I hope this letter finds you laying by the pool or a beach or a lake, and soaking in some much-needed Vitamin D. As the days grow longer and our hot summers sink in, I still find myself eagerly anticipating the arrival of Summer. There's just something about this season that brings about a sense of excitement and adventure. Sure, Fall has my favorite flavors and scents, Winter has its cozy charms, and I can't deny the beauty of Spring. But when the Summer solstice rolls around, I’m more than ready for the long, languid days sitting by a pool, fishing, or hanging out on a boat. The pages in our Summer Fun issue will help you make the most of this season in the Gainesville area and beyond. And even if Summer doesn't mean three months of summer vacation anymore (because we're, you know, adults and most of us have to work!) we can still look forward to an adventure by crossing things off our ultimate Summer bucket list or relaxing with a new favorite beach read. (P.S. Teachers, you deserve this much-needed break!)

• 4 (6 to 8-ounce) lobster tails, thawed if frozen
• 4 tablespoon (1/2 stick) unsalted butter
• 1/2 medium lemon
• 2 cloves garlic
• 1 tablespoon fresh parsley leaves
• 1 teaspoon kosher salt, divided
• 1 teaspoon vegetable or olive oil
To grill the lobster tails, place them meatyside down on a really hot grill for a few minutes to get some grill marks. Once they release easily from the grill grates, flip them over and top with an easy-to-make garlic butter (the tails will finish cooking as the garlic butter melts). The total cook time depends on the size of the tail. You want the meat to be just cooked through, so aim for an internal temperature of 135 to 140F. Serve with lemon wedges for a nice bright pop of flavor to cut through the richness of the garlic butter and the sweetness of the lobster meat.
Use the 2-2-1 method for smoking ribs.
2 hours unwrapped
2 hours wrapped in pink butcher paper
1 hour unwrapped
Always remove the membrane from the back of the ribs. Use a paper towel and butter knife to get under the membrane to pull it off.
Use your favorite rub and liberally apply to all sides.
Cook at 275 degrees (makes for a shorter cook time, also sets the sauce on the ribs)
Place rubbed ribs in the smoker for 2 hours.
After 2 hours, remove ribs from the smoker, apply your favorite bbq sauce and wrap in either foil or butcher paper.
Then place the wrapped ribs back in smoker.
After 2 hours, remove wrapped ribs from smoker. Unwrap and apply more of your favorite bbq sauce. Place back on the smoker for 1 hour unwrapped. This will help set the sauce on the ribs.
After 1 hour, pull the ribs and dig in!
Dale Tadlock, owner and president of Tadlock Roofing, is a longtime resident of Florida. Dale’s father was an insurance representative who moved the family several times before returning them home to Florida. It was then that 8-year-old Dale realized he never wanted to leave again. “I love Florida,” he said, “and I’m grateful that I grew up here.”
Not long after high school, while working in the construction industry, Dale was given an opportunity to manage the production side of a roofing company. He immediately realized this line of work was perfectly suited to his personality, as he enjoys relating to customers, working outside and providing high-quality workmanship. In 1980 he founded Tadlock Roofing in Tallahassee and has since had the privilege of serving 7 additional communities in Florida, including Gainesville.
In 1980, he married the love of his life, Pamela, who serves as Vice President of Tadlock Roofing. Together they raised three girls –Jessica, Jena and Courtney – and then adopted two boys and two more girls. “Florida is a wonderful place to raise a family,” Pam said. “I couldn’t imagine living anywhere else.”
The Tadlocks’ journey through the adoption process led them to Crimea, Ukraine, where they adopted their two sons, Logan and Lukas. A few years later, they began the process of a Chinese adoption, during which they learned of a little girl in South Florida who had many special needs. They stopped the adoption process in China and added their daughter Isabella to the family. The medical road they have traveled with Isabella has been tough at times, but nothing compares to the joy she brings to everyone she meets. The Tadlocks adopted one more daughter, Elle, and then felt their family of seven children was complete.
The Tadlocks’ passion for adoption led them to be nominated as Angels in Adoption by U.S. Senator Bill Nelson in 2010, and they were presented the award by U.S. Senator Mary Landrieu at the 2010 Congressional Coalition on Adoption Institute in Washington, D.C. Like many, I spent the pandemic working from home. I was a white-collar crime investigator at that time. There came a breaking point where I simply could not take another day trapped inside, away from people. I decided to retire for the second time from law enforcement. WUFT's Fanfares & Fireworks
UNIVERSITY OF FLORIDA BANDSHELL AT FLAVET FIELD | 6:00 PM
Enjoy an evening of live music and spectacular fireworks presented by WUFT-TV, WUFT-FM and WUFT Classic. There will be live bands and the fireworks will begin at approximately 9:40 p.m.
Food trucks will be on site.
No dogs, sparklers, drones or alcohol are allowed. Coolers are allowed, but may be subject to search by the University of Florida Police Department.

The Micanopy 4th of July parade will start at 11:00 am on the corner of Cholokka Blvd and Ocala Ave. A fried chicken sandwich meal will be sold starting at 10 am until sold out at 503 NE Cholokka Blvd.
