOUNTAIN BIKE? The surrounding area is full of great places to explore and experience the wild Sonoran Desert. At Phoenix's South Mountain, you can prove your ability to navigate rocks and boulders on the South Mountain Trail or casually cruise the Desert Classic singletrack. In Fountain Hills, McDowell Sonoran Preserve offers a competitive loop and miles of rolling terrain. One of the most popular East Valley spots for mountain biking is the Hawes Trail Network. With help from the Hawes trail alliance this network of trails has something to offer every skill level from the novice to the most advanced riders.

WHAT ARE SOME TIPS FOR BEGINNING RIDERS? My best tips are to bring plenty of water and ride within your limits. The desert is quite an unforgiving place to land in the dirt.
