2022 we are happy to see you! To share a little about myself, New Year’s Day is, and always has been, my very favorite holiday of the year. I’m not sure what it is, but there’s just something special about the feeling of that “new year” - a feeling of hope and optimism and looking forward to great things ahead. And of course there’s the celebrating on the Eve and the Day, the eating of traditional New Year’s Day good luck food, and football! I’ve lived in many parts of the country with different New Year’s traditions and different climates. I’ve had white, dreary, cold New Year’s Days and warm, sunny, tropical ones, but they always feel great and bring on that same feeling. Bottom line is, it’s a new year, and that signifies new beginnings, new goals and resolutions, and a fresh start. With how busy life becomes, it’s a nice reprieve to be still for a moment and reflect on where we’ve been, what the past year has taught us, what we want to grow and learn from, and where we want to go from there. The practice of establishing new goals or a resolution for the coming year is something that can help us focus on what is truly a priority for ourselves or at least what should be. Just be sure your goals are reasonable and attainable for you. This month’s issue highlights Health and Wellness, and we hope you’ll enjoy our features on some of our local businesses who work hard to help us all stay fit and healthy. Whether it’s eating delicious and nutritious food from Chef Amadeus, exploring some unique fitness destinations, or keeping our bodies and souls healthy with therapies and spa services, you’ll find it all here. You’ll also notice some name changes of our features but you’ll still see plenty of our community members celebrating ribbon cuttings at new locations, enjoying great fellowship, and giving back to those in need. Valerie Dailey Named First Female President of FTBOA Valerie Dailey of Showcase Properties, and a breeder of small Thoroughbreds, has been named president of the Florida Thoroughbred Breeders' and Owners' Association. Since it was established in 1945, she is the first woman to hold this position. Having previously served as the Association's first vice president, she said "I am certainly honored to be selected to be the president." She's looking forward to the opportunity to lead the organization and is eager to help.

The Gainesville Camellia Society The Gainesville Camellia Society (GCS) was organized in the early 1950s. The Camellia Show is the big event of the year. The GCS has an informational booth at the annual Kanapaha Spring Festival held in late March. GCS meetings are held in the Summer House at the Kanapaha Botanical Gardens at 2:00 PM from September through May. Meeting dates are the third Sunday of each month. Membership cost is $15/year for individuals and $20/year for couples.

Oak Hammock Salute of Veterans Over 100 military veterans living at Oak Hammock at the University of Florida were honored and recognized during a standing-room only ceremony and salute in the Oak Room on campus. The guest speaker was (Ret.) Major General Bill Hodgkins of the U.S. Air Force. A highlight was the recognition of nine residents who where veterans of World War II including, Ms. Martha Wroe, the oldest living Oak Hammock resident, recently celebrating her 100th birthday.

The Rotary Clubs of Gainesville Wild Game Feast 2022 The Wild Game Feast is back in 2022 for its 36th year. This year's event will be March 3rd at 4841 NE 118th Drive, Gainesville, Florida 32641. BOB CADE’S PRIZED COLLECTION ARTICLE BY CADE MUSEUM FOR CREATIVITY & INVENTION PHOTOGRAPHY BY VARIOUS Dr. Bob Cade is best known for formulating Gatorade, but the acclaimed UF professor and kidney specialist, whose legacy is honored today by the Cade Museum for Creativity & Invention, took to activities that some might find surprising. Dr. Cade researched treatments for autism and schizophrenia. He spoke German and wrote poetry. He played the violin. And he collected Studebakers—he owned more than 60 carriages and automobiles from the late 1800s to 1965, 15 of which he donated to the Cade Museum as educational resources. The pride of his collection was the 1931 Studebaker President, which was recently showcased at the prestigious Amelia Island Concours D’Elegance. Other distinctive vehicles in the Cade Museum’s collection include an 1895 doctor’s buggy, a 1900 farm wagon, a 1911 EMF #30 Roadster, a 1925 Duplex Phaeton, a 1963 Gran Turismo (GT) Hawk and, of all things, a massive 1937 circus calliope truck.

Among the most unique pieces is the 1963 Lark, which “flew” in the face of established styling norms. This little car was the precursor to the “muscle car” and a saving grace for Studebaker during the 1950s recession. Dr. Cade appreciated the way art and science met in the design and functionality of automobiles and he cherished discoveries and firsts. The fact that the Studebaker Company was the first manufacturer to successfully transition from wagon to automobile no doubt fascinated him. This unlikely shift in technology is precisely the type of evolution that excited him his entire life. Today, the Studebakers can be seen on display at the Cade Museum during various special events throughout the year, such as the Inventivity Bash in May.

With almost 25 years of providing comfort and companionship for survivors of trauma, illness, and natural disasters, Gentle Carousel Miniature Horses is a unique organization of tiny ambassadors. As one of the largest equine therapy organizations in the world, they work with first responders, law enforcement, church organizations, Veterans groups, FEMA, hospice and educational facilities all over the country. They also make countless visits to hospitals to visit kids fighting and recovering from deadly diseases or injuries. Mental health is health, and psychological wellness directly impacts the physical. So it’s crucial to the body’s well-being as much as any other medicine. The positive impact of these little horses is both observable and immeasurable. “If you’re around animals, you know they’re inspirational,” says Debbie Garcia-Bengochea, Education Director for Carousel. “Just getting people out, walking with the horses and enjoying some fresh air is a big deal -- especially for the children. It’s so important for their stimulation and mental health. That has a huge impact on treatment and recovery.” The organization is a 501C3 non-profit charity that operates with funds from donors to support education, literacy, and therapy programs; their latest book, “Mini Horse, Mighty Hope” is in stores and available on Amazon. Proceeds go to the care and needs of the horses. “You can’t always fix things, but you can help make them easier,” Garcia-Bengochea says. “You can give them a happy moment or day, and you’d be amazed at what that alone can do.” Gentle Carousel Miniature Horse

Chef Amadeus is a Florida native. Born in Jacksonville, Florida, his passion for cooking started at a young age in his mother’s and grandmother’s kitchen, a loving and safe place to hang out and learn to cook. At 18, Chef Amadeus joined the Navy. He quickly learned, everyone had to work in the galley. Often when bored, he would create creative vegetable designs. The crew LOVED his meals. Upon leaving the military he attended a cooking program in Kissimmee, Florida. And when he returned to Jacksonville, he started taking more culinary classes and working at night as a cook in hotels. He did an apprenticeship at one of the finest Jacksonville restaurants, 24 Miramar. When he found an opportunity in Seattle, Washington to learn and experience even more, he took the leap. And for the first time ever, he met another black Chef.

During his time in Seattle, the Food Network asked Chef Amadeus to try out for a show on the Food Network. He WON! Then he realized, it wasn’t about ego, it was about a passion for cooking. When he moved back to Jacksonville, he became a private Chef and consultant. His consultant work has led him to judging competitions and teaching. “It’s all about being happy to me. That is what it means to be in the kitchen, creating and cooking. It’s my passion”, says Chef Amadeus. Chef Amadeus will be spending more time in Gainesville, and we are excited to have him. He will be working with the UF Office of Distance Learning training students to work in the culinary field. What a lucky group of students, to learn from the best!

Recipe 1 During a yakitori dinner made this shrimp dish.

INGREDIENTS • Seaweed Salad (pre-made) • 3 King Mushroom Stems • Pickled carrots & onions (Recipe 2) • Micro-greens • 2 Cherry Tomatoes

Olive Oil White Balsamic Vinegar Kosher Salt Lil Bump spice Cast Iron Skillet

DIRECTIONS Go to recipe 2. Place cast iron skillet on medium heat. No oil. Take 3 mushroom stems and cut them into width/shape of a scallop. Plate cuts, drizzle with olive oil, kosher salt, and Lil bump spice. Place oil in cast iron pan. Sear mushrooms on both sides golden brown. Place seaweed salad on bottom of plate, top with mushroom stems, pickled carrots, onions, micro greens. Half 2 cherry tomatoes and drizzle with white balsamic vinegar, kosher salt, and Lil bump spices. Plate around mushroom stems. Enjoy.

Recipe 2 INGREDIENTS • 1 carrot • 1 Spanish onion • Vinegar (amount “chefs” preference) • Sugar (amount “chefs” preference) • Lil bump spices Scallops, this is dikon radish with black eye peas salsa on a bed of collard greens, dusted with dehydrated collard greens

DIRECTIONS Shave carrot and onion. Mix vinegar, sugar and Lil bump (spice by Chef Amadeus) Place carrots and onion, into mixture. Let them set in pickling juices.
