My mother was one of the wisest women I’ve ever known. She would tell me things like, “Always tip good waiters big, they work hard.” “Buy the best you can possibly afford because it will last.” And my favorite, “Only use real butter.” I learned how to bake at a very young age and it was my mother who gave me directions for every cake, cookie, sweet roll, and pie. We lived in a modest home with a very dated kitchen, but when you’re a young kid, you don’t think about whether or not you have the latest and greatest kitchen appliance. All you think about is what is this next batch of cookies going to taste like with a tall glass of ice-cold milk! We didn’t have a stand mixer, only a handheld, and very strong arms for mixing. But I can remember my mother telling me, “someday, we will have a KitchenAid.” I didn’t know what that was back then, but I sure do now. In 1994, my mother bought herself her first KitchenAid stand mixer. It had all of the bells and whistles any home-baker could want and I recall going over to her house to help her make her amazing Strawberry Frosty Squares in this new marvel. It was magnificent! That powerhouse of a machine made light work of the 10 minutes of whipping that needed to happen for that recipe. We just stood there and watched it spin and spin, transforming strawberries and heavy cream into a fluffy, soon-to-be-frozen delight! Later that year, my ridiculously generous mother bought her two daughters and one daughter-in-law their very own KitchenAid mixers. For almost 30 years that mixer has been mixing up cookies and cakes and pies in my home and it is still going strong. I used it to make 20 cheesecakes a day out of my kitchen when I had my cheesecake business in Chicago and I just used it the other day to make cookies with my daughter Abby. I am grateful that my mom instilled the joy of baking in me and, even though Abby is nonverbal, I know she enjoys eating what we create. I hope you and the ladies in your life enjoy doing fun things together too. And, if it’s baking, please take my mom’s advice and only use real butter. Blessings,

Let her kick up her feet, enjoy some good food - and perhaps a mimosa or two - and some laughs with her loved ones. SPRING SALAD WITH STRAWBERRY VINAIGRETTE ingredients:

• 2 tablespoons red wine vinegar • 1 tablespoon shallot, finely chopped • 1 1/2 teaspoons honey • 1/2 teaspoon Dijon mustard • 3 cups strawberries, sliced, divided use • 3/4 teaspoon kosher salt, divided • 1/4 cup extra-virgin olive oil • 5 cups baby spring mix (from 2 [5-oz] pkg) • 4 oz feta cheese, crumbled • 1 medium shallot, thinly sliced lengthwise • 1 cup yellow cherry tomatoes, halved • 8 bacon slices, cooked and coarsely chopped • 1/4 cup toasted pecan halves

Place red wine vinegar, finely chopped shallot, honey, Dijon mustard, 1 cup of the strawberries, and 1/4 teaspoon of the kosher salt in the blender. Process until smooth, about 30 seconds. With blender running, gradually drizzle in oil, processing until mixture is smooth and combined, about 30 seconds. Arrange spring mix on a large platter. Top with feta, sliced shallot, tomatoes, bacon, and remaining 2 cups strawberries, toasted pecans, and 1/2 teaspoon salt. Drizzle vinaigrette over salad and serve immediately.

ingredients: • 1 cup butter softened • 1/2 cup whipping cream • 2 cups flour • granulated sugar • 1/2 cup butter softened • 1 1/2 cups confectioners’ sugar • 2 teaspoons vanilla

directions: Mix softened butter, cream and flour in a mixer until you have a soft dough. Wrap dough in plastic wrap and chill for a couple of hours to firm up the dough. Heat oven to 375 degrees. Roll out 1/3 of dough at a time approximately 1/8 inch thick onto a flour-covered board. Using a 1-inch round cookie cutter, cut into circles. Carefully transfer rounds to a bowl full of granulated sugar. Turn each round so that each side is coated with sugar. Place rounds on baking sheet and prick each round with a fork about 4 times for steam to release while baking. Bake for 8 or 9 minutes or just until set but not brown. Cool and put cookies together with cream filling. Cream filling: Cream 1/2 cup butter, 1 1/2 cups confectioners’ sugar, and vanilla until smooth and creamy. Tint with food color. Add a few drops of water if necessary for proper spreading. Note: This dough gets very soft quickly with too much handling. You may need to put any leftover dough in the fridge again to firm up before re-rolling.

ingredients: • Nonstick vegetable oil cooking spray • 8 large eggs • 1/2 cup milk (whole makes for a fluffier frittata) • 1/2 teaspoon freshly ground black pepper • 1/2 teaspoon salt • 1 quarter pound thinly sliced ham, chopped • 1/3 cup freshly grated Parmesan cheese • 2 tablespoons chopped fresh Italian, flat-leaf parsley leaves

directions: Heat oven to 375 degrees. Spray two mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 - 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter and serve immediately.

Two Jane Does. One eats her breakfast and leaves for work, excited about the day ahead. Another wakes up on a smelly old mattress unable to erase the previous night’s horrors. She faces the day with dread. For 21 years, Wellspring Living has worked to bridge this dichotomy between the lives of most people and the victims of sex trafficking. More than 7,000 survivors have passed through the non-profit’s programs. Leading the charge is Mary Frances Bowley, Wellspring’s founder and executive director. The Geneva, AL, native, who has lived in Fayette County for 35 years, doesn’t accept credit. “God started it and I was there,” she said. It all began after Ann Graham Lotz asked her to lead an event for women of faith, which was attended by more than 20,000. The desire for a lasting effect led to the creation of Wellspring Living—based on the woman at the well and the need for living water. Wellspring began in a rented home in Fayette County to provide a safe place for women. “The first girl who walked through our doors was a victim of sex trafficking,” Bowley said. “She’d had bad things happen to her all her life. It was hard for her to trust. She needed therapy. She didn’t know basic life skills— time management, or how to clean, cook and do laundry.” Initially capable of serving only five women at a time, Wellspring offered comprehensive care and resources needed for victims to rebuild their lives, prepare for careers, and become independent. A North Atlanta church heard of the work and helped Wellspring purchase a home that could serve 15 women. In 2007, Mayor Shirley Franklin told Bowley, “We need your help with the girls who are being bought and sold on our streets.” Bowley couldn’t believe the magnitude. “I couldn’t put my mind around the fact that this happened to children,” she said. “Humans couldn’t do this. We always want to think about this kind of stuff happening in a foreign country. We’ve

had girls from Coweta and Fayette County go through our girls’ program. It is here.” “A trafficking victim does not have one face,” Bowley said. “They are from all cultures and all socio-economic strata.” Despite popular belief, stranger abductions are not typical. The majority are teenage girls or women who’ve grown up with lots of vulnerabilities—low self-esteem and isolation. Many come out of foster care and family dysfunction, but all teenagers are vulnerable. “They make a wrong move and find themselves in the hands of a trafficker,” Bowley said. “He doesn’t see them as a person, he sees them as a product.” The trafficker ‘grooms’ victims, telling them they’re beautiful and treating them to manicures and such. “They fall for the first person who says, ‘I love you,’ and that sticks with them,” Bowley said. “It doesn’t matter that they’re abusing and exploiting them. I love you, so you need to do this so we can pay rent. They think they have a true relationship with their trafficker.” Bowley said it takes about 30 days for youth who enter Wellspring programs to realize their “boyfriend” was their exploiter. Traffickers are businessmen and women, gangs—anyone wanting to make quick money their victims never see. “When I see moms who use their children to make money to cover their bills,” she said. “That’s the one that breaks your heart the most.” Through various income streams that include sales from Wellspring Treasures Thrift Store, federal funds, grants, private donations, and annual fundraising events, Wellspring has continually expanded programs. A girls’ residential program was added in 2008 to serve victims 12 to 17. The Women’s Academy began in 2014. “We created the Women’s Academy to help them get their GED, assist them in career-building skills and then provide paid apprenticeships so they can move toward living-wage employment,” CONTINUED >

It is here.” Bowley said, adding that apprenticeships in large corporations such as Delta and UPS often lead to full employment. Since 90 percent of the women in the Women’s Academy are moms, it’s transformational for two generations. “What we are doing is not just for the mother, but also for her children.” With kids being trafficked while they’re in school, Wellspring added a Youth Academy in 2018 to help teachers identify victims and address vulnerabilities. Wellspring also provides therapy, life skills, and a food pantry for students at an Atlanta alternative school. “Many of them are the breadwinners for the family yet they’re between 14 and 20,” Bowley said. Although trafficking is still a huge problem, Bowley said awareness and care for victims have improved. “There are

more services for survivors in Georgia than in any other state,” she said, adding that it takes community and government working together. “It takes everybody putting their hand to it because it’s such a complex problem and it hits poverty, homelessness, sexual abuse, domestic violence—every malady of mankind is wrapped up in human trafficking.” How does Bowley and Wellspring staff remain positive while dealing with constant trauma? “Remember the wins,” she said. “When you believe transformation is possible, you keep going. We care for people out of the love that God has put in our hearts to treat them with dignity, to treat them as someone who has incredible value. If we can see them that way, it develops something inside of them to fight for their own freedom.”

Kim Learnard, Mayor of Peachtree City by Susan Walworth

As Peachtree City’s second female mayor, Kim Learnard defines herself as a concrete thinker. “Bring me all the information and a few options and together with my cohorts on the city council, we’ll make a decision and take it from there,” she said. Kim and her husband Rob moved to Peachtree City 22 years ago from North Metro Atlanta after she ran in the Peachtree City Classic and discovered the area’s beauty. “We wanted to be a part of the Peachtree City quality of life,” she said, adding that it was a great hometown for their three children, Katie, Jenni and Doug. With a Midwestern upbringing, Kim earned an electrical engineering degree from Marquette University in Milwaukee. As a female engineer in the ’80s, she said, “I always felt like I had to make my own way.” Her career has included installing robotics systems for General Motors, providing technical training for the Georgia Department of Economic Development, and serving as vice president of West Georgia Technical College. Before becoming mayor, Kim served two terms on the city council. She encourages input from citizens on the comprehensive plan update, which provides a road map for the city council. Important themes include the village concept, preservation of green space, transportation, and economic development. She also believes Peachtree City is well-positioned to take a leadership role in working with Fayette and Coweta counties, local municipalities, and the Georgia Department of Transportation to solve the area’s traffic problems. “I would like to leave Peachtree City as a world-class city reflected in our recreation facilities, safe paths, fierce protection of our green spaces, and a productive and positive climate in city government,” she said. “I’m thrilled to have the opportunity to do the best I can for the future of Peachtree City. To ‘give moms the gift of time,’ Caroline Kirsch launched The Peachtree City Moms, a website that connects busy moms with local businesses and resources. As part of the larger Local Mom’s Network, The Peachtree City Moms includes a calendar of local events, community resources, and guides for everything from children’s parties to local elections, deals and coupons, and even a Peachtree City Mom online shop. Caroline, the mother of Kathryn and Linden, remembers being a new mom. “It can sometimes feel like you’re in a silo,” she said. “I know how important it is for moms to have community and easy access to resources. This was a way I could play a part in helping new moms who come to the area.” A former medical sales representative, Caroline’s decision to become a stay-at-home mom was easy, but the transition was more difficult than she expected. “When you’re working, things are much more predictable. Being a mom is less predictable.” When the New Orleans native moved to Peachtree City with her husband Jeff, Kathryn was a toddler. Caroline fell in love with her new community, quickly overcoming the isolation of being in a new place with no family nearby. She even wrote a book—GoodNight Peachtree City. Caroline stresses the importance of moms taking time for themselves. Her self-care includes running, paddle boarding, and spending time with friends. “When I do things that fill my cup, I come back to my kids and my family more present, more patient, and really just a better mom.” The Peachtree City Moms has also had in-person events with more planned this year. “I love what I’m doing, and I hope to build this platform to provide more connection for moms in the area.” For more information visit www.thepeachtreecitymoms.com.

Judiffier Pearson personifies excellence in the entrepreneurial world of business. Her creative journey from southwest Atlanta to Fayette County began with her entry into the world of beauty, grooming, hospitality and wellness. Her giftedness to create in a variety of media, along with her passion to be an instrument of growth and change, is the beauty and significance she brings to her service and the lives of others. At a time when there were no business blueprints for the salon industry, Judiffier wrote and published two best-selling books to meet the need. Her reputation for excellence grew, as did her roster of celebrity artists beginning with award-winning gospel artist Tramaine Hawkins, and continued to grow with television personalities from Good Day Atlanta and Fox 5 and NBC affiliates. From Girl Scout Troop leader to Vice President of the local chapter of Jack & Jill, Judiffier used

these opportunities to build a community encompassing a deeper level of cultural and heritage experiences for her daughters, and many other young people in Fayette County. One such example was the memorable experience for local students to participate in a private discussion forum with cast members from the Marvel movie, Black Panther. Judiffier’s service includes nine years with Clayton State University as a consultant with the Small Business Development Center, and in her later years as a lecturer. Currently, Judiffier is a lecturer with Georgia State University’s Creative Media Industries Institute. “I learn as much as I teach. The careers we’re preparing students for, don’t exist. It keeps me fresh and inspired. I’m also becoming a next-generation storyteller.” That said, Judiffier has a documentary and a new book in the works.

Investing in someone else with a genuine and loving desire to see life change for them, is Lisa Mahaffey’s passion . . . that, and her love for Jesus. Widowed in her twenties, Lisa’s faith was challenged in ways she never imagined. Through it all, Lisa testifies that God walked alongside her every step of the way, and that’s exactly what she does for others. Painfully shy as a child, Lisa recalls, “If my dad had not pulled me out of my shy phase, God couldn’t use my mouth, which is exactly what He’s doing.” Lisa uses her story to encourage people through the grief of losing a loved one, the worry over a wayward child, or the healing from an accident. As Lisa learned to heal her grief, doors opened for her to have a greater impact on the lives of others. Emails with stories from people about the good that came from the hardship they endured, poured in. Lisa approached her Associate Pastor with the idea to use the stories to write a book. The collaboration resulted in Mourning Break, available on Amazon. At the start of a new year, when people consider resolutions and individual change, Lisa’s pastor shifted the focus from oneself to service to others, by asking this question: “What breaks your heart?” Lisa knew what God wanted her to do. She called the Fayette County jail to learn how she could help. Today, Lisa’s been volunteering and ministering to women in prison for six years. Lisa did not miss a beat when the pandemic restricted access to the prison. She began a Bible study for local girls who enjoy fellowship, worship and learning God’s word. Lisa is eager to get back into the jail. She believes that when the women leave prison, they will be little lights shining where it’s dark. “I plant the seeds, and God waters them.”
