We also sat down with Ingrid Prueher, new owner of Yoga For Everybody. In addition to offering traditional yoga and meditation, the studio has many new mind/body workshops to explore. When Ryan Sheppard, a CPA and Partner at the Fairfield-based Knight Rolleri Sheppard CPAS accounting firm, who has extensive experience in tax and business consulting for privately held companies, taxation for individuals, and not-for-profit organizations, discovered Operation Hope he was intrigued. Upon learning how the organization was utilizing its limited resources to have such a profound impact in the community, Sheppard was more than impressed—he knew he had to get involved. At its core, Operation Hope aims to end hunger and homelessness for Fairfield neighbors in need. “We believe that everyone deserves supportive relationships, hope for the future and a place to call home,” explains Carla Miklos, Executive Director for nearly 15 years. Miklos met Sheppard over a decade ago which prompted him to become a Board Member, and then ultimately Treasurer. Sheppard regards OH under Miklos’ leadership as “critical” to Fairfield. “My uncle was homeless for many years, which is when I realized the connection between homelessness and mental illness,” states Sheppard. “Additionally, in many cases homelessness can be caused by unexpected events which can leave mothers or fathers caring for their children who have no place to live. OH offers a hand up and a support system to aid families in need and I think that’s pretty amazing.” Operation Hope provides the opportunity to experience transformative change. Their programs and services focus on eliminating hunger and homelessness and are designed to help people solve their crises and build stability in an environment in which compassion inspires dignity and hope. Fundamental resources include a Homeless Resource Center, a Community Kitchen, a Food Pantry, an Affordable Housing Program, a Clinical Support Team, and many Community Collaborations. Uniquely born out of a compassionate community who rallied around the idea that we can take care of our own, 35 years later OH not only provides service for struggling neighbors, but also provides the community a vehicle for providing service to others. So how can you get involved?
Due to Covid, OH has temporarily limited many of their traditional volunteering opportunities. However, we’ve compiled some safe volunteer opportunities for the whole family:
FOR ADULTS (AND FAMILIES) Get Cooking: Whether it’s a solo endeavor, a family affair, or a cooking party with friends, cook up meals for a family of four in aluminum foil containers with the flat covers to distribute at the Food Pantry. No Hostess Gift Needed: When you host your next gathering, ask guests to forgo the traditional hostess gift and instead bring a cleaning supply, toiletry, food, or cash donation. Summer Tag Sale: Become a host site for the Town Wide Tag Sale event. Smooth Move: Create move-in baskets with much needed items such as cleaning supplies, household items, and bathroom necessities. Operation Office: Host a “dress down day” and collect a fee for participants to donate to OH. Brown Bag It: OH can never have enough brown paper grocery bags for use in The Pantry.
JUST FOR THE KIDS: Get Baking: Help your child(ren) host a bake sale; donate the proceeds to OH. Lemonade for All: Help your child/ren create a lemonade stand; donate the proceeds to OH. Charitable Chores: Have your kids help around the house for extra cash to donate to OH. Birthday Gift Exchange: In lieu of birthday gifts, have your child ask for donations to OH. Food Drive: Help your child(ren) organize a local food drive in your neighborhood, or with your favorite club or team. Baking Party: Help your child/ren host a group of friends to bake for the Community Kitchen or Food Pantry. A ROBUST REBIRTH YOGA FOR EVERYBODY--MORE THAN JUST A YOGA STUDIO
ARTICLE BY DANA EPSTEIN ALTMAN When Fairfield resident, Ingrid Prueher, wanted to practice yoga 12 years ago she was strapped for cash. Luckily, she was fortunate enough to find a studio with a volunteer program called Seva, which means a selfless service performed to benefit others. This altruistic endeavor enabled Ingrid to set up a barter plan: She donated her time at the front desk in exchange for complimentary classes. Serendipitously, Prueher, has come full circle as the proud new owner of said yoga studio, Yoga for Everybody. And yes, she of course kept the Seva Program.

A formidable fixture in the Fairfield yoga world, Yoga for Everybody began in 1997 at a different location and has had a handful of different owners. Twenty-five years later, the relocation to Sportsplex@Fairfield is just one of the myriad changes under Prueher’s leadership. For starters, there’s an intensely passionate focus on inclusivity whereby the name “Yoga for Everybody” literally means what it says. “No one should ever feel uncomfortable or excluded from our studio or our virtual classes,” states Prueher, proudly. “We don’t care about your experience level, your ethnicity, your shape, or anything else for that
matter.” For Prueher, it’s about so much more than yoga. “It doesn’t even have to be about movement – it’s more about a mindset and the holistic wellness experience.” In a time where the mental health crisis is front and center, and the so-called “woo-woo” modalities are starting to become mainstream, Prueher has made it her mission to bring mindful education beyond the mat. Which is why in addition to traditional classes like Flow Yoga and Restorative Yoga, to niche-centric classes like Yoga for Office Workers, she has carefully curated a bevy of highly specialized workshops for those looking to take

a deep dive into alternative practices. This summer, inquisitive practitioners and wellness warriors alike can try their hand in Shamanic Healing, as well as the uber-popular, celebrity-touted, Wim Hof Method. Known as a Gong Bath, the gong creates an ocean of sound that is profoundly relaxing; a state which activates the parasympathetic nervous system to balance the over-amped, over-taxed sympathetic nervous system. FRENCH MACARONS ingredients for the shell: (Makes approximately 24 shells for 12 macarons) • • • • •
¾ cup fine almond flour 1 ¾ cup powdered sugar 7 egg whites ½ cup granulated sugar 1 tsp iodized salt
directions: 1. In a large bowl, sift together fine almond flour and powdered sugar; set aside. 2. In a separate mixing bowl that attaches to a standing mixer, add the egg whites. To be sure the bowl is free of any residual oils, wipe the inside with a paper towel dipped in white distilled vinegar prior to adding egg whites. 3. With whisk attachment, whip the egg whites on high speed until they start to become slightly foamy. Then steadily add granulated sugar and salt while the machine is still whisking. Keep whipping the egg whites until a nice stiff meringue is achieved. When the whisk attachment is removed and held upside down, the meringue should hold a nice stiff peak, like the top of a snow-capped mountain. 4. Using a rubber spatula, begin the macaronage technique of incorporating the almond flour mixture and the stiff meringue. 5. Add 1/3 of the meringue into the bowl with the almond flour and powdered sugar. Fold together with the rubber spatula, cutting into the center of the bowl, pulling the spatula towards you and then going around ¼ of the edge of the bowl. Every time you begin a fold, turn the bowl so that you address a different section of the mixture. Continue until a very thick paste is achieved. 6. Add another 1/3 of the meringue and continue to fold until the mixture has loosened further, but is still showing streaks of the meringue. 7. Add the final 1/3 of the meringue and fold until streaky. If you would like to add color, add desired amount of color and fold until all the batter is homogenous and flows like lava in the bowl. 8. Gently scoop the batter into a piping bag that has a large round piping tip already in it. 9. Pipe the batter to desired size onto parchment lined baking pans. Be sure to leave about 1 ½ inch space between cookie shells.
When you have finished piping a tray, lightly tap the tray onto the counter 3 times before putting the tray out to dry. This tapping is necessary for the macaron to get its classic “foot” while baking. 10. Leave the trays of piped macaron shells out at room temperature for at least one hour until the shell has dried and is no longer tacky to the touch. Drying time will differ greatly based on the humidity of the room. 11. Bake the shells at 285°F for about 15-20 minutes or until you can peel the cookie off the parchment paper with ease. Cool completely before filling.
ingredients for the Vanilla Buttercream: (Makes 2 lbs) • • • • • •
1 ½ lbs butter, softened 2 1/3 cup powdered sugar, sifted 2 eggs whites ½ tsp vanilla extract ⅛ tsp salt ¼ qt heavy cream
directions: 1. In a large mixing bowl that attaches to a stand mixer, cream softened butter, sifted powdered sugar and egg whites together with a paddle attachment until no lumps of butter remain. 2. Add vanilla extract and salt. 3. Gradually, while the mixer is still on, add the heavy cream. 4. Once the cream is incorporated, continue to mix buttercream on medium-high speed until white, thick, and full-bodied.
to assemble: 1. Once macaron shells have cooled completely, peel shells off the parchment and pair them according to like-sizes. 2. Place buttercream into a piping bag and pipe the desired amount of buttercream onto one shell of each pairing. 3. Sandwich the paired shells together, twisting slightly to disperse buttercream evenly through the macaron. 4. Store at room temperature before enjoying, or up to two days wrapped tightly with plastic wrap in a refrigerator.

When Amy O’Shea, of J.B. Percival Co., attended Fairfield University in the 1990's, she fell in love with the town. “It was a New England town with a storied Colonial past, beautiful beaches, hiking trails, and a bustling downtown with shops and restaurants,” she explains. Twelve years later, she moved back to Fairfield with her three children and was so pleased to see that the town she loved had

Fairfield University Art Museum - Many have been to the Walsh Gallery at the Quick Center for the Arts, but few know that Fairfield University also has an impressive and eclectic collection housed in Bellermine Hall. These galleries contain a permanent collection of European and American paintings, drawings, prints and photographs, as well as Asian, African and Pre-Columbian objects. There are also frequent special exhibitions, programs, lectures, and tours.
3. South Pine Creek Beach - When looking for a little peace and quiet away from the crowds at Jennings, Penfield and Sasco Beaches, escape to this tiny beach at the end of South Pine Creek Road. It feels like a private beach and is perfect for a picnic, or just bring a chair and a good book.
