February is a season of connection, and it feels especially meaningful to introduce myself to the Frisco community through this Love Local issue. While this magazine has been part of the local conversation, this issue marks my first as publisher, and I am honored to continue its legacy while beginning a new chapter.

Frisco is a city defined by momentum and intention. Randy Newman says it best in his song from Toy Story : “…There isn’t anything I wouldn’t do for you. We stick together and we see it through. ’Cause you’ve got a friend in me.”
When Scott Snellings met Jacob Thompson during his freshman year at Baylor University, he had no idea just how true those lyrics would become. The two quickly became inseparable, forming a bond that lasted well beyond college. They stood beside each other as groomsmen, and Scott even named his son Jacob. But the full depth of their friendship wouldn’t be revealed until many years later.

experienced a life-changing event in 2008. After years of practicing law, he began battling significant health issues that required powerful medications - medications that ultimately damaged his kidneys. His physician delivered news no one wants to hear: Scott would eventually need a kidney transplant.
The diagnosis cast a long shadow. Scott and his family faced countless unknowns - when would the transplant be necessary, how could he best preserve his kidney function, and would a donor be available when the time came? According to the National Institute of Diabetes and Digestive and Kidney Diseases, as of February 2023, 88,658 people in the United States were waiting for a kidney transplant.
That moment arrived in 2017.
“My doctor told me it was time and to ask everyone and anyone to get tested,” Scott recalls. “It was by far the hardest thing I have ever done. I am not someone who typically asks for help.” But Scott felt a clear calling. “I put my ego aside and asked everyone I knew,” he says. With three children and a wife depending on him, he felt compelled to do everything possible to find a donor.
In addition to matching blood type, a donor must be medically compatible and in excellent health to function with one kidney. Because the criteria are so rigorous, many transplant recipients rely on deceased donors.
By grace, Scott had two matches: his father-in-law and his best friend, Jacob Thompson.
“It brought me to tears that people would do this for me,” Scott says. Doctors ultimately selected Jacob, who was younger, to move forward. Jacob then spent months undergoing extensive testing, a challenge made even harder by the fact that he lives in Oklahoma. “That shows even more what kind of friend he is,” Scott notes.
On Halloween 2017, Jacob donated his kidney to his best friend. Scott jokes that the timing was “Frankensteinesque,” but the experience was anything but frightening. Before surgery, Jacob, accompanied by his wife who was eight months pregnant, joined Scott and their families in prayer. Scott remembers feeling an overwhelming sense of peace, confident that everything would be okay regardless of the outcome.
The surgery was a success. The two recovered on the same hospital floor, even taking daily laps together around the ICU unit.
When asked why Jacob chose to donate, Scott doesn’t hesitate. “Jacob is a giver. He served in the military, he serves in his church, and he has always put others before himself. If Jacob was going to offer a kidney, no one was surprised. Faith, family, and friendship are everything to him.”
For the past eight years, the Snellings and Thompson families have marked their “donation anniversary” with trips ranging from Tulsa to Tuscany. “It’s a great way to celebrate and be thankful,” Scott says of the immeasurable gift he received.
“How do you repay a gift like that?” Scott reflects. “It’s not with money or presents. You repay it by living each day to its fullest, living with joy, regardless of circumstances, because that’s what makes each day possible.”

A PINK COCKTAIL PERFECT FOR CELEBRATING VALENTINE’S DAY
This Valentine's Day, whether you plan to treat a loved one, treat your girlfriends, or treat yourself, I can promise you'll want to serve up this perfectly pink cocktail; one I like to call Love Potion #9. It looks as fabulous as it tastes. You can't beat the bright, fresh grapefruit juice and the bubbles add a lively kiss on top. Each sip is dreamier than the next. Cheers, here's to love!
• 1.5 oz rosé
• 5 oz fresh grapefruit juice
• 5 oz simple syrup
• 1 egg white
• 3 oz bubbles (champagne or sparkling wine)
1. Pour the rosé, simple syrup, egg white, and grapefruit juice into an ice-filled shaker.
2. Shake vigorously for 10-15 seconds, until chilled.
3. Pour into a coupe glass using the strainer.
4. Top with champagne or sparkling wine.
5. Garnish with edible flowers and grapefruit peel.
6. Enjoy!

Make this Valentine’s Day truly memorable by going above and beyond with a heartfelt, homemade gift. Cheesecake is the perfect dessert for two because it’s both rich and indulgent, but not too heavy. Plus, it can be easily customized to fit your own personal taste and it’s much easier than you think!



• 1 pound cream cheese, softened
• 1 cup sugar
• 3 eggs
• 1 teaspoon vanilla extract
• 1/2 cup sour cream
• 1/2 cup heavy cream
• 1 prepared graham cracker crust
Start by preheating your oven to 350 degrees. In a large bowl, mix together the cream cheese and sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla extract. Next, add in the sour cream and heavy cream and mix until everything is well combined. Pour the mixture into the prepared graham cracker crust and bake for 45 minutes to 1 hour, or until the cheesecake is set. Let cool completely before serving. For this recipe, we decided to add berries and honey to the top of our cheesecake. Take the time to make yours special to your relationship. With toppings such as chocolate, jelly, whip cream, berries, fruit, or whatever your partner’s favorite is, you’re sure to make them smile. Make things colorful by adding food coloring to the mix, it can even be made in their favorite color. You can also change things up by making your own crust with Oreos or cinnamon crackers.
To elevate this recipe to the next level, consider using high-quality ingredients such as grass-fed cream cheese and locally sourced honey. For added luxury, try using a blend of different types of berries, or even substituting the graham cracker crust with a crust made of crushed pistachios or hazelnuts.
In addition to adding a variety of toppings, you can also get creative with the presentation. For example, try using a springform pan to create a heart-shaped cheesecake, or using cookie cutters to create fun shapes out of the cheesecake slices. You can also garnish the cheesecake with edible flowers or a sprinkle of edible gold dust for a truly indulgent experience.

In Switzerland’s Valais region, wellness and adventure are always part of the same itinerary. Morning could bring a high-alpine hike, afternoon a soak in mineral-rich springs, and evening a table set with traditional cuisine, always including delicious wine and cheese. An easy train ride from Zurich lands visitors in the Aletsch Arena, a high-alpine region on the south side of the Bernese Alps, home to three villages: Riederalp, Bettmeralp, and Fiescheralp. Known for its ski slopes in winter and hiking in summer, the area is entirely car-free, making walking and local buses the main modes of transportation through its quaint chalet-lined streets.
One of the main attractions of the ski-in/ski-out area is the Aletsch Glacier, the longest glacier in the Alps. A UNESCO World Heritage Site, the 12-mile glacier is visible from several vantage points, shaping every experience in the area.

Located in the heart of Bettmeralp, Hotel Panorama provides no-fuss accommodations steps away from the picturesque Chapel Maria Zum Schnee. The hotel’s restaurant offers delicious regional cuisine, including raclette paired with Swiss wine. A good bottle of Pinot Noir or Gamay is also easy to come by because the Valais region of Switzerland is one of the largest wine-producing areas in the country, with vineyards dotting the steep slopes of the Rhône Valley. In addition to wine and cheese, eating cholera, a covered vegetable pie invented in the region during the cholera epidemic, is a must.


Begin at Viewpoint Moosfluh, the closest and lowest vantage point of the Aletsch Glacier. From there, trailheads lead to Villa Cassel, once the home of a British financier and now a museum focused on history and conservation. The hike passes through a thousand-year-old forest with views of both the glacier and the Matterhorn.
Walk over Goms Bridge, a nearly 1,000-foot-long suspension bridge that connects two hiking areas over the Rhône River. For a final look at the majestic glacier, take the cable car to Viewpoint Eggishorn. At nearly 10,000 feet above sea level, it offers panoramic views of the Matterhorn, Mont Blanc, Jungfraujoch, or the “Top of Europe,” and the most comprehensive view of the Aletsch Glacier.
A short train ride takes visitors to one of the largest cities in the Valais region of Switzerland. The city is a crossroads between Italy and France, with a history dating back to Roman times. Visitors can tour Roman ruins, including a well-preserved amphitheater, ancient settlements, and Roman baths.
Martigny Boutique Hotel is minutes from the train station and is one of the few establishments in the city employing people with disabilities. The light and bright hotel provides a comfortable base for exploring the city.
Take the steepest funicular in the world, the MontBlanc Express, on a scenic ascent through the Alps. The funicular connects to a smaller train that leads to the Trient Valley on the French-Swiss border, where, at the top, a full day of activity begins. Hiking, biking, zip-lining, or traversing the Emosson Dam, which straddles France and Switzerland, are all options. The crystal clear blue waters of Emosson Lake are perfect for a picnic or a break between adventures.
Back in Martigny, Barryland, the only theme park in the world dedicated to St. Bernard dogs, offers a look at the history of the dog, bred by monks in the 17th century for alpine rescue work. The Barry Foundation, founded in 2005, continues to preserve the breed and educate visitors about it. Guests can watch the dogs train, play, and interact as they learn about their role in the region.
Roman influence remains visible across the city, including at Les Bains Publics at Hotel Borsari, where visitors can soak in cement wine barrels located in the hotel’s spa. The baths sit on the site of a former wine tank factory and offer a circuit of hot and cold pools in a historically inspired, wine-colored setting.
