While it is sad to see summer go, we love the fall at Fairfield Lifestyle Magazine. We enjoy living in New England with its changing seasons; we welcome the fall with its colorful foliage and the slight chill in the air. And for us, there is no better way to celebrate fall than by dedicating an issue to food. It must be obvious by now that we love food! We love dining out, exploring new cuisines, as well as cooking and baking at home. We enjoy sharing a meal at a restaurant with each other and with friends and cooking for loved ones. Our cover story this month features Artisan’s Executive Chef-Partner, Frederic Kieffer. We loved learning more about Chef and his creative vision for arguably one of the most talked about restaurants in Connecticut. If you need some advice about where to eat in town, take some from Victoria Fingelly, a long-time resident and realtor in town who shares her favorite local hotspots in Fairfield Food Faves. If fall inspires you to cook at home, please try the recipe for Pasta ala Norma from Paci. We are thrilled that they are sharing their recipe for this delicious vegetarian dish. THE TWO OH THREE IS SUCH A FABRIC OF OUR COMMUNITY. WHAT WAS THE IMPETUS FOR STARTING IT? Our mission to celebrate Connecticut began about seven years ago while in college out of state. After not being able to find any gear to rep our pride, we were determined to create our own. One shirt led to two and before we knew it, an entire line of 203 products was born. The 203 officially launched in the summer of 2014. At the time, we didn’t know the effect the company would have on the community. What originally started as a hobby quickly took on a life of its own and has since transformed into a lifestyle brand for everyone.

HOW OFTEN DO YOU DROP NEW MERCHANDISE? We have two formal launches per year—Fall/ Winter & Spring/Summer and are always adding new products to the mix. We’re constantly inspired by our customers, new trends, and other local brands that want to collaborate! CONGRATS ON YOUR FIRST RETAIL STORE! WHAT MADE YOU EXPAND FROM E-COMMERCE TO BRICK-AND-MORTAR? With “local” at the heart of our business, it was always a goal to have a physical presence in the community. We enjoy being able to connect online, but at the end of the day, nothing beats being able to build relationships with our customers face to face. The town of Fairfield has played a colossal role in our brand’s story, and we are so thrilled to have our first store right here in town. From day one, the Fairfield community embraced our brand’s mission and continues to be some of our most loyal and consistent customers. (Thank you, guys!)

Our gear is locally designed, printed and embroidered right here in Connecticut. We work with several local artists to design and create specialty products for us every season. Beyond material things, we like to enhance our customers’ lives with unique local experiences. Our brand comes to life on social media, where we visually foster the essence of a CT lifestyle. We use platforms to constantly connect and communicate with our followers. HOW IMPORTANT IS THE CUSTOMER TO THE DESIGN PROCESS? Our customers are everything to us and they are at the core of our design process. We love getting their feedback—both good and bad! We appreciate their ideas and are constantly asking for suggestions. Our Fall ‘22 collection includes a diverse mix of 203 products that are perfect for adventures in Connecticut! PACI RESTAURANT A TASTE OF ITALY IN FAIRFIELD WITH THE DELICIOUS PASTA ALA NORMA

One step inside the beautiful Paci Restaurant, and you’ll immediately forget that you’re technically at the Southport Train Station. Artistically presented in a renovated 1800’s former freight depot with high ceilings, Paci’s menu will transport you directly into the heart of Italy. Menu selections reflect organic garden produce and other fresh ingredients based on market availability. Their award-winning wine cellar features a collection of rare and delicious vintages along with many unsung gems of fine Italian wines. We checked in with Chef Gabriel Calle for the recipe of one of Paci’s most popular dishes—Pasta Ala Norma with Fettuccine. We can’t wait to replicate this warm, veggie-packed dish at home this fall. Oh, and don’t forget to pair it with a glass of Chianti Classico. Salute!

PASTA ALA NORMA WITH FETTUCCINE Makes 6-8 servings Preparation time: 30 minutes INGREDIENTS • 1 ½ lbs eggplant • 1 large onion • 1 lb zucchini • 1 lb yellow squash • 6 to 8 cloves of garlic • ½ cup extra virgin olive oil • salt & pepper to taste • 1 tsp oregano • Red pepper flakes to taste • 1 cup fresh basil • Grated Parmigiana cheese to taste • 2 lbs San Marzano tomatoes (canned is fine) • 1 ½ lbs fettuccine
PREPARATION STEP 1 Slice and chop onions, eggplants, zucchini, and yellow squash ½ thick. In separate batches sauté the eggplant in extra virgin olive oil until golden and soft. Sprinkle with salt & pepper and set aside. Cooking separately, repeat the same for the onion, then zucchini, then yellow squash and set aside. STEP 2 In a 6-quart pan add the chopped garlic, red pepper flakes and ¼ cup extra virgin olive oil, sauté until golden. Add the tomatoes, oregano and salt & pepper to taste. Cook until saucy about 12 to 15 minutes stirring occasionally. Add chopped fresh basil at the end. Now add the cooked eggplant, zucchini, yellow squash to the cooked tomato sauce and simmer for 6 to 8 minutes. STEP 3 In a large pot of boiling water add one TBL of Kosher salt, cook fettucine; if fresh pasta, cook for 4 minutes, if hard pasta, cook 7 to 10 minutes. Drain pasta, toss with sauce, and serve. Sprinkle with grated Parmigiano cheese (optional). BON APPETITO!

Whether you’re looking for an elegant dining atmosphere, a cozy tavern feeling, or a gorgeous outdoor patio experience, complete with a highly coveted world-class menu, you can find it all in one place at Southport’s legendary neighborhood spot, Artisan. Drawing its name from the bevy of talented artists involved in its inception, the vibe at Artisan is that of astonishing beauty. Whether it’s the rare pewter bar top from France, the ironwork at the bar and in The Copper Room (their private dining room) made by a local Brooklyn ironworker, or the Scandinavian fireplace built by a Norwegian builder flown in for that purpose, Artisan celebrates global craftsmanship at its finest. And we haven’t even gotten to the food yet. Artisan is part of Greenwich Hospitality Group, founded by Charles Mallory. Mallory and Executive Chef-Partner, Frederic Kieffer, combined their experience and expertise over a decade ago to create a unique and innovative casual/fine dining restaurant. The New England-inspired American farm-to-table cuisine abundantly evolves with the seasons. As a Chef managed establishment, Artisan truly offers a one-of-a-kind experience. The gorgeous dining room conveys the charm of a countryside living room paired with a bar/ lounge designed to capture the energy of a tavern. The outdoor patio is a rustic chic haven tucked away in a magical courtyard. Chef Frederic Keiffer came to Fairfield County via Paris and New York City. Having grown up in the countryside west of Paris, Kieffer spent his summers working in local restaurants where he discovered his true passion. He studied cooking for six years — apprenticing all over the Paris restaurant scene and graduating from L’École Supérieure de Cuisine Française (ESCF-Ferrandi). His career began in the kitchen of Tentation Caterers, running the culinary arm of The Museum of Natural History in Manhattan. After working at New York City’s Water’s Edge and Man Ray Restaurant, he had the opportunity to open l’escale at the Delamar Greenwich Harbor Hotel. In 2011, Chef Kieffer became Executive Chef and Partner of Artisan. We were thrilled to sit down with Chef Kieffer for an enlightening culinary conversation.

HOW WOULD YOU DESCRIBE ARTISAN TO SOMEONE WHO’S NEVER BEEN? It is a little bit of a hidden gem tucked away from the Fairfield downtown with beautiful outdoor dining for spring/summer days and warm and cozy indoor dining for the fall/winter months.
WHEN DID ARTISAN FIRST OPEN AND HOW HAVE THINGS EVOLVED SINCE THE VERY BEGINNING? We have been open since 2011 and have had a very organic growth. Since we are located at the Delamar Hotel, rather than downtown with street and foot traffic, we really had to rely on word of mouth and the community at large to grow.
SINCE ARTISAN BEGAN OVER A DECADE AGO, WHAT’S CHANGED ON THE BUSINESS FRONT? We have noticed that our clientele has changed over the years, especially lately. Some of our initial guests have relocated, but we have also seen an influx of new guests, especially since the pandemic began. Overall, this is a good thing. HOW WOULD YOU DESCRIBE YOURSELF AS A CHEF? Passionate. I love what I do and would not change it for anything in this world. There are so many facets to being a chef. We affect not only our guests with our food, but also our coworkers with inspiration, and the multitude of people that work to harvest/make the products that we use daily.
WHICH FAMOUS CHEF DO YOU ADMIRE MOST AND WHY? There are a few, but the ones I like are rarely in the everyday news, they spend their time working on their craft and/or helping the industry.
WHEN IT COMES TO SEASONAL MENU PLANNING, WHAT INSPIRES YOU? Everything that is available or grows at that precise moment.
HOW IMPORTANT IS SUSTAINABILITY IN THE OVERALL MISSION OF THE ARTISAN? Sustainability is one of the most important responsibilities of a modern Chef, other than inspiring the next generation of Chefs. We cannot be perfect, but we try our best in every decision that we make to have the least negative impact on our world.
WHAT ROLE DOES THE ARTISAN PLAY IN SUPPORTING THE LOCAL COMMUNITY? It is always an ongoing process. We have established relationships with local farmers and butchers including Custom Meats, the Fairfield Cheese Company, and also fish companies that work directly with local fishermen.

IS THE VIBE OF THE ARTISAN FORMAL FINE DINING OR MORE NEIGHBORHOOD CASUAL? There is nothing formal about Artisan, it is definitely a neighborhood place where good vibes, attentive service, and well-executed, unpretentious meals are served.
IF YOU WEREN’T THE CHEF AND YOU CAME IN FOR DINNER, WHICH ROOM WOULD YOU SIT IN AND WHAT WOULD YOU ORDER? Definitely outdoors on the patio or in the tavern. The menu changes frequently so not everything is available year-round, but I think I would go for the clam chowder, the venison carpaccio (seasonal) the chicken liver mousse, the pig croquettes (fall) the gazpacho, and the halibut cheeks.

It’s the ultimate outdoor game-day experience you can enjoy in your own backyard or anywhere you love to gather your team for the season. Praline Pecan Crunch Snack Mix Ingredients • 8 cups brown sugar or cinnamon cereal squares • 1 cup pecan halves • 1/3 cup light corn syrup • 1/3 cup firmly packed brown sugar • 3 tablespoons butter • 1 teaspoon vanilla • 1/2 teaspoon baking soda • 2 cups white chocolate-covered pretzels • 1 cup salted peanuts • 2 packages of large waffle cones or paper bags Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.

DIY Football Goalpost Use these mini goalposts as tailgate decor or to play table-football at your next tailgate party. These vintage inspired goalposts are easy to build and display. • ½ inch Copper Pipe (total 66 inches length) cut into the following measurements: • 9.5 inches long (4 total) • 4 inches long (4 total) • 5 inches long (2 total) • 1 inch long (2 total) • ½ inch Copper 90 degree elbow fittings (6 total) • ½ inch Copper Tee fitting (2 total) • ½ inch Copper end cap fittings (4 total) • Copper Pipe Cutter • Gorilla Glue • Wood Block (drill ⅝inch hole) • Measuring Tape and Sharpie Using a pipe cutter, measuring tape and sharpie, cut all copper pipes to proper size using the list above. Next, glue each of the copper pieces together by following the diagram found at SilvertoothHome.com/Blog/ Tailgate-Party. Allow glue to dry. Once dried, place the goalpost into a wooden block using glue to secure into place. Wait until glue is fully dry before using. Cheers!

Football Apple Hand Pies Apple Hand Pies are a perfect hand-held dessert that tastes like fall Ingredients • 21 ounces apple pie filling, store bought or homemade below (you won’t need it all) • 1 tablespoon cinnamon • 2 package pie crusts (4 crusts), I use Pillsbury • 1 egg • 1 teaspoon milk • Store-bought icing in a tube for laces (optional) Instructions 1. Preheat oven to 425°F. 2. Chop apple pie filling into small pieces and mix with cinnamon. Beat the egg with milk until combined. 3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes. 4. Add 1 ½ tablespoons apple pie filling to 6 of the footballs. 5. Brush egg wash around the edges and top with remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie. 6. Brush with the remaining egg wash and bake for 12 minutes. 7. After cooled, pipe on laces with icing if using. Notes • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. • Any flavor of pie filling may be substituted.
