Chef Russell Davis has had many passions in life. One of his first loves was being a creative musician in his home state of Texas. Being able to tell a story and take the listener on a journey through song is what being a musician is all about for most artists. Similarly, many parallels can be drawn between musicians and culinary artists as well. In the same realm of being able to bring someone along for a journey through senses, our sense of taste is what helps us along that edible journey!
For Chef Russell, the journey from music to the culinary world was a harmonious blending where passion and creativity collided. With his background in music, Russell soon took an interest in the culinary arts and decided to enroll in culinary training nearly 23 years ago. He was driven by his desire to pursue a profession that allowed him to incorporate creativity as well as draw inspiration from his prior experiences as a musician. His culinary journey was also ignited by a furry, four-legged companion facing severe food allergies. In addition to the desire to become an accomplished chef was his heartfelt mission to ensure his beloved dog could enjoy delicious, allergen-free meals that supported good health when he realized his pup was sensitive to many typical foods. With that determination and drive, Russell pursued the goals he had laid out for himself.
After completing his training, and after having worked in several accomplished restaurants as a chef in various fine dining concepts, Chef Russell decided to put his years of culinary experience further into action, this time as a Gallatin business owner. Alongside his wife Yensi, together they set out to create a new restaurant in an untapped Gallatin market for upscale food in a quick-service counter operation. This new concept would blend together global, healthy and vegan options, and through this endeavor, Sense of Taste in Gallatin was born.
The name, Sense of Taste, is rooted in the inspiration of using multiple senses to experience food. While the actual food and environment are important, our senses of taste, sight, touch and even smell truly are what make any culinary experience memorable. As is the case for Sense of Taste, what sets this new restaurant apart is how even simple foods are elevated to higher platforms, such as sandwiches, burgers, soups and salads through artful combinations of thoughtful ingredients. Chef Russell encourages food lovers to push the boundaries of their taste buds and embrace the challenge of exploring new food experiences in the same way he explores creative ways of culinary expression.
One of Chef Russell’s culinary secrets to what makes Sense of Taste such a unique place is the way many of his dishes are prepared. Hailing from Barcelona, Spain, the Jasper charcoal grill subtly infuses delightful hickory smoke flavors into his menu creations. Thanks to the ingenious use of wood and charcoal in an indoor setting, this remarkable oven (and admitted “secret sauce” to many creations) boasts a cooking speed that’s more than 40% faster than standard grills,
allowing food preparation to be cooked to order for each guest once an order is placed. Not only does the Jasper accelerate the cooking process, but it also aids in expertly retaining all of the intricate flavors that come from so many of Sense of Taste ’s creations and also meticulously separates surfaces to prevent any cross-contamination between meat and plant-based products.
Opening its doors to Gallatin in April 2023, the progress was gradual but the growth and success have been unmistakable as Chef Russell introduced a completely novel concept to Gallatin. The commitment to continuous learning, product evolution, calibration and alignment with the Gallatin-based restaurant market has propelled Sense of Taste forward.
Among their culinary standouts, you’ll find The Taco Tango, Ranchero Ruben, The Texmala Burger, Garlic and Basil Chicken Tenders, The Texan Brisket, the Vibrant Pack-a-Punch Power Salad and the flavorful Thunderbird. Expanding menu options further and pushing even their own creative prowess, Chef Russell says they will soon be adding various Bobba teas, frescas and even natural energy drinks to the lineup.

In his early twenties, Stephen had a unique opportunity working for Southwest Airlines, allowing him to travel all across the country. However, a significant turning point occurred when he met his now wife and her brother who was a local firefighter, which in turn introduced him to the world of prehospital medicine and emergency medical services (EMS). Motivated by a desire to make an impact, Stephen left the airline industry to pursue his Emergency Medical Technician (EMT) certification and later his paramedic license. As he sprinted into this new direction, he discovered a deep-seated passion for the medical field and the profound fulfillment of assisting those in need with Sumner County EMS.
Over the years, and after many emergency calls for service, Stephen found himself answering a different call. He sensed a new season of life was upon him and he felt led into the insurance world, a defining change from the previous professional life he had known.
Stephen embraced the opportunity wholeheartedly and he once again sprinted into a new adventure, eventually opening his own insurance agency in Gallatin. Admiration for all people has been a part of Stephen’s mission for quite some time, and his love for football and community has become a great way for him to edify that.
The inspiration for The O’Brien Agency’s tailgates before every Gallatin High School home football game also draws inspiration from several other sources, including his deep passion for college football. Another nostalgic influence comes from Stephen’s own previous high school experiences on Friday nights at Hendersonville High School football games showing school spirit with banners, flags and cheering as a student himself.
Now, Stephen’s tailgating mission is simple: cater to everyone, listen to some good music, unwind in a comfortable chair or participate in various cornhole or frisbee games and make sure there are enough gold towels (Stephen's GHS version of the "Terrible Towel") and pom-poms to go around! Stephen believes in building genuine connections with our community, and at their tailgates located just outside of the Green Wave stadium, Stephen and his team focus on personal conversations about life and interests. As close as Gallatin is as a community, there are still those like Stephen and his team who continue to make it their goal to bring community members together even more, in any way possible, and the magic of camaraderie and tailgates does just that!

The beloved, local Gallatin restaurant, known simply as BYH (short for Bless Your Heart), has experienced a remarkable transformation in recent months, emerging as a thriving culinary destination that has taken the community by storm. What began as a quaint, cozy spot with counter service and a small bar has now blossomed into a culinary haven, and the restaurant’s remarkable success has led to a bold move into a larger, more grandiose location in downtown Gallatin (122 W. Franklin Street). This expansion was fueled not only by the overwhelming demand from loyal patrons but also by the owner’s desire for innovation. The new location boasts a chic and spacious ambiance that perfectly complements the restaurant’s extended menu, which now showcases an exquisite array of global flavors and innovative dishes that have won the hearts of food enthusiasts far and wide. BYH’s remarkable journey is a testament to its unwavering commitment to culinary excellence and its unending quest to satisfy the most discerning of palates.
BYH isn’t exclusively catering to a female clientele anymore! Initially, when BYH first welcomed patrons, it exuded a distinctly feminine ambiance, serving as an ideal spot for ladies to come together and chat over a cocktail, glass of wine or champagne. However, with its recent relocation and expansion, BYH has evolved into a sought-after destination for both romantic evenings and male bonding. The new location isn’t the sole area of growth. BYH’s menu has also experienced substantial expansion too! They’ve introduced a talented specialty cocktail mixologist and incorporated new additions like specialty pasta and gourmet grilled cheese, yet their famous and cherished sharing boards remain the top choice. We like to think of them as upscale bar fare – perfect for socializing with friends, nibbling, grazing and chatting. And if
you prefer not to indulge in alcoholic beverages, any of their mimosas can be crafted as delightful mocktails as well.
BYH has recently introduced two distinctive event spaces that have proved to be versatile venues for various occasions. Their facilities have hosted a wide range of events including holiday corporate parties, weddings, rehearsal dinners, wedding and baby showers and birthday celebrations. Upstairs, you’ll find a fully-equipped bar with a dedicated bartender, capable of accommodating up to 60 guests, complete with access to the front balcony for a unique experience. Downstairs is an intimate space ideal for gatherings of up to 20 guests and features access to a private patio, making it the perfect choice for more intimate affairs.

Long Hollow Gardens & Vineyards is expanding this sensational hit that will kick off May 5, 2024, with Running of the Sheep. This event welcomes the flock into the lower vineyards for the season with incredible live music, sheep meet and greets, gourmet fare and more. The sheep are guided through the vineyards on horseback by equestrians in this sustainable interpretation of Derby Day.

Thanksgiving weekend brings back the annual Friendsgiving Weekend with live music, food trucks and more for the whole family. Friendsgiving tables are available for reservations as new vintages of award-winning wines are welcomed into the Tasting Bar.

THE FLAVOR OF FALL
Apples are the trademark fruit of fall, and with the many varieties to choose from, there is an apple that is sure to please any palate. They can be included in both sweet and savory dishes and are delicious and incredibly healthful. We all have heard the saying, “An apple a day keeps the doctor away.” While they aren’t a cure-all, apples are packed full of polyphenols, antioxidants, vitamin C, B vitamins and fiber. Make the most of autumn’s best produce and the flavors of fall with these simple recipes.
APPLE GALETTE WITH CARAMEL DRIZZLE
Easier than pie but with all the same textures, this gooey warm dessert is sure to please. For simplicity, this can be made with a premade crust.
INGREDIENTS:
Crust:
• 1 1/2 cups flour
• 1/4 cup sugar
• 1/4 teaspoon salt
• 1 stick cold unsalted butter, cubed
• 1/4 cup iced cold water
Filling:
• 2 apples, peeled and sliced into thin slices
• 1/4 cup packed dark brown sugar
• 1 1/2 tablespoons flour
• 1 1/2 teaspoons lemon juice
• 1 teaspoon cinnamon
• 1/4 teaspoon ground nutmeg
• Caramel sauce
• Optional: 1/4 chopped walnuts or pecans
INSTRUCTIONS:
Crust:
(Note: If running short on time, store bought crust works great, too.)
Mix flour, salt and sugar together in a bowl. Cut in the butter. Add water and mix until moistened. Lightly knead the dough and then form into a ball. Next, flatten dough into a thick circular form and refrigerate for one hour.
Filling: Mix the apples, flour, lemon juice, cinnamon, nutmeg and brown sugar together in a bowl.
Assemble and Bake:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Roll the dough into a circle and set on parchment paper. Arrange apples in center of dough, leaving about one inch of space for the edges. Fold crust over the apples and press to seal edges. Drizzle with caramel sauce and sprinkle with pecans or walnuts. Bake for 35 minutes. Serve with caramel sauce and ice-cream.

This take on the classic grilled cheese is sure to satisfy your fall cravings. With the combined flavors of savory and sweet, it packs a punch for your taste buds.
INGREDIENTS:
• 1/4 red onion, sliced
• 2 tablespoons brown sugar
• 1 tablespoon olive oil
• Sliced sourdough bread
• 1-2 tablespoons butter
• 4 ounces Brie, sliced
• Fig jam, or preferred choice of jam
• 1 Granny smith apple, sliced
• Arugula
• Thinly sliced ham, optional
INSTRUCTIONS:
Heat olive oil in the skillet and add sliced onions. Cook for a few minutes and then add brown sugar. Sauté until soft. Set aside. Butter the outside of the sourdough bread. Next, spread jam on the inside of both slices. Add cheese, apples, onions and arugula. If using meat, add as well. Top with slice of bread and grill on skillet until both sides are toasted and cheese is melted. Serve and enjoy!
