B
rothers Kam and Keyvan Talebi traveled to the United States from Iran in June 1979. But unlike previous summer vacations in America, the boys, ages 9 and 6, never returned home. The Talebis’ trip happened because their mother, Shahnaz, had advanced-stage breast cancer and needed treatment at the Mayo Clinic in Rochester. Their father, Karim, the chief financial officer of a large power-generation company in Iran, moved the boys here to be near their mother. Meanwhile, back home, Islamic revolutionaries overthrew the government. “When we came here, we certainly did not think that we were coming here to stay,” Kam Talebi reflects. “We thought that Mom would be seen at the hospital, and we would go back at the end of the summer, but here we are, some 30 years later.” Showing resolve, the Talebis adapted to their new home, learned English, earned college degrees and, in 2007, established Kaskaid Hospitality, an expanding restaurant business that began with Crave in Edina. Now, the Talebis have 18 restaurants and 2 event centers located in the Midwest,including the local Crave restaurant on Flying Cloud Drive.
Family Focus
The Talebis credit family for their success, down to the nameof the business, Kaskaid, which is a reconfigured collection of first initials of family members. For example, the S is for their mother, Shahnaz. She “is one of the miracle cases,” says Kam Talebi, 44. “She has gone through several relapses, but she has fought through them all. She is an absolute inspiration. She has beaten all the odds.” K stands for their father, Karim. They admire their father for his integrity, says Keyvan Talebi, 40. “I always valued the fact that it was tough for him to come here. He gave up a great job and a beautiful home to do everything to save my mother. I will never forget that. And the love and passion that he had for his family.” As the Talebi brothers continue to pile up successes at Kaskaid, their roots put things in perspective. “Every day that goes by, you realize what’s important, in terms of family values and being a strong person,” Kam Talebi says. “Your health and your family are the number one thing you have in this world, and you have to work to appreciate and cherish it every day.”

And they are more than just numbers, the Talebis say. “We run the business as a small family. We are close. We are open-door, handson and we care about every single employee we have. If they are nearby, have a look at your dog or cat right now. To say that you are fond of this creature would be an understatement. You would spend whatever it costs to keep them happy and healthy. Many people don’t share this luxury. Among Americans who earn less than $50,000 annually, 40% have given up their pets because they couldn’t afford veterinary care. Cost alone is why one million families must say goodbye to their beloved Luna, Lucy, Bella or Buddy every single year. Mission Animal Hospital cannot help all of these people and their pets, yet they are making a great difference all the same. As the Midwest’s sole independent nonprofit veterinary practice, the Eden Prairie hospital provides compassionate, high-quality care to 25,000 dogs and cats every year – many of whom belong to families which could have afforded no other care options. “I used to work at a for-profit clinic,” said Dr. Susan Miller, founder and executive director of Mission Animal Hospital. “Every day I had to turn people away because they couldn’t afford their pets’ care. I became fatigued from saying no – and disheartened, knowing they wouldn’t have anywhere else to turn to. “That’s why I purchased this clinic and changed it to a nonprofit organization in 2014. It is hard work, but it has been wonderful to treat pets in an environment where ‘no’ is rarely talked about. That mindset has reinvigorated my passion for veterinary medicine, and the other doctors who have joined our team all feel the same way.” “We’re providing an essential service to our community,” said Christine Durand, director of development for Mission Animal Hospital. “Every morning before we open, a line has already formed outside our door. These people may have brought their pets in for routine checkups or urgent care, but regardless of their best friends’ needs they can rest assured we will provide for them. “We get so many opportunities to make a difference here. And it’s rewarding for our staff to be able to help these pets and their families – sometimes in unexpected ways! There was one cat, Kato, who recently came to us with a dislocated jaw. Our veterinarian gave Kato a general anesthetic and reset his jaw, but she did it in a special and adorable way. Two bright blue buttons positioned on Kato’s cheeks held his sutures in place and stabilized his jaw while he healed. The innovative
technique also allowed him to open his mouth just wide enough so he could eat. And it’s cute as a button! Kato’s family was very grateful that he was able to get treated here at Mission. “Mavis was another recent case that really stood out. This little corgi came in not feeling well. She was anemic and having difficulty walking. After some tests our team discovered the problem – she had swallowed some pennies, which were releasing toxic zinc into her bloodstream. Mavis received a blood transfusion thanks to a donation from one of our staff’s pets, and then surgery the following day to remove the pennies. The acid in Mavis’s stomach was so strong that it had actually eaten a hole through one of the coins! “We offer a two-tier pricing system,” said Dr. Miller. “Both Kato’s and Mavis’s parents were part of our Mission Program, which more than 80% of our clients qualify for based on their income levels. Mission Program pets receive veterinary care that is partially subsidized by our donors. Thanks to the generous support of our community, as well as our clients who elect to pay full price for care, we were able to provide more than $1.1 million in subsidized care last year.” Mission Animal Hospital is located at 10100 Viking Drive in Eden Prairie. the staring lake eagles LOCAL AERIE MAKES SQUIRRELS WARY

In the past I have interviewed nature photographers who had proudly slogged through the most inhospitable terrain imaginable in order to get one single shot. Pete Rose, a photographer in Eden Prairie who often snaps pictures for this very magazine, is too humble to say he is more skilled than those masochistic shutterbugs. But I declare him the smartest of the lot, because he knows that some of the best wildlife subjects to be photographed can be found right in the comfiest pockets of Minnesota. “I’m always on the lookout wherever I go,” said Pete, “although I do heavily rely on my wife’s keen eye as well. I owe an absolutely beautiful shot of a ring-necked pheasant that was strutting through the field behind our house to her. She also turned me on to the nest of red-winged blackbird hatchlings I recently photographed at the Minnesota Landscape Arboretum’s Green Heron Lake. “Maybe it’s not glamorous, but if you only photographed wildlife at Staring Lake Park you would never get bored. There are plenty of ducks, geese and swans around the water. Just last year a hawk let me get amazingly close as it was putting the finishing touches on an unfortunate squirrel. (I don’t believe I’ll ever put one of those
photos on a Christmas card.) I’ve seen a coyote slinking around the woods back there, and the beavers leave behind plenty of tell-tale stumps even if they don’t like revealing themselves in person. “But the biggest stars of Staring Lake are the bald eagles. I was going for my walk one day when I noticed a lady stopped on the path. ‘They’re nesting in the crook of that tree,’ she said, and right as she pointed upward an eagle swooped in with a giant stick in its beak. I couldn’t go home to get my good camera fast enough. “I’ve enjoyed watching them these past few weeks. Now that they’ve gotten their nest all ready for when the weather is warm again, they spend more time perched up there, just keeping an eye on everything around them. Vigilant, I guess you could say! And they’re not at all concerned about the people who stop to take a look. I could kick myself for not having my camera ready the moment the female soared only a few feet above my head. “Next time, I’ll be ready.” Pete Rose Productions serves residents of Eden Prairie and surrounding areas for all their photography and videography needs. Leila Rastegar loves light. You can tell by the way she treats it so gingerly in her paintings, many of which are landscapes of her beloved hometown of Eden Prairie. Every blade of grass, every depression in the snow, every undulation of cloud glows with its own little je ne sais quoi when Leila has painted it. The effect is transportative. When Leila paints a mellow summer morning, you can feel the dew burning off the back of your neck. When she paints countryside blanketed beneath rolling gray sky, you shiver. And when the only light is cast by lonely street lamps, you can’t help but wonder why you haven’t headed home yet. “I most love the end of the day, when the light turns golden just before fleeing the scene, and the shadows grow longer,” said Leila. “But I never know when the light is going to capture me. I can find inspiration in unlikely places – not only in the scenic vistas, but also the alleyways separating the rows of neat little houses all around the suburbs. “Even as a child I loved to paint and draw. I attended a private school for art, and taught classes there myself before moving to America. I was lucky to grow up in Shiraz, a city in Iran cradled by mountains with lots of gardens and flowers. Very pretty – but there, we didn’t have snow. CONTINUED >

“Snow! It is so beautiful, even if Minnesotans don’t want to hear about it in the middle of winter. Snow adds lovely blue and purple shadows to everything, which I confess to exaggerating a little in my work. I want people to see the beauty of the environment through my own eyes, so they can feel the same emotions that I do. “When I was ready to move a few years ago, I told my son I wanted to live in a place with nice, peaceful landscapes. It is no coincidence that I moved to Eden Prairie. The sky here is vast, with Purgatory Creek cutting like silver through the scenery. All I have to do to get inspiration here is go for a walk with my sketchbook and camera. “When I lived in Iran I also got a degree in engineering. I worked as a systems analyst for a little while, and I would have made more money if I stayed at it. But I couldn’t keep forcing myself to do something I don’t love. I believe an artist has to create art. They have no choice but to put everything else aside in the name of their passion. “I’m now fortunate to paint full-time, which I never could have hoped to do without so welcoming a community. Many of my landscapes have been displayed at galleries and museums in North Dakota and Minnesota, and I’ve received awards from the art centers in Hopkins and Bloomington. “I also do pet portraits by commission. It began when I painted my daughter’s cats and my son’s boxer dog as gifts. Soon their friends saw, and they asked if I could paint their pets as well. Painting pets is like painting landscapes. They both connect you to natural beauty, in their own ways. I work with reference material like I do when I paint landscapes, but I also try to convey as much of the pet’s personality as I’m able. A camera alone is not enough to capture an animal’s spirit.” Leila Rastegar is not simply a painter living in Eden Prairie. AUTHENTIC VENEZUELAN CUISINE, FAMILY STYLE ARTICLE BY DAVID SCHELLER
Venezuela is home to many delicacies, but a country’s simpler cuisine always says the most about the heart of its people. In Venezuela’s case this includes arepas, which are warm rounds baked from maize flour that can be filled with any number of delicious things, empanadas – Spain’s gift to the turnover-eating world – and tequeños, which defy description. I spoke with the eldest daughter of the family which owns TequeArepa. The Chacóns, she explained, don’t hold job titles or seek special credit for their

contributions to the family business. If brother folds pastry dough while sister speaks on the phone with the man from the magazine, they’re both pulling their weight. (Surely mom and dad hold a little more clout in the grand scheme of things, but that is always how things go.) “The American dream is my family’s story,” said Miss Chacón. “We bounced around the country for a little while before we fell in love with Eden Prairie. Out east people are a little … colder, not to be mean, but Midwesterners are always happy to stop and chat. And the land here is beautiful. Once we stayed in Minnesota longer than anywhere else, we knew we would stay for good. “But as you can imagine, when we moved here there was no Venezuelan food. We couldn’t even find corn flour in the supermarket! In time our parents gathered the ingredients they needed to raise us on the same foods they had grown up with. They then saw an opportunity to share our traditional food with the community we were so grateful to join, and decided to open Minnesota’s very first Venezuelan restaurant. “Our name is a mishmash of our two signature dishes: tequeños and arepas, both of which are essentials at every Venezuelan breakfast, lunch and dinner. “Someone who has never eaten a tequeño before is always delighted to discover that it is the South American version of a fried mozzarella stick. We take fresh spears of queso blanco, wrap them by hand inside fluffy layers of pastry dough, and deep fry them until the outsides turn golden brown and the queso becomes molten. We serve five tequeños to a single order, so naturally everyone in the family spends a lot of time wrapping queso – but that just means love goes into every single one. “Our arepas start out as discs of freshly kneaded corn dough, which we bake until they’re just a little crispy on the outside and warm and airy on the inside. Once you have sliced open an arepa, you can put anything you like in it. We let our customers pick whichever fillings they prefer, but we also offer over a dozen different arepas on our menu like the pernil which is filled with slow-roasted marinated pork, and the reina pepiada – the queen of all arepas – with shredded chicken and fresh avocado. Our carne mechada, which is made with shredded beef and our family’s own secret blend of seasonings, has earned an especially big following, and so has our pabellón with select pork, chicken or beef and black beans, sweet plantain and queso blanco. “Whether it’s our empanadas, burritos, fried side dishes or milkshakes and smoothies, everything at TequeArepa is made with fresh and natural ingredients. And it’s very convenient that traditional Venezuelan food doesn’t use wheat (with a few exceptions, such as our tequeños, burritos and special holiday bread), which makes our restaurant a must-visit for anyone who’s following a gluten-free diet. “Working here with my family keeps everyone close.
