We had the pleasure of sitting down with Southall Farm and Inn’s Chef Tyler Brown, Chef David Leathers of the Foodsmith, a mobile private restaurant concept, as well as edible landscapes and gardens courtesy of Marin and Kevin Prociw—so get your taste buds ready! You are in for a treat. We also included a few new recipes for you to try at home, whether you’re cooking for just your family or for entertaining guests. Check out Clint Black while on round two of his “Mostly Hits And The Mrs." tour and read about his newest venture, Clint Black Coffee. Food brings us all together, and whether we are sharing a meal with loved ones or enjoying a night out on the town, the time spent while enjoying food is invaluable. Visitor Spending in Williamson County Surpasses $1.04 Billion in 2021 Visitor spending generated $1.04 billion in direct economic impact to Williamson County during 2021, according to newly-released data from U.S. Travel Association and Tourism Economics. That was a 34% increase from the previous year and on par with 2018 levels of economic impact. According to data from DK Shifflet, the county welcomed 1.73 million visitors in 2021, a 40.5% increase over 2020. Those visitors were spending $2.86 million per day in Williamson County. Marin Prociw (pronounced pro-see) started her gardening service as a side business in 2019, initially planting seasonal flowers in containers and creating holiday garland, cut greens, wreaths and mailbox swag. The business has since blossomed to now include designing and installing small to extensive gardens as well as edible landscapes. “Kitchen garden installs can include, for instance, adding nectarine trees, or blueberry and raspberry bushes within your landscape for you to harvest and enjoy.” Alongside her husband Kevin, a freelance copy editor and driving force behind offering edible landscaping services, Marin consults, designs and installs gardens to make back and front yards both visually pleasing as well as useful. “Kevin’s passion is using the landscape to produce food,” Marin says. “He is the kitchen garden guru.” As a former teacher, Marin pairs her gardening know-how with teaching clients how to manage and maintain their landscapes for years to come. “Gardening doesn’t have to be overwhelming,” Marin says. “We want to help set everyone up for success. There is something so special about planting a seed and pulling out a carrot, for example, a few months later.” Marin and Kevin work within a budget set by the client and advise on what to grow and where based on the environment.

No matter how large or small, all projects begin with high quality soil, which serves as the foundation for ensuring a long-lasting healthy garden. Marin also recommends clients compost old produce to continue to provide the garden with nutrient-rich soil. Depending on the project size, a typical garden installation can take three days to one week. The landscaping duo return one month after each installation to see how the garden is growing. Marin admits she enjoys following up, seeing how the garden is coming along, and answering any questions clients might have. Eventually, the couple would like to start a garden and edible landscaping blog to help trouble shoot tricky gardening issues, such as how to prevent certain critters from eating the bounty before it can be harvested. Marin and Kevin want everyone to see the value of growing their own food. ”The best part of the job,” says Marin genuinely, “is looking through the pictures and videos people send to us showing their home-grown produce. After two years of virtual programming, Humanities Tennessee is thrilled to announce that its beloved Southern Festival of Books is returning in person to downtown Nashville this October 14 – 16. The Festival began in 1989 as a literary program at the Tennessee Homecoming celebration. It was so popular that Humanities Tennessee, a nonprofit dedicated to the discussion of ideas, stories, history, art and culture, made it an annual event. “The festival is for everyone to enjoy,” says director Serenity Gerbman. “People come from all over the world to discover new authors and participate in the Q & A's.” About 25,000 people are expected to visit this year to browse, discover and discuss the ideas laid out in their favorite genres, including mystery novels, memoirs, poetry collections, biographies and works of literary fiction. “At Vanderbilt’s Robert Penn Warren Center for the Humanities,” says Gerbman, “discussion centers around the theme of mending and transforming, how we live and work together in a diverse world. With the festival, we work with this theme by encouraging visitors to engage in the civic lives of their communities. Sharing perspectives on written works, with their authors, is a great way to do that.” Among the 200+ authors slated to sign and discuss their books are Rick Bragg, Joshua Cohen, Diane Kruger, Andrew Young, Julie Otsuka and Tayari Jones. Grammy-nominated country music artist Margo Price will perform onstage and discuss her literary debut, “Maybe We’ll Make It: A Memoir.” Guests wishing to dine with Pulitzer-winning and Oprah-selected authors are invited to attend the Authors in the Round dinner at the War Memorial Auditorium on October 14. The dinner raises funds to support the festival and Humanities Tennessee. Tickets are available at HumanitiesTennessee.org/air2022. As people learn new ideas and come to understand our differences, they take those thoughts back to their homes and share what they’ve learned. If you have been diagnosed and are being treated for Obstructive Sleep Apnea, a condition affecting close to 30 million people in the United States today, you know that treatment options can be invasive, uncomfortable and cumbersome. Obstructive Sleep Apnea, OSA, is frequently caused by the airway collapsing, creating a restricted passage and even stopping breathing completely. The causes of these blockages typically are the tongue and soft tissues falling into the throat or excess weight around the neck diminishing the airway. The condition is characterized by gasping and choking during sleep and, most commonly, loud chronic snoring. Long-term, untreated sufferers are susceptible to co-morbidities like hypertension, heart disease and impotence from the oxygen deprivation and vascular damage associated with the condition. The “gold standard” for treatment is Continuous Positive Airway Pressure, CPAP. CPAP is a machine that blows air into the throat, increasing the pressure internally so that the airway cannot become blocked. A CPAP user wears a respiration mask similar to an oxygen mask used in a hospital, which is attached to the machine with a hose. The prescribing physician sets the air pressure level based on the person’s OSA severity. The increased pressure prevents the soft issues from falling into the airway, allowing the OSA sufferer to breathe normally without cessation throughout the night. Patients who go on CPAP therapy for their OSA typically report increased energy during the day, better concentration and decreases in many other health conditions that are associated with OSA. While CPAP therapy is the best means of treatment, especially for people diagnosed with severe OSA, many patients have difficulty using the machine. In those sever cases, the pressure setting can be extraordinarily high, blasting cold air into the person’s throat, making treatment difficult to tolerate. Compliance with CPAP therapy is around sixty percent. The most popular complaints about CPAP are mask discomfort, claustrophobia and throat irritation from the air pressure. Many patients stop using CPAP therapy all together despite knowing how dangerous untreated OSA is. There are alternative treatments available for those who fail CPAP! The two most talked about options are surgery and Oral Appliances. Surgery can be painful, invasive and ineffective. These procedures are very painful, recovery takes a long time and rarely does it completely solve the issue. Oral Appliances, or Mandibular Advancement Splints, for the treatment of OSA, while having been around for the past 30 plus years, are an increasingly popular treatment option for those who have stopping using CPAP or as a first line of defense for mild or moderate OSA. Oral Appliances work by gently holding the mandible, or lower jaw, forward, pulling the tissues that block the airway away from the throat and tightening the muscles in the neck, further preventing collapse. These appliances look like orthodontic retainers or athletic mouth guards, fit easily into the mouth. They are custom fabricated for each patient based on OSA severity and individual patient needs. Oral Appliances are fast and easy to fit, just a few digital scans, and are FDA approved, covered by PPO insurance and Medicare and are very comfortable to wear when made and fitted by a dentist who has been educated in the field of Dental Sleep Medicine. As the owner of United Country Real Estate Leiper's Fork, she’s uniquely qualified to understand the bucolic lifestyle that makes the area so desirable, and why it has remained insulated from the explosive growth that similar communities in Middle Tennessee have experienced. But the long commute to Brentwood grew tiresome. “After a year-and-a-half I started thinking, ‘I can’t take this drive anymore. I have to throw away these high heels and dresses and start selling out here in the country and make it work.’” That led to her purchasing a United Country franchise and opening an office in a beautiful old home at 4151 Old Hillsboro Road where it’s been a fixture in the heart of what passes for the Leiper's Fork commercial district. The house was remodeled exclusively for the real estate office. “2021 was our best year ever,” says Garvey. Her agency was the top-rated office in the United Country system last year, a distinction that came with a six-day trip to Friday Harbour Resort in Ontario. In Leiper’s Fork, the only bright lights are the sun, moon and stars. People come to this corner of Williamson County not just for what it is, but for what it is not. She and her husband, Eddie Wilson, are perfect examples. Their home is situated on 21 acres of blueberry heaven, about 11 miles from the village center. Beulah Land Blueberry Farm is a place where people can escape for a pleasant afternoon, to have a picnic on the lawn, go wading in a creek or feed and pet the three miniature donkeys that live there. For a nominal fee, visitors can pick blueberries when they’re at their peak in July and August. In addition to raising blueberries, Eddie Wilson also works with Born Again Barnwood. “He can build anything you can imagine, or he can just

source the wood of your choice for you to use on your own project,” says Garvey. Today, real estate in Leiper's Fork can be pricey. A recent visit to the United Country website featured 21 listings with an average asking price of just over $1.5 million. Yes, there are multi-million-dollar estates and massive expanses of pasture and farmland. But a deeper dive revealed single-family homes in desirable neighborhoods for less than $600,000 and vacant lots starting at $260,000. “My first listing was for 30 acres on Sweeney Hollow Road,” says Garvey. “There was an old, dilapidated trailer on the property and it sold for $3,000 per acre. A few years later it sold for $400,000. With the same old trailer!” “I have other realtors call me because they don’t know about land,” says Garvey. “You must have good soil for septic. You need to have access to some source of water, and you have to have electric on the property or an easement to get to it. There’s more to it than just selling a house.” Regardless of budget or accommodations, those who reside in Leiper's Fork are there for essentially the same reason: to live on an expanse of unspoiled land that is likely to remain that way for decades to come. After a wildly successful 2021-22 "Mostly Hits And The Mrs. Tour," Clint Black and his family are getting back on the tour bus for round two of "Mostly Hits And The Mrs." The first tour, loaded with audience adoration, resulted in a widely-watched PBS special that offered snippets of life on the road and performances with his family. Obviously, the success of that tour launched version two, set to begin in Burnesville, Minnesota on November 17 and end in Pensacola, Florida on February 5, 2023. What's life like on the road for the Black family? Clint says, "I’d keep busy by getting ready for the show, warming up the vocal cords. But on the days off when I was stuck out on the road, that’s when I'd have time to get homesick. But with them out there on the road with me, I never get homesick." He jokingly adds, "The downside was I had to go to Target practically everyday for something we always needed." The "them" Clint refers to are his wife and actress Lisa Hartman Black and 21-year-old daughter Lily Pearl. Lisa tells Franklin Lifestyle, "There are so many moments - where I’m sitting with my husband and my daughter and we’re comparing stories - like maybe a mic went out or somebody in the audience did something funny - there’s always so much to talk about and the fact that the three of us are talking about these things and touring together, it’s just wonderful. We’re making so many memories and Lily and I both get a little giddy." Clint continues, "On show days, we’re in a pretty tight routine. But we love being with each other. We laugh at ourselves. And we’re so lucky Lily wants to be a part of this and wants to be around us." Both Clint and Lisa have had wonderfully long and storied careers. Clint's been putting out music since 1989 (think his triple platinum debut album, "Killin' Time") and Lisa began acting (and even singing) in the early 80s (think iconic TV show "Knots Landing"). They both look back fondly. Clint reveals, "I remember Lionel Richie telling me once how quickly you move through those moments and there’s barely time to enjoy them. He said ‘don’t waste your great moments and move through them

more slowly.’” Lisa adds, "I think back on the people we were lucky enough to work with. I remember meeting Tony Orlando. Those are moments you could never plan or never see coming." And while the Black family continues to have more special moments out on tour, Clint has taken on other projects that were born during the downtime of the pandemic. Clint hosts and co-produces a TV show, "Talking in Circles with Clint Black," a behind-the-scenes conversation with two entertainers talking 'shop.' The series just completed a successful second season on Circle TV. Clint says, "I like to make people laugh and the network encourages me to go out into the weeds. The idea is that people would like to hear what industry people talk about. It’s a backstage conversation. I say to people who come on, 'I’m

gonna say stupid things, so get ready.' And we have fun with the audience there too." Former guests include Tim McGraw, Brad Paisley, Dennis Quaid, Luke Combs, and even his own wife, Lisa Hartman Black. Clint adds, "There are so many people we want to have on the show." "Talking Circles" began its third season last month and airs Saturday nights at 10:00 pm ET after Opry Live. The other project born from the lockdown was coffee. How does a country music superstar get into coffee? Clint responds, "How did coffee get into me?" He continues, "I’ve always been a coffee lover. Everyone has a different way they like their coffee. I like a strong coffee but I don’t like a bitter coffee. A friend of mine likes the strongest, most bitter coffee you can find. We found a roaster down in

Texas - a small mom and pop shop - who would roast it for me the same way every time. I went through a bunch of coffees with them. I love sharing that coffee with people. I always have. It’s fresh - doesn’t sit around. We roast it as we go." A TV show, a coffee line, a new album (his 12th studio album, Out of Sane) all born from the lockdown, and now a new tour. Clint says, "I need to be busy and productive and doing something." Lisa adds, "He has such a gift. He's curious about everything. And he just does it. Q: Tell me why you decided to dive into the wine business. A: It was something that just organically happened. It was something Chuck and I wanted to do together and we wanted it to mean something. That's where we landed with Melorosa. Melo is my mom's maiden name and Rosa was my grandmother's name who I'm named after. My mom's Cuban, she grew up in Cuba and defected from there in the 60s to pursue the American dream. We talked through what that means to us. We're such a big family unit and my heritage is so important to me. Something Chuck and I always say is 'We only have one ask when drinking a bottle of Melorosa, and that’s to make a toast to freedom.' We love working together so this was a fun project for us that we got excited about. Q: You're really honoring your legacy. Was your family just thrilled? A: My family is my biggest cheerleader. They're all so supportive. We went down to Miami and filmed a documentary series with all of my aunts and uncles. It's coming soon. Each one of my aunts is so special and has such a big personality. It's fun to see that come to life and tell the story.

Q: How did you choose the wines? A: We went out to Napa and did lots of tastings and really figured out what we wanted it to be and how we wanted it to taste. We knew we wanted a cabernet and had lots of options for that. We also knew we wanted a white but weren't sure which direction we wanted to go with it. When we tasted the sauvignon blanc, it was just so refreshing. So we knew that was the one. I've always been more of a red drinker, but with our sauvignon blanc, I drink a lot more of that now. It's just a nice, refreshing flavor. Q: Do you have plans to release more wines? A: We want to get distribution into restaurants and stores in the Nashville area - that's our first focus - and then expanding from there. We've already thought in the future that we'd love to release a rosé. We'll slowly expand and hope to do more in the future. Chuck opened his new theater in Nashville so that will probably be one of the first places that will carry it. And Church and Union in Nashville. People can definitely order the wines on our website. SapphireSuite As many companies are forgoing office space for remote work, coffee shops and cafes have transformed into workspaces and conference rooms. For Tammie Osborne, the shift to remote work sparked an idea that would soon benefit women in business throughout Franklin. “As a healthcare IT executive, I was used to traveling all over the country,” says Tammie. “When Covid hit, I came off the road, and was soon working at home with my husband and kids all on Zoom calls. The walls were getting smaller and smaller, and I needed a place to get out and do work.” Tammie started researching co-working spaces, coming across a female-only concept in Buckhead, Georgia. After spending a day with their team, the dream of opening a similar concept in Franklin took shape.

“The design drew me to the space immediately,” Tammie shares. “It had a beautiful, well-stocked kitchen, comfortable seating and everything needed to make life and work easy, comfortable and efficient.” These inspirations are weaved into the foundation of The Sapphire Suite, a women-only co-working space now open near the intersection of Liberty Pike and Carothers. While the beautifully-appointed space welcomes women of all backgrounds to plug in, its mission goes beyond business, cultivating a true sense of community among members. “Part of our philosophy is rooted in community. We have resources all around us with different women around the table, and we help manage relationships to amplify our sense of connectivity,” says Tammie. “If I can help someone network by making an introduction, that’s what I want to do.” The amenities are plenty within The Sapphire Suite, extending beyond a stocked pantry and fridge to include printing and mailing supplies, dry cleaning and even a gas fill-up service. The goal, Tammie shares, is to offer anything that reduces the errands members need to run on their way home. With couches, chairs and dining tables outfitting the interior, the space lends itself to both collaborative and individual work. In addition, The Sapphire Suite serves as a sophisticated venue rental and event space for professional gatherings, bridal and baby showers, dinner parties and more. “Because we have such a beautiful aesthetic, we’re proud to also offer hosted events,” says Tammie. “From dinner parties with a private chef and sommelier to bridal showers, tea parties or receptions, we are happy to work with individuals or companies to create a great event.” Events are bookable without a membership, which is available for women on an annual, monthly or daily basis. Companies are also welcome to book meeting rooms for a half or full day, creating an option for fully-remote companies to connect in a professional, luxe setting. “What inspired me to open The Sapphire Suite was the spirit behind it,” Tammie reflects. “We’re a space to collaborate, to seek business advice from other women, or even just to come and sit and exhale. Inside The Heritage Ball: A Q&A WITH THE EVENT’S UNOFFICIAL CEO The Heritage Ball is Williamson County’s longest-running black-tie affair, raising funds for and celebrating the preservation work of the Heritage Foundation of Williamson County. Chaired by Cordia and Tom Harrington, this year’s event – its 49th iteration – took guests on a celestial journey during the star-studded evening. The event took place at the Eastern Flank Battlefield Park in Franklin on October 1, welcoming approximately 800 guests to support history and preservation throughout the county. With ethereal surprises waiting around – and above – every inch of the venue, we caught up with the ball’s unofficial CEO: expert event designer Amos Gott of Amos Events. Regarded as one of the South’s most respected tastemakers, Gott shared all the details that went into planning and executing this year’s starry soiree.

With the Heritage Ball, I am in the planning and design phase, overseeing everything from the invitations to stage production. I’m in charge of the entire guest experience – sometimes called the CEO of the ball. I laugh at that, but it helps me define my role to people. The chairs of each ball lead the pack with me by their side to ensure their vision is carried out. I bring history to the table having worked

We work to create an entire experience. The experience begins when receiving the invitation. The minute guests get out of their car, the evening begins – we ask, “What does the guest see? What do they feel? Do they know where to go? Can they see the bar? What are the flavors of the meal – should it be on theme?" All of these elements combined create the experience.

WHAT WAS THE INSPIRATION BEHIND THIS YEAR’S EVENT? This year, Cordia and Tom had a concrete theme idea: an evening with the stars. From there, we translated the theme into the decor. The idea was that everything would be about stars – guests would be under the stars, they would feel like stars, there would be celebrity guests. With that, I built a navy and gold color scheme to reflect night. When thinking about guests feeling like they’re under the stars, we knew that could be achieved in a lot of different ways – like through technology that hasn’t been seen before.

Mixing one part ingenuity, and two parts creativity, chef David Leathers has found a "recipe" for a fantastic dining experience. Dining in a restaurant is great, but what if you could have the restaurant come to you? Since 2020, culinary school-trained chef, David Leathers, has made this possible. Foodsmith is a mobile “Chef Trailer,” he explains, with the kitchen working exclusively for one table. So bring a bottle or two of your favorite alcoholic beverage and get ready for a unique experience with delicious food in a fun atmosphere!

TELL US ABOUT THE QUALITY OF THE FOOD USED IN EVERY DISH. A high percentage of my menu is sourced from local farms in Middle Tennessee. I allow the farmfresh ingredients to inspire my menu and my heritage shows through by taking what I love about Southern cooking and creating a modern twist to it. Foodsmith’s evolving menu allows me the freedom to create while staying true to a simplistic approach to food. Why complicate food? Food has a story to tell. It’s all about the experience and connecting people and food together. CAN FOODSMITH CATER TO ALL TASTES AND DIETARY PREFERENCES? Yes. I am able to meet dietary and allergy restrictions. After discussing the restrictions in the initial consultation, my guests allow me creative freedom to design around what I can source locally that week. What seems to be a guest favorite at the moment is the braised pork tamale wrapped in a pickled collard green with a smoky broth. I wanted to pay homage to the tamale but with a creative twist while using locally-sourced ingredients. What makes it different is because the collard is edible, so the whole tamale can be eaten unlike the traditional version wrapped in a corn husk.

WHAT IS THE MINIMUM AND MAXIMUM NUMBER OF GUESTS? There is no minimum number of guests, but I require a certain fee to book an evening. The maximum number of guests in the trailer is 13. HOW LONG DO DINNERS USUALLY LAST, OR DOES IT VARY GREATLY DEPENDING ON THE EVENT? Full dinner service from start to finish takes about two to three hours, but it totally depends on the guests and event. WHAT EVENTS HAVE YOU HOSTED IN THE TRAILER? The majority of the dinners are hosted at a residence, right in their driveway, but I have also hosted farm-to-table dinners, bourbon tastings, birthdays, bachelorette parties, rehearsal dinners, album release parties and meals on tours and sets. Now I Have Done It All From Rocker to Builder Written by: Karen Creason Former touring musician Brandon Mitchell thought he had seen and done everything. That is, until his company, Mitchell Builders Group, was selected to build The HGTV Urban Oasis® Giveaway 2022 home. Standing over a 19th-century millstone and in the shadows of a 21st-century hydroponic greenhouse, Chef Tyler Brown can’t believe the moment is this close. Seven years ago, Brown stepped away from the helm of one of Nashville’s premier kitchens. As executive chef at the Hermitage Hotel’s Capitol Grille for nearly a decade, he’d been a leader in developing the city as a culinary destination with seed-to-plate menus driven by his own heirloom garden at historic Glen Leven and a heritage cattle operation of 150 head of Red Polls at Double H Farms, the largest herd of the dual-purpose Scottish breed found anywhere in the South. Still, he wanted to dive deeper. After achieving four-star, four-diamond status for the restaurant and earning several James Beard nominations, Chef Brown made the decision to invest years into creating Southall Farm & Inn, a 325-acre luxury resort and spa centered on the circle of life – landscape-scale, symbiotic food cultivation, and immersive epicurean experiences. The son of a talented home chef, Brown understood early on how food and community intertwine. It was at the dinner table, he discovered, where meaningful personal exchange happened. After culinary school at Johnson & Wales in his native Charleston, South Carolina, and a fellowship at the Keystone Resort in Colorado, Brown returned home to become sous chef at Peninsula Grill, running aspects such as butchery and fermentation and expediting the line during service. That was where he first felt the power of the French brigade order, the line of command designed to yield precision and productivity in a high-volume kitchen.

An opportunity for his wife, Ashley, at Vanderbilt University brought the Browns to Nashville. He reconnected with Chef Sean Brock and became his chef de cuisine; in 2006, he was named executive chef, with a full platform to celebrate fresh, locally produced ingredients. “In my journey as a chef, the brigade training and classic preparations and techniques eventually led me to push the envelope,” he says. “As I developed relationships with local farmers and markets, I was enamored with the seasonal aspects of what was unique to this area, what was fresh and abundant at different times of the year. The natural progression for me was to start a garden, leading me to explore the challenges and rewards of agriculture and what we can add to it.” In 2015, he joined the team at Southall as senior vice president of culinary and agriculture, where he could continue to grow while creating a sustainable farm to feed the kitchen. When Southall officially opens, it will feature not only the 62-room inn, 16 treetop cottages, an innovative spa, and a signature restaurant but a canvas that spans the entire property. Guests will discover a mature working farm; beyond the production fields, Southall features 1,400 heirloom apple trees on a terraced hillside, advanced greenhouse hydroponics, a property-wide pollination program that includes millions of honeybees and native bees propagated to increase crop yields, an orangerie full of rare citrus, and an abundant edible landscape – all of which can be explored through inviting and well-conceived experiential programming.

“What it affords us is the opportunity to observe the whole process. As a plant begins to grow, a zephyr squash, for instance, we’re seeing we have a very small squash with a blossom on it, and we have the luxury of harvesting it at that time,” Brown explains. “Those are the kinds of things that farmers traditionally can’t prioritize, but we have a chance to celebrate those various stages of growth, from a flavor and texture standpoint, to experiment with raw and cooked preparations.” The entire farm is a living laboratory. The cultivation team at Southall has been experimenting for years, not only growing and taste-testing rare heirloom varieties, but pushing the margins on what is possible in Middle Tennessee: the once-extinct Carolina Gold rice, for example, or the bambara groundnut, native to West Africa but rarely grown in America. For Brown, it’s about marrying the principles of biodynamics and old ways with modern techniques to track data that informs a diverse crop plan. “We’ve been able to taste test so many things and refine our plans as a result, both with the tools and in selecting certain varieties for size, flavor, season of harvest, thinking through the applications we’re looking for in terms of fresh, preserved and frozen,” Brown says. “We won’t always have a set menu, which gives us a lot of flexibility day to day. We can grow a crop just for blossoms or loofahs for the spa because our priorities are different.” After seven years of planning, building, testing, and refining, Brown is looking forward to serving people again – an invigorating exchange of energy that he says is like seeing an old friend. “What we hope you will see is a menu representative of a very seasonal Middle Tennessee offering that comprises our community – it’s a depiction of not only my objectives, but a number of people’s dreams and pursuits, presented on a plate that is very specifically conceptualized,” he says. “It’s been a mindful process, which is such a gift, but nothing excites me more than sharing it with others.”

Kate Davis, a New York native, first visited Nashville in 2008 and felt drawn to move to Music City. After making the move to Nashville, she discovered that her great grandmother, whom she was named after, was originally from Nashville. Kate felt validated in her decision to call Nashville home. Kate was enjoying exploring the city and all the culinary opportunities when she decided to dedicate an Instagram page as her own personal photo diary. Now with over 94,000 followers, Davis has become a go-to resource for knowing the best restaurants in Nashville. While Kate has always had an interest in food and dining, she borrows Reba McEntire’s (who did an Instagram takeover of @nashvillefoodfan) motto when it comes to cooking, “The best thing I make is a reservation!” Kate often supports local servers and restaurants by raising money for tips and sharing their stories on her Instagram page. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
