With over 5 million cases diagnosed in the United States each year, skin cancer is America's most common cancer. Fortunately, skin cancer is also one of the most preventable forms of cancer. About 90 percent of nonmelanoma skin cancers and 85 percent of melanoma cases are associated with exposure to ultraviolet radiation from the sun.

Gainesville Dermatology experts recommend the daily use of a broadspectrum sunscreen, as this protects the skin against harmful UVA and UVB rays. With an SPF minimum rating of 35, you can protect against sunburn which reduces the risk of skin cancer, helps prevent photodamage and photoaging, or premature skin aging.

May 2022 LIFESTYLE LETTER

Cheers to the Women in our Lives! May is Mother’s Day and a time to celebrate not just mothers, but women in general, and so our May issue is dedicated to celebrating the women in our lives. As I reflect on how blessed I am with the many influential and wonderful women in my family life – my two Moms, aunt, stepmother, mother-in-law, sister, sisters-in-law, daughter, granddaughter, nieces, cousins, and grandmothers no longer with us, and of course all my dear female friends as well - I am so thankful for them and for the impact they have made. One of the best qualities a woman can possess is being confident, but at the same time being able to see the beauty and talent in other women and call out greatness in them, too. Women celebrating women and encouraging each other to succeed rather than competing with each other is both beautiful and rewarding. Encouraging and empowering the people in our own life can be something that comes naturally to do, but the impact of intentionally looking for ways to build up those in our greater community is so very powerful. In this month’s issue we’re sharing stories of women who have made their mark in our community in one way or another. I wish that we had both the room and the time to cover so very many more wonderful women with stories worth sharing, but we will have to save those stories for other future issues, and we will! I also want to take this opportunity to give a huge thank you to my two right hands – our Editor, Leza Mueller, and our Staff Photographer, Steffanie Crockett – big cheers to you both! I also encourage you to take time to reflect on the inspirational women in your own life and reach out to them to thank them for their impact on your life. You won’t regret it. On a side note, this month is also the Builders Association of North Central Florida's annual Parade of Homes. Don't miss these beautiful homes on display May 14th - 15th and 21st - 22nd, noon to 5pm each day. For map, details and more information, go to bancf.com/ or call 352-372-5649. Thank you to all the women who do so much for this community. Enjoy and celebrate the women in your lives. Happy Mother's Day! And see you around town!

Dear Younger Me

ARTICLE BY WOMEN OF GAINESVILLE

To My Younger Self: Dear younger me, I’m writing this with hope that you read, understand, and take to heart these thoughts. Building a happy, meaningful life starts with finding and rooting yourself in a belief system that is greater than any person or thing. Believing in God provides perspective on your place in the world. Second, there is nothing more important than family. Whether it is your biological family or the family you create through deep friendships, they will be your support system through life. Don’t take them for granted – learn from them while they are with you so that their lessons can be your guide when they are gone. Third, you are worthy of love. Don’t isolate yourself because you feel unworthy and stubbornly move through life on your own. Recognize that it is in community and through relationships that meaning is found and beautiful experiences are born. Fourth, learn how to share your feelings and care for others in a way that lets them know how worthy they are of love. Strive to be encouraging, supportive, and caring. Finally, be willing to let go of the mindset that you have control. There is very little in this world you can control outside of your own attitude and actions. Develop resilience and grit and face hard situations early on – don’t run away. Build your character so that you will be able to face life’s uncertainty with grace and strength. You will find one of your greatest joys in life is watching others grow over time and seeing them face and overcome challenges. Nothing gives me more joy in my life now than watching the people I care for and work with be the best they can be and find personal satisfaction and meaning in their lives. Sincerely, Stephanie Bailes Wife. Mother. CEO. About Stephanie Stephanie Bailes joined the Cade Museum for Creativity and Invention as Executive Director in 2017. Bailes was named a 2021 Top 50 International Museum Influencer by Blooloop and she was promoted to Cade CEO in 2022 for her accomplishments.

To My Younger Self: It’s going to be ok. There are so many wonderful things awaiting you. Just focus on the moment and stay true to yourself as your life’s plan unfolds. Stop rushing through your life. Life will be full of highs and lows good and bad. Embrace every moment. Most importantly, learn from each experience. Don’t waste precious time looking too far back or too far forward. You can’t change what has happened, but you can grow from it. Nor can you control what’s to come. Do your best to be prepared. Life is a finite journey, and our world offers so much. Never stop learning and exploring. Always be a student. Wisdom takes years. As Billy Joel wrote in one of your favorite songs, “life is a series of hellos and goodbyes.” So many incredible people will cross your path in the coming years. Take the time to get to know them. By learning about others, you will learn more about yourself. Fill your life with wonderful people and most importantly, nurture those relationships. Let your life’s journey take you where you should go. Life offers each day as an opportunity to start anew. Stay open to every opportunity. Chase those crazy ideas you have. You never know where it will take you. At the end of the day, be proud of your story. You created it. You defined it. You built it. It will be your story. It’s going to be ok. Sincerely, Barzella Papa Wife. Mother. President and CEO of the Community Foundation of North Central Florida About Barzella Barzella Papa joined the Community Foundation in July of 2006. As a dedicated community leader, Papa has raised more than $40 million in donor advised funds, agency endowments and planned gifts. To My Younger Self: Hi, Valerie. It’s been some time since I last saw you; 20 is a ways back, and I remember how eager you were to get started on life. The years in front of you are now the footprints behind me, so I wanted to take a few minutes and share a little of what I know. You’ve always had ambition and drive, along with the boundless enthusiasm you need to sustain them. It’s important to you, I know, to establish yourself independently, at least as much as possible. You want to stand on your own feet and be self-sufficient, and because of the women who came before us and fought so hard for that agency, you have so many opportunities and surprises ahead. I’m excited for you to discover them – but I won’t spoil it for you. Sometimes not knowing the answers keeps you open to possibilities. What I can tell you is that it’s absolutely wonderful to feel strong, capable and confident in your abilities – while at the same time, to have a sense of solidarity and support in your family. They’re your sounding board, your confidantes, and your first, best advocates. They’re the ones who will love you enough to give you a soft place to land, and they’re the ones who will never be intimidated at giving you constructive criticism. They’re brave enough to be honest with you – because let’s face it; you’re stuck with them for life. So they have solid job security. They’ll never let you forget where you came from – which is a good thing, because in one way or another, a part of us remains there. Remember smaller things. Like sleep. Take time just for yourself to do things you enjoy and that have nothing to do with work or school. Allow yourself the mental relief of frivolous pursuit once in a while, because it keeps you optimistic. Say yes to going out and spending time with friends. Make the time to get together and talk about everything from the ridiculous to the momentous, and don’t forget to laugh. Hard. Laugh so hard that the people at the next table turn their heads. Then laugh more. So many people in your life will give you incredible opportunities and chances to create amazing things. Those are your mentors and teachers; they’ll see your work ethic, your interest in learning, and as they push you forward, encourage you to give back as you climb up. Always seek advice and counsel from them, as well as peers you respect – both in and outside your chosen field. Be curious and unlimited in your inquisitiveness, and you’ll never have a boring day in your life. Stay focused on the future, learn from your experiences, and know that you can grow from those experiences and mistakes. And there will be mistakes. That’s okay. Everyone has them. That last part is important. Try not to be too hard on yourself, and give yourself permission to forgive your imperfections. In fact, embrace them. They’re unique to you; no one else has them – just as no one has quite the same talent and skill as you. Lastly, keep in mind the difference between what your goals and aspirations are, and the things you think are expected of you. They’re not always the same things. Sincerely, Valerie Daley Wife. Mother. Principal Owner/Broker of Showcase Properties of Central Florida and Thoroughbred owner/breeder. About Valerie Valerie became the owner of Showcase Properties of Central Florida in 2013. Not only is she an entrepreneur, Valerie is also a Thoroughbred breeder and owner and was recently named the President of the Florida Thoroughbred Breeders and Owners Association. She is the first woman to hold this position in the Association’s 77-year history.

To My Younger Self: Now 78, I would tell my younger self to be braver. To have more faith in yourself. To explore the world close at hand and trust in your talents. I remember in high school seeing myself in a bubble where I was safe. I could see out, but others couldn’t see in. I was wrong. So many people “saw” me and believed in me. They encouraged me to write, to create art, to choreograph. My high school teachers nudged me out of my bubble – quietly submitting artwork and writing I created to arenas where it was evaluated and judged of value. I began to see value in myself. Younger self - Value your unique talents! Now, I am a teacher and a writer and a choreographer. I love what I do! I cherish the people and experiences that have touched me. Younger self, you have unique gifts. Trust in your talents and cherish the world and people around you. Sincerely, Judy Skinner Teacher, writer, choreographer About Judy Ms. Skinner taught public school- (K-grade 3) for 18 years, was adjunct teacher and choreographer for UF College of Theatre and Dance for over 20 years and choreographed for the Hippodrome Theatre for over 10 years. Mildred’s, A Neighborhood Staple Since 1999

Cuisine inspired by a team of genuine individuals who care about their craft ARTICLE AND PHOTOGRAPHY BY MILDRED’S BIG CITY FOOD

24

C HE F ’S SE LE CT ION | FOOD + BE VE RAGE

A neighborhood staple since 1999, Mildred’s strives to provide authentic, locally-driven cuisine. While constantly evolving in culinary style over the years, consistency for Mildred’s and chef-owner Bert Gill is supporting local farms, agriculture, and furthering culinary education within the north central Florida community. Reflecting its seasonality, on any given night the menu at Mildred’s might be different from the night before. Dinner is served alongside a small but carefully curated wine list that, like the menu, favors smaller independent wineries, growers, and winemakers. However, what is certain - the cuisine is inspired by a team of genuine individuals who care about their craft.

CRAB CAKES MILLE FEUILLE GREEN MASALA SAUCE • 1.5 tsp turmeric • 0.5 tsp cinnamon • 0.5 tsp cardamon (removed from pod) • 1/8 tsp ground clove • 1/2 large yellow onion • 4 cloves garlic • 2 bunches cilantro • 2 bunches mint • 1 cup coconut milk • Juice of 3 lemons • salt mixture to taste Sweat onions until translucent then toast spices over the onions. Pick mint and cilantro from stems. Add ingredients to food processor or blender & process until smooth.

BEURRE BLANC SAUCE • 1 large shallot • 3 sprigs of thyme • ½ lb unsalted butter • ½ cup dry white wine (eg pinot grigio) • 1 lemon • Salt • White pepper Sauté shallots until translucent then add whole thyme sprigs and wine. Gently simmer until wine is reduced to 2 tablespoons. Reduce heat to low and whisk in butter until sauce comes together. Remove from heat and whisk in juice from one lemon. Salt and pepper to taste.

CRAB CAKE MIX • 1/2 small onion • 1 stalk celery • 1 clove garlic • 1 lb fresh blue crab meat • 1 egg • 1 teaspoon mayonnaise • ½ bunch Italian parsley (finely chopped) • 1 tbsp seafood seasoning* • Juice & zest of 2 lemons • Salt & pepper to taste • 1/4 cup coarse bread crumbs • *seafood seasoning (scale as needed) • 1 tbsp celery salt • 1 tbsp ground bay leaves • 2 tsp black pepper • 1 tsp paprika • ½ tsp dry mustard • Pinch nutmeg • Pinch cinnamon • Pinch ground cloves Finely chop onion & celery. Add 1 tbsp butter to large sauté pan and sweat onions & celery about 3 min, adding garlic after 1 min. Mix all remaining ingredients in large bowl and add onions, garlic, celery. Mix well to combine. Cover & refrigerate at least 30min. Separate crab cake mixture into 5 equal portions. Roll filo dough (from recipe of choice) into very fine sheets. Lay out 3 sheets each stacked on top of each other. Shape one portion of crab mix into small log along long edge of the filo dough layers about one inch from the edge. Using wax paper or cheese cloth to grip, carefully roll edge of filo over the crab mix, using the wax paper to help shape and tightly squeeze the filo around the mixture while rolling. When finished you should have many layers of filo wrapped around a center of crab cake mixture. Repeat this process five times for each portion of crab cake mix. Next cut each of the five mille feuille rolls into thirds (or a size to properly fit on sauté pan that can go into the oven). To cook the mille feuille, preheat oven to 350˚F. Lightly heat carbon steel pan (or oven safe pan) with enough butter to coat the surface of the pan very lightly. Place up to three cut pieces of the mille feuille in pan and bake at 350˚F for 10-12 min until flaky and golden brown and the center of the mille feuille is 165 ˚F. Serve hot with green masala sauce and a light drizzle of beurre blanc

Create the Life You Love ARTICLE BY NICOLE MULLALLY | PHOTOGRAPHY BY STEFFANIE CROCKETT

“It’s all about work life balance: enjoying where you work and feeling supported”

I had to master balancing school and a growing family of 3 daughters to survive, graduate at the top of my class and get into an orthodontic residency program. It was a team effort to make it through and my amazing husband definitely shared the load. For 6 years we were able to keep up this pace, but we both knew it wasn’t sustainable. So, when I started my practice 10 years ago the goal was to build a schedule that would allow me to have a career and be a mom. I saw patients Tuesday through Thursday. Administrative responsibilities were handled on Monday and Friday, when the girls were in school. I've kept the Tuesday through Thursday schedule and have been able to build a thriving practice. And instead of adding to my workload, I brought on an associate doctor and added Mondays to our schedule.I didn’t set out to have an all-woman team. With the age range of 19 to 73, we all bring many life experiences to the table. We support each other through life’s celebrations and challenges. “I think a fundamental part of work-life balance is enjoying where you work and who you work with. It’s been one of my top priorities to create an environment that's a fun place to be, where women feel supported and cared for, and where team members enjoy coming to work each day”, said Dr. Mullally. Our culture allows people to take the time that's needed. We count on each other as a small team, maintaining a work-life balance culture. We are cross-training team members so we have the ability to jump in and cover each other as needed without increasing the stress. According to the staff, "Dr. Mullally and Dr. Olsen and team are a woman powerhouse."
