I hope this letter finds you laying by the pool or lake and soaking in some much-needed Vitamin D. As the days grow longer and the weather gets warmer, I find myself eagerly anticipating the arrival of summer. There's just something about this season that brings about a sense of excitement and adventure.
Sure, fall has my favorite flavors and scents, winter has its cozy charms, and I can't deny the beauty of spring; but when the summer solstice rolls around, I’m more than ready for the long, languid days sitting by the pool or floating in a boat on Folsom Lake.
The pages in our Summer Fun issue will help you make the most of this season in Folsom. Even if summer doesn't mean three months of summer vacation anymore (because, you know, we're adults now), we can still look forward to adventure by crossing things off our ultimate summer bucket list, exploring our city by searching for the Heartbeat of Folsom installations, and curling up with a new favorite beach read. Special shout-out to all the teachers who need, and deserve, a summer break!
Speaking of The Heartbeat of Folsom, this is a project near and dear to my heart. As part of the 2022-2023 Leadership Folsom class that is put on annually by Choose Folsom, I was honored to be a part of this wonderful effort. The numerous people contributing their unique talents to this Community Art Exhibit around Folsom have created the ultimate summer experience for residents and tourists alike. It brings me pure joy to look at each heart and see a different version of our wonderful city. Make sure you get out and see them all. I hope they bring you some extra joy this summer.
Just like this season has a way of bringing people together, we hope the pages inside this month’s issue will enrich and enliven your experience in Folsom this summer.

This summer, the Heartbeat of Folsom comes to life in a city-wide Community Art Exhibit, thanks to the work of Leadership Folsom (a program of the Folsom Chamber of Commerce / Choose Folsom), along with 20 local businesses that have sponsored a heart sculpture, and a team of local artists. Residents and visitors can enjoy 21 handpainted and decorated heart sculptures, each an original work of art. They celebrate themes on what makes Folsom special, from its unique history to its Distinctive by Nature beauty. Each heart has been designed and painted by a local artist with their own vision. Here, in their own words, are the stories from three of them.
“Life in Folsom”
I create original colorful abstracts, beautiful landscapes and figurative/narrative paintings. I love simple moments and am inspired by life, color, light, texture, and movement. I like to say that choosing a piece of art is like falling in love – when it’s right, you just know it.
My inspiration for Heartbeat of Folsom was the phrase, ‘adding life to your years.’ It was a suggestion from the heart’s sponsor, AKT. As soon as I heard it, the creative process started and I was off and running. There is so much to love about our city and living in Folsom. We have beautiful Folsom Lake, the surrounding hills with houses tucked into them, and of course, my absolute favorite part of living in Folsom, is the clouds. Being so close to the foothills and the Sierras, we see tall storm clouds, big fluffy white cumulus clouds, and so many amazing colors in our clouds and sky as the sun rises and sets.

WHAT IS YOUR APPROACH TO YOUR ART?
Painting is an outburst of my emotions. For me, it’s the most comforting and therapeutic activity as is spending time focused on the subject I paint.
WHAT WAS YOUR INSPIRATION FOR HEARTBEAT OF FOLSOM?
‘Blossom Bliss’ is inspired by the delicate beauty of the wildflowers and the graceful fluttering of the butterflies among them. The vibrant colors and intricate details capture the essence and glory of nature. The butterfly in this sculpture symbolizes the beauty and power of transformation. Like a caterpillar transforming into a butterfly, we too can transform and grow in our own lives. The wildflowers and butterflies remind us that change is natural and necessary, and that transformation can lead to new opportunities and growth.
I focus on movement, color, and intuitive flow. I tend to gravitate to the more abstract, to challenge the viewer to discover the feeling brought on from observing the art. With this project, I wanted to step out of my comfort zone to make something more playful and realistic.
I was inspired by our CEO at BRMS who shared his passion for the weekly adventure to the Farmer’s Market. I wanted to honor the farmers, families, patrons, and vendors that spend their lives enjoying their crafts, laughs, and the ever-present history that makes Folsom so appealing. Upon completion, my sculpture will act as an eye-spy game that highlights icons representing the unique experiences offered inside our historic and beautiful city.

Summers in Folsom can be HOT, but, hot summer days make way for warm summer nights. Those can be magical in Folsom. As temperatures drop slightly in the evening, it’s time to go outside and enjoy dining al fresco style. A post-Covid silver lining is that there are now many more options to choose from.
Al fresco is an Italian saying meaning, “in the fresh air”, or, a more literal translation, “in the cool/fresh”. Al fresco is more commonly known to us as eating outside. It’s usually casual and often comes with a party-like atmosphere. If you’re heading to Italy, be warned that they don’t use the term al fresco the same way we do. If
you say, "I’d love to eat al fresco", the waiter may think you are asking to eat in the cold or in prison. Next time you go to Italy, try saying this instead: “Vorrei mangiare fuori" ,or "I’d like to eat outside."
Folsom offers amazing options for outdoor dining. Sutter Street in the Historic District has more outdoor dining options than ever before with dining parklets lining the streets. Plank Craft Kitchen and Bar (608 Sutter Street) has a classy and quaint patio with umbrellas and a large fire pit. Their Bits and Bites menu is addicting and their craft beverages and cocktails are creative and delicious.
Sutter Street Parklet
Hacienda Real (702 Sutter Street) is a great place for outdoor dining, a fiesta with family, or a pitcher of margaritas with friends. Michael Sanson, the owner of both Plank and Hacienda Real, has worked with other recognizable brands such as Buca-di-Beppo and Bobby McGee’s. He has also worked with Celebrity Chef, Guy Fieri. On the next block, overlooking Sutter Street and the crowds below, Q’Bole! and Gaslight Company (718 Sutter Street) are excellent options for outdoor seating and people watching. For special occasions, Scotts Seafood Roundhouse (824 Sutter Street) and Sutter Street Grill (604 Sutter Street) have amazing views from their patios and are great places for enjoying steak and seafood with a glass of wine while watching the sunset on a warm summer night.
Palladio has great al fresco options too. With an upbeat atmosphere, Back Bistro and Buckhorn Grill (Palladio Parkway) flank the busy theater in the center of the outdoor mall. They have ample seating and varied choices for a good meal taken on the patio. From small plates to a full-service menu, Back Bistro is an elegant restaurant and bar with a large wine collection and signature cocktails. Their outdoor patio has tables, booths, and fire pits, making it a quaint oasis in a lively area. If you’re craving some good BBQ, head across the
walkway to Buckhorn BBQ and Grill. There you will find a large, welcoming patio with outdoor music. Buckhorn boasts a wide variety of barbeque meats, burgers, salads and sandwiches.
There are numerous outdoor lunch and dinner options at Palladio. If you’re not quite ready for a full meal but are looking for a treat or experience to do with someone special, pull up a chair outside The Chocolate Architect (250 Palladio Parkway) and enjoy a wine and chocolate pairing. Their silky-smooth chocolates in a variety of tantalizing flavors are accentuated with a lovely glass of wine.
For fun with friends or an outdoor party for a group, try Out of Bounds Craft Kitchen and Biergarten (13407 Folsom Blvd). Known for their Northern California award winning handcrafted beers, the drinks and food combined with the party-like biergarten, games and live music, make this Folsom’s place to go for a good meal and a good time. A must try is the Pretzilla, with cheddar, beer, and bacon Jalapeño dips.
Hot summers in Folsom are best spent getting things done early in the morning, saving your energy in the blistering afternoons, and coming out again at dusk to enjoy the gorgeous sunsets and amazing warm nights while dining al fresco at one of Folsom’s many delicious eateries.

Whether you know him from the Netflix hit Restaurants on the Edge or from his absolutely mouth-watering food photos as @dennistheprescott on the ‘gram, this former-musician turned internationally-renowned Chef is an amazingly talented, thoughtful, and globe-trotting force to be reckoned with. When it comes to inspiration for creating experiences around food and your community, as well as creating travel bucket lists to some of the world’s
most unique and delicious destinations off the beaten path, Chef ‘Dennis The Prescott’ is a culinary change maker whose feed you’ll want to feast on.
Originally an aspiring musician, Canadian-born Dennis Prescott’s journey began while in university with a single invitation from another solo musician who asked him to tour with him around the US. This eventually took him to Nashville where they began making records and pursuing their musical dreams.
In the midst of all of this eating take out, dollar menus, etc, had become a way of life for Dennis. A friend stressed that he needed to start taking care of himself, and the advice was simple: “You need to start eating better.” He knew his bad eating habits weren’t good for mind, body or spirit, but he didn’t know where to begin to make changes. However, Prescott thought to himself, “I KNOW good food because I have literally traveled all over America, all over Canada, and into Europe with my music, eating great food and learning what I like.”
“Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you.
Dennis went to a nearby library and borrowed three books only to have his friend ask why he chose those in particular. Dennis remembers saying verbatim, “I don’t know? The guy on the cover looks kinda good looking, and I feel like I could probably pull these recipes off, and he seems really happy too!” As it turned out they were three books by Jamie Oliver; it’s just that he had no idea who Jamie Oliver was at the time.
Flash forward and Dennis’ first dinner-hosting experiment was made up of twenty people from the music studio, all sitting in camping chairs with beer koozies and makeshift tables in his apartment.
“I remember at the time this moment of, okay, the food is on the table, it’s a stressful thing, and then everybody tucks in and they take their first bite, and there’s a moment of hush that kind of came over everyone; it got really quiet just for a second, and then everyone started talking and getting into it and I fell in love with food right there at that moment. I didn’t realize that you can create these beautiful experiential moments at the table in the same way that I did playing someone’s favorite love song. Knowing that that was a thing to me was the most fascinating thing in the world.”
Dennis even got to the point where he was cooking so much that he started to forget what recipes he had successfully made, so he began a photo journal and started taking photos of all his completed dishes. And so it began like it does for most; Dennis began posting food photos to Instagram for the next few years.
“All of that was initially with no agenda, no intentionality; I just loved it and I wanted to share. I fell in love with feeding people.”
Regarding social media, Dennis’s professional advice is to check your DMs. A person who worked at Food & Wine Magazine at the time sent him a DM, asking if he would do recipes for the magazine, which turned into writing a monthly column. That experience helped him land a cookbook deal, which led to a wealth of TV and media publicity and Dennis feels he owes a lot of his success to that first opportunity with Food & Wine Magazine. Oh, and did we mention he is a self-taught photographer who now does all of his own food shots? This guy has drive.
His drive and innate talents ultimately led him to the opportunity of a lifetime via another DM. This time, it was a Netflix executive producer who offered him the chance to work for two seasons on Restaurants on the Edge, a show where “three food and design experts travel the world to revive failing restaurants by connecting them to the local culture beyond their gorgeous views.“
What followed were 13 episodes over nine months where they traveled to and filmed restaurant revivals that included three in Canada, one in the continental US, one in Hawaii, and others outside of North America, including Hong Kong, Slovenia, Austria, Malta, St. Lucia and Finland.
If I can inspire more time as a community at the table, then that’s a win.”
“Slovenia borders Italy and Croatia, which is to say there are a lot of shared values in and around food; they have really great cheese, dairy, beef, pasta, but very few tourists, hardly any. So if you love Italy, that kind of specific travel and food experience, particularly Northern Italy, because you can see the Alps from where they are. It’s picture perfect, a beautiful place, and also where orange wine is from.”
Dennis also highly recommends Costa Rica, Hawaii and Finland.
“Most people love the idea of travel, but we tend to pick the same places when we travel, and there is nothing wrong with that, they are amazing for a reason, but when you get off the beaten path a little bit, you learn the difference between vacation and travel.”
One of the most common fears Dennis hears from people cooking and/or grilling at home is, ‘where do I start? I don’t know how to get going, so I just don’t.’
Rather than overcomplicating it, Dennis recommends cooking the things that bring you joy — things that are on a restaurant menu you can’t NOT order because you’re so pumped that those dishes are on there.
“Find the things that you love. Take the stress out of food. Feed people because all they really care about is spending time with you. Bring joy back into the kitchen.”

Whether you’re hosting a pool party or simply enjoy sipping the sweet and tartness of an amazing Margarita, this healthier version with these natural ingredients is sure to make your palate happy. This is all fresh ingredients, no mixers. It’s just as easy, much cleaner and better for you!
• 2 oz. Casamigos Reposado or Blanco Tequila
• 1 oz. Fresh Lime Juice
• .25 oz. Fresh Orange Juice
• .5 oz. Agave Nectar
• .5 oz. Orange Liqueur
• Garnish with a lime wheel through a skewer
• Combine all ingredients into a tin shaker.
• Add ice, shake vigorously and strain into rocks glass.
• Add fresh ice and garnish.
