Welcome to the inaugural issue of Fairfield Lifestyle Magazine, a monthly guide to all things Fairfield, Connecticut! We have lived in Fairfield County for over 25 years. If you’re a noodle lover, chances are you’ve heard of the wildly popular noodle haven that is Mecha Noodle Bar. Whether you’re Team Ramen, Team Pho or play for both sides, one thing is certain: Mecha cooks up some of Asia’s most comforting dishes right here in Connecticut. Admittedly not fans of the term “fusion”, Mecha describes their vibe as American-Vietnamese-Japanese-Thai-ChineseKorean-New England-Momofuku-Totto-and-Ippudoinspired. Now that’s a robust mouthful! The menu is jam-packed with culinary wonders and plenty of must-have tasty riffs on Southeast Asian street food. Nearly a decade ago, Tony Pham—first generation Vietnamese—wanted to bring his love for his culture to Connecticut by way of homestyle Southeast Asian comfort food. Lucky for us, Fairfield became home to the flagship Mecha, which means “Mom and Pop” in Vietnamese. Today, regardless of which location you show up to—Fairfield, Norwalk, New Haven, Stamford, West Hartford or one of the 2 additional restaurants opening in Boston later this year—be sure to come ravenous and be prepared to leave sublimely satiated. The mouthwatering menu starts off with the “Steamed Baos” section (KFC – Korean Fried Chicken is the most popular), then glides into “Snacks”, perfect for sharing—the Red Oil Dumplings and Kim Chi Fried Rice are the stellar standouts. Then the bowls start flowing with “Seasonal Specials”—this month you’ll find Spicy Chicken Tan Tan-Men which is ground chicken thighs, flat noodles, garlic chili paste, yuzu sprouts and pickled fresno as well as Tofu Jorim, a bowl of silken tofu, Chinese spinach, soy sauce, ginger, and garlic. The proverbial stars of the show are of course, the Vietnamese Pho and the Japanese Ramen. Slurping is encouraged and many items on the menu can be made gluten free. While each Mecha location has a bit of a different ambiance, Pham considers Fairfield “his baby” and the most family-oriented of his five current restaurants. Supporting the local community is in his DNA which is why he created the Eat Justice Campaign,

Mecha’s way of helping those less fortunate. It’s a simple concept: each month the price of one menu item is raised by 50 cents and the sum is donated to a charitable cause of the staff’s choosing. Recent recipients include The Cure Starts Now (pediatric brain cancer), Intempo (tuition of minority music school students) and Norma Pfriem (breast cancer research). This month, Mecha’s Fairfield neighbor, Team Woofgang featured on pg. 16, was chosen by James DeLancy, Assistant General Manager as a cause “near and dear to his heart”. Whether you pop in solo for a warm bowl of noodles or bring the whole family for Sunday night dinner, Mecha Noodle Bar makes everyone happy. As for whether you choose Ramen or Pho? ingredients: Spice Blend • 2 teaspoons ground coriander • 2 teaspoons ground cumin • ½ teaspoon ground turmeric • 1 teaspoon ground fennel seed • 4-6 curry leaves • ½ teaspoon ground cinnamon • ½ teaspoon mustard powder • ½ teaspoon ground pepper • ¼ teaspoon ground cloves • Mix spices, put aside Curry • 4 tablespoons, coconut or olive oil • 1 medium chopped onion • 2 tablespoons chopped garlic • 1 heaping tablespoon chopped fresh ginger • 1 cup chicken stock • 2 tablespoons sweet mango chutney • 1 cup tomato sauce • Salt to taste • Pinch of cayenne pepper • 2 lbs chicken thigh or chicken breast cut into 1 ½ inch cubes seasoned with salt and pepper • ½ cup heavy cream or coconut milk • Chopped fresh cilantro for garnish • Coconut flakes for garnish

serves: 4-6

directions: 1. In large frying pan heat 2 tablespoons of oil/coconut oil, once hot, add chicken, stir and brown slightly, then remove from heat 2. Heat oil in a larger saucepan, add onions, cook until tender, add garlic and ginger, stir well. Add spice blend, cook for about 1 minute 3. Add chicken stock, tomato paste, and mango chutney, bring to boil then simmer for about 10 minutes 4. Pour into blender, whiz until smooth 5. Place back in saucepan, season with salt and a pinch of cayenne, bring to boil, reduce heat, add chicken, stir into mix, place lid on saucepan and simmer for about 15 minutes until chicken is cooked 6. If too thin, mix 2 teaspoons cornstarch with a little cold cream or coconut milk to make a paste, then add to mix, stirring while bringing to a boil 7. Serve with Jasmine or basmati rice 8. Necessity is the Mother of Invention Whoever uttered the phrase “never underestimate the power of a mother” could have easily been describing Kelly Maffei, Amy Stern and Kris Burbank — all mothers of young adults with disabilities. This trailblazing trio founded the non-profit Team Woofgang organization in 2017 with one mission: To provide meaningful vocational skills training and life-long learning opportunities for transitioned adults with disabilities while increasing community awareness of the need for local employment options among those individuals. Nearly five years later, and 50 team members strong, Team Woofgang plays an integral role in the Fairfield community. “After high school, the services that helped provide structure abruptly come to an end and oftentimes, these young adults are left behind. For many, it’s like falling off a cliff” states Kelly Maffei. “They crave purpose and have an innate need to contribute to society.” Which, thankfully, is exactly what Team Woofgang provides.

Long before 27-year-old, Kristen Santos graduated from Fairfield Warde High School, her dream was to become an Olympian. Last month, she made that dream a reality—and made Fairfield proud— by competing on Team USA at the 2022 Winter Olympics in Beijing. If the smiley face tattoo on the bottom of her toe is any indication, she’s a very happy girl. We had a chance to catch up with Kristen to learn more about this hometown hero and her special connection to Fairfield. WHAT WAS IT LIKE GROWING UP IN FAIRFIELD AS A KID DEDICATED TO AN INTENSE SPORT? I loved growing up in Fairfield, especially having such a great support group. My friends and neighbors were always so supportive of my dream to go to the Olympics. Ever since I can remember people were referring to me as a future Olympian. I hated thinking they were going to jinx it, but luckily, they didn’t, and I got to represent Fairfield at the Olympic Games! HOW DID YOU DETERMINE SHORT TRACK SPEEDSKATING WAS YOUR SPORT AND AT WHAT AGE? I started as a figure skater at 3 years old, so I’ve been on the ice my entire life. When I was 8 or 9, I saw a Disney Channel commercial for Speedskating and begged my mom to try it. At first, she kind of ignored it, thinking I would forget about it. Sure enough, I didn’t. My first practice was at Yale—it was me and a ton of old men. My mom assumed I was going to hate it, but when I got off the ice, I begged to go back. I’ve always been competitive - I think I just liked the idea of beating someone to a finish line where there’s a clear-cut winner. WHAT DO YOU LOVE MOST ABOUT SHORT TRACK SPEEDSKATING? Beyond the obvious of my love for racing and competing, I adore the tight knit community. My teammates are people that I have grown up racing with and have ultimately become some of my closest friends.

CAN YOU TELL US ABOUT THE MOMENT YOU FOUND OUT YOU WERE GOING TO THE WINTER OLYMPICS? The moment I qualified for the Olympics was surreal, it’s honestly hard to explain. I felt so happy, proud, and humbled all at the same time to know that I would be representing the USA at the Olympics. I worked my entire life for that moment, so it was very overwhelming. I couldn’t stop crying. When I ran to my family, I broke down even more. It was so special to have my family and friends at trials, especially since they couldn’t attend the games. I wouldn’t have gotten where I am without them and so it wasn’t just me who qualified for the games, it was everyone who supported me along the way. WHAT ARE YOUR PRE-RACE RITUALS? I’ve been working on positive self-talk pre-race. Even simple phrases like “you’ve got this” has been a huge help for calming my nerves. SINCE YOU HAVE A DEGREE IN KINESIOLOGY AND NUTRITION, HOW IMPORTANT IS THE MIND/BODY CONNECTION TO YOU? While working for my degree, my sport performance improved tremendously. Being able to connect what I have learned to my training and recovery has been helpful. I have always been someone who benefits from knowing the purpose of everything I do so I can make sure that I am getting the desired results. I have also dealt with a lot of anxiety and worked on my mental health throughout the years. Having a clear mind really helps my performance. WHEN YOU’RE NOT IN AN INTENSIVE TRAINING PERIOD, HOW DO YOU LIKE TO SPEND YOUR FREE TIME? Free time? What’s that? Haha, I’m just kidding! I love spending time outside and going on adventures with friends and most importantly my two Huskies, Bear and Koda. I also really enjoy doing DIYs and crafting activities like making a chandelier for our house or wood burning. Most recently I was gifted a Cricut, which is a precision cutter, and an embroidery machine, so I am excited to play around with those. Beyond that, I just love quality time with the important people in my life.

FUN FAIRFIELD FACTS: FAVORITE FAIRFIELD RESTAURANT: Every time I visit home, I have a long list of places I love to go. The main thing I miss most is the pizza. I could really go for a salad pizza from Colony! I also have a special place in my heart for A&S Deli, specifically The Godfather. And nothing can beat a salad from The Pantry. FAVORITE FAIRFIELD HANGOUT: I really love the Post Road. It’s one of the cutest downtown areas I’ve ever seen. There’s so many great food options, shopping, and scenery. I also love it by the water—hanging out at Fairfield Beaches are always so pretty and relaxing. FAVORITE FAIRFIELD WORKOUT: I love the style of the homes, so I love going for jogs or bike rides in different neighborhoods and getting mesmerized by the architecture. The Turkey Trot on Thanksgiving was one of the prettiest runs I’ve ever been on. FAVORITE FAIRFIELD CHILDHOOD MEMORY: I will go to my grave saying that the Sandcastle Playground is the best playground there is. There was something so special and magical about being there. I also have very fond memories of all the carnivals.

New York Times bestselling author Daphne Oz talks about her newest book, “Eat Your Heart Out: All-Fun, No-Fuss Food to Celebrate Eating Clean,” which launches in April. We sat down with Daphne Oz to learn more about her journey to home entertainment.

CITY LIFESTYLE: SHARE WITH US YOUR BACKGROUND AND THE INFLUENCE IT HAD ON YOUR JOURNEY TO WHERE YOU ARE TODAY. DAPHNE OZ: I was born in Philly, raised in New Jersey, and now

my husband and our four kids and I live in Florida. I spend a few days each week working in NYC taping our new syndicated talk show, The Good Dish, covering everything delicious in daytime.

CL: WHAT ARE YOUR TIPS FOR HOSTING A MEMORABLE DINNER PARTY AT HOME? DO: When I entertain, my general approach is: Abundant

Simplicity. Appetizers are generous piles of a few different things – olives, hunks of parmesan, spiced nuts, torn bread with herby oil to dunk in, sliced Persian cucumbers with a pool of labne or Greek yogurt, olive oil, and flaky salt for dipping. I look for recipes that are simple or that I’ve made 100 times before that are always crowd pleasers and leave me plenty of time to enjoy my company. The whole point of a beautiful evening together is to make sure you, the host, are relaxed and comfortable, because your guests will take their cue from you.
